고려인삼엽차의 제조방법에 따른 화학성분 조성 (Effect of Processing Methods on the Chemical Composition of Panax ginseng Leaf Tea)

  • 인삼의 생산과정에서 부산물로 얻어지는 인삼엽을 건강 기능성 식품의 소재로 활용 가능성을 모색하기 위하여 인삼엽차를 건조법(DRT), 숙성법(AGT), 열처리법(HPT)등 3가지 방법으로 제조하고 화학적 조성의 변화를 조사하였다. 인삼엽차의 제조방법에 따른 일반성분 함량은 거의 유사하였으나 조지방, 환원당 함량은 HPT에서 감소되는 경향을 나타내었다. 유리당 함량은 DRT가 6.07%로 가장 많았으며 sucrose, fructose, glucose순이었다. 유리아미노산의 조성은 serine 이 309.6∼336.6 mg%로 가장 높았으며 valine, leucine, isoleucine, aspartic acid 순으로 그 함량이 높았고 DRT에 비하여 ACT, HPT에서 감소되는 추세를 나타내었다. 무기질 함량은 Ca 가 2,115 mg%로 가장 많았고 K, Mg, P, Na, Mn, Fe, Zn, Cu 순으로 제조방법 사이에 차이는 나타나지 않았으나 찻물의 무기질 함량을 좌우하는 침출율은 HPT가 가장 우수하였다. 특히 Zn, Mn, Mg등은 면역체계를 유지하며 체내 유해 활성산소의 제거에 관여하는 무기질로서 이들 함량이 높다는 점은 인삼엽차의 우수성의 하나로 평가된다. 인삼엽차의 총 비타민 C 함량은 HPT가 424.4 mg%로 가장 많았으며 침출율도 가장 높았다. 지방산 조성은 제조방법간 차이는 나타나지 않았으며 palmitic acid가 가장 높았고 linoleic acid, linolenic acid, oleic acid, stearic acid 순이었다. 한편 인삼엽차의 색도는 DRT에 비해 AGT, HPT 에서 L값이 감소하고 a값은 증가하여 갈색 물질의 증가를 나타내었다. 이상의 결과를 종합해볼 때 인삼엽차의 제조방법은 열처리법(HPT)에서 가장 우수한 품질을 나타낸 것으로 생각한다.

송순차 제조를 위한 송순 및 솔잎의 화학적 조성 (Chemical Composition of Pine Sprouts and Pine Needles for the Production of Pine Sprout Tea)

  • As a basic study for preparing pine sprout tea, chemical components in pine sprouts and pine needles were analyzed as follows: In proximate composition the contents of most components except for crude fat were different between in pine sprouts and pine needles. Moisture content in pine sprouts was higher than that in pine needles. Calcium and potassium were major minerals contained in pine sprouts and needles, and their contents in pine needles picked in December were higher than those picked in June. Soluble tannin and vitamin C contents in leaf part of pine sprouts were much higher than those in stem part and their contents in pine needles were increased according to their growth. Free sugars like fructose, glucose and sucrose were contained in both pine sprouts and needles, and their contents in pine sprouts were higher in stem part as compared that in leaf part. Although fourteen kinds of amino acids were detected in pine sprouts and pine needles, their contents were extremely low. Amino acid composition between pine sprouts and pine needles was different each other, but major amino acids contained in them were same, those are acidic amino acids such as aspartic acid and glutamic acid. Amino acid contents in pine needles were increased according to the growth. In fatty acid composition in leaf part of pine sprouts, saturated fatty acid contents were higher than unsaturated fatty acid contents, but in stem part unsaturated fatty acid contents were higher. In pine needles the amount of saturated fatty acid was increased with the growth, but the amount of unsaturated fatty acid was rather decreased.

