전북지역 영유아 보육시설의 급식관리 실태평가 (Assessment of Foodservice Management Practices in the Educare Centers in Jeonbuk Province)

  • Foodservice management practices in 52 educare centers in Jeonbuk province were evaluated in order to provide basic informations and guidelines for the standardization of foodservice management and facilities in the educare centers. The survey was conducted using the structured questionnaire. The results are summarized as follows: 1. Only 10% of the centers investigated had the stationed dietitian, therefore most of foodservice management was not conducted by a professional personnel. The average number of kitchen employees was 1.3 and significantly different with type(p<0.05) and size(p<0.001) of the centers, which was not enough to meet the regulation. 2. Menu planning was performed mostly(59.6%) by managers and teachers of educare centers. Food items were purchased(94.7%) and recieved(91.6%) by kitchen employees or center managers and teachers. Produced foods were also evaluated(97.7%) and distributed(100%) by kitchen employees or center managers and teachers depending on their experience without any supervision of the professional personnel for the mass production. 3. Among the centers studied, 84.6% of them conducted nutrition education programs regularly by teachers. About 77.3% of them evaluated that these programs did not accomplish the proper training for good food habit because of the lack of nutritional knowledge(54.5%) and educational media(27.3%). 4. In general, the hygienic maintenance was evaluated as fair state to need the improvement. 5. Kitchen facilities and equipments were similar to those of home cooking and did not meet the standards for institutional practices. Besides, automated machinery and tools for safety, sanitation and improvement of work efficiency were far short. 6. Log book for the foodservice management was not prepared properly, which made the systematic planning and operation of the foodservice facilities difficult.

초등학교 영양사의 학교급식 관리활동수준과 직무만족도의 관계 (Relationship between Levels of Dietitians' Management Activities and Job Satisfaction in Elementary School Foodservice Operations)

  • The purpose of this study was to identify the relationship between the levels of foodservice management activities and job satisfaction of the dietitians in elementary schools. Out of 130 questionnaires distributed to elementary school dietitians in Incheon, 127 were returned and analyzed ($98\%$ response rate). The questionnaire included two multiple-item scales for measuring foodservice management activities and job satisfaction, respectively. All the items in the scales were coded 1 to 5 for 'certainly no', 'no', 'neutral', 'yes', and 'certainly yes' and grouped by using factor analyses. Most of the responding dietitians were working for schools in urban areas and have independently managed on-site kitchens. The 19 items on food service management activities were grouped into 6 factors and the mean scores of the levels of Personnel Hygiene Management, Education & Training, Sanitation & Safety Management, Menu Quality Management, Service Management, and Environment Management were 4.76, 4.26, 4.24,4. 05, 3.61 and 3.39, respectively. The 23 items on job satisfaction were grouped into 4 factors and the mean scores of the satisfaction levels of Systematic Environment, Job Duty, Job Condition, and Physical Environment were 3.38, 2.83, 2.53, and 2.08, respectively. Overall, the levels of food service management activities and job satisfaction were positively associated with a correlation coefficient of 0.254 (p > 0.01). In particular, satisfaction levels on job duty itself and systematic environment were positively associated with the levels of overall management activities. The results suggest that improving dietitians' job satisfaction could increase the levels of management activities of school foodservice dietitians, resulting in quality improvement of school food service.

다점포 운영 푸드서비스 기업의 효율성 측정에 관한 연구 - DEA 및 효율, 수익 매트릭스 분석을 중심으로 - (The Analysis of Contract-Foodservice Operational Efficiency using Data Envelopment Analysis and Efficiency-Profit Matrix)

