Nutrition education discouraging sugar intake results in higher nutrient density in diets of pre-school children

  • BACKGROUND/OBJECTIVES: The intake of sugar has increased worldwide, and it is well established that childhood experiences and food preferences affect lifelong eating habits. To discourage sugar intake, nutrition education was imparted, and the effectiveness of the nutrition education program was investigated by considering the nutrient density and major dietary sources of sugar intake. SUBJECTS/METHODS: Twenty four-hour dietary recall and sugar intake frequency of 96 pre-school children (educated n = 47; non-educated n = 49) were collected on 3 consecutive days (1 weekend day, 2 weekdays) after 11 weeks of imparting nutrition education. Dietary intake of nutrients and total sugar were analyzed, and the intake frequency of sugar source foods were identified. All nutrition education programs were focused on a hands-on education program, and consisted of cooking lab, play, activity, animation, and visual materials. The difference between the two groups was verified by the Chi-square test or t-test. All statistical analysis was performed with significance level at P < 0.05. RESULTS: Compared to the non-educated group, the intakes of protein (P < 0.001), fiber (P < 0.01), potassium (P < 0.05), iron (P < 0.05), zinc (P < 0.05), and iodine (P < 0.001) were significantly higher, and the intakes of carbohydrate (P < 0.01) and total sugar (P < 0.05) were significantly lower in the educated group. The cumulative percent of sugar intake of top 20 sugar source foods in the educated group (82.80%) was lower than that of the non-educated group (85.75%). The contribution of beverages on total sugar intake was lower in the educated group. The average frequency of consuming sugary foods was significantly lower in the educated group (P < 0.05). CONCLUSIONS: Our results indicate that nutrition education on discouraging sugar intake is effective in reducing the amount of total sugar consumed, resulting higher nutrient density in the diets of pre-school children.

남제주군 학교급식대상 초.중등학생의 음식 기호와 영양소 섭취량의 비교 (Comparisons of Food Preference and Nutrient Intake of Students of Elementary School and Middle School Providing School Food Service in Nam Jeju Gun)

  • The purpose of this study was to investigate differences of food preference and nutrient intake of students between elementary school and middle school in the same area and to provide data for better school food service. The subjects were 486 students, third to sixth grade of 3 elementary schools and first to second grade of 1 middle school in Nam jeju gun, Jeju, and the survey was conducted during June 1999. Food preference was assessed using questionnaires and 24-hour food intake was assessed using dietary record method. Data of weight and height were obtained from annual physical examination conducted at schools in May 1999. All the variables were compared among 3 groups in each gender: third and fourth grade elementary school(ES3,4), fifth and sixth grade elementary school(ES5,6), and first and second grade middle school(MS1,2). The results were summarized as follows. The average height, weight and BMI for the 3th grade boys in elementary schools met the national averages, but those of the others are below the national averages. Although general pattern of food preference looked similar among groups, food preference scores were significantly different among groups in 38 kinds foods for boys, and 27 kinds of foods for girls. MS1,2 group showed significantly lower food preference scores for most of foods as compared to those of ES3,4 and ES5,6 in both genders. Students of higher grade took more starch foods such as instant noodle, stewed rice cake and snacks. Average energy intakes of all the groups except MS1,2 girls were lower than recommended dietary allowances(RDA), and average intakes of protein, vitamins B1 and C met RDA, but the other nutrients were taken less than RDA and especially the intakes of iron, calcium and vitamins B2 were poor. Most of nutrients taken by school food service meal provided a major proportion of intakes. In conclusion, students of middle school were more particular about their foods served at school food service and marked lower food preference score than elementary school children and more conscious about their weight and appearance. These points should be reflected in planning food service menu at middle school.

