This study was carried out to obtain information about preferences of the meat food in 491 Koreans including the ones living in New Zealand. General preference for the meats was not significant differences according to sex, monthly income level, residing area, marriage status and family number. Degree of preferences for the meats which have consumed commonly such as beef, pork and chicken showed relatively a high tendency, but the meats such as goat, lamb, deer and turkey were very low in preference score. In the meats cooking style, most subjects preferred Korean style followed by Chinese and western style. The younger had a high score than the older inpreference of the processed meats. The meat foods subjects preferred were Tzeams, Kui, Tangs, cutlets and Tangsuyuks. There were not significant differences in preferences for the meats between Korean living in domestic and New Zealand. This study showed that the meat foods which theirs preference was high have had a high tendency in the intake frequency also. Preferences for the meat food was affected by intake frequency and amount of intake and nutritional knowledge, but not related to BMI, health status and monthly income level.
Aim of this study is to investigate the nutrition knowledge, dietary behaviors, and dietary habits by the gender in high school students in Chungnam province. Girls students had a higher score than boys students for nutritional knowledge, not in the significant difference. However, boys students had a higher score for dietary behaviors than girls students. Dietary habits showed a significant difference in the unbalanced food habit and eating speed by the gender, and the eating speed of boys students was faster than that of girls students. For boys students, the nutritional knowledge and dietary behaviors did not have the significant correlation. Otherwise, girls students had the positive correlation between the nutritional knowledge and dietary behaviors, and had the characteristics of behaviors that the higher the nutritional knowledge score, the better eating habit. In addition, the boys and girls students had the positive correlation between the score of nutritional knowledge and the frequency of breakfast, and the score of nutritional knowledge and the frequency/regularity of breakfast, respectively. Because some dietary habits/behaviors are related closely to their nutritional knowledge, the high school students need the systematic and steady nutritional education to apply their known nutritional knowledge to actual life.
The health, anthropometry, food habits, food intake frequency and nutrition intake of 747(219 men and 528 women) elderly people living in Inchon were investigated. Mean BMI, WHR, triceps skinfold thickness, BIA, blood pressure of the subjects were 23.4, 1.0, 15.6mm, 28.6%, 137.5/78.8mmHg in men and 24.9, 0.87, 22.6mm, 36.2%, 130.8/73.8mmHg in women respectively. Over the half of the subjects perceived themselves unhealthy and 86.2% of the elderly suffered from one or more illness. Ratios of the smoking and the drinking elderly were 40%, 43% in men and 12%, 11% in women. The major reason to stop smoking or drinking was the concern about their health. Food habit score of the subjects was relatively high (14.45/18.0) but food intake frequency score were relatively low (21.18/33.0) except the food groups of cereal & grain, white vegetable and sweets. The foods consumed by the elderly were very limited in quality and also in quantity. The daily intakes of calorie, protein, iron, vit. B1, niacin and vit. C were less than 2/3 of RDA and the amounts of calcium, vit. A and vit. B2 consumption were less than 1/2 of RDA.
To analyse the impact of recognition for local food on frequency of visiting for local food restaurants, we surveyed 333 residents in the Kyungsangdo areas. The findings are summarized as follows. On interest of native foods, 'much' scored 40.6% and 'taste' scored 32.9%, in requirement of development. The criteria of selection of local foods was 62.3% in 'taste'. 'Institute(municipal government)' scored 31.3% as the main responsible body for the succession of local foods. The most significant criterion for tourism product of local foods was 'taste'(34.5%). The most effective way to popularize the local foods was to 'hold various kinds of cultural events'(27.5%). The necessity score on tourism product of local foods was 3.55 points. The highest recognition on native local foods was 'succession to next generation'(3.96 points). The most influential variable affecting the visit frequency toward local food restaurants was 'health factor'.