부잠폐수의 성상과 유출 유지의 성분 (Features of Waste Water form By-Product Silk Treatment and Composition of Extracted Lipid)

  • 제사공정의 부잠사 처리폐수에 대하여 그 성상과 추출 유지성분을 분석한 결과 1. 부잠폐수의 COD 605mgO/$\ell$ 총 용존 고형물량 2,335mg/$\ell$ 총 부유 고형물량 2,234mg/$\ell$이었다. 2. 부잠폐수의 지질에는 triglyceride가 76.8%로 가장 많이 함유되었으며 유리 지방산 12.5%와 diglyceride 5.7% free sterol 5.0% 순이었다. 3. 부잠폐수지질의 지방산 조성은 oleic acid, linolenic acid와 linoleic acid의 함유율이 64.93%로 가장 많이 함유되어 있고 palmitic acid 29.39% stearic acid 4.93%의 순이었다.

Biochemical Composition of Muscle from Tanaka's Eelpout Lycodes tanakae, Magistrate Armhook Squid Berryteuthis magister, and Ocean Sunfish Mola mola, Caught in the East Sea, Korea

  • The biochemical composition of muscle from three deep-sea animals, Tanaka's eelpout Lycodes tanakae magistrate armhook squid Berryteuthis magister, and ocean sunfish Mola mola caught in the East sea in South Korea was determined. The moisture (81.4-93.8 g/100 g), crude protein (5.0-15.6 g/100 g), crude lipid (0.1-1.5 g/100 g), and ash (1.0-1.1 g/100 g) contents of the two fishes were analyzed. The proximate composition of magistrate armhook squid was: moisture 84.0 g/100 g, crude protein 12.4 g/100 g, crude lipid 0.7 g/100 g, and ash 1.5 g/100 g. There was little difference in the proximate compositions of the three animals. The total amino acid contents of Tanaka's eelpout, magistrate armhook squid, and ocean sunfish were 14.64, 10.75, 3.10-9.95 g/100 g, respectively. High levels of glutamic acid, aspartic acid, lysine, leucine, and arginine were found, while low levels of histidine, glycine, and cysteine were detected in the animals. A survey of the free amino acid contents of the animals revealed large amounts of alanine and glycine. Significant differences were found in the fatty acid composition among the three species. Specially, different saturated fatty acids (17.14-40.49%) such as C16:0, and C18:0, monounsaturated fatty acids (19.19-46.88%) such as C16:1, and C18:1, and polyunsaturated fatty acids (35.41-57.08%) such as EPA, and DHA was identified. Our results suggest that each of these deep sea animals possesses nutritional value and should be considered as a foodstuff.

만성적인 에탄올 섭취와 타우린보강이 흰쥐간의 총지방산 및 인지질지방산 조성에 미치는 영향 (Effects of Chronic Ethanol Consumption and Taurine Supplementation on Hepatic Total and Phospholipid Fatty Acid Compositions in Rats)

  • This study evaluated the effects of chronic ethanol consumption and/or taurine supplementation on hepatic total, phospholipid fatty acid composition and the metabolism of rats fed one of three purified liquid diets for 8 weeks. the rats followed either the control diet (CD, ethanol-free and taurine-free diet); ethanol diet (ED, CD+ 50g ethanol/L) or ethanol-taurine diet (ETD, ED+3.75g taurne/L). Chronic ethanol consumption and/or dietary taurine supplementation were associated with altered hepatic total and phospholipid fatty acid composition. compared to the values for the control rats, ED or ETD significantly decreased the percentage of total monounsaturated fatty acids ($\Sigma$MUFA), and increased the percentage of total polyunsaturated fatty acids ($\Sigma$PUFA) of hepatic total lipids(p〈0.01). Percentages of 14:0(P〈0.01) and 16:0(p〈0.001) were sigificantly lower, and those of 18:0(p〈0.01), 20:0(p〈0.001), 20:3$\omega$6(p〈0.01) and 22:4$\omega$6(p〈0.01) in hepatic total fatty acid compositions were oserved in rats fed ETD versus those fed ED or ETD. No significant differences in hepatic total fatty acid compositions were observed in rats fed ETD versus those fed ED. Percentages of 24:0(p〈0.01), 16:1(p〈0.05), 20:1(p〈0.01), 18:2$\omega$6(p〈0.01) and 18:3$\omega$3(p〈0.05) in hepati phospholipids were significantly higher, and those of 14:0(p〈0.01), 16:0(p〈0.001), 20:3$\omega$3(p〈0.05) in hepatic phospholipids were significantly higher, and those of 14:0(p〈0.01), 16:0(p〈0.001), 20:3$\omega$3(p〈0.001), 22:6$\omega$3(p〈0.001) and $\Sigma$$\omega$3(P〈0.001) were significantly lower in rats fed ED or ETD compared to the values for the control rats. The Δ5 desaturation index(20:3$\omega$6⇒20:4$\omega$6) and elongation index (20:5$\omega$3⇒22:5$\omega$3) of hepatic phospholipid index (20:3$\omega$6⇒20:4$\omega$6) and decreased Δ4 desaturation index (22:5$\omega$3⇒22:6$\omega$3) compared to the values for the ED rats. These changes in hepatic fatty acid composition induced by chronic ethanol consumption and/or taurine supplementation might be associated with the modulations of physical properties of the hepatic cell membrane and its sensitivity to peroxidation damage.