  • The research aimed to measure the efficiency of using multi stores in a foodservice company using by DEA (data envelopment analysis) which is a new management science technique. The study also attempted to identify relevant variables affecting DEA efficiency in order to suggest methods for improving efficiency. The data were collected from 148 contract foodservice operations, which were operated in similar fashion in October 2009. The DEA efficiency was calculated as an output-oriented BCC Model. Sales, and CSI (customer satisfaction index) were used as output variables whereas food cost, labor cost, and management expense were used as input variables to calculate the DEA efficiency. Operation process variables of the unit consisted of the were consist of ratio of regular employee, ratio of housekeeper, meal counts, meal price, food cost per meal, contract period, number of menu items, forecasting accuracy, order accuracy, inventory turnover, use of processed food, deviation of food cost, number of new menus, and number of events. According to the BCC score and profitability, units were classified into four groups: High efficiency-high profitability (HEHP), High efficiency-low profitability (HELP), Low efficiency-high profitability (LEHP), and Low efficiency-low profitability (LELP). The HEHP group contained 54 units, which mostly contracted management fee type and had a high meal price. The units were also very large and, served three meals. Twenty of the units were operated with high labor cost: most of these were factories and hospitals. The LEHP group contained 20 units, that were mainly office stores of large scale and medium price. Fifty-four LELP group had a low meal price. A high performance group must have high efficiency, profitability, and satisfaction. The BCC score was over 0.969, the meal price was over 4,116 won, the food cost was over 2,077 won, and meal counts per month were over 10,212 meals.

병원급식에서 Ready-Prepared Foodservice System 이용에 관한 연구 (A study for the utilization of ready-prepared foodservice system concept to the Korean hospital foodservice operations)

  • Here is a research on hospital foodservice system, when korea traditional food of pyeon yuk and bin dae deok were used by ready-prepared foodservice system, it was estimated the preservations of microbiological quality and sensory quality. All data collection was replicated three times. The results were as following; 1. In time and temperature data, two menu items were needed internal temperature below $7^{\circ}C$ in a cooling stage, and in the case of cook/chill storage, the days were shortened within weeks, and the holding time must be possiblely minimized. Finally foods were served sanitary. 2. In view of microbiological safety, in the case of cook/chill storage as $0{\sim}4^{\circ}C$ the days must be shortened within 2 weeks and its was possible to store until 6 weeks in $-20{\sim}-23.3^{\circ}C$. So to preserve pre-cooked food longly, it was effective to freeze them quickly by using vacuum package and to reheat them by a microwave oven before serving and to serve lastly in microbiological quality. 3. Hospital ready-prepared foodservice system with food storage in plastic bags, biochemical test of C. Perfingens C. botulinum and Salmonella were not detected. 4. By using of a microwave oven, it had effects of thawing, reheating and sterilizing of chilled and frozen foods in a short time. 5. Sensory evaluations were made by a 10-member panel using five scoring tests. Because sensory of quality was lowered in the case of chilled storage, it was possible to serve foods within 2 weeks. Texture and aroma were preserved by cook/frozen system and usually there was no significance from 4 weeks until 6 weeks, but considering of the objects, it was good to store until 4 weeks in sensory quality.

경북 일부 어린이급식소에서 제공되는 간식의 섭취형태 및 당 함량 조사 (Investigation of Intake Patterns and Sugar Content of Snacks Provided at some Children's Cafeterias in Gyeongbuk)

  • The purpose of this study was to analyze the amount of sugar from the afternoon snack menu of childcare facilities in Gyeongsangbuk-do. The amount of sugar was analyzed for afternoon snacks provided by childcare facilities between March and April 2016. The snacks provided were the same for processed and non-processed foods at 50.0% respectively. White milk accounted for the largest portion with 26.4%, followed by fruits with 19.9% and grains (sweet potatoes, rice cakes, etc.). It has been confirmed that the larger the facility, the lower the frequency of provision of non-processed foods, and the higher the provision of processed foods (p<0.05). Snacks served as non-processed foods showed the highest frequency of fruits and sweet potatoes. On the other hand, processed foods provided many sugar-rich products, such as liquid yogurt, hot cakes, and cereal, excluding white milk. The average sugar content was highest in processed milk products (13.9 g), followed by white milk (8.6 g), bread and snacks (8.0 g), other (4.6 g), and mixed grains (1.6 g). Of the total 216 snacks, banana flavored milk had the highest sugar content of 27.0 g, followed by strawberry milk (15.0 g) and castella (21.6 g). The findings are expected to be used as basic data for choosing the right snacks provided by childcare facilities and practicing reducing sugar intake.

