유산균을 이용한 기능성 발효 양파음료의 개발 (Development of Fermented Functional Onion Juice Using Lactic Acid Bacteria)

  • 최근 양파를 많이 섭취한 사람들의 경우 암, 심혈관계질환 등 노화관련 질환의 발생률이 현저히 떨어진다는 보고가 잇따르면서 건강기능성 소재로서 양파에 대한 소비자들이 인식이 매우 높아져 있다. 현재 양파의 국내 자급률은 100%에 이르기 때문에 양파를 소재로 한 다양한 기능성식품의 개발은 국내에서 생산되는 농산물을 이용한 건강식품 시장의 활성화에 밑거름이 될 것이며, 국내외적으로 우리나라 농산물의 고부가가치화를 추구하는데 크게 기여할 것이다. 따라서 본 연구에서는 우수한 기능성 소재로 입증된 양파를 이용하여 음료의 제조공정 개발 및 최적화시키고자 하였으며, 발효 양파 착즙액에 사과즙, 당, 산, 올리고당 등을 첨가하여 유산 발효 양파음료 시제품을 제조하여 1차, 2차 및 3차 관능평가를 실시한 결과 최종적으로 가장 우수한 배합은 양파 착즙액 27%, 사과즙 27%, 액상 과당 3.8%, $\beta$-cyclodextrin 1.86%, 올리고당 0.9%, 사과향 0.2%, 정제수 39.25%였다.

한국의 현대 실내공간에 나타난 한국적 조형의식에 관한 연구 (The Study on the Korean Plastic Consciousness of the Contemporary Interior Space in Korea)

  • The three basic elements of human life -clothing, food and shelter- had been evolved through different periods and cultural realms, as their spatial applications show distinct characteristics that are manifested through sensibilities only inherent to its specific culture. Especially in the interior spaces, possibilities to approach them in three-dimensional aspects allow formal characteristics to be expressed that are distinct to the country. Formal sensibilities embedded in interior space In Korea also follows such pattern, developed through various contemporary interpretations of Korean traditional formal sensibilities, including harmony with nature, simplicity, lightness, real and fake, and principle of harmony are being redefined by spatially expressed in contemporary language. That is, traditional formal sensibilitiesare filtered through various application methods such as composition, negotiation and modification, accommodating spatial manifestations to be not simply preserved nor replicated, but rather reconstructed through metaphor, symbol, abstraction and contrast. From this perspective, the Korean traditional formal sensibilitiesis not a notion fixed in the past, but a distinct perspectives evolving throughout periods of time that are constantly reconsidered and reinterpreted in our interior space. By examining Korean sensibilities manifested in interior space in the both diachronic aspects of tradition vs. contemporary, as well as synchronic aspects among various disciplines simultaneously, we would be able to generate a linkage to the dichotomous categories of tradition and contemporary.

한·중 전통식 레스토랑에의 전통장식요소 적용현황 비교 (The Application Status of the Traditional Decorative Components in Restaurants of Korea and China)

  • In these days, restaurants are not simply used as a physical space but used as a cultural space in which people can enjoy and experience different cultures and traditional images. Moreover, from the restaurants design elements which help to form the atmosphere of the restaurants which serve food of specific country, we can see the history and traditions of that country. The additional value of the traditional decorative components which are the main factors forming the atmosphere of the restaurant will be different according to the various expressions used in the restaurant space. For this article, 12 restaurants, Norangjugory korean restaurant, Yongsusan korean restaurant, Best well-bing food restaurant, Awoolim, Mugunhwa, Ondal in Korea, and Songhelou, South Beauty, Xuxian restaurant & lounge, Beijing dadong roast duck restaurant, The horizon chinese restaurant, Dynasty jade garden in China, were selected for the field study. This study focused on a comparative analysis of the traditional decorative elements, especially, the application rate of the traditional decorative elements. The analyzed elements are nature, religious beliefs, history and culture for the intangible elements and facade, courtyard, trademark, ground, wall, ceiling, door, window, furniture and adornment for the tangible elements. After that, we analyzed the rates of the use of traditional decorative elements and modern decorative elements. Through the survey result and ratio analysis, we concluded as below. In Korean restaurant, traditionality is expressed in furnitures while, in Chinese restaurant, traditionality is expressed in decorative pattern. When it comes to the intangible elements among the traditional decorative components of the Korean and Chinese restaurants, Chinese and Korean restaurants have similarities in emphasizing the natural elements. Korean restaurants focus much on the environmentally friendly parts, while Chinese restaurants focus much on the fantastic natural atmospheres like those shown and expressed in the poems. As for religion characteristics, Chinese restaurants emphasize "geomancy" more than Korean restaurant. When it comes to the visible elements among the traditional decorative components of the Korean and Chinese restaurants, in Korean restaurants, the interior part has more traditionality than exterior part, while in Chinese restaurants, the exterior part has more traditionality than the interior part.