Studies on Intake and Serum Concentrations of Fatty Acids in Korean Adolescents

  • In this study, we evaluated the dietary fatty-acid pattern and serum fatty-acid composition of middle school students (total, 355 ; male, 182 ; female, 173), who are vulnerable to excessive and unbalanced food intakes such as fatty acids and energy. In serum lipid levels, total Chol (p<0.05) and HDL-Chol (p<0.001) levels of female students were significantly higher than those of mal, students. The average fat intake was 23-26 energy % which falls in with the current recommendation level (15-25%) for adults. Although the average P/M/S ratio of dietary fat was 1.1/1.2/1.0 which approaches the recommended ratio, the average range of $\omega$6/$\omega$3 fatty acid ratio of dietary fat was found to be 12.0-16.5, which is higher than the presently recommended range of 4 -10. Some of the very high values found in this study were partly explained by the fact that the range of individual variation of $\omega$6/$\omega$3 ratios was very large. Mean daily intake of Chol was 357-361 mg. The n3 fatty acid intake of middle school students was higher in the LFHM (high fish low meat) group than in the LFHM (low fish high meat) group. EPA and DHA intakes appeared to be significantly higher (p<0.01) in the HFLM group than in the LFHM group as expected. Dietary total $\omega$3 fatty acids (p<0.05) and EPA (p<0.01) were also negatively associated with serum AA($\omega$6) levels. Interestingly, energy intakes and dietary SEAs such as 12 : 0 (p<0.05), 14 : 0 (p<0.01) and 16 : 0 (p<0.05) were negatively associated with serum AA ($\omega$6) levels. To lower the $\omega$6/$\omega$3 ratio of dietary fatty acids for children, frequent consumption of $\omega$3 series fatty-acid rich foods such as soy bean, bean products and fish is recommended. Detailed guidelines should be developed in recommending balanced food intake and qualitative fat intake for Korean adolescents taking heterogeneous groups into consideration. In accurately evaluating fatty acid intake, it is also necessary to have the fatty acid composition data of all foods consumed in each country.

서울지역 10세 아동의 비만이환실태 조사 -주거형태를 중심으로- (Prevalence of Obesity in SchoolChildren from Various Housing Pattern in Seoul)

  • Prevalence of obesity and dietary consumption of ten-year-old school children in Seoul were investigated. Three hundred forty boys and three hundred forty two girls from families of various housing pattern in Seoul were chosen for this study. Informations of the stduy were obtained from April 22 to June 11, 1985, by means of prepared questinnaires for general environmental factors, anthropometry for height, weigth and triceps skinfold theickness and interview to get 24 -hour food intakes of individuals. All the data collected were analyzed by using SPSS program. Average nutrients intakes of the subjects were satisfactory with respect toquality or quantity . Children from A group tended to consume more nutrients than B or C group. Physical growth of the subjects were similar to the ones for average school children in Seoul, but greater than korean national average. Children from A group were taller and heavier than B group whom were taller and heavier than C group . Prevalence of obesity were 15.7 % and 11.7 % of the subjects according to standards of relative body weight and triceps skinfold thickness. Higher prevalence were observed in boys than in girls and children from A group than B, and B group than C group. so therefore it could be summarized that children from A group consumed more nutrients, had better physical growth, and became obese more frequently than children from B or C.

전북지역 여자 대학생의 거주 형태에 따른 체중 인식, 생활 습관과 식품섭취빈도 비교 연구 (A Study o f the Body Weight Perception, Living Habits and Food Intake Frequency by Residence Type in Female College Students of Chenbuk Area)

  • This study aims at examining perception, life style and food habits by residence type in female college students. The data analysis were conducted by a body fat analyzer and questionnaire survey. The subjects were 230 female college students divided into three groups: home-living group, dormitory group, and self-boarding group. The age of the subjects was 20.3~21.7 years old. Among the subjects, 46.1% were home-living group, 27.4% dormitory group, and 26.5% self-boarding group. There was no significant satisfaction of body weight by residence type. Their exercise frequency were not significant by the groups. The exercise time per day was much in home-living group than dormitory group, and self-boarding group(p<0.05). The meal eating time was regular in dormitory group than in home-living group and self-boarding group at p<0.05. 'Frequency of much food intake', 'frequency of restaurant meal', and 'saltness' were significant by the groups at p<0.05 respectively. Breakfast frequency was significant different by the groups at p<0.05. Intakes frequency of cereals in breakfast, meats in breakfast, vegetables in breakfast was different by the groups at p<0.05.

