액화질소를 이용한 인공동결공법 적용시 해성 점토지반의 동결속도 평가 (Evaluation of Freezing Rate of Marine Clay by Artificial Ground Freezing Method with Liquid Nitrogen)

  • 최근 임시 지보, 보강 및 지하수 차수와 같은 다양한 지질공학분야에서 차수 및 지반보강 공법으로 인공동결공법(artificial ground freezing method)이 적용되고 있다. 인공동결공법은 지중에 매설된 동결관 내로 냉매를 순환시켜 대상 지반에 차수벽 및 지지체의 역할을 할 수 있는 동결벽체(frozen wall)를 형성한다. 본 연구에서는 해성 점토지반(marine clay)에 대한 인공동결공법 현장실증시험을 수행함으로서 인공동결공법에 따른 해성 점토지반에서의 동결속도(freezing rate)를 평가하였다. 현장실증시험은 지중에 3.2m 깊이로 매설된 동결관 내로 초저온 냉매인 액화질소를 순환시키는 방법으로 단일공 시험과 동결벽체 형성 시험을 수행하였다. 자동밸브를 통해 유출되는 액화질소의 온도를 일정하게 유지시켰으며, 동결과정에서 동결관 외벽 및 지중의 온도변화를 측정하였다. 시험결과, 단일공 시험은 부피가 약 $2.12m^3$인 원기둥 모양의 동결체를 형성하는데 총 3.5일 동안 약 11.9ton의 액화질소가 소요되었고, 동결벽체 형성 시험은 부피 약 $7.04m^3$의 동결벽체를 형성하는데 총 4.1일 동안 약 18ton의 액화질소가 소요된 것으로 산정되었다. 임의의 깊이에서 동결면적이 동결반경의 제곱에 비례하기 때문에 동결반경이 증가할수록 방사방향 1차원 동결속도가 감소하였고, 이를 바탕으로 방사방향 1차원 동결속도 예측식을 제시하였다.

돈육의 냉해동 조건에 따른 품질 변화에 관한 연구 (A Study on the Changes of Pork Quality by Freezing and Thawing Methods)

  • The purpose of this study was to examine the effects of freezing and thawing methods on the quality of pork meat. The freezing methods for pork meat were the cryogenic freezing with liquid nitrogen gas, fast freezing at $-70^{\circ}C$ and normal freezing at $-20^{\circ}C$. The thawing methods were tested on low temperature thawing at refrigerative temperature($4^{\circ}C$), room temperature($20^{\circ}C$), high temperature($60^{\circ}C$) and using microwave. The quality of pork meat frozen by cryogenic methods was better than those of fast and normal freezing methods. The cooking hardness of pork meat frozen by cryogenic method showed the highest value as 1,898 g. In case of fast freezing, the hardness of pork meat was 1,472 g and that of normal frozen pork meat was 1,541 g. The high cooking hardness value of cryogenic frozen pork meat showed that the cryogenic freezing method made less freeze damage like textural softness. The drip-loss of pork meat thawed at refrigerative temperature($4^{\circ}C$), room temperature($20^{\circ}C$), high temperature($60^{\circ}C$) were shown lower than that of microwave thawing. The cooking hardness of pork meat that was thawed by microwave showed the lowest value among the thawing methods. The cryogenic freezing was the most useful freezing method for preserving quality, decreasing the freeze damage of pork meat. And thawing at refrigerative temperature was the most effective method to prevent quality loss and weight loss by drip-loss.

Study of Radio Frequency Thawing for Cylindrical Pork Sirloin

  • Purpose: Radio frequency (RF) heating is a promising thawing method, but it frequently causes undesirable problems such as non-uniform heating. This can occur because of the food shape, component distribution, and initial temperature differences between food parts. In this study, RF heating was applied to the thawing of cylindrically shaped pork sirloin by changing the shape of electrodes and the surrounding temperature. Methods: Curved electrodes were utilized to increase the thawing uniformity of cylindrically shaped frozen meat. Pork sirloin in the shape of a half-circle column was frozen in a deep freezer at $-70^{\circ}C$ and then thawed by RF heating with flat and curved electrodes. In order to prevent fast defrosting of the food surface by heat transfer from air to the food, the temperature of the thawing chamber was varied by -5, -10, and $-20^{\circ}C$. The temperature values of the frozen pork sirloin during RF thawing were measured using fiber-optic thermo sensors. Results: After multiple applications of curved electrodes resembling the food shape, and a cooled chamber at $-20^{\circ}C$ the half-cylindrically shaped meat was thawed without surface burning, and the temperature values of each point were similarly increased. However, with the parallel electrode, the frozen meat was partially burned by RF heating and the temperature values of center were overheated. The uniform heating rate and heat transfer prevention from air to the food were crucial factors for RF thawing. In this study, these crucial factors were accomplished by using a curved electrode and lowering the chamber temperature. Conclusions: The curved shape of the electrode and the equipotential surface calculated from the modeling of the parallel capacitor showed the effect of uniform heating of cylindrically shaped frozen food. Moreover, the low chamber temperature was effective on the prevention of the surface burning during RF thawing.