가정간편식 제품 개발을 위한 소비자의 요구도 및 선택속성의 중요도-만족도 분석 (A Study on Domestic Consumers' Needs and Importance-Performance Analysis of Selective Attributes for Developing Home Meal Replacement (HMR) Products)

  • Purpose: This study conducted an Importance-Performance Analysis (IPA) of selective attributes of Home Meal Replacement (HMR) as well as it examined the consumers' needs and willingness to buy HMR products to explore the need for developing more HMR products. Methods: This study was conducted among domestic consumers living in Seoul and its metropolitan areas, in the age range from the 20s to the 50s, and who had experience in purchasing HMR products. From the 490 surveys retrieved, 472 (96.3%) valid surveys were analyzed. Results: The analysis of the frequency of consuming HMR products showed the following results: 247 respondents answered '1-3 times a month' (52.3%); 167 respondents stated '1-2 times a week' (35.3%). With respect to the reason of purchase, 'simplicity of the recipe' was the most common, accounting for 188 respondents (39.8%), followed by 'time efficiency' accounting for 172 respondents (36.4%). Analysis of the demand for bibimbap (mixed rice) HMR products showed that 'chicken bibimbap' had the highest preference with 5.32 points, followed by 'bulgogi bibimbap' (5.08 points), and 'kimchi bibimbap' (4.96 points). In the case of HMR products that need to undergo further development, 'low-sodium products' received the highest points of 5.41 points, followed by 'small packaged products' (5.05 points), and 'functional products' (4.98 points). The factor analysis of the 13 selective attributes showed that they can be divided into 3 factors. The IPA analysis of the selective attributes of HMRs showed 'hygiene', 'taste', 'easy to go packaging', 'convenience in intake', and 'accessibility' in the 1st quadrant. In the 2nd quadrant, 'price' and 'freshness' were shown as the factors. In the 3rd quadrant, 'easy to serve', 'familiar food menu', and 'consistent menu' were shown as the leading factors, and in the 4th quadrant, 'saving labor' was the only factor. Conclusion: Based on these results, the research concludes that with respect to developing HMR products, there is a high demand for low sodium, low calorie, small packaged products; thus, showing the need to develop various HMR products for customer satisfaction. Furthermore, it shows that there is a need to consider developing HMR products that can maintain freshness at an affordable price.

전북지역 어린이급식관리지원센터에서 제공하는 어린이집 간식메뉴의 유형, 식품 다양성 및 학부모 만족도 연구 (Study on the snack menu pattern, food diversity and satisfaction of parent provided by Center for Children's Foodservice Management in Jeonbuk area)

