This study was performed to determine the attitudes of 397 housewives on the function, preference, eating frequency, and manufacturing procedures of traditional doenjang and traditional soy sauce by age in Seoul. The results of the study can be summarized as follows: 95.5% of the housewives recognized a necessity for traditional doenjang and soy sauce, and 88.7% of them considered traditional doenjang and soy sauce as being 'good for health', as compared to marketplace doenjang and soy sauce. Also, the proportion of those holding this view of 'good for health' increased with increasing age. The believed functions for traditional doenjang and soy sauce were 'anti-cancer effects' (87.1%), 'prevention of obesity' (51.1%), and 'prevention of constipation' (38.5%). The preference for traditional doenjang or soy sauce by those in their 60s (4.65, 4.45) was higher than by those in their 20s (4.05, 3.65). The frequency of intake for traditional doenjang increased with increasing age. The main reasons for frequently consuming traditional doenjang and soy sauce were 'good for health' (64.0%, 59.2%) and 'delicious' (58.5%, 57.1%). The main reason for not frequently consuming traditional doenjang and soy sauce was 'I have no traditional doenjang or soy sauce' (71.4%, 71.6%). About 39.5% of the housewives manufactured traditional doenjang and soy sauce at home. Those in their 60s (78.1%) manufactured more traditional doenjang and soy sauce than those in their 20s (25.0%), 30s (22.4%), 40s (37.7%), and 50s (52.9%).

Survey the intake of carbonated beverage and the perception of carbonated beverage was conducted with 422 middle school students in Daegu area to clarify attitudes toward carbonated beverages and their consumption in adolescents. Statistical data analysis was done using SPSS version 12.0. Of all subjects, 31.3% preferred carbonated beverage among all beverages consumed, and preference for flavored carbonated beverage was highest (42.2%). Students who liked to drink carbonated beverage spent more money in snacks out of their allowance; frequency of carbonated beverage consumption correlated with amount of allowance (p<0.05). Carbonated beverage was mainly consumed with fast-food (61.5%), and 53.3% of the students purchased the beverages at supermarket. The majority of middle school students (30.4%) drank carbonated beverage more than 3~5 times a week, which was high frequency of carbonated beverage consumption. Preference and consumption frequency beverages differed significantly with knowledge level (p<0.01). Of the subjects, 73.2% drank carbonated beverage without checking nutrient contents, and those with low knowledge level of carbonated beverage neither read the label on nutrients nor were interested in nutrition education (p<0.05). The results underscore the need to provide systematic nutrition education at home and in school to prevent excessive intake of carbonated beverage and to help adolescents choose healthy beverage during a time in life when growth is especially prominent.
The objectives of this study was to explore the knowledge, attitudes, and perceptions of elementary school students towards trans fatty acids. In addition, the students' preferences and consumption frequencies of processed food items containing trans fats, as well as their food behaviors relating to snack consumption, were investigated. The study population consisted of students from seven provinces, including Seoul, Busan, Daegu, Kwangju, Gyungnam, Chungnam, and Kangwon. Two schools were selected in each province and one class was randomly chosen in each school. All students from the selected classes were surveyed onsite (N=951). The data were analyzed with chi-square tests and t-tests using SPSS/Windows (ver.15.0) program. The results showed that the students' knowledge levels toward trans fatty acid were very low, particularly on the production process of trans fats. The students perceived that trans fatty acids can cause health problems and should be consumed in low amounts. They also felt there is a need for a good nutrition education on trans fats. Furthermore, the students responded that their most preferred foods were in the order of breads, biscuits, and snacks. The most frequently consumed snack item among 2nd graders was biscuits and among 5th graders it was breads. It was also found that 90% of the students had snacks once a day, and of them, 58% prepared their own snacks. Based on this, we propose that students who allowed to choose their own snacks should be carefully educated on trans fatty acids to prevent excessive consumption of high trans fat foods.