야생(野生) 고들빼기의 화학성분(化學成分)에 관한 연구(硏究) (Studies on the Chemical Compoments of Wild Korean Lettuce(Youngia sonchifolia Max.))

  • 전통적(傳統的)인 식품(食品)으로 이용(利用)되고 있는 고들빼기의 성분(成分)을 분석(分析)하였는데 뿌리에 함유(含有)된 유리당(遊離糖)으로 rhamnose, fructose, glucose, sucrose, maltose, melibiose, raffinose 7가지를 정량(定量)하였고, 잎에서는 raffinose를 제외한 6종(種)의 당(糖)을 정량(定量)하였으며 뿌리와 잎에 모두 fructose, glucose, sucrose가 유리당의 대부분으로 90% 이상이었다. 아미노산의 함량(含量)은 뿌리에 glutamic acid가 가장 많고 histidine, aspartic acid, leucine, proline의 순서로 많았으며 잎에는 역시 glutamic acid가 가장 많고 다음으로 aspartic acid, leucine, histidine순서이었다. Methionine과 cystine의 함량(含量)은 뿌리와 잎 모두 매우 적었다. 고들빼기 지질(脂質)의 주요 지방산(脂肪酸)은 palmitic acid, linoleic acid, linolic acid이며 불포화지방산(不飽和脂肪酸)은 뿌리에 65.35%이고, 잎에 78.00%이었으며 유리지질(遊離脂質)보다 결합지질(結合脂質)에서 많았다. 무기질(無機質)의 함량(含量)은 일반 채소류보다 많게 나타났으며 칼륨, 인, 칼슘이 많은 양(量) 함유(含有)되었다.

Comparative Study of Fatty Acid Composition and Characterization of Fixed Oil of Four Peanut Varieties Available in Pakistan

  • four varieties of ground nut (Arechis hypogea) were collected from different areas of Pakistan (Tillagang, Gujar khan, Hanoi and Pipplan) from Punjab province. The oils were extracted for the evaluation of lipid. Physico-chemical values of oils were determined like refractive index, peroxide value, unsaponifiable matter, acid value, iodine value, free fatty acid and ester value. The lipid profile as indicated by GLC showed that Palmitic acid ranged from 8.2-8.8%, proportions of oleic acid and linoleic acid varied from 57.8-59.87% and 22.5-24.1% respectively. Gujar khan variety of peanut has higher % age of oil (56.79). The higher yield of oil in this variety is not at the cost of any nutritional quality of peanut oil.