  • 본 연구는 전북지역 어린이급식관리지원센터에서 어린이집에 제공하는 2,432개의 간식메뉴의 유형과 학부모대상으로 간식의 품질특성에 대한 중요도와 수행도를 파악하고, 품질특성 간의 영향력을 조사하였다. 오전간식 메뉴의 79.1%는 1 품목, 오후간식의 59.1%는 2 품목, 메뉴의 스낵 음료 조합패턴은 오전간식은 F 66.1%, F+B 18.7%, 오후간식은 F+B 60%, F 40.1%이었다. 식품군별 제공비율 분석결과, 곡류는 오후간식의 87.2%, 채소류와 과일류의 오전간식 비율은 각각 21.7%, 42.4%, 고기 생선 달걀 콩류의 오전과 오후간식 비율은 15.9%, 15.7%, 우유 및 유제품류의 오전과 오후간식 비율은 34.1%, 36.6%이었다. 오전간식의 72.6%는 비조리, 오후간식은 85.6%가 조리메뉴이었다. 식품군패턴 분석결과, 오전간식은 F (31.6%), D(12.0%), F+D (10.1%), G (7.9%)의 순이며, 오후간식은 G(34.4%), G + D (27.4%), G + V (8.2%), G + M (6.3%)의 순이었다. 식품군 점수 (DDS)는 오전 1.46점, 오후 1.67점이었다. 식품군별 다빈도 메뉴품목 분석결과, 곡류는 오전 간식으로 죽류 51.8%, 오후간식은 밀가루 식품류 (34.5%), 빵류 (25.9%)이며, 고기 생선 달걀 콩류는 오전에 육류(28.7%), 콩류 (24.5%), 견과류 (23.6%)이며, 오후는 가공육류 (30.2%), 어패류 (24.3%)이었다. 채소류 중 숙채소는 오전 67.8%, 오후 86.0%이며, 과일류는 오전에 과일류(99.3%), 오후에는 주스류 (67.9%), 우유 및 유제품류는 주로 우유 (오전 71.6%; 오후 82.5%)이었다. 학부모들의 간식메뉴에 사전 인지수준은 5점 기준 4.09점, 자녀가 영아, 국 공립어린이집일 때 사전 인지수준이 높았다. 어린이집 간식에 대한 전반적인 만족도는 5점 기준 4.06점, 직업이 있는 경우, 영아 및 국 공립어린이집일 때 만족도가 높았다. 간식의 19개 품질특성의 전체 중요도 4.42점, 전체 수행도 4.25점 이었다. 중요도가 가장 높은 특성은 '식재료의 위생' (4.79)이며, '제공 시간' (4.04)이 가장 중요도가 낮았다. 수행도는 '식재료의 위생' (4.38)이 가장 높으며, '제공 양' (4.13)이 가장 낮았다. 간식에 대한 전반적인 만족도에 미치는 관련변수들의 상대적 영향력 분석결과, 1단계에서 설명해주는 변인은 '주 메뉴와의 균형' (${\beta}=0.219$, p < 0.05), 설명력은 33.1% (F = 11.662, p < 0.001)이었다. 2단계에서 위생특성 투입에 따른 총 설명력은 35.9%(F = 3.372, p < 0.05)이었다. '종사자의 위생'의 영향력이 가장 크며 (${\beta}=0.245$ p < 0.05), 그 다음은 '주 메뉴와의 균형' (${\beta}=0.208$, p < 0.05), '제공 양' (${\beta}=0.176$, p < 0.05)의 순이었다. 이상의 결과, 전북지역 어린이급식관리지원센터는 아동의 등원시간 및 활동정도를 고려하여 오전과 오후의 간식메뉴를 구성하고 있으며, 이에 대한 학부모들의 만족도는 높았으나 메뉴구성 가이드라인과 비교할 때 메뉴의 다양성에서 개선이 필요하겠다. 따라서 향후 지역의 거점센터를 중심으로 간식메뉴 구성을 위한 기준마련이 필요하겠다.

군 급식소의 이용실태 및 만족도 조사 (Measuring Attitudes and Satisfaction Level towards Military Foodservices)