To assess the food intake and diet quality of preschool children in Pusan, dietary survey was conducted with 176 subjects using 24hr recall method. Diet quality was assessed by food group pattern, dietary diversity score(DDS), dietary variety score(DVS), and dietary frequency score(DFS). The total number of food items consumed was 307. The foods consumed most frequently were rice, Korean cabbage kimchi, milk and green onion. When investigating the consumption pattern of major six food groups, 38.1% of subjects consumed all six groups. Food group was missed in order of fruit(41.5%), sweet(19.9%), dairy(16.5), vegetable(4.5%) and meat(1.7%). The mean values of DDS, DVS, and DFS were 5.16, 13.82, and 16.07 re spectively. Persons who had higher DDSs also had higher DVSs(p<0.001). DDS, DVS and DFS correlated positively with NAR(nutrient adequacy ratio) and MAR(mean adequacy ratio) significantly. Associations between the NAR of most nutrients and MAR with DVS and DFS were higher than those between the NAR of most nutrients and MAR with DDS. People with DDS of above 6 or DVS of above 16 or DFS of above 21 met two thirds of recommended dietary allowance for nutrients. Based on the result of the food group intake, the food intake of subjects was not adequate, especially the fruit and dairy groups. When assessing the dietary quality of subjects using DDS, DVS and DFS, many people appeared not to have a desirable food intake.
This study examined the dietary behaviors and dietary quality of high school students according to the number of times they skipped breakfast. A total of 474 high school students (225 boys and 249 girls) residing in Incheon participated in this survey. The subjects were divided into the three groups according to the frequency of eating breakfast; Regualr (eating breakfast everyday, n=226), Irregualar (eating breakfast 1~6 times/week, n=143, and Skipping (skipping breakfast everyday, n=105). The dietary quality was assessed using a nutrient quotient for adolescents (NQ-A). A higher monthly allowance and a higher rate of working mothers were significantly associated with a higher frequency of skipping breakfast. A higher intake frequency of processed beverages, and street food was significantly associated with a higher frequency of skipping breakfast. Students who had a higher rate of breakfast skipping had significantly lower intake frequency of fruits, white milk, bean and bean products, and fish. The high frequency of skipping breakfast among high school students was associated with lower dietary quality, as illustrated by the low total NQ-A score and sub group score including balance, environment, and practice. This information can inform efforts to provide nutrition education program to promote breakfast consumption and guidelines to students who skipped breakfast frequently.
This cross-sectional study was conducted to describe the changes of plasma cardiovascular disease(CVD) risk factors in Korea. Overnight fasting plasma levels of total cholesterol, high density lipoprotein(HDL)-cholesterol, triacylglycerol and glucose were analyzed. Blood pressure and anthropometric data were also measured. Health practice factors such as smoking status, alcohol consumption and frequency fo exercise were evaluated by a self-administered questionnaire. Questions regarding dietary habits and food preferences were also asked. Seventy eight percent of the subjects had more than one CVD risk factor. Plasma total cholesterol, triacylglycerol, and fasting blood glucose were significantly increased according to the subjects body mass index$(kg/m^2$, BMI), whereas HDL-cholesterol, low density lipoprotein(LDL)-cholesterol and blood pressure showed no significant differences with BMI. Current smokers had significantly high plasma total cholesterol, LDL-cholesterol and triacylglycerol levels. Alcohol consumption significantly increased plasma total cholesterol and fasting blood sugar, but regular exercise had no effects on the plasma CVD risk factors. Overeating and frequency of fast food consumption were positively correlated with the CVD risk score, whereas intake of grains, meats and vegetables were negatively correlated with that score. A stepwise multiple regression analysis was performed to examine the effects of specific dietary factors on plasma lipid levels. For plasma total cholesterol level, the frequency of fast food intake explained 8% of the variance, followed by habitual overeating, frequency of grain intake and high cholesterol food intake(Model $R^2$=22.4%). For plasma triacylglycerol level, preference of oily foods accounted for 7.5% of the variance, followed by eating breakfast, preference of fruit and frequency of grain intake(Model $R^2$=22.0%). The findings suggest that intervention programs to reduce the risk of CVD should focus on health practice through reducing BMI, smoking cessation and moderate or no alcohol drinking. Moreover, desirable dietary habits such as eating breakfast, not overeating and reduced intake of fast food may improve CVD risk.
