Microencapsulation Characteristics Depending on Mixing Ratio of Wall Materials and Squid Liver Oil (피복물질과 오징어 간유의 혼합 비율에 따른 미세캡슐화 특성)

  • This study was carried out to investigate the microencapsulation characteristics of squid liver oil according to various ratios of wall materials and squid liver oil. The emulsion stability and the water binding capacity increased with an increase in wall materials contents. The microencapsulation efficiency was found to be in the order of 7:3>4:6>3:7>5:5>6:4 by mixing ratio of wall materials and squid liver oil; also, ratio of 7:3 was found to be inappropriate because the oil content in the powder was not sufficient. Regarding the fatty acid composition, the content of polyunsaturated fatty acid was found to be over 50% in all treatment groups. The ratio of polyunsaturated to saturated fatty acid of the powder was the highest (2.13) at the mixing ratio of 4:6.

The Chemical Components and Nutritional Evaluation of Aspergillus fumigatus Cells (Aspergillus fumigatus균체의 화학적 성분과 영양학적 평가)

  • This experiments was designed to evaluated the chemical components and nutrition of Aspergillus fumigatus cells. This dried fungal mycellia was consist of crude protein 48.5%, crude lipid 2.9%, carbohydrate 44.7% and total ash 3.4%, respectively. The major fatty acid of total lipid were 27.9% of linoleic acid, 24.6% of oleic acid, 15.4% of palmitic acid and 10.6% of linolenic aicd. Amino acid analysis indicated that the protein was rich in aspartic acid, glutamic acid, leucine, lysine but poor in cystein, methionine, histidine. The fungal cake of Aspergillus fumigatus, when dried and specially processed, has been found to serve as a source of protein in place of soybean meal in the diet of experimental mice. Animal were fed a control diet first, and an incease in weight proved the formulation to be satisfactory. At the end of a 30-day period, the experimental mice showed increases in weight comparable to those of the control animals. The net protein efficiency ratio for the control diet was 3.42$\pm$0.15 and the fungal protein and succinylated fungal protein with DL-methionine they were 3.12$\pm$0.39 and 2.98$\pm$0.06 respectively. This supports the view that dried and succinylated fungal protein can be substituted as a protein source.

  • Supply of rural community sewage treatment plant (RCSTP) is need for protect of water quality like water source and development of agriculture areas. In this study conducted analysis on characteristics of RCSTP sewage and treatment efficiency of installed treatment process using operation results of RCSTP in an-dong area. high organic matter and nutrient were contained in RCSTP sewage of an-dong than urban area. RCSTP treatment process in an-dong was shown stable treatment efficiency. But nutrient treatment efficiency was shown more sensitive result about SRT and F/M ratio than organic matter treatment efficiency. And RCSTP treatment process in an-dong was shown higher treatment efficiency than other treatment proces like $A^2/O$, SBR and media. Thus, this process is effective treatment process for application of RCSTP.

Efficiency of Various Microbial Foods for Tigriopus japonicus Mori (Tigriopus japonicus Mori에 대한 수종 미생물의 이료효과)

  • Microbial organisms including yeast, Acinetobacter sp. AG-3, Chlorococcum sp., Chlorella sp. and some of their combinations were tested to evaluate growth efficiency of Tigriopus japonicus. Body length and weight of the copepoda were measured during four days experiment. Acinetobacter sp. AG-3, dried yeast(produced Wago), Chlorella sp., Chlorococcum sp. and mixed culture were used as food sources. Yeast(Y.) was the most effective food for the growth during nauplius stage and efficiencies of bacteria(Bact.)+chlorococcum sp.(RA), Chlorococcum sp.(RA), Bact.+chlorella sp.(Ch.), Bact. and Ch. decreased in odor, while for the growth of copepodite and adult, Bact.+RA was the most effective food with decreased efficiency of Y., RA, Bact. + Ch., Bact., Ch. in order. The ratio of weight gain to the food uptaken, after the weight and food units were converted to carbon, was between 21.6 and $68.7\%$, This result suggests that some kinds of bacteria, algae and mixed cultural microorganisms could be good food sources for the growth of copepoda.

