성인 남녀의 식사성 발열효과 및 식후 영양소 산화율 (Thermic Effect of Food and Macronutrient Oxidation Rate in Men and Women after Consumption of a Mixed Meal)

  • The purpose of this study was to investigate the effects of gender on the thermic effect of food and substrate oxidation rate during 5 hours after a mixed meal. Twenty healthy college students (10 males and 10 females) aged 20-26 years participated in this study. The energy contents of the experimental diets were 775 kcal and 627 kcal for males and females respectively, which were 30% of individual energy requirements and were composed of 65/15/20% as the proportion of carbohydrate/protein/fat. Resting and postprandial energy expenditure and substrate oxidation rates were measured with indirect calorimetry in the fasting state and every 30 min for 5 hours after meal consumption. Thermic effects of food expressed as ${\Delta}AUC$ and TEF% were not significantly different between males and females. However, TEF% adjusted for body weight and fat-free mass in males (0.095% and 0.120%) were significantly lower than those in females (0.152% and 0.213%)(p < 0.05). The total amount of carbohydrate oxidized was significantly lower in males than that in females (58.6 vs. 86.6 mg/kcal energy intake/5 h, p < 0.05). In contrast, the total amount of fat oxidized was significantly higher in males than that in females after the meal (32.9 vs. 17.2 mg/kcal energy intake/5 h, p < 0.01). These results indicate that gender affects the thermic effects of food and the substrate oxidation rate after a meal. The results show that males use relatively less carbohydrate and more fat as an energy source after a meal than that of females.

한국 성인 비만 집단의 탄수화물 급원 식품 섭취 분포 및 노출 위험도: 대규모 한국인유전체 역학 자료 활용 (Distribution and Exposure Prevalence of Carbohydrate-based Food Intake among Obese Korean Adults Based on the Health Examinees (HEXA) Study)

  • Objectives: The purpose of this study was to estimate the distribution and exposure prevalence of total carbohydrate intake and the carbohydrate-based foods such as rice, noodles, sweet potatoes, sweet drinks, milk and fruits and to characterize intake patterns among obese Korean adults. Methods: Subjects included 137,363 adults aged 40 years or older who participated in a Health Examinees (HEXA) Study. Multiple regression analysis of data from Semi-Quantitative Food Frequency Questionnaire (SQFFQ) identified food sources of carbohydrates. Weight, height and waist circumstance (WC) were measured, and the body mass index (BMI) was calculated. Obesity was defined as $BMI{\geq}25kg/m^2$ and abdominal obesity as $WC{\geq}90cm$ and ${\geq}85cm$ for males and females, respectively. Results: Obese adults appeared to have a higher total carbohydrate intake in the univariate analysis but had eaten less after adjustment for general and lifestyle factors, compared to normal weight adults (OR 0.78, 95% CI 0.73-0.82 for general obesity; OR 0.79, 95% CI 0.74-0.85, for abdominal obesity; P trend < 0.0001, respectively). Based on advance analysis for the food sources of carbohydrates, obese subjects had lower intake of rice (OR 0.86, 95% CI 0.68 -1.09 for general obesity; OR 0.87, 95% CI 0.67-1.13, for abdominal obesity; P trend < 0.0001, respectively) and higher intake of noodles (OR 1.21, 95% CI 1.16-1.27 for general obesity; OR 1.25, 95% CI 1.19-1.32, for abdominal obesity; P trend < 0.0001 respectively). With regard to other food sources of carbohydrates such as milk and fruits, intake was lower among obese compared to normal weight subjects. Conclusions: In the Korean middle-aged and older obesity groups, the intake of carbohydrates and the related foods was lower than in normal weight subjects, except for noodles. We conclude that a higher intake of noodles may enhance weight-gain. Therefore, this study suggested that the guidelines should consider the types of carbohydrate sources and the amount consumed from foods in order to provide proper guidance with regard to control and prevent obesity among Korean adults.