말쥐치 동건품의 가공조건 및 저장중의 품질변화 (Processing Conditions and Quality Stability during Storage of Frozen-dried Filefish)

  • 말쥐치를 보다 효과적으로 이용하기 위한 하나의 방법으로서 말쥐치 동건품의 가공사건 및 저장중의품질변화를 실험하였다. 동결온도 $-10^{\circ}C$이고 송풍해동조건이 온도 $56\pm2^{\circ}C$, 풍속 1 m/sec 일 때 동결시간 10시간, 해동시간2시각, 동결 및 해동포수는 5소파 가장 적합하였다. 이 때 제품의 수분사양은 $23.6\%$, 수율은 $10.2\%$였다. 상온에서 함기포장하여 저장한 결과 90일까지는 품질에 큰 변화 없이 저장 가능했다. Omission test결과 제품의 맛에는 유리아미노산과 5'-mononucleotide가 주된 구실을 한다는 것을 알 수 있었다. 또한 말쥐치 동건품과 시판 동건명태는 관능 검사결과 맛, 냄새, 텍스튜어 등이 거의 비슷하였다.

동결건조 쌀죽의 재수화 특성에 미치는 동결온도의 영향 (Effect of Freezing Temperature on the Rehydration Properties of Freeze-Dried Rice Porridge)

  • 동결건조 쌀죽의 품질특성에 미치는 동결속도의 영향을 조사하기 위하여 쌀죽을 -20, -40, -70$^{\circ}C$의 동결 온도에서 동결시킨 후 동결건조시킨 제품을 제조하여 이들 제품의 미세구조, 물리적 강도, 조직감 및 재수화율을 조사하였다. 전자주사현미경을 통한 이들 제품의 미세구조를 관찰한 결과 완만동결(-20$^{\circ}C$)시킨 것이 급속동결(-70$^{\circ}C$)에 비해 공극의 크기가 크고 그 수가 적었다. 반면에 급속동결시킨 제품은 보다 조직이 치밀하고 물리적인 강도가 유의적(p<0.05)으로 큰 값을 나타냈다. 수화복원율은 -20$^{\circ}C$에서 동결시킨 제품이 -40, -70$^{\circ}C$에서 동결시킨 제품보다 높았다. 따라서 품질이 우수하고 사용이 간편한 동결건조 쌀죽을 제조하기 위해서는 최적의 동결 온도의 선택이 필수적임을 알 수 있었다.

Experimental research on dynamic characteristics of frozen clay considering seasonal variation

  • In order to study the soil seasonal dynamic characteristics in the regions with four distinct seasons, the soil dynamic triaxial experiments were conducted by considering the environmental temperature range from -30℃ to 30℃. The results demonstrate that the dynamic soil properties in four seasons can change greatly. Firstly, the dynamic triaxial experiments were performed to obtain the dynamic stress-strain curve, elastic modulus, and damping ratio of soil, under different confining pressures and temperatures. Then, the experiments also obtain the dynamic cohesion and internal friction angle of the clay under the initial strain, and the changing rule was summarized. Finally, the results show that the dynamic elastic modulus and dynamic cohesion will increase significantly when the clay is frozen; as the temperature continues to decrease, this increasing trend will gradually slow down, and the dynamic damping ratio will go down when the freezing temperature decreases. In this paper, the change mechanism is objectively analyzed, which verifies the reliability of the conclusions obtained from the experiment.