Development of Performance Indicators Based on Balanced Score Card for School Food Service Facilities (균형성과표(BSC)개념을 적응한 학교급식 운영성과 측정지표 개발)

  • This study raised the necessity of developing performance indicators for measuring the management efficiency and effectiveness of school food service, and as a means of helping its implementation, a balanced score card (BSC) approach developed by Norton and Kaplan was adopted. This study established BSC in seven phases through literature: Phase 1 Defining a school food service and the scope of working activities, Phase 2 Establishing the vision of a school food service, Phase 3 Setting strategic goals, Phase 4 Identifying critical success factors (CSFs), Phase 5 Developing Key Performance Indicators (KPIs), Phase 6 Extracting cause and effect relationship, and Phase 7 Completing a preliminary BSC. The preliminary BSC was fumed into a survey, which was administered to food service related people working at the Office of Education and School Food Service including 16 offices,209 dietitians, 48 school administrators both from self-operated and contract-managed, and 9 experts in areas related to school food service. They were asked questions about strategies from 4 different perspectives,12 CSFs, 39 KPls, and the cause and effect relationships among them. As a result, among the CSFs based on 4 different perspectives, all factors other than ' zero sum on profit/loss ' from the financial perspective turned out to be valid. In terms of KPIs, manufacturing cost percentages, casualty loss count/reduction rates, school foodervice participation rates, and sales goal achievement rates were found to be valid from the financial perspective, while student satisfaction index, faculty satisfaction index, leftover ratio, nutrition educational performance count, index of evaluating nutrition education, customer claim count/reduction rate, handling customer claim count/reduction rate, and parent satisfaction index were found to be valid from the customers' perspective. Besides, nutritional requirement sufficient ratio, nutritional management score, food poisoning outbreak count, employee safety accident count, sanitary inspection assessment index, meals per labor hour (productivity index), computerization ratio, operational management index, and purchase management assessment index were also found to be valid from the perspective of internal business processes. From the perspective of innovation and learning, employee turnover ratio/rate of absenteeism, annual education and training count, employee satisfaction index, human resource management assessment index, annual menu-related customer feedback, food service information index for employees and parents/schools were also found to be valid. The significance of this study is to present indices for measuring overall performance of school lunch food service operations without putting any limitation on types of school food service management, and to help correctly assess the contribution of the current types of school food service management to schools and students. In Vitro Stability of β-galactosidase Microcapsules

  • The present study was carried out to examine the efficiency of microcapsules and a stability of lactase in vitro in the simulated gastric and intestinal conditions. As a coating materials, medium-chain triacylglycerol (MCT) and polyglycerol monostearate (PGMS) were used. The highest efficiency of microencapsulation was found in the ratio of 15:1 as coating to core material with both MCT (91.5%) and PGMS (75.4%). In a subsequent experiment, lactose content was measured to study a microcapsule stability. Lysis of microcapsules made by MCT in simulated gastric fluid was proportionally increased such as 3% in pH 5 and 11% in pH 2 for 20 min incubation. In the case of PGMS microcapsulation, 11-13% of lactose was hydrolyzed at 20 min in all pHs and also very little amount (less than 3%) of lactose was hydrolyzed after 20 min in all pHs. The highest percentages of lactose hydrolysis in MCT and PGMS microcapsules were 68.8 and 60.8% in pHs 7 and 8 during 60 min, respectively. Based on our data, the lactase microcapsules seemed to be stable when they stay in the stomach, and hydrolyzed rapidly in small intestine where the bile acid was excreted.

Deduction of Optimum Factors for Hydrogen Production from Organic Resources using a Continuous Reaction Process (연속반응공정을 이용한 유기성자원으로부터 수소생산을 위한 최적인자도출에 관한 연구)

  • This study was performed to find out the optimum condition for hydrogen production by changing mixture ratio from 3:7(food waste water : swine wastewater) without pre-treatment of food wastewater and swine wastewater using a continuous reaction process. It was confirmed that hydrogen generation according to pH is the highest in a condition of pH 5.5, and that the optimum pH for hydrogen production in case of mixing food wastewater with swine wastewater is 5.5 through this. Hydrogen generation according to HRT showed high hydrogen generation rate in case of 4 days rather than 3 days, and this involves largely in vitality of hydrogen producing bacteria according to variation of the HRT value, so it is judged that HRT also acts as an important factor to hydrogen producing bacteria. The organic removal efficiency recorded a removal efficiency of maximum TS 52%, VS 71%, TSS 83% and VSS 89% at the 6th day of operation, and it was confirmed that organic removal efficiency is possible even through an hydrogen production process.