탄수화물 급원에 따른 HCA의 공급이 흰쥐의 체중 및 지질 대사에 미치는 영향 (Effect of Feeding with Different Source of Carbohydrate and HCA on Body Weight Gain and Lipid Metabolism in Rats)

  • This study was conducted to investigate the effects of feeding different carbohydrate sources and garcinia cambogia extract(HCA) on body weight and lipid metabolism. Fifty 10-month-old male Sprague-Dawley rats weighting $635{\pm}6g$ were randomly divided into 5 groups and fed different experimental diets for 4 weeks. The carbohydrate(CHO) sources of each group were cornstarch(control group, 100% of CHO), fructose(F group and FH group, 25% of CHO) and sucrose(S group and SH group, 25% of CHO). FH group and SH group were fed diets containing 1%(W/W) of HCA. Food intake, body weight gain, and calorie efficiency were not significantly different among the groups. Perirenal fat pad weight of FH group was significantly lower than F group, but epididymal fat pad weight was not different among the groups. Fasting glucose level were not significant among the groups. Plasma lipid profile of FH or SH group was slightly lower than F or S group, respectively. The degree of difference of plasma lipid level was greater between F and FH group than those of between S and SH group. In liver, total lipid, triglyceride and total cholesterol level were slightly higher in F group than S group, and tended to be lower in FH group than F group, but tended to be higher in SH group than S group. Liver citrate lyase activity were not significant among the groups. These results suggest that HCA is potential material for reduction of body weight and improvement of plasma lipid profiles. But, there was no difference between fructose intake with HCA and sucrose intake with HCA in reduction of body weight and lipid metabolism.

에너지 급원식품(給源食品)으로서의 탄수화물(炭水化物)의 공급(供給)추세 (Trends in Carbohyarate Supply as Energy Sources)

  • 식생활개선(食生活改善)과 영양정책(榮養政策)의 기초자료(基礎資料)를 얻고자 1974년부터 1984년(年)까지 에너지원으로써 탄수화물(炭水化物)의 공급형태(供給形態) 및 각공급원(各供給源)의 에너지구성율(構成率)의 변화(變化)를 조사한 결과는 다음과 같다. 1. 식품군별(食品群別) 에너지 공급비율(供給比率)은 1984년 곡류(穀類)가 70%를 차지하고 있다. 곡류(穀類)와 당류(黨類)는 공급(供給) 에너지 비율(比率)이 계속 감소하였으나 당류(糖類), 육류(肉類), 유지류(油脂類) 우유(牛乳) 및 난류(卵類)에 의한 에너지 공급비율(供給比率)이 2배 이상 증가를 보였다. 2. 에너지 공급원은 식물성(植物性) 식품(食品)이 90% 가량 차지하고 있으며 식물성(植物性) 식품(食品) 중(中)에는 전분성(澱粉性) 식품(食品)이 80% 이상을 점유하고 있다. 전분성(澱粉性) 식품(食品) 거의 곡류(穀類)로 전체공급(全體供給) 에너지중에도 1984년에 66% 가량을 차지하고 있다. 3. 각(各) 곡류(穀類)가 공급 에너지 중 차지하는 비율(比率)은 쌀, 밀, 보리의 순이며 쌀의 비율이 감소되고 있어도 아직 전공급(全供給) 에너지의 46%를 차지하고 있다. 보리의 비율(比率)은 급격히 감소하였지만 전분성(澱粉性) 식품(食品)에 의하여 공급(供給)된 에너지 중 곡류(穀類)의 비율(比率)은 거의 일정하였다. 4. 탄수화물(炭水化物)의 공급형태(供給形態)를 보면 전분성(澱粉性) 식품(食品)에 의한 에너지 공급은 서서히 감소하는 반면 정당(精糖)은 높은 증가율을 보였다. 과당(菓糖)과 갈국당(葛菊糖)의 생산량(生産量)도 꾸준히 증가하여 탄수화물(炭水化物)의 섭취가 과당류(菓糖類)로 변화(變化)되고 있었다.

Content Analysis of Food Advertising Directed at Korean Children

  • Children have become the target of intense and specialized food advertising efforts. This study examines the content of TV food advertising and discussed possible concerns from the perspective of children. A total of 102 ads were collected from two cable networks aimed at children. Most of the food ads used emotional appeals and did not provide information clues such as nutrition values. Ads with high sales pressure and celebrity endorsements appeared frequently and the ads for snack foods and high-carbohydrate bakery products were dominant. Understanding food ads can be a significant indicator to establish the orientation of consumer ad education and build educational programs appropriate for children. The issue that appears conspicuous in child targeted advertising and marketing is the childhood obesity and food advertising relation; subsequently, there is a need to evolve advertising that targets children into a positive educational information source.

영양소 섭취가 사회심리적 스트레스에 미치는 영향 (Effect of the Nutrient intakes on Psychosocial Stress)

  • This research was designed to see the relationship among nutrient intake, food intake frequency and psychosocial stress in ordinary life. The subjects were 190 males and 263 females of university students in urban areas. There were significant correlations between nutrient intake and stress value, and between food intake frequency and stress value. In male, the more they consumed energy, protein and carbohydrate, the higher they had stress in several categories. But in female the results were reversed. Their stress values were lower when they have consumed protein source food frequently. And in general, stress values of female were higher than those of male. From these results, we conclude that nutrient intake tends to be decresed with increase stress in less stressful condition, but to be increased in more stressful condition.