In this study, we identified the differences in food content watching habits and nutrition quotient in adolescent (NQ-A). A total number of 811 subjects were surveyed to establish their general characteristics, food content watching habits, and NQ-A using a self-administered questionnaire. In addition, the mediating effect of watching motivation between the type of food content watched and the NQ-A score was determined. The classification by the type of the food content mainly watched showed that 405 participants (49.9%) watched the Mukbang content, 244 (30.1%) the Cookbang content, and 162 (20.0%) another contents. Among the content watching motives in the Cookbang content group, information acquisition and enjoyment were predominant, whereas emotional satisfaction had the lowest frequency. Compared to the Mukbang content group, when the Cookbang content group mediated information acquisition motivation, the scores of the total, diversity, balance, and practice of NQ-A score areas increased. Compared to the Mukbang content group, the score in the moderation area decreased when the Cookbang content group mediated enjoyment motivation. If food content with accurate information and interesting content are produced and used for adolescent nutrition education, the education will be highly effective.
This study was conducted to find the differences in food consumption frequency of the middle aged(male 20, female 50) and the elderly(male 15, female 15) living in Chonju in December, 1998 according to food habits, smoking, alcohol drinking and exercising habit, health status, and the levels of nutrition knowledge and attitude store. The foods frequently consumed among the subjects were kimchi(15.4/week), mixed rice(11.5/week), rice(7.6/week), vegetables in soup, jjigae and jorim(5.0/week), mandarins and oranges(5.e/week), and seasoned laver(4.3/week). There were several factors influencing food consumption patterns. These were age, regularity of meal times, the status of smoking, alcohol drinking and exercising, and the level of nutrition attitude. The elderly ate cooked rice more frequently, while the middle aged ate fish, especially blue fishes more frequently. The middle aged who had breakfast regularly ate milk and milk products, legumes and fruits frequently. Those who smoked seemed to eat less cereals and starches and fats, while those who didn't smoke ate more sugars. The alcohol drinking group also ate less fats and the exorcising group ate almost all of food groups frequently. The status of health showed to be related with food consumption patterns. The normal group in hemoglobin ate eggs more frequently than the anemia group and the high risk group in blood pressure ate almost all of food groups more frequently. The high level group for nutrition attitude score chose vegetables, fruits, and milk and milk products more frequently than the other groups. On the other hand, low level group for nutrition attitude score was apt to eat ramyun, ham-sausage, and carbonated beverages more frequently. Therefore, nutrition education to improve the food habits find to change nutrition attitude is necessary to promote health status anti mole attention should be taken to the high risk group in blood pressure to guide proper food and nutrition intakes.
In order to investigate the recognition of processed foods, use of food labeling, and their influencing factors in adolescents, 277(male 125, female 152) middle school students were conveniently selected from Cheonan city, and were surveyed by self-recording questionnaire on June, 2000. Subjects' parents were also surveyed using the similar questionnaire. Food labels of all 222 processed foods collected from stores around schools, were well labeled in most items, but food additives(35.6%) and the origin of major ingredient(27.0) were not well indicated. The recognition score of processed foods was 55.0 out of a full score 100 in students and 68.5 in parents. The scores of students were positively correlated with those of their parents and with father's education years, while negatively correlated with snacking expenses. The rate of reading food labels was significantly different between students(51.3%) and their parents(89.9%). The main purposes of reading food labels, in case of students, were to check expiry date(93.7%), price(70.4%), and how to eat(46.5%) in order. While in parents, those were to check expiry date(95.6%), additives(59.0%), and manufacturer(45.8%). Similarly, the most three important items in food labels were expiry date, price, and quantity to the students, but to the parents they were expiry date, manufacturer, and ingredient. The most significant reason not to confirm food labels was because of small size and complication of labels. The students who did not read food labels had more snacking money and more frequent snacking, and showed lower recognition score of processed food, compared with the students who read food labels. In conclusion, the students did not well recognise processed foods and only a half of them read food labels at purchasing. The recognition score of processed foods, snacking moneys, and snacking frequency may be influencing factors on the reading of food labels in students. The high recognition of processed food of parents may positively affect the students' recognition, but did not affect directly the reading food labels.
