  • Lactobacillus plantarum is used for fermentation of fish products, meat and milk. However, the utilization of these bacteria in egg processing has not been done. This study was designed to evaluate the potential of fermented egg albumen as a functional food that is rich in angiotensin I-converting enzyme inhibitors activity (ACE-inhibitor activity) and is antihypertensive. A completely randomized design was used in this study with six durations of fermentation (6, 12, 18, 24, 30, and 36 h) as treatments. Six hundred eggs obtained from the same chicken farm were used in the experiment as sources of egg albumen. Bacteria L. plantarum FNCC 0027 used in the fermentation was isolated from cow's milk. The parameters measured were the total bacteria, dissolved protein, pH, total acid and the activity of ACE-inhibitors. The results showed that there were significant effects of fermentation time on the parameters tested. Total bacteria increased significantly during fermentation for 6, 12, 18, and 24 h and then decreased with the increasing time of fermentation to 30 and 36 h. Soluble protein increased significantly during fermentation to 18 h and then subsequently decreased during of fermentation to 24, 30, and 36 h. The pH value decreased markedly during fermentation. The activities of ACE-inhibitor in fermented egg albumen increased during fermentation to 18 h and then decreased with the increasing of the duration of fermentation to 24, 30, and 36 h. The egg albumen which was fermented for 18 h resulted in a functional food that was rich in ACE-inhibitor activity.

  • Barley (Hordeum vulgare L.) sprouts are a vegetable commonly used as a functional food material due to its high vitamin C concentration and antioxidant activity. In this experiment, we measured the changes in the antioxidant activity of several barley cultivars as well as in the concentrations of related compounds such as ascorbate and glutathione upon treatment with UV-B or salicylic acid (SA). The six barely cultivars were grown in a plant growth chamber (25/$18^{\circ}C$, 14/10 h, 200 ${\mu}mol{\cdot}m^{-1}{\cdot}s^{-1}$, 70% relative humidity) for 10 days. All barely cultivars showed different 1, 1-diphenyl-2-picryl-hydrazyl (DPPH) scavenging activities, which were increased by UV-B treatment and not by SA treatment. The changes in ascorbate concentrations were correlated with DPPH scavenging activity in both the treatments, suggesting that the antioxidant activity in barley sprouts was mainly dependent on ascorbate concentration. Furthermore, changes in ascorbate concentration showed similar tendencies to changes in free sugar concentration, especially glucose and sucrose, in both treatments. On the other hand, the concentrations of glutathione and cysteine highly increased by SA treatment, representing different tendencies compared to the DPPH scavenging activity and ascorbate concentration. 'Donghanchal' cultivar showed comparatively higher antioxidant activity, both constitutively and inducingly by UV-B treatment, with its higher concentrations of ascorbate and glutathione. These results suggest that barley sprouts could be used as a health-functional vegetable, contributing to the overall supply of antioxidant and sulfur-containing organic compounds.

  • Jeju island is the largest island of South Korea, and has a relatively warm climate due to its geographical characteristics. These features have fostered development of various fermented foods distinct to Jeju island. Therefore, the functional activity of the lactic acid bacteria (LAB) isolated from the Jeju region's traditional fermented foods, including Kimchi and Jeotgal was characterized in this study. Fifteen strains were isolated from 6 types of fermented food. These strains include Enterococcus spp., Lactoplantibacillus spp., and Weisella spp. Several experiments were carried out to assess functional characteristics including acid resistance, bile resistance, hemolysis, DPPH and ABTS radical scavenging activity, and cholesterol-lowering activity. Three isolated strains (J-4, J-6 and J-10) exhibited high acid resistance, while the other 3 isolates (J-1, J-4 and J-6) showed high bile salt resistance. The strains displayed varied DPPH and ABTS radical scavenging activity: 71.14-86.42% among the first 3 strains, and 50.11-75.11% among the remaining 3 strains. Cholesterol-lowering activities were in the range 15.74-82.90% for all isolated strains. In conclusion, these studies suggest that isolated LAB strains from Jeju island traditional fermented foods possess the potential for broader application in the food industry.