강원도산 잡화벌꿀의 유기산 및 지방산 특성에 관한 연구 (Organic Acids and Fatty Acids of Honey Harvested in Kangwon Area)

  • Physico-chemical properties including the composition of organic acids and fatty acids in native bee-honey and foreign bee-honey harvested in Kangwon area were studied with the emphasis on the honey which was collected form wild flowers nd mixed flowers sources for honey nectars. the major organic acids were considered as acetic acid formic acid and valeric acid in volatile acids and gluconic acid maleic acid malic acid quinic acid and citric acid in non-volatile fraction in both of native bee-honey and foreigr bee-honey. Some naturally occuring fatty acids({{{{ { C}_14{ } }}}}-{{{{ {C }_{20 } }}}}) were observed with the principal fatty acids of myristic aicd linolenic acid and palmitic acid and palmitic acid in the various honey, The characteristics of moisture content pH viscosity free acidity lactone and total acidity were also analyzed and discussed.

피조개 지질 및 지방산 조성에 관한 연구 (Studies on the Lipid and Fatty Acid Compositions of Ark-Shell, Anadara broughtonii)

  • 피조개 월별 생산량이 8~9월에 가장 많고, 피조개 소비는 여름철에 집중되고 있어, 여름산 피조개의 식품학적 특성을 구명하기위하여 불검화물함량, 요오드가, 지질조성 및 지방산조성을 분석하였다. 조지질함량은 0.83%, 불검화물함량은 20.19%였으며, 요오드가는 156.13이었다. 지질조성은 triglyceride가 59.46% 로 가장 높았고, 그 다음으로 diglyceride, hydrocarbon, sterol ester, free fatty acid, phospholipids, free sterol, monoglyceride의 순이었다. 총지질의 지방산조성의 경우, 함량이 특히 많은 것은 $C_{17 : 0}$, $C_{16 : 0}$, $C_{18 : 1}$ and $CT_{16 : 2}$, $C_{16:1}$로 이들 5종의 지방산이 전지방산의 66.55%를 차지하였다. 중성지질의 지방산조성의 경우, 함량이 특히 많은 것은 $C_{16 : 0}$, $C_{18 : 1}$, $C_{22 : 1}$로 이들 3종의 지방산이 전지방산의 52.93%를 차지하였으며, 극성지질의 경우는 $C_{16 : 0}$, $C_{18 : 2}$, $C_{20 : 5}$, $C_{22 : 6}$ 등의 4종의 지방산이 전지방산의 58.16%를 차지하였다. 구성지방산의 조성비를 비교하면, 총지질은 포화지방산> rnonoene 산>polyene산의 순으로 포화지방산이 가장 높았고, 중성지질은 monoene산>포화지방산> polyene산의 순으로 monoene산이 가장 높았고, 극성지질은 포화지방산>polyene산>monoene산의 순으로 포화지방산이 가장 높았다.e산의 순으로 포화지방산이 가장 높았다.

Quality Characteristics and Composition of the Longissimus Muscle from Entire and Castrate Elk in Korea

  • The objective of the research was to determine the chemical composition as well as the physicochemical properties of the longissimus muscle from Korean entire and castrate elk. Twelve elk stags were raised and fed on concentrate with ad libitum hay. All animals were equally divided into castrated and non-castrated (entire) males, and slaughtered at 5 year of age. It was found that entire elk, in comparison with castrate elk, had higher content of moisture and lower content of fat (p<0.05). Compared with entire males, the castrates had lower pH and shear force values (p<0.05). However, castrates had higher $L^*$, $a^*$, and $b^*$ values compared with entires (p<0.05). An analysis of the fatty acid profile revealed that the muscles of entire and castrate elk had the most abundant concentrations of the following fatty acids: palmitic acid (C16:0) of the saturated fatty acid, and oleic acid (C18:1n-9) of the unsaturated fatty acid. The entire elk contains higher proportions of linoleic acid (C18:3n6), eicosenoic acid (C20:1n9), and arachidonic acid (C20:4n6) (p<0.05). Cholesterol content in elk was not affected by castration. The predominant free amino acid was glutamic acid related to umami taste. It is apparent that the castrate animals carried higher content of histidine, isoleucine, and leucine than those of the entire group (p<0.05). In this study, it was concluded that venison quality of elk is affected by castration and these results can provide fundamental information for venison production.