This study was performed to evaluate the effectiveness of a nutrition education program developed for nutritionally imbalanced adolescents. A summer nutrition camp was held for 23 overweight and 16 underweight subjects. Its effectiveness with regard to was evaluated at the end of the camp and 6 months later. Nutrition knowledge, nutritional attitude, food behavior, nutrient intake, exercise habit and ideal body figures desired by the subjects. The results showed significantly higher nutrition knowledge scores at the end of the camp as compared to those obtained prior to the camp program, and these scores were maintained for at least six months. Nutrition attitude scores also improved after the education program, and these improved scores also lasted for 6 months. However, the food behavior scores measured 6 months after the education program were not significantly different from those obtained prior to the camp. Also, the exorcist habit, the ideal body figures and the body figures desired by the subjects remained unchanged. When nutrient intakes of subjects were assessed before the program and 6 months later, the mean daily vitamin C intake was significantly increased after the education program. Also, the intake of iron from plant food sources increased in the overweight subjects, while less iron from animal source were consumed by the underweight subjects. Both groups tended to consume more vegetables and fruits 6 months after the education program which may have contribute to the higher vitamin C and plant-based iron intakes. These results indicate that a 4-day nutrition education camp program sustained changes in nutrition knowledge and nutrition attitude for 6 months. The increased intake of vegetables and fruits was also achieved through this education program. However, changes in dietary behavior in adolescents may require repeated education. This study was conducted to vitalize life through analysis on lifestyles, stress and dietary habits of male employees. For this study, questionnaire survey and physical measurements to examine BMI and waist circumference were performed with male employees in four companies located in Gyeongnam. Total 350 copies of the questionnaire were distributed and 327 ones were finally analyzed. The results of analysis on dietary liferelated problems and stress were as follows. First, according to BMI, 56.9% were overweight and waist circumference recorded less than 90 cm in 90.5%. For lifestyles, 54.1%, 79.2%, 60.9% and 52.3% smoked, drank alcohol, didn't exercise and didn't sleep sufficiently. Second, for the correlation with job stress, the subjects graduating junior college or lower academic institution, production employees and sleeping insufficiently showed higher compared to the others. Analysis on the correlation with life stress found that conjugal relation stress was higher in alcohol-drinkers, the males not taking dietary supplements, those with a normal weight or more compared to underweight ones. Stress from relation with a child was higher aged 35~49 years than in those aged 20~34 years, and stress from economic life was higher aged less than 50 years, in those graduating junior colleges compared to those graduating colleges, in those sleeping insufficiently. Health life stress was found to be higher in those without religion compared to those with it such as Protestant Christianity and Catholicism, in alcohol drinkers and in those sleeping insufficiently and having a disease. Based on this, in order to improve the lifestyles and dietary habits and release stress effectively, practical nutrition education program should be carried out.
This study was conducted to investigate the dietary behavior of day-care center teachers and their meal attitudes during meal time in Jeonju area. Self administered questionnaires were collected from 266 day-care center teachers who worked in a national(public) or private day-care center. The Statistical data analysis was conducted using SPSS v. 12.0. All subjects were women, and 64.7% were married(p<0.001), over more than 60% were junior college graduates(p<0.05), and 73.7% had salaries greater than 1,000,000 won(p<0.001). The breakfast skipping ratio of the subjects was very high, and about 66.5% of the respondents had irregular meals. The snack intake ratios of the subjects in private day-care centers were higher than the subjects in national(public) day-care centers(p<0.001). Approximately 56% of the subjects responded that education about eating is very important for providing balanced nutrition to young children. About 84% of subjects had no experience with the continuing-education program for teachers(p<0.01), and they wanted to know more about balanced nutrition. The meal attitude education score during meal time was $4.53{\pm}0.36$. The relationship between meal attitude education and the dietary behavior of day-care teachers was significantly different based on the "frequency of overeating"(p<0.05) and "self-recognition of eating habit"(p<0.05). These findings suggest that a nutrition education program for day-care center teachers should be developed so that they can effectively manage meal attitude education for young children and provide good nutrition for themselves.

