The nutritional status and chronic disease occurrence of the elderly living in local areas is affected by certain factors, including low energy intakes, low food diversity, poor nutritional quality and living alone. Moreover, elderly people who live alone may have low incomes and be socially isolated. Thus, we have provided them adjustable and balanced menus using standard recipes. In this study, we investigated aspects of nutritional status and living conditions in the elderly status, in relation to food, activities of daily living(ADL), nutrition risk index, average intake of calories and nutrients, the mini dietary assessment index score, depression score, menu satisfaction, menu demand, satisfaction with menu offerings. The result indicated significant nutritional improvements by providing menus to the elders and suggest that by providing adjustable and balanced menus using standard recipes, the nutritional status of isolated elders can be changed and improved.
The purpose of this stud was to investigate the degree of recognition as well as the consumption pattern of convenience food products, and related factors among 700 mixed Korean college students using written questionnaire. Students of Seoul region showed the significantly lowest rate of recognition at 36.7%. Results also showed that lifestyles have a significant effect on the degree of recognition of convenience foods. The consumption patterns of convenience foods goes as follows: used frequently-18.2%, once in awhile-73.9%, doesn't use-7.9%. The higher the recognition rate, the higher the consumption rate for convenience foods. When compared in terms of residence, students living at home used more refrigerated foods compared to students living outside of the home. Among the total students living outside of the home, students living on their own scored highest of convenience food consumption. In the case of female students living outside the home, respondents living alone and in dormitories scored the highest. Female students living in dormitories were mainly using refrigerated and canned foods, while those living alone consumed more kimbap and 'sa-bal-myun' in convenience stores. Korean college students mainly consumed frozen food, retort food, and kimbap in convenience stores. The college student that believes that 'You eat to satisfy hunger' significantly used more convenience food while those that marked 'maintain health' consumed the lowest showing a great difference between groups. Results showed that the lower the food habit score, the higher the usage score of convenience foods. The food habit score had a negative correlation with the usage of frozen foods, instant food, and convenience store food. When compared individually, packaged 'ramen' and 'sa-bal-myun' scored the highest points of usage. Frozen fried rice and pre-packaged rice scored the lowest points indicating Korean college students do not consider rice a convenience food. Convenience food consumed in convenience stores ranked the highest among places of consumption, compared to places like home or outdoors; showing that convenience foods were used by people with limited time constraints.
The purpose of this study was to examine the effects of householder's job status m the family life style. Data was collected from 475 parents in Chonbuk province by using a self administered questionnaire from June 10 to 30, 1998. Frequencies, percentages, and averages were calculated T-test, Pearson's correlation coefficients, and stepwise multiple regression analysis were followed. The results were as follows; 1. The families who suffered householders' job loss were 1/4 of the respondents and over 4/5 of the families felt economic stresses. 1/3 of the respondents had debts and 1/5 had not any savings. Most of the families were in good or normal marriage relationships, experienced economic crises, and had sparing habit. 2. In out-of-job families, couple cohension, couple satisfaction, and total marriage relationships were lower than in-job families. Also, out-of-job families spared more in buying and using clothes and foods, total clothes living and total food living. 3. In out-of-job families, the economic pressures on marriage relationships, clothes living, and food living were stronger than in-job families. 4. Family resources such as savings, ordinary marriage relationships, and sparing habit effected on the marriage relationships, clothes living, and food living in out-of-job families and in-job families. BACKGROUNDS/OBJECTOVES: Family has an impact on dietary intake of children as a proximal food environment and family structures are changing and becoming more diverse. This study was performed to identify the association between family structure and food group intake of children aged 3-18 years in Korea. SUBJECTS/METHODS: A total of 3,217 children with complete data on variables for household information, dietary intake and sampling weights were obtained from 2010-2011 Korea National Health and Nutrition Examination Survey. Children's family structure was classified into 3 groups (Living with both parents, Living with one parent and Living without parents). To evaluate children's food group intake, scores of individual food groups ('Grains', 'Meat, Fish, Eggs and Beans', 'Vegetables', 'Fruits' and 'Milk and Dairy products') was calculated from percent adherence to the recommended servings of the Korean Food Guidance System (KFGS). 'Food group mean score' was obtained by calculating the average of five food group scores. RESULTS: After adjusting for age, sex, number of family members, and household income, children living with both parents had higher scores in 'Fruits' (P < 0.01), 'Milk and Dairy products' (P < 0.05), and mean score of individual food group score (P < 0.001) compared to children living with one parent. Individual food group scores and mean scores of individual food group scores were associated with different socio-demographic factors in study children. Family structure was associated with 'Fruits,' 'Milk and Dairy products' score and mean scores of food group scores. CONCLUSIONS: These results suggested that different approach might be required to solve nutrition problem in children depending on their family structure and other socio-demographic factors.
