Acyl화에 의한 어류 단백질의 이화학적 성질의 변화 (Changes of Functional Properties of Acylated Fish Protein)

  • 단백질의 기능성을 높이고자 acetic anhydride(AA), succinic anhydride (SA) 및 maleic anhydride(MA)로 단백질을 acyl화 시켜 소수성과 기능성 변화를 측정하여 기능 특성과 소수성의 관계를 고찰한 결과, 단백질의 아미노산 잔기인 amino기와 sulfhydryl기의 acyl화에는 AA에 의한 수식율이 가장 높아 amino기의 89.5 % sulfhydryl기의 72.2 %가 수식되었으며 amino기가 sulfhydryl기 보다 쉽게 acyl화 되었다. Succinyl화 및 maleyl화에 의해 어류 단백질의 소수성은 감소 하였으나 acetyl화는 단백질의 소수성이 근육 단백질보다 높다. AA, SA 및 MA로 acyl화 되면 단백질의 용해도, 유화특성, 포말특성, 수분 흡수력 및 지방 흡수력이 크게 향상되었으며 근육 단백질이 농축 단백질보다 기능적 특성이 좋았다. 단백질의 소수성 감소와 용해도 증가는 높은 상관을 보였고 유화특성 및 포말특성은 단백질의 용해도와 깊은 관련이 있었으며 단백질의 소수성도 중요하였다. 단백질의 수분 흡수력은 용해도와 상관이 크나 소수성과는 큰 관계가 없었으며 지방 흡수력은 단백질의 용해도 보다는 소수성에 더 큰 영향을 받는다.

  • This research proves the ROM method (Range Of Motion), which has already been used in other countries, that measures the capacity of exercise and the adaptation of movement of functional garments for special purpose due to change of the height of basic sleeve sloper. Basically, the ultimate goal of the research is to improve the functional pattern design. Firstly, this research proves the proper application of ROM that is used for the evaluation of fitting test. Therefore, according to this research, the company is able to produce the sample that is appropriate to the various purpose for women garments and betters the evaluation of function of garments. Moreover, it suggests that the evaluation of fitting test satisfies the consumers who desire to try better garments and contributes to the competitions among the companies that bring more improvements to the fashion design.

High Hydrogen Capacity and Reversibility of K-Decorated Silicon Materials

  • We have investigated the $H_2$ adsorption structures and binding energies of the metal (M)-doped (M = Li, Na, K, Mg, and Al) silicon complexes, $M-Si_{19}H_{11}$ and $M-Si_{24}H_{12}$, using density functional calculations. Alkali metals are preferred as doping elements because the Mg-Si and Al-$H_2$ interactions are weak. The maximum numbers of $H_2$ molecules that can be adsorbed are four and five for M=Li and K, respectively. We propose that the K-decorated silicon material might be an effective hydrogen storage material with high hydrogen capacity and high reversibility.

  • In order to find out rational design and synthetic strategies toward efficient hydrogen storage materials, we performed quantum mechanical calculations on a series of the Metal-Organic Frameworks (MOFs) containing functionalized organic linkers. Based on the shape of frontier orbitals and the electrostatic potential map of various MOFs from density functional theory calculations, it was found that the delocalization of electron and asymmetric polarization of the organic linker play an important role in the hydrogen storage capacity of Metal-Organic Frameworks. The prediction of the modeling study could be supported by the hydrogen adsorption experiments using MOF-5 and amine substituted MOF-5, which showed more enhanced hydrogen storage capacity of amine substituted MOF-5 compared with that of MOF-5.

Multi-Functional Dual-Layer Polymer Electrolytes for Lithium Metal Polymer Batteries

  • We prepared a novel multi-functional dual-layer polymer electrolyte by impregnating the interconnected pores with an ethylene carbonate (EC)/dimethyl carbonate (DMC)/lithium hexafluorophosphate $(LiPF_6)$ solution. The first layer, based on a microporous polyethylene, is incompatible with a liquid electrolyte, and the second layer, based on poly (vinylidenefluoride-co-hexafluoropropylene), is submicroporous and compatible with an electrolyte solution. The maximum ionic conductivity is $7{\times}10^{-3}S/cm$ at ambient temperature. A unit cell using the optimum polymer electrolyte showed a reversible capacity of 198 mAh/g at the 500th cycle, which was about 87% of the initial value.