  • 본 연구는 군장병과 급양관을 대상으로 군 급식에 대한 이용실태, 인식 및 급식품질에 대한 중요도 및 수행도와 전반적인 만족도를 분석함으로써 향후 군 급식의 질 향상에 기초가 되는 자료를 제공하고자 하였다. 조사대상 군장병의 계급은 일병 32.6%, 상병 116명 29.3%, 병장 22.5%이었고, 연령은 20~25세 미만이 96.0%로 가장 많았으며 학력은 대부분(84.6%)이 대학 재학 중인 것으로 나타났다. 조사대상 급양관 중 남성이 92.3%, 여성은 1명 7.7%이었고 조사대상군 급식소는 직영으로 운영되고 있었으며, 조사대상 급양관은 영양사 자격증을 소유하고 있지 않았다. 식단계획은 지역 급식회의를 통해 메뉴선정이 되었고 군급식소의 배식방법은 부분적 자율배식을 실시하는 곳이 53.8%, 자율배식을 실시하는 곳이 38.5%이었으며, 메뉴작성 주기는 한 달에 1번작성하는 곳이 69.2%이었다. 조사대상 군장병의 식사시간은 10~20분 이내가 58.3%로 나타났고, 잔반이 많은 끼니는 아침(62.4%)이, 많이 남기는 잔반으로는 국(66.9%)과 반찬(20.2%)으로 나타났다. 급양관 대상 군 급식 운영에 대한 의견 조사 결과 급식 운영 시 어려운 사항으로 급식시설의 부족 및 노후화(28.6%)가 가장 높은 응답률이었고, 취사병수의 부족(14.3%), 숙달된 취사병 부족(10.7%) 등이 있었다. 취사병관련 개선사항에 대해 작업량에 적절한 취사병 수의 배치(46.2%)가 가장 높은 응답률이었고 작업 활동의 능률성향상(30.8%)과 취사병의 청결한 복장 및 외모(23.1%) 등이 있었다. 군장병의 급식의 질 향상을 위한 고려사항으로는 음식의 맛이 40.6%, 배식량 증가가 30.4%, 위생상태 개선 13.6% 등이 요구되는 것으로 나타났다. 군장병이 군 급식으로 선호하는 조리법은 볶음류(45.7%)와 튀김류(25.8%)였으며, 선호하는 식재료의 종류로는 육류(78.5%)가 가장 높은 응답률이었다. 식단에 대한 희망사항으로는 양식메뉴의 증가(25.7%), 한식메뉴의 증가(21.5%)로 나타나 식단메뉴의 다양화를 요구하는 것으로 나타났다. 군 급식의 39개 속성의 품질특성과 이를 구분한 5개 영역으로 군 급식에서 제공되는 급식의 품질특성에 대한 중요도와 수행도를 평가한 결과 속성과 영역 모두에서 중요도가 수행도보다 높게 평가되어 모든 품질에 대해 개선이 요구되는 것으로 나타났다. 중요도 점수가 가장 높은 속성은 위생영역의 음식위생(평균 4.59점)이었고, 음식영역의 '음식의 외관'이 평균 3.70점으로 가장 낮았다. 수행도 점수가 가장 높은 속성은 시설영역의 '식단의 사전 공지'(평균 4.09점)이었고, 메뉴영역의 '다양한 메뉴'가 평균 3.28점으로 가장 낮았다. 또한 '음식의 신선도', '음식의 간', '냉 난방의 적절성', '음식의 맛', '환기'로 중요하다고 판단되지만 잘 수행되지 않는 것으로 나타났다. 전반적인 만족도는 평균 3.43점(5점 만점)으로 보통 수준의 만족도 점수를 나타냈다. 따라서 음식의 맛 개선, 메뉴관리의 체계화, 위생관리 향상 등을 통한 군 급식의 질적 향상을 위해 전문적인 지식과 자격을 갖춘 영양관리직 군무원의 인력배치가 요구된다. 또한, 식단의 조리법을 다양화하고 음식의 맛 향상과 조리시간 단축을 위해 급식 시설부족 및 노후화의 개선이 요구되며, 중요하게 생각하지만 군대 급식소에 의해 잘 수행되지 않는 것으로 나타나고 전반적인 만족도에 영향을 미치는 '음식의 맛' 속성 질적 개선을 위해 식단의 질적 개선이 요구된다. 또한 군 급식비는 국방부 전체 예산의 4.3%로 타 예산 항목대비 감액 편성되고 있으나 군장병의 기호도를 반영한 영양적으로 균형 있는 급식제공을 위해서는 군장병의 급식 재원의 확대가 필요할 것으로 판단된다.

외식상품학의 학제적 접근방법 연구 (Study on the Interdisciplinary Approach of Food Merchandise)

  • The method of study generally includes multi-disciplinary studies, inter-disciplinary studies, cross-disciplinary studies and trans-disciplinary studies by Meeth. In the study of food, however, it can be used intersectionally or step by step. The purpose of this study was to research the types of related studies and define the food merchandise using the multi-disciplinary and inter-disciplinary studies. The food merchandise was defined all things considered menu; it was the academic system about menu design, reengineering and analysis. It constructed social science system and independent research system in holding peculiarity and speciality of it. Then, its own research field was gradually created as the practical and scientific method. Finally, further study about it will be progressed not in the merchandise but in the social science from now on.

외식 프랜차이즈 본점-가맹점간의 서비스 품질 만족도에 관한 연구 (A Study on Service Quality Satisfaction in Franchisor-franchisee)

  • The purpose of this study is to examine the service quality satisfaction in the franchisor-franchisee relation. For the result of this study, we studied the franchisees' answers to the questionnaires about franchisors' service quality. Through this study, we showed the basic data about the selective criteria of the franchisors' service quality. Based on this study, it can be concluded that there are differences in their service quality. The most effective factors of the franchisor's service quality are personnel service(0.510) and menu service(0.390). The finding is $R^2$ -0.489. Therefore, franchisor should pay attention to competent labor service and new menu development. Each factor affects satisfaction with franchisee's service quality, but only convenience and location are not affected.