The purpose of this study was to compare the degree nutrient intake, health status and other characteristics of females aged 65 years and over in a longevity area according to family arrangement. For analysis, 585 female elderly were recruited from the Kugoksoondam area (Kurye, Goksung, Soonchang and Damyang counties), known as the longevity-belt region in Jeonla province, Korea. The subjects were categorized into three groups according to family arrangement (living alone, living with spouse only and living with family). Demographic characteristics were collected, as well as information on physical measurements, blood tests for biochemical indicators, health status and health-related life style, dietary behavior, favorite food groups, consumption frequency of food groups, nutrient intake and mini nutrition assessment. In the group living with their spouse only, the highest education, physical activity, diverse food intake, frequency of eating meats and fish, energy and nutrients intake, and score on the mininutrient status assessment (MNA) were found to be significantly favorable factors. Taken together, these results demonstrated that the group living with their spouse only had relatively superior nutrient intake and the quality of diet. In contrast, the group living alone showed the lowest self-rated economic status, diversity of food intake, and physical activity, with the highest frequency of drinking, smoking and regular exercise for almost everyday compared with the other groups. On the other hand, those living with family demonstrated the lowest intake of supplements or functional foods, and levels of hemoglobin hematocrit MCH, but the highest HBA1c and blood sugar. Therefore, the group living with family was assumed to be at risk of anemia and diabetes. These results could be useful to plan effective strategies to increase the health-life expectancy of Korean elderly people living in rural areas, according to family arrangement.
This nutritional survey was conducted from January to March 1994, in order to investigate the nutirtional knowledge, food habits, nutritional attitude, food preferences and nutrient intakes of housewives living in urban area and rural area. The subjects of this survey were 164 urban housewives living in Daegu and Pohang area and 170 rural housewives living in Andong area. The results obtained are summarized as follows ; The subjects had a high level of perceived knowledge(81.2%), that is the knowledge that each subject believed she had, but the accuracy of the knowledge was only 66.3%. Most of the urban housewives belong to "Fair" or "Good" food habit group, while rural housewives belonged to "Fair" or "Poor" food habit group. The correlation between nutritional knowledge score and food habit score was low. And the correlation between nutritional attitude score and food habit score was low, too. Food perferences for kimchi, cooked rice, potato, milk were high in both group. Most of the nutrient intakes of the urban and rural housewives were not significantly different each otehr at p<0.05.ficantly different each otehr at p<0.05.

BACKGROUND/OBJECTIVES: This study was conducted to examine disparities in food and nutrient intakes based on family types identified among 1,856 participants who were the Korean elderly people in the 6th Korea National Health and Nutrition Examination Survey (KNHNES) excluding those who were currently practicing the diet therapy. SUBJECTS/METHODS: We separated the subjects into two groups: living alone (LA, n = 638) and living with a spouse (LS, n = 1,218). We also examined the disparities of dietary quantity and quality of those two groups using complex sampling design general linear regression analyses (CS GLM). RESULTS: In the LA group, there was a higher percentage of females and average age in LA group was higher than the participants in the LS group. Household income and education level were significantly lower in LA compared to those of LS. The frequencies of skipping meals were higher in LA. LA's food and nutrient intakes showed lower consumption of vegetables, fruits, seaweeds, and of most nutrients. Even after adjusting for the confounding factors, the consumption of vegetables, seaweeds, carbohydrates, potassium, riboflavin, and vitamin C showed lower in LA than LS. Moreover, LA's nutrient intake ratios compared to the KDRIs were lower which turned out to be similar to their nutrient intakes. CONCLUSIONS: These results show that dietary behavior and food intake of the elderly are associated with family types. Frequently skipping meals and less dietary variety are more common with elderly persons who were living alone. Therefore, it is necessary to integrate the supplementary food programs and nutrition education programs for the elderly living alone.