  • This study was carried out to investigate the effect of hydrolysis by proteolytic enzymes on the functional properties of sesame protein concentrate. Sesame protein concentrate was hydrolyzed with papain, pepsin and trypsin to obtain 10% and 20% degree of hydrolysis. The nirogen solubility in water was increased with increasing the degree of hydrolysis. Bulk density was increased by enzymatic hydrolysis but water absorption capacity was increased only in the case of pepsin-hydrolyzed SPC. Higher fat absorption capacity was found in SPC with 10% DH than SPC with 20% DH. Emulsifying activity was also increased by enzymatic hydrolysis except SPC with 10% DH by papain.

  • By using Siregnost FD 91 body plethysmograph, we measured thoracic gas volume (TGVe) at end of expiration in 19 healthy subjects aged 20-43 years in order to compare with functional residual capacity (FRC) measured by closed circuit method. The results obtained were as follows 1. Mean values of TGVe and FRC were $3.395{\pm}0.5851{\ell},\;and\;3.393{\pm}0.618{\ell}$, respectively. 2. A advantage of the body phethysmographic method for measuring thoracic gas volume was that it were rapid, safe, and easy to perform, requires no gas sample for chemical analysis, and measured TGVe several times.

Adsorption of Ammonia on the Sulfuric Acid Treated ACF

  • For the adsorption of ammonia, activated carbon fibers (ACFs) were subjected to sulfuric acid treatment in order to modify the surface functional groups. The surface acid and base value of ACFs were measured using titration and FT-IR spectrometry. SEM was used to investigate the surface morphology. Acid treatments by $H_3PO_4$, $H_2SO_4$, and $HNO_3$ were performed to increase the adsorption capacity of $NH_3$. As a result, Cellulose-based ACF has high adsorption capacity for ammonia. The ammonia removal efficiency of ACF was the maximum which was treated by 15 wt% sulfuric acid at $100^{\circ}C$ for 60 min. The average pore diameter little increased from $19{\AA}$ to $20.8{\AA}$ and the specific surface area of ACF considerably decreased and acid values increased by 15 wt% sulfuric acid treatment. Ammonia reacted with sulfonyl radicals. After adsorption of ammonia, white material was grown on the surface of ACF through the adsorption of ammonia and it was determined to ammonium sulfate.

  • The relationship between the possible structural change due to chemical modifications and functionality changes was studied in pigskin collagen. Amino groups in collagen were modified by succinylation and reductive alkylation. Carboxyl groups were modified using carbodiimide. Thermal denaturation temperature of collagen increased remarkably by carboxyl groups modification whereas decreased by succinylation and reductive alkylation. Emulsifying capacity was improved by reductive alkylation and carboxyl groups modification while emulsion stability was improved by succinylation. Chemical modifications increased solubility whereas decreased the foaming capacity of collagen. Viscosity of collagen at various pH varied with methods of modification.

Dimethylglutarylation에 의한 변형대두단백질의 기능적 특성 (Functional Properties of Modified Soybean Protein Isolate by Dimethylglutarylation)

  • This study was conducted to improve the functional properties of soybean protein isolate by dimethylglutarylation and acetylation. Amino acid composition and solubility of modified soybean protein by dimethylglutarylation were not changed, but lysine and trypsin inhibitor activity was decreased an isoelectric point was moved from pH5 to pH4 as a result of modification. Emulsification capacity and stability, foaming capacity and thermal stability were increased by the modification. In that 91% dimethylglutarylated protein did not coagulate when heating at $100^{\circ}C$ for 20 min. while its foaming stability was decreased. Whereas specific gravity was decreased by the modification of the soybean protein, relative viscosity and whiteness were improved. Generally, dimethylglutarylation produced more conformational changes in protein system than did in acetylation.
