The purpose of this study is to investigate the usefulness and application of home economics curriculum to housewives. For this research, a survey was conducted using questionnaires against 427 housewives living in Seoul, Gyeonggi-do, and other provinces. The data analysis of this study was verified by frequency, mean, t-test, and Cronbach's ${\alpha}$ coefficient by using SPSS 12.0 program. The conclusions of this study are as follows. First, more than 88% of the housewives recognize that home economics curriculum is necessary. Second, as for the areas of the usefulness and application of home economics curriculum, housewives recognize the "family and child" area was most useful, followed by "food, nutrition & cookery", "consumer and family financial management", "housing and residential interior design", and "clothing care, apparel design and making" areas. Third, the better perceive the housewives think of the home economics curriculum, the higher is the appreciation of the curriculum. Based on this research, home economics curriculum was proved very important and necessary in everyday life for housewives.
Purpose: To identify effects of menstrual attitude, premenstrual syndrome, and stress response on quality of life of nursing students. Methods: Subjects were 135 nursing students who agreed to participate in this study. Data were analyzed using descriptive statistics, t-test, ANOVA, Pearson correlation, and stepwise multiple regression. Results: Premenstrual syndrome, younger than 20 years of age, and habit of eating bland food in everyday life were factors influencing quality of life of nursing students. These factors accounted for 17.6% of quality of life. Premenstrual syndrome toward quality of life was the most influential factor. Conclusion: Premenstrual syndrome is the most significant factor affecting the quality of life of nursing students. To increase their quality of life, it is important to develop and apply educational programs using factors influencing quality of life of the nursing students. Results of this study will be useful as basic data for improving quality of life of nursing students. Additional study is needed to test its effect in the future.

To evaluate the food habits of middle school students a survey was made by the method of questionaire on 820 middle school students consisted of 370 boys and 450 girls in Taegu city area. The results obtained are summarized as follows; Cookies, fruits, fruit juice and ice cream are their favorite eatings between meals in the decreasing order, And the eatings between meals are more frequent In girls and in the students from financially better homes and from the parents of higher education. More than half of the students have regular or irregular intake of additional vitamin tablets while about 22 percents of them skip their breakfast almost everyday. About 24% of the students hardly pay attention to the relationship between their nutritional condition and their meals. More than seventy percents of the students are taking the instant foods as one of their favorite dishes. The food intake score showed large variation($0{\sim}14$). In general the girls marked higher score than the boys. The students from financially better homes and the students from the parents of higher education marked higher scores. From the 5 scale preference test it was shown that fruits the most favored eatings of the students while the fish and crab scored the lowest mark.
This study was to investigate the quality characteristics of brown rice mixed with white rice and boiled in hydrothermal extract of the medicinal herbs which was effective for diabetes in order to suggest a way of taking the rice everyday in Korean dietary life. The moisture content of the cooked rice was decreased with an increase of brown rice addition. The moisture content was same at Herbs extract ($H_2$). The physical properties of Herbs extract ($H_1$)and Herbs extract ($H_2$) showed a similar tendency. The hardness of the control, 100% of white rice, was lowest. The hardness was increased with increase of brown rice addition. The springiness, cohesiveness and gumminess tended to be decreased with increase of brown rice addition, while the chewiness was increased with increase of brown rice addition. In chromaticity, $H_1$ and $H_2$ revealed a similar trend. The color value L was decreased with increase of brown rice addition. The value a was decreased with increase of brown rice amount. On the contrary, the value b was increased with increase of brown rice amount. In the sensory test result of the cooked rice by using $H_1$, the appearance, taste, texture and the overall preference exhibited a tendency to decreased with increase of brown rice addition. The incase was similar to the rice cooked with $H_2$ and the overall preference showed a similar tendency, being highest at the sample added with 30% of brown rice.