중국 중원 지역과의 비교를 통하여 본 소흑석구 8501호 석곽묘의 청동예기 (The Bronze Ceremonial Vessels of Xiaoheishigou Stone Cist Tomb 8501 seen through Comparison with the Chinese Zhongyuan Region)

  • 영성현(寧城縣) 소흑석구(小黑石溝) 8501호 대형 석곽묘는 중국의 시기 구분으로 서주 후기에 조성된 무덤이다. 그런데 이 무덤에는 중국 중원식 청동예기는 물론 토착식 청동예악기와 토착식과 중원식이 혼합되어 있는 혼합식 청동예기가 다량으로 출토되었다. 소흑석구의 청동예기 조합은 같은 시기 중국 중원 지역의 예제와 정궤제(鼎?制)에 대비하여 볼 때 가장 낮은 신분인 사급(士級) 특일정(特一鼎)에 속한다. 그럼에도 불구하고 중국 중원 지역의 사급 고분들과는 달리 정(鼎)과 궤(?)를 제외한 다른 식기와 주기의 조합에서는 천자와 제후국(공국, 후국) 국군의 수준에 필적한다. 이러한 점은 악기가 부장되어 있는 것을 통해서도 드러난다. 소흑석구 8501호 대형 석곽묘의 청동예기 가운데 토착식과 혼합식은 현지의 금속기 제작 기술을 고려할 때 자체 제작한 것으로 판단된다. 그러나 서주식 청동예기는 형태와 문양은 물론 규격까지 중국 중원 지역과 동일하여 서주에서 제작된 것임이 분명하다. 중국 중원 지역의 여러 제후국에서 제작하여 사용되던 해당 제후국의 보기(寶器)가 소흑석구에 부장된 배경은 하가점상층문화와 서주 사이에 양측과 빈번하게 교류하던 별개의 문화권이 형성되어 있었던 점 등을 고려할 때, 소흑석구 집단에 의한 약탈이라기 보다는 소흑석구 집단과 이들 집단 간의 경제적인 교역과 정치문화적인 상호 관계에 따른 것으로 해석된다.

돼지에서 유래한 병원성 대장균의 내열성 장독소 생산유전자의 Cloning 및 발현 (Molecular Cloning and Expression of Heat-stable Enterotoxin Gene from Swine Enterotoxigenic Escherichia coli)

  • 내열성장독소(ST)를 생산하는 병원성대장균(KS-4, KM-7, KM-12)을 설사돈으로부터 분리하고 몇가지 배양상 특성과 ST생산유전자의 성질을 조사하였다. 분리균은 succinate salts 배지의 pH가 8.5~9.0일 때 ST 생산량이 가장 많았으며, ST정제용 배지로는 succinate salts 배지가 가장 유리한 것으로 생각되어 진다. ST 생산, 축적은 분리균 모두 14~16 시간에서 가장 높았고 균체량은 배양 시작 후 20시간에 가장 많았다. ST 생산 능력이 가장 우수한 KM-7균주로 부터 ST생산 유전을 함유하는 약 80Kbp의 plasmid를 분리하고 EcoRI 제한효소를 절단한 16Kbp의 DNA절편을 pBR 322 vector DNA에 접합시킨 pKD 37 plasmid를 E. coli K-12에 형질전화시켜서 KM-7 보다 ST 생산능력이 우수한 균주(eKT 53)를 얻었다.

