The Relation between Effects of Positive Emotional Response of Female Customers in Busan and Behavioral Intention according to Their Food Service Consumption Propensity (부산지역 여성고객들의 외식소비성향이 긍정적 감정반응과 행동의도에 미치는 영향)

  • This study was conducted by empirically analyzing the relation between effects of positive emotional response of female customers, who have at some point consumed food at Korean restaurants in Busan, and behavioral intention according to their food service consumption propensity. In order to achieve the objective of the study, the questionnaire survey was performed from March $10^{th}$ to $25^{th}$, and frequency analysis, confirmatory factor analysis, reliability analysis, correlation analysis, and SEM (structure equation model) were conducted by using SPSS 18.0 and AMOS for 248 questionnaires. As a result of an exploratory factor analysis, five factors were confirmed. In a confirmatory factor analysis, the average variance extracted (AVE) and composite reliability (CR) were confirmed as .508 to .665 and .905 to .946 respectively, which proved the convergent validity. In a hypothesis test, Hypothesis 1 was determined that the food service consumption propensity positively effects on emotional response. The results were as follows: the taste driven (${\beta}$=.325, t=3.907, p<.001), the health driven (${\beta}$=.190, t=2.688, p<.001), and the atmosphere driven (${\beta}$=.188, t=2.515, p<.001). Therefore, Hypothesis 1 was selected. Hypothesis 1 has determined that positive emotional response beneficially affects behavioral intention. As a result of an analysis, the standardized path coefficient was (${\beta}$=.496, t=6.388, p<.001), so Hypothesis 1 was selected. This result suggests that the taste driven factor has the biggest influence on emotional response in the food service consumption propensity for female customers, and food service business operators should strive to make a good restaurant atmosphere for customers to get positive emotional response (pleasure, comfort, satisfaction, and joy).

A Study on Self-evaluated Obesity and Food Habits by Residence Type of College Students in Ik-San Area (익산지역 대학생의 체형인식과 거주형태에 따른 식습관 비교)

  • This study was carried out to investigate the ity, food habits and eating behavior of the college students. The responses of 1,112 students(male 468, female 644) to the questionnaire were analyzed. The results were summarized as follows: The means of height, weight were $174.1{\pm}5.1cm$, $66.0{\pm}8.1kg$ for males, respectively and were $164.3{\pm}6.0cm$, $50.7{\pm}5.3kg$ for female, respectively. The means of relative body weight(RBW) were $99.1{\pm}11.6$ for males and $91.2{\pm}10.3$ for females. Body mass index(BMI) were $21.8{\pm}2.5$ for males and $19.3{\pm}2.0$ for females. The rate of underweight, normal and obese on the basis of BMI was 19.9%, 71.5%, 8.6% for males, respectively and 68.4%, 30.4%, 1.3% for females respectively. Among underweight subjects, 59.3% answered that they had normal weight. 37.5% of normal weight subjects regarded themselves more obese or less obese than their actual body shape. Food habit score(out of a possible 50 points) was 29.4 in male and 29.3 in female, the score of self boarding students was the lowest among groups. Self boarding students had lower scores than the home-living students on the regularity of meals, eating time, protein intake, vegetable intake, lipid intake and food balance. The average meal frequency of the students was 2.46 times a day. Breakfast was skipped most frequently. Self-boarding students missed breakfast more often than other groups. The main reason of skipping breakfast was due to lack of time. The type of favorite snack was cookies and ramyun and in terms of snack time, most of the students had snack between lunch and dinner or after dinner. The rates of smoking and alcohol drinking were 29.8%, 76.7%, respectively and 25% of subjects exercised regularly. The results of this study suggest that a comprehensive nutrition education program is needed for college student to improve their eating habits about skipping meal and to maintain their health.

Assessment of Need for Nutritional Education in Male Workers Living in Busan (부산지역 산업체 남성 근로자의 영양교육에 대한 요구도 분석)

  • The purpose of this study was to assess the need for nutritional education in male workers living in Busan, Korea. This study surveyed 310 industrial workers at five companies in Busan using a questionnaire. According to the results, need for nutritional education scored 3.60/5.00 points. The usage rate of mass media as a means of acquiring nutritional information was significantly higher (P<0.001) in subjects in their 50s compared to other age groups. Regarding scores on need for nutritional education according to theme, 'balanced eating habits' showed the highest score, followed by 'food safety', 'diet therapy related to a disease', and 'food hygiene and food poisoning prevention'. In terms of frequency of nutritional education, 29.0% of subjects considered 'biannually' to be desirable, whereas 25.8% and 21.0% considered 'annually' and 'quarterly' to be desirable, respectively. The results of this study suggest that nutritional education for industrial workers should be implemented in various ways in accordance with their characteristics. Furthermore, considering workers' low awareness levels of the need for nutritional education, employees are required to take the education in order to encouraged to improve their nutritional status and commit to a desirable diet.

