Usage Frequency and Importance of Competencies Required to Restaurant Industry Professionals (외식산업 전문인력의 역량 유형별 사용 빈도 및 중요도 인식 분석)

  • The purpose of this study was to analyze usage frequency and importance of competencies which are required to restaurant industry professionals. For this purpose, opinions of restaurant industry professionals on the competency were surveyed using questionnaires. To develop a questionnaire, a total of 27 competency variables which are required to restaurant industry professionals were drawn through literature review. Questionnaires were distributed to 300 professionals in restaurant industry with different positions using random sampling. Out of 300 questionnaires, 221 questionnaires were used for analysis. Statistical analysis was conducted using SPSS 10.0, including descriptive analysis, ANOVA and t-test. Reliability test and factor analysis were also conducted to evaluate the reliability and validity of the questionnaire. As a result, 'attitude and personality' factor was recognized as the most frequently used and the most important competency factor of restaurant industry professionals. Therefore, the competency such as 'sincerity', 'responsibility', 'sense of honesty', 'positive attitude', 'tolerance and justice', should be more emphasized in restaurant management education. The level of current usage and importance of each competency were different according to age, education level, working experience, position, number of employees, type of restaurant and type of management.

Content Analysis of the Questionnaires Used in Dietary Surveys (식생활 조사연구에 사용된 설문지의 내용 분석)

  • The purpose of this study is to analyze the contents of the questionnaires used in dietary surveys and to evaluate each item in relation to the item construction strategy. Articles of which the contents were related to food, nutrition, diet, dietary behavior, and related areas. Published from 1997 to 1999 were searched fir and a total of 121 questionnaires were collected and analyzed. The questions in the questionnaires were classified into related areas and sub-areas. Among the keywords in the title of the articles, the term 'nutritional status'(or 'dietary intake status') was most frequently used. The terms such as dietary status, obesity, health, food habit, and dietary behavior were also frequency used. Major topics of the items in the questionnaires varied according to the life cycle of the subjects of the study. The topics most frequently asked in each lift cycle were as follows : overeating, snack, and food preference for preschool- and school-aged children ; anthropometry, weight control, and snack for middle and highschool students : meal skipping, smoking, and drinking for college students : disease, smoking, drinking, and exercise for adults : and smoking, drinking, disease and perceived health for the elderly. Inappropriate questions with complicated language, typographic and grammatic errors, unnecessary words, and negative questions were found. Therefore, care should be taken to construct each question so as to avoid possible misinterpretation. Also, a standardized questionnaire be developed for survey researchers.

Dietary Macronutrients and $VO_{2}$ by BMI among Female College Students in Seoul (서울지역 여대생의 BMI에 따른 영량 영양소와 산소섭취 실태)

  • This study was conducted to investigate dietary macronutrient and $VO_{2}$ by BMI The subjects consisted of 50 female college students. They were divided into three groups: Below BMI 18.5 kg/$m^{2}$ (n = 9), BMI 18.5 - 23 kg/$m^{2}$ (n = 28), above BMI 23 g/$m^{2}$ (n = 13). Health-related questionnaires, dietary macronutrients, macronutrient compositions, food frequency questionnaires, body compositions and $VO_{2}$ were studied. Macronutrient compositions that macronutrient intakes were expressed by the percentage of daily energy intakes. There were significant differences in body fat, percent of body fat, and fat distribution by BMI Also, significantly increasing of basal metabolic rate (BMR) was shown by BMI, but BMR per body weight was decreased by BMI Overall, there were no significant differences in health-related questionnaires, food frequency questionnaires (FFQ), dietary macronutrients and $VO_{2}$ by BMI but salty taste preferences and carbohydrate intakes, FFQ of beans, white vegetables rand, yellow-green vegetables in the above BMI 23 g/$m^{2}$ group were significantly higher than other groups. There were no significant differences in macronutrient composition but the lipid composition of subjects was shown above $20\%$. Also, energy intakes of subjects were shown to be low; especially the below BMI 18.5 kg/$m^{2}$ group was very low ($55\%$ of RDA). Significantly positive correlation was found in BMR and body composition such as skeletal muscle & lean body mass, but significant correlation was not found in BMR and dietary macronutrients. Overall, researched energy metabolism factor was not different by BMI Only in the BMI 18.5 23 kg/$m^{2}$ (normal) group, significantly positive correlation was found in $VO_{2}$peak and body fat oxidation. Therefore, proper nutritional education for female college students is needed in order to improve their obesity-related health. Moreover, a nutritional survey method of finding diverse factors that affect their health should be developed to meet various needs.