무화과잼의 제조와 그 품질특성 (Preparation of Fig Jam and its Quality Characteristics)

  • Chemical analysis and optimum preparation conditions for fig jam were investigated. Soluble solids, acid content and vitamin C of fig was 12.20。Brix, 0.14% and 2.27 mg/100g, respectively. Carbohydrate in fig juice was consisted of 54.43% glucose and 44.53% fructose. Potassium content of fig was 178.0 mg/100g. Moisture content and total sugar of fig fruit was 88.35% and 9.47%. In preparation of fig jam, the addition of 0.2% Citrus natsudaidai juice and 0.5% C. lemon juice as acid source was the best in regard with color and flavor determined by sensory evaluation. The ratio of sucrose : honey : oligo sugar(70:20:10) was also the best in addition of sugar source 60%(w/w) in total. Fig jam prepared in this experiment was better than that of commercial products in sensory evaluation, and microbial growth of this product was not recognized for one month at 30$\^{C}$.

Determinants of Circulating Soluble Leptin Receptor and Free Leptin Index in Indonesian Pre-Pubertal Obese Male Children: A Preliminary CrossSectional Study

  • Purpose: This study aimed to investigate the clinical and metabolic determinants of circulating soluble leptin receptor (CSLR) and free leptin index (FLI) in pre-pubertal obese male children. Methods: We conducted a preliminary cross-sectional study at three tertiary hospitals and one public primary school. Eighty obese male children without growth and developmental abnormalities aged 5-9 years were recruited. In these children, obesity was solely caused by excessive food intake, and not by acute illness, medications, endocrine abnormalities, or any syndrome. Body mass index (BMI), body fat mass, carbohydrate intake, fat intake, high density lipoprotein cholesterol level, low density lipoprotein cholesterol level, triglyceride level, and Homeostatic Model Assessment for Insulin Resistance are the potential determinants for leptin regulation, which is represented by CSLR level and FLI. Results: Carbohydrate was the main source of energy. BMI and body fat mass had negative weak correlation with CSLR and positive weak correlation with FLI. Furthermore, carbohydrate intake was found to be independently associated with CSLR based on the results of the multiple linear regression analysis. Following an increase in carbohydrate intake, CSLR level decreased progressively without any negative peak. Conclusion: Leptin regulation in prepubertal obese male children is associated with body composition and dietary intake. Carbohydrate intake is useful for predicting CSLR. Lipid profiles and insulin resistance are not related to both CSLR and FLI. Treatment and prevention of leptin resistance in obese children should focus on reducing BMI, fat mass, and carbohydrate intake.

Production of high molecular weight of pullulan with agro-industrial byproducts

  • Production of pullulan by Aureobasidium pullulans HP-2001 with agro-industrial byproducts was investigated. Agro-industrial byproducts from the rice processing industry for the traditional Korean food (AIB-A), apple juice production (AIB-B), and soybean sauce production (AIB-C) were used for carbon and nitrogen source for production of pullulan. Major components of AIB-A were glucose, maltose, maltotriose, and dextran. AIB-A and B were found to be good substitute to glucose as carbon source. Productivity of pullulan with AIB-A and B as carbon source was similar to that glucose. Molecular weight of pullulan produced with AIB-A and B was higher than that with glucose. Major components of AIB-B and C were carbohydrate, protein, fat and ash. AIB-C was also a good substitute to yeast extract as nitrogen source. Some of physiological conditions were examined for the large scale production of pullulan.

Formulation and Shelf Life of a Nutritional Supplement for Undernourished Elderly People

  • A nutritional supplement was developed aiming at correcting the most common nutrient and caloric deficiencies encountered in elderly people (${\geq}60$ years old). The protein source was a mixture of whey protein isolates (WPI) and bovine collagen hydrolysate (BCH) with high nutritional and functional qualities making up 12% of the formulation. The carbohydrate fraction was composed of sucrose, inulin (soluble fiber), and fructo-oligosaccharide (prebiotic). The most commonly deficient essential minerals and vitamins were also included. Acceptance of the product was good according to both an elderly panel and a laboratory panel composing of both sexes and various ages. The stability of the formulations was evaluated and the estimated shelf life at room temperature (ca. $27^{\circ}C$) was approximately 4 months.