The mother's obesity-related stress and it's association with obesity, food intake, and physical activity in both mothers and their children were determined. Based on self-reports from 470 mothers, obesity stress of mothers were scored by using a five-point Likert scale; only low and high stress scores were used in this study. The perceptions of mothers' weights and their children's weights, mothers' Body Mass Indices (BMI), and preschoolers' Weight-Length Indices (WLI)(%) were also determined. The obesity stress of mothers was significantly associated with the mothers' BMI (high stress: $23.5{\pm}2.4$ vs. low stress: $19.6{\pm}1.7$, p<0.05), but not with their children's obesity. Mothers with a high obesity stress reported a higher percentage of family history of obesity (62.1% vs. 38.3%, p<0.001) than mothers with low obesity stress. Compared to mothers with low obesity stress, mothers with high stress had lower correct-perceptions about their weights (p<0.05) but higher correct-perceptions for their children's weights. Almost 54.5% of mothers with high stress reported watching television 2 or more extra hours per day, compared with 32.2% of mothers with low stress (p<0.05). More children of mothers with high stress had long hours of daily TV viewing than children of mothers with low stress (36.0% vs. 15.3%, $X^2=10.491$, p<0.05). Mothers with high stress reported lower intake of protein-rich foods (p=0.01) and vegetables (p=0.039), but a higher intake of snacks (p=0.009), compared to mothers with low stress. More children of mothers with high stress reported eating high fat snacks or high sugar snacks everyday, but this was not statistically significant. In conclusion, high obesity stress in mothers were greatly associated with their BMI and their inactive life style, including long TV viewing hours per day and unbalanced food intakes, which can lead their children becoming inactive and obese. Special attention is recommended for overstressed mothers and their children, especially those who enjoy long hours of TV viewing.
The purpose of this study was to investigate the consumption patterns of traditional Korean rice cake among college students. Self administered questionnaires were collected from 512 college students in the Seoul, Kyunggi, Chungchung, Kyungsang, Junla and Gangwondo areas. The data were statistically analysed using frequency analysis, chi-squared and t-tests and a one-way ANOVA. By examining the results of the student's perceptions of traditional Korean rice cake, it was found that most know little, or only a moderate amount, about this type of food. Meanwhile, more than half the students liked traditional Korean rice cake, as this type of food satisfied their need for a traditional Korean taste, while the reason for disliking was that they were more familiar with western-style confectionary. Most students answered that they only ate traditional Korean rice cake on special occasions, such as big holidays or ceremonies for the dead ancestors. Most answered that they bought those foods at conventional markets, the mile in the neighborhood, (Eds note: I dont't understand, do you mean, “within a mile of their neighborhood”\ulcorner) or atbig malls. The factor they considered the most important at the time of purchase was the quality (taste), which demonstrates the need for the development of traditional Korean rice cakes, with new tastes and shapes, which still satisfy the Korean's taste, whilemaintaining the traditional taste. For the questions that asked about the problems faced by the traditional Korean rice cake manufacturing industry, and the reasons for low consumption, the students responded that buying this type of food was difficult as the outlets selling themwere not easy to find. Our results seem to suggest that there are almost no specialty stores for the sale of traditional Korean rice cake compared to the other types of cakes that are scattered all over the country. (Eds note: this is only my opinion, and I maybe wrong, but I would have thought that trying to market traditional Korean rice cakes at local convenience stores, rather than speciality stores, would make them more available to the general public. Their marketing at speciality stores will maintain the status quo, i.e. people will go to the speciality stores to purchase product for holidays and special occasions, whereas they will go to the local convenience stores to buy general everyday snacks etc.)

The objective of this study is to determine the effectiveness of 4-month milk consumption in the prevention of osteoporosis in elderly women living in Asan. Subjects included 277 women age over 65 years were divided into control (n=111) and milk (n=166) groups. For those in the milk group, one cup (200ml) of partially lactose-digested low-fat milk was provided everyday for 4 months. Each subject was interviewed to assess food intake by 24-h recall method before and after milk supplementation. Prevalence of osteoporosis was determined by WHO criteria with calcaneus bone mineral density (BMD) measured by quantitative ultrasound (QUS) on left heel. After 4 months, the nutrient intake levels of control did not change while intakes of energy, protein, calcium, phosphorous, riboflavin, pyridoxin, niacin and folic acid were significantly increased in milk group. No significant changes were observed in anthropometric, and BMD in both control and milk groups. T-score of milk group, however, was significantly increased after 4 month milk consumption. Prevalence of osteoporosis was increased (27% to 32%) in control group while that of milk group was decreased (32% to 30%). When BMD and t-score changes after 4 months of milk consumption were compared between those with low baseline calcium intake and high calcium intake subjects in the milk group, BMD and t-score were significantly improved in the low baseline calcium intake group. We conclude that one cup a day milk consumption for a relatively short period of 4 months can prevent further bone loss and significantly improve intakes of both macro and micro-nutrients of elderly women.