Study on th Agreement of Food Frequency Questionnaires According to the Methods of Collecting Portion Size (섭취분량 설문형에 따른 식품섭취빈도조사법의 일치도 연구)

  • Agreement between open question and closed question on portion size of a food frequency questionnaire was assessed for the influence by the restricted choices in closed question on estimated nutrient intakes and agreement of ranking individuals. Dietary intakes of 361 subjects in a rural country, Yang-pyeung Gun were obtained using a interview method. The results are as follows ; 1) Nutrients intakes calculated from closed question on portion size were lower than those calculated from open question on portion size. 2) For most nutrients the percentage of Korean RDA were significantly lower with closed question than open question. 3) Correlation coefficient of nutrient intakes and food intakes obtained by two methods were higher than 0.6 for all nutrients and food items. 4) For each nutrient, misclassification into extreme quartiles was less than 1 percent. 5) These data indicate that closed question on portion size can provide the corresponding information as open question if food frequency questionnarie is used for the ranking of individuals.

A Study on Nutrient Intake and Food Consumption by Food Frequency Questionnaire According to the Obesity Index of Women College Students in Kunsan. (군산시 일부 여대생의 비만도에 따른 영양소 섭취와 식품섭취빈도)

  • The purpose of this study was to compare nutrient intake and food consumption by food frequency according to the obesity index of women college student in Kunsan. The subjects were 251 women college students who were randomly selected from Kunsan national university. Subjects were assigned to one of the following group based on BMI : underweight, normal weight and overweight. Nutrient intake and food consumption by food frequency were evaluated based on questionnaires and 24 hour recall method. The results were as follows. %RDA of calcium, iron and zinc of obese group were more than the underweight group(p<0.05). %Fat was significantly correlated with the daily intakes of protein and vitamin E(p<0.05). %Fat was significantly correlated with %RDA of energy, protein, vitamin E, vitamin B$_{6}$. RBW was significantly correlated with %RDA of iron. BMI was significantly correlated with %RDA of energy, calcium, phosphorus. The foods frequently consumed among students were cooked rice and gimchi. The frequencies of fish and mushroom were correlated with food behavior scores(p<0.01). The frequencies of carbonated beverage(p<0.01), hamburger & piazza, deep fried foods(p<0.01), soybean curd fried fish cake(p(0.05) were correlated with nutritional knowledge scores.

Interrelations Among Fast Food, Beverage Intake and Sociality, Anger Expression of Adolescents in the Busan Area (부산지역 일부 청소년의 패스트푸드, 음료 섭취와 사회성, 분노 표현과의 관계)

  • The purpose of this study was to investigate the relation of the fast food and beverage intake on sociality and anger expression of adolescents. Questionnaires were distributed to the adolescents of 599 middle and high school students in Busan. According to the results, the preference-intake frequency analysis (PEA) on fast food grid, high preference and high intake frequency were 'dukbokki', 'chicken' and 'mandu' and low preference and high intake frequency were 'ramyon', 'gimbab. PEA on beverage grid, high preference and high intake frequency were 'milk-dairy product', 'fruit juice', 'isotonic beverage' and low preference and high intake frequency were 'carbonate drink'. The intake frequency of 'pizza', 'sandwich', 'udong', and 'dukbokki' had a positive relationship with sociality. 'Hamburger', 'chicken', 'french fry', 'gimbab', 'mandu', and 'ramyon' showed a positive relationship with anger-out. The intake frequency of 'carbonated drink' had a negative relationship with anger-control, but 'green tea' showed a positive relation with it. 'Carbonate drink', 'isotonic beverage', 'coffee', and 'milkshake' had a negative relationship with anger-out. The explanation power ($R^2$) of intake of fast food and beverage on sociality was $0.019{\sim}0.038$, and 'carbonated drink' and 'coffee' had a negative influence on sociality. The explanation power ($R^2$) of intake of fast food and beverage on anger expression was $0.011{\sim}0.041$, and 'carbonated drink' had a negative influence on angercontrol. 'Hamburger', 'carbonated drink', and 'coffee' showed a positive influence on anger-out. From these results, it was necessary to develop the practical eating-out habits program on proper fast food and beverage choice for adolescents.

A Study on Dietary Habits and Food Frequency of Young Children Who Like Sweets (당류편식 아동의 식습관 및 식품섭취패턴)

  • The objective of this research was to assess the dietary habits, food frequency, and nutrition knowledge of young children who like sweets in the Busan area; the study was conducted using survey method with questionnaires. One hundred eighty three children, aged 8 to 9 years, were divided into two groups: the sweet preference group (SPG) and the control group, based on the subjects' scores for sweets-related dietary habits, sweets preference, and sweets frequency. For dietary habits, the score for eating more snacks than meals was significantly higher in the SPG group than the control group. The SPG group members were also more likely to skip breakfast, have irregular meals, and consume instant and fast food more frequently (p<0.001) than the control group. Nutrition knowledge scores for proper snack intake and proper dietary attitude were significantly lower in the SPG than in the control group (p < 0.05). With regard to food frequency, the SPG consumed more bread, cake, chicken, ham, sausage, hamburger, and ice cream, but less fish, tofu, beans, kimchi, bean sprouts, and milk than the control group. Strong positive correlations were noted between sweets preference, sweets frequency, and sweets-related dietary habits, whereas all of them were correlated negatively with nutritional knowledge. Sweets frequency was related negatively to meal regularity, having breakfast, eating the adequate amount of meals, and recommended food frequency.