  • Background: The aim of this study was to investigate the effects of heel raising with kinesio taping (HRKT) on triceps surae muscle activity and balance in 20s adults. Design: Two groups pre-post randomized controlled design. Methods: The total of 40 subjects were randomly divided in the HRKT group (experimental group, n=21) and heel raising with sham kinesio taping (control group, n=19). Both groups receive heel raising with kinesio taping and sham kinesio taping for 20 minutes a day, five day per week, for four weeks. Measurement were performed before training and 4 weeks after training. The triceps surae muscle activity was measured using the EMG. A functional reach test (FRT) was used to evaluate balance ability. The independent t-test was conducted to compare exercise methods depending on the taping effect on each group. Results: The both group showed significant differences in muscle activity of lower extremity and functional reach test in the pre-post intervention comparison (p<0.05). The experimental group showed significantly more improvement in triceps surae muscle activity and functional reach test compared to the control group(p<0.05). Conclusion: We confirmed that the effects of heel-raising with kinesio taping group on triceps surae muscle activity and balance ability in 20s adults. The result suggest that heel raising with kinesio taping for 20s adults should be further studied and considered.

  • The muscle activity and balance ability of the acute stroke patient has been checked by the functional electrical stimulation using biofeedback fusion postural control training in this study. Functional electrical stimulation using biofeedback fusion postural control training have been implemented on 15 trainees and general biofeedback fusion postural control training have been implemented on another 15 trainees for 30 minutes at 5 times per week during 8 weeks, and vastus lateralis, vastus medialis, rectus femoris and biceps femoris have been measured using the biceps femoris to evaluate the muscle activity of the lower extremity. The moving surface area, whole path length and limited of stability have been measured using biorecue to measure the balance ability. There was statistically meaningful difference on the vastus lateralis, vastus medialis, rectus femoris and biceps femoris in the muscle activity of the lower extremity and there was statistically meaningful difference on surface area, whole path length and limited of stability in the balancing ability. Based on above, it is realized that the functional electrical stimulation using biofeedback fusion postural control training is more effective than the general biofeedback fusion postural control training on the improvement of the muscle activity of the lower extremity and the balance ability.

  • $TiO_2$ thin films were surface-modified with atmospheric plasma and their photocatalytic activities were evaluated. The films were deposited on glass plates by dip-coating in a $TiO_2$ sol-gel solution and sintered at various temperatures for various times. Nitrogen plasma was used for the modification and the experiments were carried out varying operational parameters such as discharge power and treatment time. Photocatalytic activity was evaluated based on the degradation efficiency of methylene blue (MB) under irradiation of UV-A and fluorescent light. According to XPS analysis, a little amount of nitrogen was found to be doped in the film surface after the modification. As a result, photocatalytic activity increased under irradiation of UV-A and fluorescent light, especially fluorescent light.

  • The Salvia plebeia R. which is the biennial plant belonging to the labiatae department, grows widely in Korea. This study was performed to evaluate the antioxidant activities and anti-allergic effects of Salvia plebeia R. leaves (SPLE) or roots (SPRE). Using ethanol extracts, both leaves and roots induced significant radical scavenging activity against DPPH and ABTS radicals in a dose dependent manner (p<0.05). Superoxide dismutase (SOD)-like activity of SPLE was significantly higher than that of SPRE at all concentrations. Treatment of the RBL-2H3 cells with SPLE and SPRE in vitro decreased ${\beta}$-Hexosaminidase release and significantly inhibited IgE-antigen complex-mediated IL-4 and TNF-${\alpha}$ mRNA expression in RBL-2H3 cells. These findings suggest that Salvia plebeia R. can protect or reduce allergic asthma through high antioxidant and anti-allergic reactions.

  • This study was conducted to evaluate the effect of light spectrum using red (660 nm), blue (460 nm), red and blue mixed (Red : Blue = 6 : 4) LED (light-emitting diode), and fluorescent lamp on antioxidant activities and functional components of dandelion (Taraxacum officinale). Total polyphenol contents in dandelion irradiated with the red and blue mixed or the red LED were 121.77 mg/100 g or 115.36 mg/100 g, respectively, which were greater than those in dandelion treated with blue LED and fluorescent lamp. Asparagine showed the highest content among amino acids in leaves and roots regardless of treatments. Total amino acid was the highest when illuminated with the red LED. DPPH (1,1-diphenyl-2-picrylhydrazyl) radical-scavenging activity and SOD (super oxide dismutase) activity of ethanol extracts were increased under all of the LED treatments compared with fluorescent lamp, and the antioxidant activities were increased by the red and the mixed LED illumination. The results indicate that application of the red and the mixed LED illumination promote antioxidant activity and increase functional components during cultivation of dandelion.