안정제첨가가 Frozen yogurt 질감에 미치는 영향 (Effects of stabilizers on the texture of Frozen yogurt)

  • The present study was attempted to investigate and to evaluate various hydrocolloids as a stabilizer in improving texture of the frozen yogurt. Four kinds of hydrocolloids used in this study were CMC (carboxymethyll cellulose), PGA(propylene glycol alginate), LMP(low methoxyl pectin), and the combination of LBG(locust bean gum) and GG(guar gum). The viscosity of frozen yogurt mixes did not show any significant differences among four samples at 5$^{\circ}C$. However, as the temperature increased up to 50$^{\circ}C$, theviscosity of frozen yogurt mixes containing CMC, LMP, PGA decreased drastically except frozen yogurt containing the combination of LBG+GG. The overrun of frozen yogurt containing each hydrocolloid gradually increased and reached to about 53, 50, 54, and 35%, respectively, after 40 min of operating ice cream freezer. As the result of sensory evaluation in the texture of frozen yogurt and melt-down quality, the sample containing LMP was described as the most coarce & icy, crumbly, and sand-like characters. On the other hand, PGA sample was evaluated as not being icy, crumbly, but being chewy and soft in texture. However, any significant differences among four samples were not shown in melt-down quality.

단백분해효소와 Starter Culture의 종류에 따른 frozen soy yogurt의 저장성 (Storage characteristics of frozen soy yogurt Prepared with different proteolytic enzymes and starter cultures)

  • The storage characteristics of frozen soy yogurt prepared with hydrolyzed soy protein isolates were evaluated. In order to facilitate lactic fermentation bacteria grow and produce lactic acid as fast rate as possible, soy protein isolate(SPI) was hydrolyzed using two kinds of proteases; bromelain and a-chymotrypsin. The cultural systems employed thereafter for lactic fermentations were Bifidobacterium bifidum or B. bifidum and Lactobacillus bulgaricus. The viable cell counts, normal- and bile acid tolerances from the mixed cultures of B. bifidum and L. bulgaricus decreased sharply during the initial first 3 days of frozen storage and then showed a gradual decrease thereafter. Melt-down percent of the all frozen products have been favorably affected as was shown by less melting at raised testing temperature during 28 days of frozen storage except for the initial 3 days during which a minor change has been observed. Among the various volatile flavor components, the contents of acetaldehyde, acetone, diacetyl and methanol generally increased during the frozen storage. In sensory test, the frozen soy yogurt prepared with a-chymotrypsin and mixed culture of B. bifidum and L. bulgaricus was the most desirable, the highest scores in sourness, bitterness and mouthfeel.

Prediction models of the shear modulus of normal or frozen soil-rock mixtures

  • In consideration of the mesoscopic structure of soil-rock mixtures in which the rock aggregates are wrapped by soil at normal temperatures, a two-layer embedded model of single-inclusion composite material was built to calculate the shear modulus of soil-rock mixtures. At a freezing temperature, an interface ice interlayer was placed between the soil and rock interface in the mesoscopic structure of the soil-rock mixtures. Considering that, a three-layer embedded model of double-inclusion composite materials and a multi-step multiphase micromechanics model were then built to calculate the shear modulus of the frozen soil-rock mixtures. Given the effect of pore structure of soil-rock mixtures at normal temperatures, its shear modulus was also calculated by using of the three-layer embedded model. Experimental comparison showed that compared with the two-layer embedded model, the effect predicted by the three-layer embedded model of the soil-rock mixtures was better. The shear modulus of the soil-rock mixtures gradually increased with the increase in rock regardless of temperature, and the increment rate of the shear modulus increased rapidly particularly when the rock content ranged from 50% to 70%. The shear modulus of the frozen soil-rock mixtures was nearly 3.7 times higher than that of the soil-rock mixtures at a normal temperature.

Analysis of Membrane Integrity and Mitochondrial Activity in Fresh and Cryopreserved Boar Sperm Using Flow Cytometry

  • This study was carried out to evaluate the effects of washing medium, breed and washing temperature of fresh and frozen-thawed boar sperm on mitochondrial activity and membrane integrity by flow cytometry. More than $80\%$ of fresh sperm washed with mTLP-PVA medium at $20^{\circ}C$ exhibited an intact membrane and a functional mitochondrion. With frozen-thawed samples, a large number of sperm showed both damaged membrane $(36.4\~46.9\%)$ and nonfunctional mitochondrion $(55.1\~71.1\%)$ in the mTLP-PVA and BTS washing media at $20^{\circ}C$. There were no breed effects of fresh and frozen-thawed sperm on mitochondrial activity and membrane integrity. The percentages of damaged membrane of fresh and frozen sperm, respectively, were higher at $4^{\circ}C$ washing temperature than at $20^{\circ}C$ washing temperature in the mTLP-PVA medium. We found that washing medium and washing temperature of fresh and frozen-thawed boar sperm were important for the analyses of mitochondrial activity and membrane integrity by flow cytometry.