대학생에서 야식의 섭취가 영양소 섭취 상태에 미치는 영향 (Relationship among Night Eating and Nutrient Intakes Status in University Students)

  • 본 연구에서는 성인기 초반에 있는 대학생 271명(남성 155명, 여성 116명)을 대상으로 야식으로부터 섭취하는 열량의 비율에 따라 야식 비섭취군, 25% 미만 야식군, 25% 이상 야식군으로 나누어 조사한 후, 야식으로부터 섭취하는 열량의 비율에 따른 군간 생활 습관 및 식습관, 영양소 및 식품섭취 상태, 영양의 질적 지수를 평가하였으며, 야식으로부터의 식품 및 열량 섭취량, 열량 섭취에 대한 기여율과 영양의 질적 지수와의 관련성을 분석하였고, 그 결과는 다음과 같다. 연령 및 신체계측 사항(신장, 체중, 체질량지수 및 체지방율)은 남녀 모두에서 야식으로부터의 섭취 열량 비율에 따른 군간 유의한 차이를 보이지 않았다. 또한 흡연, 규칙적 운동 여부, 세끼 식사 횟수 및 식사시간의 경우, 남녀 모두에서 야식으로부터의 섭취 열량 비율에 군간 유의한 차이를 보이지 않았으며, 아침의 식욕 저하 및 불면증과 같이 야식으로 야기될 수 있는 임상 증상의 경우 남녀 모두에서 각각 35%와 10% 미만의 비율을 가지는 것으로 나타났으나, 야식으로부터의 섭취 열량 비율에 따른 군간 유의한 차이는 나타나지 않았다. 1일 섭취 열량의 경우 남성에서는 야식 비섭취군, 25% 미만 야식군 및 저녁식사 각각 1,517.67 kcal, 1,970.69 kcal, 2,353.68 kcal였으며, 여성에서 야식 비섭취군, 25% 미만 야식군 각각 1,768.95 kcal, 2,019.57 kcal로 야식을 섭취하는 군에서 유의적으로 높은 열량 섭취량을 보였다(p<0.001, p<0.05). 그러나 남성의 경우 섬유소, 비타민 $B_1$, 비타민 $B_2$, 엽산, 비타민 C, 칼슘, 칼륨 및 철 등 미량영양소의 섭취 밀도에서 세군 중 25% 이상 야식군이 유의적으로 낮게 나타났으며, 여성의 경우 25% 미만 야식군의 비타민 C 섭취 밀도가 야식 비섭취군에 비해 유의적으로 높게 나타났다. 또한 영양소별영양의 질적 지수를 분석한 결과, 남성에서 비타민 $B_1$, 비타민 $B_2$, 엽산, 비타민 C, 칼슘 및 철의 INQ에서 25% 이상 야식군이 세 군 중 유의적으로 가장 낮게 나타났으며, 여성에서는 25% 미만 야식군의 비타민 C INQ가 야식 비섭취군에 비해 유의적으로 높게 나타났다. 식품군별 섭취량 분석 결과, 남성에서 식품 섭취량은 야식 비섭취군, 25% 미만 야식군 및 25% 이상 야식군에서 각각 849.84 g, 1,138.91 g, 1,449.16g으로 25% 이상 야식군에서 유의적으로 가장 높게 나타났으며(p<0.001), 여성에서도 25% 미만 야식군의 1일 총 식품 섭취량은 1,280.97 g으로 야식 비섭취군의 1,034.98 g에 비해 유의적으로 높게 나타났다(p<0.01). 남성에서 육류, 유지류 및 음료류의 섭취량의 경우 25% 이상 야식군에서 유의적으로 가장 높게 나타났으며, 여성에서 25% 미만 야식군의 과일류 및 우유류의 섭취량이 야식 비섭취군에 비해 유의적으로 높게 나타났는데, 이는 야식으로부터의 식품군별 섭취량을 분석해 본 결과에서도 유사하게 나타났다. 또한 연구 대상자들의 야식으로부터의 식품 및 열량 섭취량, 열량 섭취에 대한 기여율과 영양의 질적 지수와의 관련성을 분석한 결과, 남성에서 비타민 $B_1$, 비타민 $B_2$, 비타민 C, 칼슘 및 철 INQ의 경우 야식으로부터의 식품 및 열량 섭취량, 열량 섭취에 대한 기여율에서 모두 유의적인 음의 상관성을 보였으며, 여성에서 비타민 $B_1$ INQ는 야식으로부터의 열량 섭취량 및 열량 섭취에 대한 기여율과 유의적인 음의 상관성을 보였다. 이와같은 결과를 종합해볼 때 본 연구 대상자인 남녀 대학생의 경우 야식으로 섭취하는 열량의 비율이 5.74%로 야식으로부터 섭취하는 열량의 비율이 높지 않은 것으로 나타났으나, 25% 이상 야식으로부터 열량을 섭취하는 남자 대학생의 경우 1일 절대적인 양적 식품 및 열량 섭취량은 다른 군에 비해 높고, 영양섭취기준을 충족하는 비율도 높았지만, 미량 영양소의 1,000 kcal당 섭취량이나 영양의 질적 지수는 낮게 나타나 미량 영양소의 섭취가 질적으로 낮을 가능성이 나타났다. 또한 야식으로부터의 식품 및 열량 섭취량, 열량 섭취에 대한 기여율도 미량영양소의 INQ와 유의적인 음의 상관성을 보여 야식의 섭취와 미량 영양소 섭취의 질과의 음의 관련성을 시사하여 주었다. 따라서 이와 같은 결과를 성인기 초반에 있는 대학생을 대상으로 한 건강 관련 적절한 식습관에 대한 영양 교육 시 고려해야 할 것으로 생각된다.