Mulberry, Morifolium leaves and fruits, Lycii fructus, and Panax ginseng have been known to maintain normal blood sugar levels in folk medicine. Here we investigated the effects of coated rice (Sodangmi$^{TM}$) with these herb extracts to diabetes mellitus patients. Alloxan-induced diabetic mice (80 mg/kg bw, i.v.) separated into 4 groups. 2 groups received the mixed extracts of these plants (Sodans Extract$^{TM}$) orally everyday for 4 weeks. Positive control received Alloxan except Sodans Extract$^{TM}$. Negative control received neither Alloxan nor Sodang Extract$^{TM}$. Blood sugar levels, volume of water consumed, body weights of each group were measured and compared. Blood sugar levels in the Alloxan and Sodang Extract$^{TM}$-received groups got close to normal levels on 4th week after starting the experiments. Volume of water consumed also showed similar pattern. Blood sugar levels in positive control remained high through the experimental periods. Body weights in positive control remained low, but those in the extracts-received groups recovered to normal levels. The clinical trials for both of healthy volunteers and diabetes mellitus patients also showed Sodangmi$^{TM}$ could control blood sugar level. The blood sugar level decreased since 3rd week after starting to receive Sodangmi$^{TM}$, and the difference between the blood sugar level before and after the meal was decreased significantly by receiving Sodangmi$^{TM}$. From these results, we suggest that the functional rice with herb extracts could be used as a new alimentotherapy for diabetes mellitus patients.llitus patients.
Objectives: This study was performed to develop an assessment tool for middle aged women's health status based on dietary patterns, which will have practical applications in the working field of health and hygiene, aiming at improving the middle aged women's quality of life through their health improvement. Methods: As a first step, a literature review was conducted and the original data of '2008~2009 Korea Health and Nutrition Examination Survey' were reanalyzed. This analysis identified 65 preliminary questions that may be relevant to the study. After verifying the content validity by experts, the 65 questions were reduced into 51 questions. In order to secure higher validity of the candidate items, verification of their clinical validity was conducted among women aged between 45 and 60 years. Finally, an assessment tool was developed by applying weight and scoring. Results: Selected 51 questions were used to verify clinical validity and the results showed that 20 questions were relevant, nine questions ('regular meal time', 'regular amount of meal', 'intake frequency of dairy products', 'intake frequency of fruits', 'intake frequency of meat products', 'intake frequency of high cholesterol foods', 'intake frequency of salty foods', 'appetite', 'eat breakfast everyday') were related to dietary life. Eleven other questions ('self-rated health status', 'deep sleep', 'smoking', 'frequency of drinking', 'stress levels', 'health-related fitness levels', 'pounding of the heart', 'strange feelings on the skin', 'interfere with daily life', 'menopause will bring you a chance to see the life in a different perspective', and 'body mass index') were selected as valid questions. For the response scale for each question, 5 point Likert scale was used to make total 100 point score. Conclusions: This study is the first attempt to develop a health status assessment tool for middle aged women based on their dietary patterns. We conclude that this tool is expected to be a useful and practical tool in the field.
A 5-day germination test is applicable to detect biological changes in irradiated wheat and barley at low doses. Seeds were irradiated at below 0.5 kGy, husked and placed on distilled water-moistend filter paper in a covered Petri-dish. Water was supplied everyday. To evaluate the growth rate, the length of shoots and roots was measured during germination. In wheat, the shoots of all samples grew well during 5 days, but the shoot length and the daily growth extent decreased with increasing doses. The roots of non-irradiated wheat showed the highest daily growth extent during 5 days and the root length was over 20 mm at 3rd day. In barley, the growth of shoots and roots was retarded at 0.3 kGy or more after 3 days. It was concluded that if the root length was 20mm or longer within 3 days, wheat and barley were identified as non-irradiated. The germination test was proved a promising screening method for the detection of irradiated wheal and barley.