상품.교통.공급사슬개념과 관련된 지리학의 연구와 과제 (Prospects and Problems in the Study of Geography related to the Concept of Commodity, Transport, and Supply Chains)

  • 본 연구는 상품 교통 공급사슬개념과 관련된 지리학의 연구와 과제를 밝히는 것을 목적으로 한다. 상품사슬과 관련된 지리학의 연구는 핵심과 주변에서의 농산물과 식료의 지리적 패턴에 주목하고, 이들의 수직적인 연결을 정치경제학적 접근방법으로 상품사슬을 주도하는 주체와 경제격차에 초점을 두고 각 산업분야로 확대되고 있다. 그러나 이에 대해 상품회로나 상품 네트워크라는 관점에서는 문화적 측면이나 미시적 지역의 주체와 상호작용을 중시하는 연구도 이루어지고 있다. 이러한 내용은 문화론적 전환과 국지의 중요성을 밝히려는 것이라고 할 수 있다. 그리고 교통양식에 의한 일련의 수송과정을 교통사슬로, 해상화물의 물적 유통과정을 해운의 공급사슬로 파악하는 연구도 등장하고 있다.

백제 지하저장시설(地下貯藏施設)의 구조와 기능에 대한 검토 (A Study on the Structure and Function of the Underground Storage Facility in Baekje)

  • 최근 백제유적에 대한 발굴조사에서는 토광형태 또는 목재나 석재를 이용하여 축조한 지하식의 저장시설이 발견되는 사례가 늘어나고 있다. 본고는 이러한 백제시대 지하저장시설을 형태 및 축조방법별로 복주머니형(플라스크형), 목곽형, 석곽형 시설로 구분하고 각각의 구조와 기능에 대해 검토하는 것을 목적으로 하였다. 복주머니형 저장공은 백제 한성시기~사비시기의 금강 및 한강유역의 많은 유적에서 현재까지 600기 이상 조사된 백제의 가장 대표적인 지하저장시설로 3~7세기대 한강유역과 금강유역의 백제의 독특한 저장문화를 구성하는 유구로서 그 구조나 중국의 예를 통해 볼 때 곡물의 장기저장을 위한 시설이었을 가능성이 있으며, 그 외에도 토기의 저장 등 다양한 물품이 저장되었다고 보인다. 목곽형과 석곽형의 저장시설은 사비시기의 유적에서 주로 확인되고 있어 6세기 이후 복주머니형 저장공의 축조가 줄어들면서 그 기능을 일부 대체했을 것으로 보이며, 특히 그 축조방법이나 구조상 공력이 많이 소모되는 것으로 도성이나 성곽유적에서 공적인 용도로 사용되었던 것으로 추정된다. 목곽형 저장시설은 평면 장방형인 것과 방형인 것, 축조방식에 따라 가구식(架構式)과 주혈식(柱穴式)으로 구분할 수 있으며, 이는 축조하고자 하는 지점의 지형이나 지질에 의해 결정되었을 가능성이 있다. 이러한 목곽형 저장시설은 관북리유적과 월평동유적의 예를 통해 볼 때 과일과 같은 식품류의 저장과 군사주둔지에서의 중요물품 저장 등 필요에 따라 다양한 품목의 물건이 저장된 것으로 보인다. 지하 저장시설의 기능적 특성상 식품류의 장기저장과 일본의 예를 통해 볼 때 화재시 중요물품의 안전한 보관과 관련하여 목곽이나 석곽의 저장시설이 채용되었을 가능성이 있다.

문화간호를 위한 한국인의 민간 돌봄에 대한 연구 : 출생을 중심으로 (Study on Folk Caring in Korea for Cultural Nursing)

