The Effect of Dietary Cu and Fe on the Cd Accumulation in Long-Term Cd Poisoned Rats (장기간 카드뮴에 중독된 흰쥐에서 카드뮴 축적에 대한 식이 구리와 철분의 효과)

  • This study was undertaken to investigate the effect on the Cd accumulation in long-term Cd poisoned rats. 40 male weaning Sprague Dawley rats weighting 80-90g were divided into 4 groups (LCuLFeCd : low Cu, Fe and Cd group, ACuLFeCd : adequate Cu, low Fe and Cd group, ACuAFeCd : adequate Cu, adequate Fe and Cd group) according to Cu and Fe levels (Cu 0.5ppm, 8.5ppm : Fe 6ppm, 40ppm) for 12 weeks. There were no significant difference in water intake, feed intake, and body weight gain according to dietary Cu and Fe consumption. But the mean food intake and body weight gain of adequate Fe groups(LCuAFeCd, ACuAFeCd) were higher than those of deficient Fe groups (ACuLFeCd, LCuFeCd)in long-term Cd poisoned rats. The mean Cd levels of serum, liver, kidney, and urine in ACuAFeCd group were lower than those of Cu and /or Fe deficient groups. But the mean fecal Cd excretion of ACuAFeCd group was higher than that of Cu and/or Fe deficient groups. And the mean Cd retention amount of ACuAFeCd group was lower than those of Cu and/or Fe deficinet groups. In conclusion, these results provide an evidence that adequate Cu and Fe intakes can decrease Cd accumulation in rats. Therefore, in the point of increasing environmental Cd contamination, adequate Cu and Fe intakes must be suggested to prevent Cd accumulations.

Comparative Analysis of Food Habits and Bone Density Risk Factors between Normal and Risk Women Living in the Seoul Area (서울지역 성인여성의 골밀도 정상군.위험군의 식습관과 식품섭취 관련요인의 비교분석)

  • This study was carried out to compare bone density risk factors affecting women's BMD, and to examine the relationship age, lifestyle and dietary habits for bone health by physical measurement and questionnaires. The subjects of this study were 194 women living in the Seoul area. When the subjects were divided into normal and risk groups, BMD, height, weight, BMI, total body water, soft lean mass, fat free mass, protein, mineral, body-fat of normal group were much higher than those of the risk group. The breakfast eating rate of the normal group was much higher than that of the risk group, walking time was significantly longer and exercise was more (p < 0.05). The normal group had more frequent intakes of tunas, squid, radishes, the green parts of radish, cucumbers, carrots and Iucchinis, tomatoes, and grapes than the risk group (p < 0.01 or p < 0.05). In conclusion, breakfast eating, exercise, intakes of some foods such as anchovies, radishes, carrots, zucchinis and tomatoes were significantly important factor to prevent bone density risk.

Dietary Cholesterol Intake in the Korea National Health and Nutrition Examination Survey (KNHANES) VI (2013-2015) (한국인의 콜레스테롤 섭취 현황: 국민건강영양조사 제6기(2013-2015) 자료를 이용하여)

  • Objectives: The aim of the study was to assess the intake of dietary cholesterol and its major food sources in the Korea National Health and Nutrition Examination Survey (KNHANES). Methods: A total of 20,671 nationally representative sample who had 24-hour recall data from the KNHANES VI (2013-2015) was included in this study. Mean cholesterol intake and the prevalence of subjects with cholesterol intake over the Intake Goal of the Dietary Reference Intakes (DRIs) for Koreans were analyzed. Intakes of cholesterol by food groups or each food were calculated to find out the major food sources for cholesterol intake in Koreans. Results: The mean dietary cholesterol intake was 261.3 mg, which was higher in men (303.5 mg) compared to women (219.1 mg). Dietary cholesterol intake and the prevalence of subjects with cholesterol intake over the Intake Goal of DRIs were the highest in the 19-29 year old group. The eggs was the first major food group source for cholesterol intake in all age groups. Major food sources for cholesterol intake among Korean were egg, chicken, pork, squid and beef, which contributed 66.9% to total cholesterol intake. Conclusions: Although the mean dietary cholesterol intake was under 300 mg, the prevalence of subjects with cholesterol intake over the Intake Goal of DRIs was about 30% in adults. Because both the mean intake and the prevalence of subjects with cholesterol intake over the Intake Goal of DRIs were higher in young adult groups, the dietary cholesterol intake was expected to be increased.