A Study on Nutritional Status of Iron in Korean Normal and Obese Male Elementary School Students (정상 남자 아동과 비만 남자 아동의 철 영양상태에 관한 연구)

  • The purpose of this study was to compare the food behavior and nutrient intakes, and the analysis of constituent parts of blood related to iron nutrition conditions and to investigate the correlation between iron nutrition conditions and obesity. Each subject was assigned to one of such as normal(n=55) and obese groups(n=60) according to their obesity index. Their nutritional status, serum iron status were evaluated based in 24-hr dietary recalls, questionnaire and blood analysis. The mean age of the normal group(10.76 years) and that of the obese group(10.95 years) made little difference. The height(p<0.05), weight(p<0.001), and obesity index(p<0.001) in the obese group were higher than those of the normal group in every respect. The 63.55% of the subject of this study gave an answer 'They eat breakfast daily', and the frequency of eating breakfast made little difference. The average intakes of energy were 1669.44 kcal(84.19% of EER) in the obese group and 1673.59 kcal(86.72% of EER) in the normal group respectively, which made little difference between two groups. The intake of nutrients such as calcium and folate was as insufficient as below 75% of RI. The heme iron intake of the obese group was low that of the normal group(p<0.05). Among the major 20 iron resources the iron intake through animal food intake were 1.43 mg(12.00%) in the obese group and 1.93 mg(17.72%) in the normal group respectively. The rating of iron condition in the blood showed that the number of red blood cell(p<0.01), the hemoglobin(p<0.001), and hematocrit(p<0.01) of the obese group were lower than those of the normal group. These results suggest that there should be the right choice of food according to its bioavailability and nutritive guidance to appropriate food behavior, in addition to increasing iron intake to improve iron nutrition conditions of obese male elementary school students.

Mobile application-based dietary sugar intake reduction intervention study according to the stages of behavior change in female college students (모바일 어플리케이션 기반 당류 저감화 중재 프로그램의 행동변화단계에 따른 효과 분석 : 일부 여대생 대상 연구)

  • Purpose: This study examined the effects of a mobile app-based program to reduce the dietary sugar intake according to the stages of the behavioral change in dietary sugar reduction in female college students. Methods: The program used in this study can monitor the dietary sugar intake after recording the dietary intake and provide education message for the reduction of dietary sugar intake. In an eight-week pre-post intervention study, 68 female college students were instructed to record all the food they consumed daily and received weekly education information. At pre-post intervention, the subjects were asked to answer the questionnaire about sugar-related nutrition knowledge, sugar-intake behavior, and sugar-intake frequency. For statistical analysis, ANOVA and a paired t-test were used for comparative analysis according Precontemplation (PC), Contemplation Preparation (C P), and A M (Action Maintenance) stage. Results: Significant differences were observed in the frequency of snacking, experience of nutrition education, and preference for sweetness according to the stages of behavior change in dietary sugar reduction. After finishing an intervention, the sugar-related nutrition knowledge score was increased significantly in the stages of Precontemplation (PC) and Contemplation Preparation (C P). The score of the sugar intake behavior increased significantly in all stages. The intake frequency of chocolate, muffins or cakes, and drinking yogurt decreased significantly in the PC stage and the intake frequency of biscuits, carbonated beverages, and fruit juice decreased significantly in the C P stage. Subjects in the PC and C P stages had an undesirable propensity in nutrition knowledge, sugar-intake behavior, and sugar-intake frequency compared to the A M stage, but this intervention improved significantly their nutrition knowledge, sugar-intake behavior, and sugar-intake frequency. Conclusion: This program can be an effective educational tool in the stages of PC and C P, and is expected to further increase the usability and sustainability of mobile application if supplemented appropriately to a health platform program.

The Consumption Patterns of Korean Native Chicken (식품 소비 성향에 따른 토종닭 구매요인 분석)

  • This study examined how consumer choices (i.e., selecting food safety certified products, health-related products, and familiar brands) affect the purchase of Korean native chicken (KNC) and the demographics that influence KNC purchases using secondary consumer panel data from the Rural Development Administration of Korea. The grocery purchase data from 654 Korean households between 2017 and 2019 were used; the propensity for food safety certified products was measured by the purchasing frequency of Good Agricultural Practice (GAP) and Hazard Analysis and Critical Control Point (HACCP) products, and the propensity for health-related products was measured by the purchasing frequency of home meal replacement (HMR) and hedonic products. The propensity to purchase familiar brands was measured using a questionnaire. Logistic regression was used to examine the determinants of the KNC purchase experience, and multiple linear regression was used to determine the factors that influenced the KNC purchase frequency. The results showed that unemployed women purchased more safety certified products, health-related products, familiar brands, and KNC. These findings suggest that targeting consumers with differential marketing strategies may help promote KNC consumption. This study identified factors that influence KNC purchases, which is important for understanding consumer behavior and revitalizing the market.