  • Care is a central concept of nursing. Nursing would not exist without caring. Care and quality of life are closely related. Human behavior is a manifestation of culture. We can say that caring and nursing care are expression of culture. The nurse must understand the relationship of culture with care for ensure quality nursing care. But knowledge of cultural factors in nursing is not well developed. Time and in - depth study are needed to find meaningful relationships between culture and care. Nurses recognized the importance of culturally appropriate nursing There are two care systems in culturally based nursing. The folk care system and the professional nursing care system. The folk care system existed long before the professional nursing care system was introduced into this culture. If the discrepancy between these two care systems is great, the client may receive inappropriate nursing care. Culture and subcaltures are diverse and dynamic in nature. Nurses need to know the caring behaviors, patterns, and their meaning in their own culture. In Korea we have taken some first step to study cultural nursing phenomena. It is not our intent necessarily to return to the past and develop a nationalistic of nursing, but to identify the core of traditional caring and relate that to professional nursing care. Our Assumptions are as follows : 1) Care is essential for human growth, well being and survial. 2) 7here are diverse and universal forma, expressions, patterns, and processes of human care that exist transcul - turally. 3) The behaviors and functions of caring differ according to the social structure of each culture. 4) Cultures have folk and professional care values, beliefs, and practices. To promote the quality of nursing care we must understand the folk care value, beliefs, and practices. We undertook this study to understand caring in our traditional culture. The Goals of this study were as follows : 1) To identify patterns in caring behavior, 2) To identify the structural components of caring, and 3) To understand the meaning and some principles of caring. We faised several questions in this study. Who is the care-giver? Who is the care-receipient? Was the woman the major care -giver at any time? What are the patterns in caring behavior? What art the priciples underlying the caring process? We used an interdisciplinary team approach, composed of representatives from nursing and anthropology, to contribute in -depth understanding of caring through a socicaltural perspeetive. A Field study was conducted in Ro-Bong, a small agricultural kinship village. The subjects were nine women and one man aged be or more years of age. Data were collected from january 15 to 21, 1990 through opem-ended in-depth interviews and observations. The interview focused on caring behaviors sorrounding birth, aging, death and child rearing. We analysed these data for meaning, pattern and priciples of caring. In this report we describe caring behaviors surrounding childbirth. The care-givers were primarily mothers- in -low, other women in the family older than the mother - to- be, older neighbor woman, husbands, and mothers of the mother-to- be. The care receivers were the mother-to-be the baby, and the immediate family as a component of kinship. Emerging caring behavior included praying, helping proscribing, giving moral advice(Deug - Dam), showing concern, instructing, protecting, making preparations, showing consideration, touching, trusting, encouraging, giving emotional comfort, being with, worrying about, being patient, preventing problems, showing by an example, looking after bringing up, taking care of postnatal health, streng thening the health condition, entering into another's feelings(empathizing), and sharing food, joy and sorrow The emerging caring component were affection, touching, nurtuing, teaching, praying, comforting, encouraging, sharing. empathizing, self - discipline, protecting, preparing, helping and compassion. Emerging principles of. caring were solidarity, heir- archzeal relationships, sex - role distinction. Caring during birth expresses the valve of life and reflects the valued traditional beliefs that human birth is given by god and a unique unifying family event reaching back to include the ancestors and foreward to later generations. In addition, We found positive and rational foundations for traditionl caring behaviors surrounding birth, these should not be stigmatized as inational or superstitious. The nurse appropriately adopts the rational and positive nature of traditional caring behaviors to promote the quality of nursing care.

태교 실천에 대한 일상생활 기술적 연구 (An Ethnographic Study about Taegyo Practice in Korea)

  • The purpose of this study is twofold : (i) to investigate how much effort the married couples are making for the good health of both the pregnant woman and her unborn child from the time of their marriage to and during the period of conception : and (ii) to comprehensive investigate socio-cultural back-grounds which affect prenatal effort. Result of this study provide a basis for the prenatal care program which will be appropriate to our culture. This study has been done by the ethnographic research method. The subjects of this study are 53 people in all consisting of 33 pregnant women and 20 husbands. In order to investigate socio-cultural factors which influence Taegyo, producers of Taegyo music were interviewed. In addition the researcher surveyed the markets of Taegyo music, participated in special courses of prenatal education, analyzed the content of the books and periodicals dealing with Taegyo, and collected the concept of Taegyo distributed by the mass media. The full-fledged study continued for eight months from February to August.1996. The data were analyzed as soon as they were collected. Spradly's(1979, 1980) developmental, sequential method of domain analysis. taxonomic analysis, componential analysis, and theme analysis in this order was adopted as the procedure of analyzing the data. To obtain the exactness of study, Sandelowski's (1986) four criteria, that is, Credibility, Fittingness, Auditability, and Confirmability were applied to all stages of data collection, data analysis, the interpretation of the result, and the description of the result. The following are the result : 1. The couples' Taegyo at the stage of preconception was related to their physical, psychological, spiritual conditions under which a healthy baby will be born. Specific methods they prefer are : "the choice of one's spouse." "physical check-up," "physical good health, " "praying, " and so on. 2. When the marriod couple have sex in order to conceive, their Taegyo was related to the imposition of their physical, psychological, and environmental conditions. Specific methods they prefer are : "having sex at specific time, " "having sex in nice place." "to purify their minds while having sex," and so on. 3. The married couples' Taegyo while they are in pregnancy was related to the imposition of their physical. psychological, emotionmental. environmental, social and spiritual conditions. Specific methods they prefer are : "listening to music. " "reading," "looking at beautiful things only," "to avoid looking at or listening to bad things." "to eat food in good shape, " "to avoid drugs," "eating Korean herbal medicine." "sexual abstinence," "to avoid dangerous places," "to keep emotional tranquility," "moderate exercises and rest." "leading a pure life." "praying." "being aware of their words and behavior." "for the couple to keep a good relationship." "interaction with their unborn child," "to support Taegyo for pregnant women," and so on. 4. The married couple put Taegyo into practice on the basis of the following principles : the principle of respecting an unborn child, the principle of forming a good disposition. the principle of top-down parental love, the principle of synergy between a pregnant woman and her unborn child, the principle of expecting a good child, the principle of forming a good habit, and the principle of acquiring a parental role. 5. The practice of Taegyo is influenced by such factors as the married couple, the supporting system, and the mass media. As the husband -and-wife factor, their information of Taegyo, the degree of importance is assigned to their characters, their time to spare, their healthiness, the age of pregnant woman, their conception plan, their religion, their belief of the Taegyo effects, and the birth of a baby in this order. The factor of the supporting system consists of her husband's support, her family support, and her neighbor's support. The mass media factors include the broadcasting media, books specialized in Taegyo, periodicals for pregnant women, booklets for advertizing powdered milk, Taegyo music of record manufacturing companies, and the teaching materials for gifted children. Among these the mass media is especially taking advantage of Taegyo as its main source of economic profits are leading the public behavior pattern to a prodigal one. Taegyo is a self-control behavior which requires practice for the following : the physical and psychological good health of the pregnant woman and her unborn child, the development of the unborn child's good character, the development of the unborn child's intelligence and talents, the expectation of the unborn child's good features. shape a good habit, the expectation of the unborn child's bright future, and the learning of a parental role, the expectation of male birth. Above all it is a type of our good cultural tradition which pursues a value higher than the one that the prenatal care does. The principles of pregnancy care inherent in the habit of Taegyo will provide us a guideline for the development of the prenatal care.