Effect of Ginseng Extract on Enzyme activities of Rats Fed Lard and Alcohol (Lard와 Alcohol을 섭취시킨 흰쥐 혈청중의 효소활성에 인삼추출물이 미치는 영향)

  • The present study has been undertaken to investigate the effects of ginseng extract on the activities of several enzymes in serum of rats fed lard and alcohol. Thirty-five males of Sprague-Dawley strains weighed about 130 g were divided into 7 groups, each group receiving a different diet for 10 weeks; i.e. basal diet plus 15% lard, basal diet plus 5% alcohol, basal diet plus 5% ginseng extract, basal diet plus 15% lard and 5% ginseng extract. Determinations were carried out on the net weight gain, food efficiency ratio, weight of organs, and AST, ALT, lactate dehydrogenase, alkaline phosphatase activities in serum of rats. The results obtained were as follows:Rats given feed containing lard and alcohol showed significant decrease in net weight gain, but ginseng extract caused an increase in food efficiency ratio. Lard supplementation caused an increase in the weight of liver, kidney, spleen, but another groups did not. AST, ALT, ALP, LDH of serum were significantly increased in lard and alcohol containing group but ginseng extract feeding decreased enzyme activities compared to lard and alcohol containing group. The above results suggest that ginseng extract would prevent the metabolic disease of liver by preventing hyperlipemia caused by high fat diet.

Studies on the Preparation of Food Proteins from Castor Bean Protein (피마자 단백질의 식품화를 위한 연구)

  • Detoxified and deallergenized castor bean protein isolate was prepared from defatted castor bean pomace for use in animal feedstuffs and human foods. Succinylation and acetylation of the ${\varepsilon}-amino$ groups of the protein improved markedly the water solubility of the protein at $pH\;7{\sim}8$. The results of the amino acid analysis of the protein isolate revealed that the sulfur-containing amino acids and L-lysine were limiting amino acids and that succinylation and acetylation caused some little loss of the amino acid content. The L-methionine enriched plastein was synthesized from the protein isolate or the acylated protein isolates and DL-methionine ethyl ester by one step process with papain. By this method the extent of incorporation of L-methionine was about 50%. Pepsin hydrolyzed both unmodified and modified protein isolates at the same rate (about 92%). Tryptic hydrolysis, however, was less for the succinylated protein isolates (about 42%) and less for the acetylated protein isolates (about 26%). The protein efficiency ratio of L-methionine enriched protein isolate (about 2.5 weight %) was 90% that of reference casein. The protein efficiency ratio values of succinylated (88%) and acetylated (84%) protein isolate were 55 and 69% of reference casein, respectively.

Hypolipidemic Effect of Extracts of Syobean Paste Containing Mycelia of Mushrooms in Hyperlipidemic Rats. (고지질이 유발된 흰쥐에서 버섯된장 추출물의 Hypolipidemic 효과)

  • The hypolipidemic effects of soybeam paste containing mycelia of Phellinus linteus, Cordyceps militaris, Ganoderma lucidum were evaluated in hyperlipidemic rats. Body weight of the rats fed with soybean paste containing mycelia of Ganoderma lucidum (ESG) were significantly lower than control group whereas, there was no significant difference in body weight in order diet groups. Food intake, food efficiency ratio, and liver and kidney weights were not significantly different among the diet groups examined. However, the spleen weight of ESG group was markedly lower than other groups. Significant decreases in serum total cholesterol, LDL-cholesterol and liver total cholesterol were also observed in all diet groups tested. All groups fed with soybean paste containing mycelia of mushroom were also observed in all diet groups tested. All groups fed with soybean paste containing mycelia of mushroom were almost equally effective in increasing plasma HDL level and decreasing the atherogenic index, whereas the ratio of HDL to total cholesterol was significantly increased in all experimental diet groups.