Teachers’ Meeds Assessment on Food/Nutrition of Secondary Home Economics Education for Three Systems of Action (세 가지 행동체계에 따른 중.고등학교 가정교과 식생활 내용에 대한 교사의 요구 조사)

  • The purpose of this study was to provide fundamental information for the determination on secondary Home Economics educations contents on food/nutrition. For this purpose, the Home Economics teachers’needs assessment was performed in view of three(technical, interpretive, emancipatory) systems of action. Questionnaire survey was performed. Among 564 questionnaires sent to Home Economics teachers of 396 secondary school selected by systemic random sampling 362 questionnaires were received and 335 questionnaires were analyzed for this study. As a statistical tool, SPSS/PC(sup)+ was used to analyze frequency, mean, standard deviation, T-test and ANOVA. The major findings in this study were as followings: 1. The most important system of action Home Economics teachers recognized on the contents of food/nutrition was interpretive action, followed by emancipatory action. Technical action was turned out to be the least important system of action. 2. Home Economics teachers recognized that the content of interpretive action was the most achieved action in the text book. The least achieved action was emancipatory action, and the middle was technical action. 3. The needs related to contents of emancipatory action was the highest, followed by interpretive action. The lowest needs was the contents related to technical action. 4. Home Economics teacher’s personal background and situation variables make no difference in the importance, achievement in the text book, and the needs of food/nutrition contents.

Bone Health-Related Nutritional Knowledge and its Association with Calcium-Related Dietary Behaviors and Nutrition Education of Women in their 20s and 30s (경기지역 20~30대 여성의 골 건강 관련 영양지식 수준과 칼슘 섭취 관련 식행동 및 영양교육과의 연관성)

  • Osteoporosis is a major health problem confronting middle-aged women today. Enhancing calcium intake in early adulthood can increase the rate of calcium gain in bone. In this study, we investigated the association of bone health-related nutritional knowledge levels with calcium-related dietary behavior and nutrition education among women. Data were collected using questionnaires from 347 women aged 20~30 residing in Gyeonggi-do. Subjects were categorized into two groups according to their bone health-related nutritional knowledge (high or low-knowledge group). Knowledge related to bone health and calcium, and dietary habits was assessed, and the preference for and intake frequency of calcium-rich food were collected and analyzed using food frequency questionnaires. The high-knowledge group showed a significantly higher rate of nutritional education experience (33.9%) when compared with the low-knowledge group (18.9%). Not only were the perceptions regarding milk and dairy products more positive in the high-knowledge group (P<0.05), but the intake frequency of calcium-rich foods, such as tofu, soybean, and anchovies, was also higher in this group compared to the low-knowledge group (P<0.05). Overall, the preference for all calcium-rich foods was positively correlated to their intake frequency (P<0.05). Nutrition education experience and the recognition of the need for such education were positively correlated with the bone health-related nutrition knowledge score (P<0.05). In conclusion, bone health-related nutritional knowledge can affect calcium-related dietary behavior and increase the intake of calcium-rich food of 20~30-year-old women and this can contribute to the prevention of osteoporosis. To improve bone health-related nutritional knowledge among young women, it may be important to provide nutrition education.

The Relationship between Food Safety-oriented Policy and Customer Satisfaction, Cost Reduction, Customer Prior Occupation, Prevention of Food Safety Accidents in Foodservice Industry (외식 산업의 식품 안전 지향 정책과 고객 만족, 비용 절감, 고객 선점, 식품 안전 사고 예방간의 상관 관계)

  • The purpose of this study was to explore the relationship between the food safety-oriented policy and the survey on its effect in foodservice industry. The current thesis was based on the questionnaire survey conducted between January and March 2006 for seven food service companies. 240 questionnaires were distributed to each of the selected restaurants, from which a total of 200 questionnaires were collected. The results of this study were analyzed with the frequency analysis, correlative analysis and regression analysis using the SPSS 12.0 package program. The results of the test of hypotheses can be summarized as follows. We find that, as for food safety-oriented policy factors, there is a significant relationship among the survey factors including customer satisfaction, cost reduction, customer prior occupation, accident prevention and suitable relation. The current analysis exhibits favorable results in the food safety-oriented policy and the survey factors. Thus, foodservice management needs to employ food safety-oriented policy aggressively.
