오미자의 물 추출조건에 따른 shizandrin, gomisin A, gomisin N의 함량 비교 (Comparison of the Content of Shizandrin, Gomisin A and Gomisin N in Schisandra Fruit by Water Extraction Condition)

  • 본 연구는 식약공용 오미자를 메탄올 추출해 schizandrin, gomisin A, gomisin N 함량을 확인한 후 schizandrin, gomisin A, gomisin N 함량이 높게 나온 시료 중 하나를 선정해 오미자를 차로 음용 시 물 추출방법에 따른 생리활성 물질의 함량을 확인하였다. 추출방법은 열수 추출과 상온 침출로 추출상태, 추출온도, 추출시간을 달리하여 schizandrin, gomisin A, gomisin N 함량을 비교하여 적절한 음용법을 제시하고자 하였다. 오미자를 원산지별 메탄올 추출물 시 schizandrin, gomisin A, gomisin N 총 합 평균 함량은 10.57 mg/g이었다. 국산 오미자 11.42 mg/g, 수입산 오미자 10.12 mg/g으로 국산 오미자의 메탄올 추출물의 schizandrin, gomisin A, gomisin N 총 합 함량이 더 높았다(p < 0.05). 메탄올 추출에서 높게 나온 오미자를 이용해 물 추출 방법에 따라 추출방법, 추출형태, 추출온도, 추출시간을 달리해 생리활성 schizandrin, gomisin A, gomisin N의 함량을 확인한 결과 오미자 물 추출방법에서 생리활성 물질의 함량에 가장 큰 영향을 준 조건은 추출형태였다. 원형보다 분말형태로 오미자를 물 추출 시 생리활성 물질의 함량이 높게 나왔다(p < 0.05). schizandrin, gomisin A, gomisin N의 총 합 함량이 높게 나온 추출방법은 오미자를 분말형태로 $26^{\circ}C$에서 24시간 침출하거나 $100^{\circ}C$에서 5분 이상 열수 추출했을 때 유의적 차이가 없이 높게 나왔으나(p > 0.05) 오미자를 고온 열수 추출 시 떫은맛과 신맛이 강해지므로 따라서 오미자의 물 추출의 경우 분말상태로 24시간 이상 침출하는 것이 오미자의 생리활성 물질인 schizandrin, gomisin A, gomisin N을 좀 더 효율적으로 추출하고 기호적인 면도 고려할 수 있는 음용법 이었다. 차를 마시는 기능성을 고려하여 향후 오미자 뿐 아니라 가정에서 차로 많이 사용하고 있는 다양한 약용식물의 생리활성 물질에 특성에 따른 물 추출물에 대한 효율적인 추출법등의 연구가 이루어져 할 것이다.

못난이 농산물을 이용한 가공품에 대한 소비자 인식과 속성별 중요도 분석 (An Analysis of the Importance of Processed Products Using Ugly Agricultural Products by Attribute)

  • This study analyzed the factors influencing the demand for processed products of ugly agricultural products targeting 300 consumers. First, the awareness of the problem of the disposal of ugly agricultural products was very high at 72%. In other words, it can be seen that consumers are highly interested in environmental issues caused by the disposal of ugly agricultural products. Second, the experience of purchasing ugly agricultural products is high at 73%, which is proof that consumers are highly aware of and likely to purchase ugly agricultural products. Third, 77.6% of the respondents said they were willing to purchase processed ugly agricultural products. In other words, it was found that the intention to consume ugly agricultural products was sufficient. Finally, the conjoint analysis was applied to analyze the attribute value of ugly agricultural products. As a result of calculating the total utility of the optimal properties and optimal properties of the ugly fruit fermented, the total utility of the optimal properties was 0.778, the price was 0.481, the eco-friendly certification was 0.004, and the fruit syrup ratio was 0.294.

Study on Measures to Improve Fresh Food Sales at Military Commissaries (PX)

  • This study aims to confirm the appropriateness of fruit and vegetable sales at military commissaries, with the purpose of enhancing the physical health and morale of military personnel. In order to achieve this objective, we examined the actual conditions of fruit and vegetable sales at military commissaries and analyzed the soldiers' awareness of fruit and vegetable sales through questionnaire surveys. The conclusions of this study are as follows: Firstly, fresh fruits and vegetables were not sold at military commissaries. Secondly, soldiers acknowledged the need for the consumption of fruits and vegetables and strongly expressed the desire for these fresh food products to be sold at military commissaries. Although the ROK Navy privatized military commissaries for the purposes of increasing management efficiency of national defense and strengthening combat power by transferring PX salesclerk soldiers to join combat personnel, this effort produced a negative effect of price increase. The following are proposals for improving this condition: fruit and vegetable products should be introduced to military commissaries through military welfare funds; fresh food markets should be established by closely cooperating with the local community's agricultural producers; processed fruit and vegetable product (dry, frozen, airtight packaged, etc.) sales should be increased; and the privatization of the navy commissaries should be abolished.

신선편이 (fresh-cut) 식품의 변색 및 포장 전 처리방법 (Color Changes in Fresh-cut Fruit and Vegetables and Its Pretreatment Processing)

  • The market sales of fresh-cut fruit and vegetables have grown rapidly in recent decades as a result of changes in consumer trend. Choosing the proper pretreatment of fruit and vegetables before minimally processing is very important because appearance is the most fundamental factors affecting the quality of fresh-cut products. This review describes the biochemical bases for color changes of fruit and vegetables including browning, discoloration, and color changes of carrots and alliums. Understanding pathway of pigments in minimally processed fruit and vegetable and preventing the way of color change should be emphasized for successive packaging system. This review also describes pretreatment of fresh-cut fruit and vegetables to improve the prolonging the shelf-life and maintenance of its qualities.