50세 이상 성인과 노인의 우울여부에 따른 식습관 및 식품섭취상태에 관한 연구 (A study on dietary habits and food intakes in adults aged 50 or older according to depression status)

  • 본 연구는 노인의 우울 상태에 따른 일반적 특성, 식행동 특성, 식품섭취상태, 간이 영양 상태 평가, 간이 식생활 진단 평가, 식생활만족도에서의 차이를 비교하였다. 연구결과는 다음과 같다. 1) 연구대상자는 50세 이상 성인과 노인으로 구성되었으며, 우울군이 비우울군보다 평균연령이 높았다. 여성의 우울군 비율이 남성보다 1.7배 더 높았고, 사별한 경우와 혼자 사는 경우에서 우울군의 비율이 높았다. 2) 식욕상태는 우울군이 비우울군에 비해 나쁘다고 보고하였고, 우울군이 대체적으로 혼자 먹고, 식사를 혼자 준비하는 경향이 강했다. 외식 또한 거의 하지 않는 비율이 우울군에서 더 높았다. 3) 총 34종의 식품에 대해 섭취 상태를 조사한 결과, 전반적인 식품 섭취가 우울군이 비우울군에 비해 유의하게 적게 섭취하였다. 특히 과일류와 채소류에서 우울군과 비우울군간의 섭취 차이가 가장 컸다. 4) 우울군의 경우 기름진 음식 (지방이 많은 육류)을 비우울군에 비해 더 많이 섭취하는 식생활을 하고 있으며, 비우울군은 육류, 생선, 달걀, 콩, 두부, 채소를 더 많이 먹었다. 5) 음식에 대한 만족도는 우울군이 비우울군에 비해 유의적으로 낮았다. 결론적으로 50세 이상 성인 및 노인들에게서 우울여부에 따라 식행동, 식품섭취 상태 및 식생활 만족에 차이가 있는 것으로 나타났다. 본 연구에서 노인의 우울은 식습관 및 식품섭취 상태와 밀접하게 관련되어 있음이 확인되었고, 그 결과 전반적으로 우울군이 비우울군에 비해 식습관과 식품섭취 상태가 취약하므로 이에 대한 적절한 관리 방안을 모색해야 한다고 사료된다.