항균성 물질을 생산하는 Lactobacillus amylovorus IMC-1의 배양학적 특성 (Cultural Characteristics of Lactobacillus amylovorus IMC-1 Producing Antibacterial Substance)

  • 발효식품의 제조에 유용한 starter 개발 및 probiotics로서 이용 가능성을 타진하기 위하여 항균성 물질을 생산하는 Lactobacillus amylovorus IMC-1 균주를 이용한 skim milk medium에서의 산생성, 단백질 분해활성, lactose 분해활성 및 유사구균과 혼합발효 그리고 병원성 세균에 대한 살균력 등을 검토하였다. L. amylovorus IMC-1은 10% skim milk에 yeast extract를 첨가하여 12시간 배양하였을 때 산도 0.8%이었고, 72시간째에는 2.7%로 우수한 산 생성력을 보였다. IMC-1 균주의 ${\beta}-galactosidase$ 활성은 균체 1 mg당 약 $39{\mu}M/minute$로 매우 강한 반면, $phospho-{\beta}-galactosidase$의 활성은 매우 낮았다. 또한 이 균주는 10% skim milk에서 배양 12시간째 $6\;{\mu}g/mL$, 72시간째에 $69\;{\mu}g/mL$의 유리 tyrosine을 생산하여 단백질 분해활성이 낮았다. 전기영동상의 band pattern으로부터 casein중 ${\alpha}-casein$을 주로 이용하며, ${\beta}-casein$은 거의 이용하지 못함을 알 수 있었다. 10% skim milk에서 IMC-1 균주 및 St. thermophilus NIAI 510의 단독 또는 혼합배양을 실시한 결과, 혼합배양, IMC-1 균주 및 St. thermophilus 순으로 산 생성력이 높았으며, 유산구균 단독배양 및 혼합배양에서는 시간이 경과함에 따라 치즈 향기가 증가하는 것을 확인할 수 있었다. 또한 10% skim milk medium에서 혼합배양에 의한 최적의 유산발효 시간은 산 생성력 및 공존 균수 등을 고려할 때, yeast extract 0.1% 첨가시에는 16시간, 0.5% 첨가시에는 12시간 배양하는 것이었다. IMC-1이 생산한 항균성 물질은 Escherichia coli O157을 배양 24시간째 2 log정도 감소시켰고, 48시간 배양 후에는 피검균이 검출되지 않았다. 또한 Shigella flexneri는 배양 4시간째 2 log이상 감소하였고, 6시간 배양 후에는 검출되지 않아 항균성 물질은 강한 살균작용을 나타냄을 알 수 있었다.