용탈처리와 습식 반탄화에 의한 Empty Fruit Bunch의 연료적 특성 향상 (Improvement in The Fuel Characteristics of Empty Fruit Bunch by Leaching and Wet Torrefaction)

  • 본 연구에서는 팜 부산물인 Empty Fruit Bunch (EFB)의 연료적 특성을 향상시키기 위해 용탈처리와 습식 반탄화를 연속적으로 수행하였다. 용탈처리는 $25{\sim}90^{\circ}C$에서 5~30분 수행하였으며, $90^{\circ}C$, 10분 조건에서 55.99%의 가장 높은 회분 감소율을 나타냈다. 회분 감소율은 용탈 시간보다 온도에 따라 영향을 받았다. 용탈처리 후 연속적으로 습식 반탄화를 수행하였으며 반응온도 $180{\sim}200^{\circ}C$, 반응시간 5~40분에서 실시하였다. 연속처리에 의해 규소를 제외한 대부분의 무기성분은 제거되었으며 회분 감소율은 41.05~63.58%로 나타났다. 특히, 염소, 칼륨, 마그네슘, 인 성분은 80%이상 제거되었다. 용탈처리 후 $200^{\circ}C$, 40분에서 습식 반탄화를 수행한 결과 발열량은 원시료(4390 kcal/kg)와 비교하여 7.96% 증가한 4736 kcal/kg를 나타냈다.

Analysis of γ-Aminobutyric Acid Content in Fermented Plant Products by HPLC/UV

  • ${\gamma}$-Aminobutyric acid (GABA) content in fermented plant products and their main plant materials (aerial part of Acanthopanax sessiliflorus, fruit of Crataegus pinnatifida, and whole plant of Morus alba) was determined by high-performance liquid chromatography. GABA was quantified using a reverse-phase column with a gradient elution program (water:acetonitrile =90:10 to 0:100 for 40 min). UV detection was conducted at 280 nm. GABA content was measured in fermented plant products (15.07 mg/g), aerial part of A. sessiliflorus (4.49 mg/g), fruit of C. pinnatifida (10.59 mg/g), and whole plant of M. alba (2.31 mg/g). The presence of GABA in fermented plant products, including A. sessiliflorus, C. pinnatifida, and M. alba is important in industrial application for health supplements.

Inhibition of lipid and protein oxidation in raw ground pork by Terminalia arjuna fruit extract during refrigerated storage

  • Objective: Terminalia arjuna plant, specially its leaves, bark, and roots, are widely used in traditional herbal medicine due to presence of bioactive components and being a rich source of natural antioxidants. But its fruit has not been used for any such purposes despite its potential to retard oxidation. Hence, the antioxidant potential of Arjuna fruit extract (AFE) in retarding lipid and protein oxidation of raw ground pork was evaluated during refrigerated storage for 9 days. Methods: The AFEs were prepared using different solvents viz. ethanol (EH), water, ethanol: water (60:40) and methanol:hot water (60:40). The AFEs were analysed for total phenolic content (TPC), 2, 2-diphenyl-1-picrylhydrazyl radical scavenging activity and reducing power. Water extract (WE) and ethanol-water extract (EH-WE) were selected and incorporated at 1.0% into freshly minced pork meat and compared with a synthetic antioxidant, in retarding lipid and protein oxidation during storage. Results: The TPC in AFEs using different solvents ranged from 11.04 to 16.53 mg gallic acid equivalents/g and extracts exhibited appreciable scavenging activity ranging from 50.02% to 58.62%. Arjuna extracts significantly (p<0.05) improved the colour score of meat samples by reducing the formation of metmyoglobin during storage. Both the AFEs (WE and EH-WE) significantly (p<0.05) lowered the thiobarbituric acid reactive substances value, peroxide formation and formation of protein carbonyls in raw pork than control sample during storage. Upon sensory evaluation of all samples, it was found that AFE treatment could prolong the storage period of meat samples, without influencing the colour and odour score, up to 6 days. Conclusion: AFEs used at 1% improved the oxidative stability, colour and odour score and prolonged the refrigerated shelf life of ground pork up 6 days. Therefore, AFE could be explored as an alternative natural antioxidant in retarding lipid and protein oxidation in meat products.

  • A fundamental study was conducted to obtain the basic data involved in nondestructive quality evaluation of the fruit and vegetables. An experimental equipment for ultrasonic propagation characteristics of the fruit and vegetables such as radish , carrot , potato, and apple was set up and also power spectrum analysis system of an ultrasonic wave through the fruit and vegetables was set up. The velocity and attenuation of ultrasonic wave through the tissue specimens from the fruit and vegetables were measured and analyzed. The elastic modulus and density by the mechanical method currently used were compared with those using by ultrasonic method. The ultrasonic tranit time was almost linearly increased with the length of the specimens and attenuation of ultrasonic was mainly affected by the internal flbrous structure of the products. The regression equation was derived from the highly correlated experimental variables.

배합비와 음용 온도가 대추차의 기호도에 미치는 영향 (Effects of Formulation Variables and Drinking Temperature on Acceptability of Jujube Tea Products)

  • Sensory evaluation method was used to develop a type jujube tea the organoleptic properties were evaluated with regard to the optimum sugar content, clarity, drinking temperature and fruit pulp content of the jujube tea. Clarified jujube tea extracted from 25% by weight of dry jujube fruits and 75% water was preferred to those from 15%, 20% and 30% jujube fruites although those from 20% and 30% were not significantly different at 5%level. In spite of the average acceptability score of cloudy jujube tea with 5% of added fruit pulp was not significantly different from that of clarified one, the more fruit pulp in the tea products the worse its acceptability. Cold jujube tea was preferred to warm and hot ones, but these were not significantly different.