만성질환 보유정도에 따른 여름, 겨울 농촌 노인의 식이섭취 평가 (Dietary Intake Assessment by the Number of Chronic Diseases and the Season for Elderly Living in Rural Area)

  • Korea's aging population has been remarkably increased. They want to have not only extension of life expectancy but also improving quality of life. To maintain the quality of life, it is essential to have good nutrition. However, nutritional status of elderly in Korea has problems qualitatively and quantitatively. Risk factors for poor nutrition are advanced age, woman, living alone and low economic status. Another risk factor in rural area is season because seasonal changes can affect food intake of elderly. Thus this study surveyed the health status and dietary intakes of elderly by season in rural area. In this study, the elderly were grouped as group 1 {elderly who have one risk factor for chronic diseases (obesity, hypertension, dyslipidemia, diabetes)} and group 2 (elderly who have more than 2 risk factors). Can-Pro 3.0 was used for dietary data analysis and SPSS 12.0 program was used for statistical analysis. Obesity had the highest percentage 62%, followed by hypertension 59.5%, dyslipidemia 21.5% and diabetes 11.6%. Obesity, hypertension, and dyslipidemia were high in winter and WHR, diabetes and anemia were high in summer. Mean intakes of energy and nutrients were less than RI. Nutrients which were changed most by season were vitamin A and Vitamin C. Intakes of calcium and folic acid were less than recommended in summer. The ratio of CPF for carbohydrate was higher and fat was lower than recommended. In conclusion, the nutrient intake of Group 2 was better in quality but Group 1 was better in quantity. Nutrient intakes were poor in summer. In rural area, more careful nutritional assesment and management are needed for aged population, especially in summer.

미숙아를 출산한 산모의 임신시 영양소 섭취실태에 관한 연구 (I) (A Study on Nutrient Intake During Pregnancy of Women of Premature Delivery (I))

  • Inadequate nutritional status of pregnancy can cause underweight and premature birth, undergrowth and deliverance of physically and mentally defected babyies. The purpose of this study is to provide guidelines for preventing preterm delivery in the aspect of nutritional factors. The nutrient intakes were compared between a preterm delivery group and a normal term delivery group to recognize risk factors of preterm delivery. The results obtained are summarized as follows. The pregnancy period was statistically longer in the normal term group (p<0.0001). Weight increase was statistically higher in the normal term group (p<0.0001). Calories (p<0.05), carbohydrates (p<0.0005), dietary fibers (p<0.0001), potassium (p<0.0005), vitamin $B_1$ (p<0.0005), vitamin $B_6$ (p<0.05), vitamin C (p<0.0001), and folic acid (p<0.05) intakes were statistically higher in the normal term group. Nutrient density of vitamin $B_1$ (p<0.05) and vitamin C (p<0.0001) in the normal term group was statistically higher. Nutrient adequacy ratio of zinc (p<0.05), vitamin $B_1$ (p<0.05) and folic acid (p<0.05) were statistically higher in the normal term group. Index of Nutritional Quality of vitamin $B_1$ (p<0.05) and vitamin C (p<0.0001) were statistically higher in the normal term group. In this study, the normal term delivery showed higher intakes of calories, carbohydrates, dietary fiber, crude fiber, potassium, vitamin $B_1$, vitamin $B_6$ vitamin C and folic acid than the preterm delivery group. Deficiencies in various nutrients may lead to preterm delivery, therefore, balanced nutrient intake is recommended to prevent preterm delivery.

학령 전 아동의 맛 선호도가 영양소 섭취와 치아우식상태에 미치는 영향 (The Effects of Taste Preferences on Nutrients Intake and the Degree of Dental Caries in Preschool Children)

  • The purpose of this study was to investigate the effects of preschool children's taste preferences on their intake of nutrients and the degree of dental caries. The subjects were 126 preschool children (boys 62 and girls 64) in Daegu area. Their taste preferences and food intake were investigated and their teeth were also examined. The energy intake of boys (1550 kcal) were significantly higher than that of girls (1441 kcal). Daily dietary intakes of nutrients-except niacin and vitamin C-were higher than those of RDA. Vitamin B$_1$ intake of the group preferring a salty taste was significantly lower than that of the other group (p<0.05). Vitamin B$_2$ intake of the group preferring a salty taste was significantly higher than that of the other group (p<0.05). Vitamin C intake of the group preferring a hot taste was significantly higher than that of the other group (p<0.05). The group with a preference for sweet had more experiences of dental caries and more decayed teeth than the other group, but which is not significant. The experiences of dental caries were negatively correlated with protein intake (p<0.01). The decayed teeth were negatively correlated with energy and protein intakes (p<0.01). Our data suggested that taste preferences are associated with vitamins intake and the degree of dental caries in preschool children. It means the sweet preference increased the experiences of the dental caries.
