Chemical Composition, Functional Constituents, and Antioxidant Activities of Berry Fruits Produced in Korea (국내 재배 베리류의 화학 조성 및 기능성 성분과 항산화 활성)

  • Berry fruits are rich in phytochemicals, including polyphenols, anthocyanins, phenolic acids, and organic acids, which are known to have beneficial effects on health. The aim of this study was to investigate chemical composition, functional constituents, and antioxidant activities of mulberry, black raspberry, raspberry, and blueberry cultivated in Korea. Acidity of the four berries ranged from 0.26% to 1.10%, and pH ranged from 3.3 to 5.2. Total mineral contents of the four berries ranged from 92.9 to 256.0 mg/100 g. Among the berries, mulberry contained the most abundant total free sugars, and glucose and fructose were the major sugars in the berries. Mulberry contained more than three times as much ${\gamma}-aminobutyric$ acid as the content of the other berries. Blueberry contained more free phenolic acid than the other berries. Especially, chlorogenic acids were the major free phenolic acids in blueberry. Black raspberry had the highest amount of polyphenols, anthocyanins, and flavonoids among the berries and showed the highest antioxidant activity.

Quality and antioxidant charactistics of Elaeagnus multiflora wine through the thermal processing of juice (과즙의 열처리에 따른 뜰보리수 과실주의 품질 및 항산화 특징)

  • In this study, the characteristics of alcohol fermentation using Elaeagnus multiflora juice were studied under static fermentation condition in an effort to develop new types of functional wine. After 9 days of fermentation at $25^{\circ}C$, the pH, soluble solids, reducing sugar, viable cell numbers, and alcohol contents were shown to be 3.32~3.33, $7.8{\sim}9.0^{\circ}C$, 29.84~31.05 g/L, 7.26~8.73 cfu/mL, and 11.0%, respectively. The heat treated juice exhibited significantly higher antioxidant activity than untreated juice while the soluble phenolic and flavonoid contents became higher. Also, the fermented wine after the heat treated at $120^{\circ}C$ for 30 min contained free sugar such as fructose (0.42 g/L) and glucose (0.09 g/L), major organic acids such as lactic acid (7.32 g/L), malic acid (2.59 g/L), succinic acid (2.16 g/L), and oxalic acid (3.08 g/L), and major flavanols and phenolic acids such as catechin (99.45 mg/L), epicatechin (264.55 mg/L), epigallocatechin (82.19 mg/L), gallic acid (6.44 mg/L), and salicylic acid (60.53 mg/L). In addition, DPPH radical and ABTS radical scavenging activities and FRAP assay results were 70.47%,, 65.93%, and 1.254, respectively. These results suggest that it is possible to produced a new type of wine using Elaeagnus multiflora fruits.

Comparison of Growth Characteristics, Antioxidant Activity and Total Phenolic Contents of Amaranthus Species according to the Different Cultivation Regions and Varieties in South Korea (안데스 작물 '아마란스'의 재배지역과 품종에 따른 생육특성, 항산화활성 및 총페놀함량 변화)

  • Yield, growth characteristics, free radical-scavenging capacities, total phenolic contents and free amino acids contents were determined in Amaranthus species grown in Korea. And this study was aimed to investigate the functional properties of Amaranthus in two regions(Gangneung and Daegwallyeong). Yield ranged from 125 to 465 kg $10a^{-1}$ and RRC 1027 was the highest yield. Amaranthus seed size was very small, average seed weight(1,000 seeds) varied 0.42~0.82 g, especially Kerala Red was the most light weight. In DPPH (1,1-diphenyl-2-picryl hydrazyl) radical scavenging activity, there is no significantly different between growing regions but colored Kerala Red was the highest among varieties. The total amount of phenolic compounds varied from 994 to 1,732 mg/kg. Among amino acids of seeds, the contents were in order of glutamic acid(30.5 mg $100g^{-1}$) > aspartic acid (26.1 mg $100g^{-1}$) > arginine(24.3 mg $100g^{-1}$). The present study shows that South Korea is suitable for the cultivation of Amaranthus. Common grains lack glutamic acid, aspartic acid and arginine we need for optimal health, but Amaranthus contains these amino acids. Amaranthus is great potential to develop new crop. But for measurement of antioxidant activity, in addition to DPPH method we are looking the other way.