Nutrient Intakes Differences of the People Living Near the Nuclear Plant by the Household Income Level (원자력 발전소 주변지역 거주민의 가구소득별 영양섭취)

  • This study was conducted to measure and evaluate the food and nutrient intakes of the people living near the nuclear plant and to investigate the relationship between the household income level and the food and nutrient intake patterns. A total of 552 cases (263 males and 289 females) were surveyed during the period from April 1 to December 21 of 2005. Dietary intake was measured by means of the 24-hour recall method. The data were analyzed using SPSS Windows (ver. 14.0). The household income level of the subjects was classified into two groups : Low income group (LIG; $\leq$2,000,000 won) and high income group (HIG; > 2,000,000). The subjects at large had less energy and nutrient intakes than did the population in town and village who participated in the 2005 National Health and Nutrition Survey. The intake of calcium, zinc, vitamin A, riboflavin, vitamin $B_6$, vitamin C, and folic acid was less than the Estimated Average Requirement in case of $50{\sim}95%$ of the subjects. The LIG consumed less beans, vegetables, fruits, meats, and beverages than did the HIG in male, while the LIG consumed less eggs and beverages than did the HIG in female. The LIG consumed less nutrients than did the HIG in male, except for carbohydrate, while the LIG consumed less nutrients including zinc, vitamin A, riboflavin, vitamin B6, vitamin C, folic acid than did the HIG in female. In addition, the LIG had higher percentage energy consumption from carbohydrate. These results suggest that higher food and nutrient intake is associated with higher income.

Comparative Study on Eating Habits, Dietary Intake Patterns, and Nutrient Intakes Between Elementary School Children With and Without Atopic Dermatitis (일부 초등학생의 아토피피부염 유무에 따른 식습관, 식품섭취양상 및 영양소섭취상태 비교 연구)

  • The aim of this study was to examine and compare the eating habits, dietary intake patterns and nutrient intake status of children with and without atopic dermatitis by questionnaire during July, 2008. A total 388 subjects of 5th and 6th grade elementary school children (AG: atopic group, n=65, NG: non-atopic group, n=323) in Seoul and Ulsan areas participated in this study. The questionnaire included general characteristics, dietary habits, and atopy-related food frequency. One-day 24 hour recall was collected to estimate nutrient intakes of the subjects. The data were analyzed by Chi-square test for food frequency analysis and by t-test for nutrient intakes. Atopy-related foods included milk, buckwheat, beef, pork, chicken, crab, egg, mackerel, peach, and tomato. From the findings, AG had a more irregular eating habit than NG (p<0.05). In case of food frequency, AG tended to consume more atopy-related foods than NG (p>0.05). The nutrient intakes of AG were significantly lower than those of NG (p<0.05), but only intake of animal iron in AG was higher than NG (p<0.05). NG consumed more protein than AG (p<0.05). Although milk was a noted hypersensitive allergic food, frequency and the amount of milk intake were not significantly different between two groups. In conclusion, atopic children had eaten more atopy-related foods and less nutrient intakes. Therefore, it is necessary to educate on good nutrition and guide atopic children and their parents.