This study was carried out to investigate the nutritional and physical status of children, aged 11 and 12 years, living in Haenam Koon (living at home) and in Mokpo City (living in an orphan asylum) located in Chonnam during the period of August 2 nd to 9 th in 1984. The mean values of height, chestgirth, arm circumference and head circumference between both groups of living in the rural area and in the city orphan asylum were not statistically different and similar to Korean Growth Standard. Exceptionally, the values of height and weight of male living at home in the rural area were lower than Korean Growth Standard (p<0.01). The weight of male living in the city orphan asylum was higher han that of male living at home in the rural area (p<0.01), and the skin fold thickness of female living at home was higher than that of male living at home (p <0.01). The physical indices of children living in the city orphan asylum were more or less higher than those of living at home in the rural area, but the relative weight of male was only significant (p<0.05). The animal protein intake was $8.4{\sim}8.6%$ of total food intake of living at home in the rural area and 6.2% in living in the city orphan asylum. The intake of legumes of children living in the city orphan asylum was more two times than that of living at home in the rural area, but overall fruit intake of living at home was more about two times than that of living in the city orphan asylum. The average intake of all nutrients except thiamine and niacin was lower than RDA. Especially the calcium intake of children in both groups was the lowest of all nutrients ($28.9{\sim}40.6%$ of RDA). Children living at home in the rural area had significantly higher intake of fat and ascorbic acid than children living in the city orphan asylum (p<0.01).
A survey was performed to 238 male young men who were living alone (104 persons) or living with roommates (134 persons). Their average age was 22.6 years old, height 171.8cm, and weight 65.6kg. Their daily calcium intake level was averaged 271.9 $\pm$ 169.1mg, which was 38.8% of Korean Recommended Dietary Allowances(RDA). Comparing calcium intake of each mealtime, breakfast, lunch, dinner, and snacks were composed of 18.6%, 30.0%, 34.0% and 17.4%, respectively. Their daily iron intake level was averaged 8.9 $\pm$ 10.8mg, which was 74.3% of Korean RDA. Comparing iron intake of each mealtime, breakfast, lunch, dinner, and snacks were composed of 15.4%, 33.6%, 36.3% and 14.7%, respectively. Deficiency of these minerals in young male adults were severe and the nutrient qualities were also poor and the deficiency was more profound in calcium than in iron. And we observed iron nutrition differed significantly according to their living status, such as iron intake and its %RDA were significantly worse in single living subjects than the other. However calcium did not show significant difference. It was found mineral intake, especially iron, could be improved in young men living with roommates than living alone and regular breakfast could improve calcium and iron intakes. Elderly Koreans living in Muju Gun, Jeonbuk were divided into two groups with ages(65~74 years old group & over 75 years old group) and surveyed with questionnaire to investigate their dietary status and those factors affected with ages. The score of food habit in both sexes showed a falling tendency as their ages increased. Compared with elderly men, elderly women showed lower quality of diet. Elderly Korean were more consumed cereals and green vegetables than milk, egg, meat & fish, seaweed and fats & oils. As education level increased, the food habit score showed a rising tendency. The correlation coefficient between the score of food habit and education level was positive in illiterate and school graduates. The score of food habit of living together with their family was higher than those of living alone or living with their spouse. As household income increased, the food habit score showed a rising tendency. In the case of self consciousness of socioeconomic status was middle, food habit score is higher than those of very low. Dental status of eldery people did not affect food habit score. Palatability showed no significant correlation with age. Elderly Koreans prefered sweet taste than salty, sour, and bitter taste.