A Study on the Selection Attributes for Restaurant, Customer Satisfaction, and Recommendation Intention on Traveling Domestic Tourists: Targeting Tourists for Rail-ro Tickets

  • The purpose of this study was to examine the causal relationship among restaurant selection attributes and customer satisfaction and recommendation tastes for young people in their twenties who use tickets for Rail-ro. Data collection was conducted to utilize questionnaire survey with online and offline distribution. The collected data were analyzed using a statistical program SPSS 21.0 with frequency analysis, reliability analysis, factor analysis, and regression analysis. The results of the study showed that Internet search is the most common source of information about restaurants during the trip, and restaurant choice attributes have an important impact on customer satisfaction, food quality, employee service and reputation, but hygiene did not have a big effect on customer satisfaction. In addition, customer satisfaction has a significant effect on recommendation intention. Concluding the results from this study, it investigated the significant attributes for customers selection of restaurants and provide meaningful advice for market managers to make useful marketing strategies to attract more clients and augment economic benefits.

The Effects of Personality Factors of the Prep Entrepreneurs in Food Service Industry on Entrepreneurial Intention: Focusing on the Risk Sensitivity

  • The purposes of this study were to estimate the relationship between Big 5 personality factors of prep-entrepreneur and entrepreneurial intention, and to identify the moderating effects of risk sensitivity on the relationship. There is a total of 181 questionnaire surveys distributed and 152 data were used for analysis with erasing incomplete responses. The data analysis was conducted to utilize frequency analysis and regression analysis with SPSS WIN 22.0. The results of this study demonstrated that there are only 2 factors, neuroticism and extraversion, significantly influence on entrepreneurial intention, while conscientiousness, agreeableness and openness to experience do not have significant impacts on entrepreneurial intention. Furthermore, risk sensitivity effects on the relationship between Big-5 personality factor and entrepreneurial intention. This study may contribute to help prep-entrepreneur by using baseline data. Prep- entrepreneur could know their personality factor and confirm their consideration about entrepreneurial intention. Meanwhile, for the market-oriented implication, this study suggested that it is instrumental and significant for knowing prep-entrepreneur's personality factor and their entrepreneurial intention before starting foodservice business.

Survey of Fatigue-Related Health Conditions of General Population in a Metropolis

  • Objectives: To examine the overview of fatigue-related health conditions in the Korean general population. Methods: Data were collected from 2,203 adults (1,126 men and 1,077 women) via a self-reporting questionnaire and their sleeping, exercise, stress, physical problems, use of functional food, and fatigue status were analyzed. Results: The average sleeping hours was about $6.6{\pm}2.0$ hrs per day, and 24.3% of subjects didn't exercise (over 30 min) in a week. Around 16.5% of subjects were under severe stress, and 46.1% (36.9% male vs. 55.6% female) had had trouble with at least one form of physical distress including dyspepsia, headache or muscular pain. 45.4% (37.2% male vs. 53.9% female) of subjects used functional supplements. 46.3% (42.8% male vs. 50.0% female) of subjects complained of chronic fatigue, and they were significantly different compared with no-fatigue subjects regarding severe stress status (8.6% vs. 24.0%), frequency of physical distress (33.2% vs. 69.9%), and use of functional supplements (41.6% vs. 49.8%). Conclusion: This result first reports the features of fatigue-related health conditions including prevalence of chronic fatigue in the Korean population. This data could be helpful to develop fatigue-focused traditional Korean medicine in the future.

Relation between Folate Levels of Maternal-Umbilical Cord Blood, Placenta Tissue and Pregnancy Outcomes

  • The purpose of this study was to evaluate the folate nutritional status of Korean pregnant women and to investigate the relation between folate levels of maternal-umbilical cord blood, placenta tissue, and pregnancy outcomes. The study subjects consisted of 25 pregnant women who have had normal term deliveries. Dietary folate intakes of the pregnants were estimated by semi quantitative frequency questionnaire and the serum and placenta tissue folate level was measured by microbiological analysis. The total folate intakes of the pregnant women was 655.6 ${\mu}$g/d, which was 131.1% of the Korean RDA for pregnants. Maternal serum folate level was 16.18ng/ml, which was significantly lower than that of umbilical cord blood (34.98ng/ml, p<0.05). Mean folate concentration of the placental tissue was 998.0ng/ml, which was the highest compared to maternal and umbilical cord serum level. Umbilical cord serum folate level and placental tissue folate level were highly influenced by maternal serum folate level. The umbilical cord folate levels of the infant group whose birth weight was higher than 3500g were significantly higher than the group whose birth weight was less than 3500g (p<0.05). The placental folate level was significantly higher in maternal group who showed desirable weight gain during pregnancy (11 - 14kg). In conclusion, the birth weigt was related to the umbilical cord folate level and the maternal weight gain was affected by the placental folate level.