Dietary Zinc Analysis and Changes of Zinc Nutriture with Zinc Supplementation in Korean Adults (한국성인의 아연 섭취실태 및 아연보충에 의한 아연 영양상태 변화)

  • The purpose of this was to analyse zinc intakes and effect of Zn(30mgZnSO4/day) supplementation on plasma zinc level, serum HDL-cholesterol and serum Alkaline Phosphatase (AP) activity of Korean adults. The men consumed 8.52($\pm$2.08)mg of zinc, and the women consumed 6.4($\pm$2.62)mg of zinc. Although protein intakes of subjects were lower than normal values. The first source of zinc was cereal and grain group, the second was meat, fish, egg and soybean group. Two food groups supplied about 80% of zinc. After two weeks of zinc supplementation, the zinc concentration in plasma was significantly increased. The highest plasma zinc level was 78.80ug/dl(men), 76.04ug/dl(women) at 2 weeks after zinc supplementation(p<0.05). Serum DHL-cholesterol was significantly decreased by zinc supplementation. The lowest serum HDL-cholesterol level was 39.29mg/dl(men), 44.84mg/dl(women) at 4 weeks after zinc supplementation(p<0.01). Serum AP activity was significantly increased by zinc supplementation. The highest AP activity was 86.40units/L(man), 67.93units/L(women) at 2 weeks after zinc supplementation(p<0.05). It seems that the supplementation of 30mg ZnSO4/day can be beneficial for improving zinc nutriture. However it can be negative factor on coronary heart disease because serum HDL-cholesterol was significantly decreased(p<0.01)

The Presence or Absence of Osteoarthritis and Related Risk Factors in Korean Elderly using the 6th Korea National Health and Nutrition Examination Survey (2013~2014 KNHANES VI) (제6기 국민건강영양조사 자료를 이용한 한국 노인의 골관절염 유병 여부와 관련 위험 요인(2013~2014 KNHANES VI))

  • This study was performed to determine the prevalence and associated risk factors of osteoarthritis in the elderly using the Korea National Health and Nutrition Examination Survey (2013~2014 KNHANES VI). A total of 2,148 (936 males, 1212 females) elderly participants aged 65 years or older were selected. Prevalence of osteoarthritis was higher in 460 female (80.7%) and 167 rural (29.1%) groups, than in 110 male (19.3%) and 404 urban (70.9%) groups. While the mean values of LDL-cholesterol, triglyceride level, and waist circumference were significantly higher in the osteoarthritis group than the normal group, other parameters including height, HDL-cholesterol, fasting blood glucose, hemoglobin and hematocrit values were not. Quality of life (EQ-5D) was also significantly lower in the osteoarthritis group. The results of logistic regression analysis showed that smoking, alcohol intake, obesity, hypercholesterolemia and energy intakes were significantly different in regards to the prevalence of osteoarthritis. This study suggests that obesity and energy intakes were associated with osteoarthritis, whereas risk factors of chronic disease, such as hypertension, Hypo-high density lipoprotein, hypertrigly-ceridemia, anemia, diabetes, vigorous physical activity, moderate physical activity and walking were not. Long-term prospective study is necessary to investigate the effects of these factors on osteoarthritis.

A Study on the Factors Influencing Food Consumption by Food Frequency Questionnaire far the Middle Aged and Elderly Living in the Chonju Area (전주지역 중.노년의 식품섬취빈도에 영향을 미치는 요인)

  • This study was conducted to find the differences in food consumption frequency of the middle aged(male 20, female 50) and the elderly(male 15, female 15) living in Chonju in December, 1998 according to food habits, smoking, alcohol drinking and exercising habit, health status, and the levels of nutrition knowledge and attitude store. The foods frequently consumed among the subjects were kimchi(15.4/week), mixed rice(11.5/week), rice(7.6/week), vegetables in soup, jjigae and jorim(5.0/week), mandarins and oranges(5.e/week), and seasoned laver(4.3/week). There were several factors influencing food consumption patterns. These were age, regularity of meal times, the status of smoking, alcohol drinking and exercising, and the level of nutrition attitude. The elderly ate cooked rice more frequently, while the middle aged ate fish, especially blue fishes more frequently. The middle aged who had breakfast regularly ate milk and milk products, legumes and fruits frequently. Those who smoked seemed to eat less cereals and starches and fats, while those who didn't smoke ate more sugars. The alcohol drinking group also ate less fats and the exorcising group ate almost all of food groups frequently. The status of health showed to be related with food consumption patterns. The normal group in hemoglobin ate eggs more frequently than the anemia group and the high risk group in blood pressure ate almost all of food groups more frequently. The high level group for nutrition attitude score chose vegetables, fruits, and milk and milk products more frequently than the other groups. On the other hand, low level group for nutrition attitude score was apt to eat ramyun, ham-sausage, and carbonated beverages more frequently. Therefore, nutrition education to improve the food habits find to change nutrition attitude is necessary to promote health status anti mole attention should be taken to the high risk group in blood pressure to guide proper food and nutrition intakes.