  • Based upon the antioxidative effectiveness of ether extracts of defated Crataegus pinnatifida B., phenolic antioxidative components were separated by gel column chromatography and identified by MS and H-NMR. Two or three individual compounds were found in free, soluble and insoluble bound phenolic acids, respectively and they were identified as caffeic acid, protocatechuic acid, phloroglucinol and pyrogallol.

Changes in Carbohydrate, Phenolics and Polyamines of Pepper Plants under Elevated-UV-B Radiation (자외선 조사에 의한 고추 유묘의 탄수화물 합성과 항산화물질 변화)

  • Pepper plants (Capsicum annuum, cv. Manitta) were subjected to different intensities of UV-B radiation to understand alterations of primary- and secondary-metabolism such as carbohydrates, phenolic compounds and polyamines. UV-B doses with a UV-B lamp ($1.2W\;m^{-2}$) were adjusted between 0 to 9 hr. The soluble sugars and starch contents in pepper leaves were highly influenced by UV-B treatment. The soluble sugars altered from $6.7mg\;g^{-1}\;fw$ to $5.2mg\;g^{-1}\;fw$ after 9 hrs of UV-B exposure. The starch contents after 3 hrs of UV-B exposure changed from $17.7mg\;g^{-1}\;fw$ to $12.3mg\;g^{-1}\;fw$ and then remained unchanged. The absorbance of UV-absorbing compounds reached initially maximum at all wavelengths read. On the basis of this result, we analyzed total phenolics, anthocyanin and simple free phenolic acids. Anthocyanin and free phenolic acids responded sensitively with a steady increase during UV-B treatment, although anthocyanin contents declined highly after 3 hrs of treatment. Whereas, there is no alteration of total phenolics (as gallic acid equivalent) caused by UV-B. Free polyamine levels in leaves increased rapidly and highly when UV-B was treated. The most prominent changes in polyamine induction were putrescine and spermidine (+ 70 %) after 3 hrs and spermine (+ 150 %) after 6 hrs.

The Nutritional Composition of Bamboo Shoots and the Effects of its Fiber on Intestinal Microorganisms (죽순의 영양성분 및 죽순의 식이섬유가 장내미생물에 미치는 영향)

  • This study evaluated the composition two popular species of edible bamboo shoots in Korea (Phyllostachyspubescens and Sinoarundinarianigra) and the effect of their abundant dietary fiber on intestinal microorganisms in healthy young women. The ranges of total moisture, crude protein, crude lipid, crude ash, and dietary fiber content were 87.190.8, 2.943.5, 0.150.39, 0.411.05, and 4.206.15% (wet weight basis), respectively. Moisture and crude ash content increased after heat treatment; however, crude protein, crude lipid, and dietary fiber content were reduced after heating. The major minerals found in bamboo shoots were potassium, phosphorous, sulfur, magnesium, and calcium. In addition, glucose and fructose were abundant free sugars, while asparagine and tyrosine were the most abundant free amino acids. Approximately 70% of the total free fatty acids found in bamboo shoots were linoleic acid and linolenic acid. The ascorbic acid content was 6.60~17.56 mg/100 g (wet weight basis), and one phenolic compound, p-hydroxy benzoic acid, was 0.10.2% (wet weight basis) and detected by HPLC analysis. The intake of bamboo shoots for seven days significantly increased viable cell counts of Lactobacillus spp. and reduced viable cell counts of Bacteriodes spp. in feces (p<0.05). In our data, bamboo shoots may be useful in the food industry as high dietary fiber ingredients.