The Effect of Excess Calcium on the Iron Bioavailability and Bone Growth of Marginally Iron Deficient Rats (고 칼슘 섭취가 철이 부족한 성장기 흰쥐의 철 이용성과 뼈 성장에 미치는 영향)

  • This study examined the effect of excess calcium (Ca) on the iron (Fe) bioavailability and bone growth of marginally Fe deficient animals. Two groups of weanling female SD rats were fed either normal Fe (35 ppm) or Fe deficient diet (8 ppm) for 3 weeks. Then each group of animals were assigned randomly to one of three groups and were fed one of six experimental diets additionally for 4 weeks, containing normal (35 ppm) or low (15 ppm) Fe and one of three levels of Ca as normal (0.5%), high (1.0%), or excess (1.5%). Feces and urine were collected during the last 3 days of treatment. After sacrifice blood, organs, and femur bone were collected for analysis. Final body weight and average food intake were not affected by either the levels of dietary Ca or Fe. Low Fe diet significantly reduced the level of serum ferritin, however, for Hb, Hct, and TIBC no difference was shown than those in the normal Fe group. TIBC increased slightly by high and excess Ca intake in low Fe groups. For both normal and low Fe groups, high and excess Ca intakes reduced the apparent absorption of Fe and Fe contents of liver significantly (p < 0.05). Calcium contents in kidney and Femur of rats that were fed high and excess levels of Ca were significantly greater than those of normal Ca groups. However, weight, length, and breaking force of the bone were not affected by increased Ca intakes. Both in control and low Fe groups, high and excess intakes of Ca decreased the apparent absorption of Ca. These results indicate that the excess intakes of calcium than the normal needs would be undesirable for Fe bioavailability and that the adverse effects be more serious in marginally iron deficient growing animals. In addition bone growth and strength would not be favorably affected by high Ca intakes, though, the long term effect of increased Ca contents in bone requires further examination.

Comparative Study of Nutrient Intakes and Health Status with Body Size and Weight Control Experience in Adolescent Females (청년기 여성의 체형과 체중조절 경험에 따른 영양소 섭취량과 건강상태에 대한 비교 연구)

  • This study was conducted to investigate how body size and weight control experience affect the nutrient intakes and the health status of adolescent females. The survey was carried out by self-questionnaires with 463 female high school and college students in Daegu. Analysis of data was done by using a t-test, and ANOVA with the SAS computer program. The average height, weight and BMI of the subjects were 161.2 cm, 53.4 kg, and 20.51 kg/$m^2$ respectively. However, 25.1% of the subjects belonged to the underweight group when we divided the subjects into 3 groups- underweight, normal-weight, overweight-according to their present body size. The average Fe intake of the subjects was less than 50% of the Korean recommended dietary allowances. The dietary intakes of energy and Vit. A were significantly higher in the underweight group than in other groups. However, no significant differences among body size groups were observed in the dietary habit score and the nutritional knowledge score. It also appeared that the dietary habit score and the nutritional knowledge score of the weight control attemptees were worse than those of the non-attemptees. The physical health status of the subjects significantly differed according to weight control experience, and the psychological health status of the subjects differed with present body size. The physical health condition of the weight control attemptees was worse than the non-attemptees. and the psychological health condition of the overweight group was worse than other groups. The results indicated that unnecessary weight control in adolescent females induces unhealthy food behavior which is linked to undesirable health status.