Nutritional Characteristics of Calystegia japonica (메꽃(Calystegia japonica)의 영양학적 특성)

  • In the present study, the proximate composition, sugar, minerals, total phenolic and flavonoid compounds, and amino acids in Calystegia japonica (C. japonica) were measured to determine if it can be used as a nutritional and functional material for the development of valuable foods. The mean crude protein, fat, and ash contents of the leaves were 5.75, 2.46, and 7.77%, respectively. The soluble-protein contents of the leaves and roots were 146.78 and 33.67 mg%, respectively. The reducing-sugar and free-sugar contents of the leaves were 682.70 and 166.00 mg%, respectively, and those of the roots were 2,934.89 and 37.70 mg%. The mineral content of the leaves was 3,122.13 mg%, and that of the roots was 1,540.85 mg%. The three elements Ca, K, and Mg were very rich in all their parts, with minerals accounting for 96-99% of their total mineral contents. The total phenolic compound of the leaves was 3,028.89 mg%, and the total flavonoid compound was 382.67 mg%. The phenolic and flavonoid compounds in the leaves were more than 7.6 times those in the roots. The free-amino acid levels in the leaves and roots were 2,467.15 and 1,334.81 mg%, respectively. The results of the comparison of the leaves and roots of C. japonica showed that the leaves had a rich proximate composition consisting of minerals, total phenolic and flavonoid compounds, and amino acid. This suggests that C. japonica leaves are potentially useful sources of functional and favorite foods and nutraceuticals.

Influence of Candide parapsilosis on the Changes in Various Components of Korea Red Ginseng Extract (Candida payapsilosis가 홍삼엑기스의 성분 변화에 미치는 영향)

  • The Quality characteristics of pH, ginsenosides, fatty acid, phenolic compounds were studied for their changes during growth of Candia parapsilosis. The yeast growth not only scarcely affected the total amount of saponins and ginsenosidvs of recd ginseng tail root extract, but also was not affected by the saponin C. pnrapsilosis did not utilize the ginsenosides as a carbon source. Glucose, fructose and free sugars were utilized in the initial phase of growth, whereas sucrose and maltose were used as the growth continued and completely redured after 43 hours of incubation. Unsaturated fatty acids were significantly reduced with cell growth, showing a relationship between unsaturated fatty acid content and the yeast growth, whereas the amount of saturate[1 tatty acids in red ginseng extract was not affected by the yeast growth. Generally, there were no changes in major organic acids and phenolic compounds (vanillie acid , m-coumaric acid) except the 50% reduction in maltol and ferulic acid in the ginseng extract. The amounts of amlno acids were gradually decreased, but that of arginine was remarkably reduced.

Chemical Composition and Bioactivity of Korean Green Tea (Camellia sinensis) Pollen collected by Honey Bee (한국 녹차 화분의 화학적 조성과 기능성 연구)

  • In this study, we investigated the nutritional composition including proximate, amino acid, vitamin, minerals, and the antioxidant activity of green tea (Camellia sinensis) pollen grains collected by Apis mellifera bees, for use as a health food. The crude protein and fat content was estimated at 26.14% and 3.49%, respectively. Eighteen amino acids were identified in green tea pollen, including 8 essential amino acids and 10 non-essential amino acids. The predominant amino acids were glutamic acid, proline and aspartic acid accounting for about 33.3% of total free amino acids. The concentration of vitamin C was the highest value of 35.7%, followed by $B_3$ and $B_2$ among the detected vitamins. The predominant minerals were potassium (790.32 mg/100g), followed by phosphorus (707.52 mg/100g) and sulfur (302.67 mg/100g), whereas copper, zinc and sodium were detected as minor elements. The antioxidant activity and phenolic content accounted for 33.8% at $500{\mu}g/mL$ extract and $2.55 {\mu}g/mg$, respectively.

  • Free radical-mediated cell damage and free radical attack on polyunsaturated fatty acids result in the formation of lipid radicals. These lipid radicals react readily with molecular oxygen to produce peroxy radicals responsible for initiating lipid peroxidation. The peroxidation of cellular membrane lipid can lead to cell necrosis and considered to be implicated in a number of pathophysiological conditions as well as in the toxicity of many xenobiotics. DPPH is known to abstract labile hydrogen and the ability to scavenge the DPPH radical is related to the inhibition of lipid peroxidation. (omitted)