This study focused on developing and assessing the effectiveness of maternal and child nutrition education materials that can be used conveniently at health centers. Focus group interviews with pregnant women, research of websites for pregnant women, and questionnaire-based surveys on community residents' needs for maternal and child nutrition services were conducted as preliminary study. The focus group interviews were conducted ten times, with five or six women, and the needs assessment was carried out on 884 pregnant or lactating women. The contents of the education materials developed based on the preliminary study were made up of the pregnant women section and the lactating women section. The entire material was composed of lecture materials, guidelines for educators, and handout materials for mothers, in the form of CD and booklets. The lecture materials were made using MS Power Point and the guidelines were wrote specifically, including basic information, main points to the lectures, and lesson plans, so that even non-professionals can easily use them. The effectiveness of the education materials was assessed based on a pretest and posttest method. The reliability of the test instrument was measured by Cronbach alpha, which was 0.75. The results were that the participants' nutrition knowledge scores showed a significant increase(p<0.05) from 3.79$\pm$0.33 to 3.96$\pm$0.34, and their attitudes changed positively after the education (p<0.05).
The objective of this study was to investigate the effects of iron supplementation and nutrition education on the iron status and anemia of middle school girls in Ulsan city in Korea. The subjects were already diagnosed as having anemia (hemoglobin < 12 g/dL) or iron deficiency (ferritin < 12 ng/mL and/or transferrin sataturation < 14 %). Over a period of three months, one iron tablet (80 mg Fe as ferrous sulfate/day) was administered to the iron deficient subjects and two tablets (160 mg Fe as ferrous sulfate/day) were administered to the anemia subjects. Total calorie intake of subjects was 82.1 % of RDA. The iron intake of subjects was 91.3 % of RDA and the Ca intake was 78.8 % of RDA. The basal hemoglobin concentration of subjects averaged 12.8 1.2 g/dL, and this increased significantly (p < 0.001) to 13.2 0.9 g/dL after iron supplementation. The basal ferritin concentrations were 14.9 14.2 ng/mL and these significantly increased to 26.6 19.8 ng/mL (p < 0.001). The level of total iron binding protein (TIBC) significantly decreased from the initial 523.1 108.7 $\mu\textrm{g}$/dL to 462.2 90.2 $\mu\textrm{g}$/dL (p < 0.001) after iron supplementation. Anemia symptoms such as‘Being bruised easily’, ‘Inflamed inner mouth’, and ‘Pale face’ improved significantly after iron supplementation in the subjects. There was a negative correlation between their class & year ranking and serum iron level, transferrin saturation after nutritional education and iron supplementation. It was shown, therefore, that the higher the improvement of their anemia level after iron supplementation, the higher their academic performance. It was shown that there was some improvement of their dietary attitudes after nutritional education, and that their serum level related to anemia symptoms and iron nutrition was improved after iron supplementation.
This study was to evaluate the effectiveness of nutritional counseling for farmers by using computer- based program to estimate pre - and post - knowledge and attitude changes. The desirable change of both knowledge and attitude focused on improving food Intake and early easing of body complaints. 311 agricultural workers in Korea were chosen for this experiment. The score was compared by 2 methods. In the first method, the scores were calculated from nutrient intake quantity and indices. In the second method, the difference of pre and post test of nutritional counseling by count of correct answers of foods and food preparation attitudes was measured according to different body complaints status. Major farming type was rice-planting(39%). The consciousness of health status of the subjects of less than 50 years old was good(42%), but it was only 20% in over 50 years' group. Female farmers felt uncomfortable in body complaints. Their body complaints were 2 times more than the male farmers, particularly, in over 50 years group. Nutrient intakes were lower in male based on the KRDA, except for vitamin C, niacin, and phosphate. Female farmers' nutrient intake was adequate based on the KRDA, but was low in vitamin A, pyridoxin, and iron. From the scores of knowledge and attitude by pre and post tests, counseling was efficient In nutritional education of all age groups, especially the older ones. The effect of counseling by farming type showed that the real agricultural workers had more increased score In the post test. This results Indicated that counseling about food, nutrition. and health to these workers was always effective. Therefore nutritional counseling and education program should be developed for different kinds of health and nutrition. It would be conducted to promote food behavior and improve nutritional and health status of farmers.
Children are an important target of health promotion activities due to the life long effects. Therefore, the purpose of this study was to evaluate a nutrition education program offered to primary school students by community health centers. Eight hundred and twenty-six children from 4 primary schools in Seoul voluntarily attended the program. Teachers taught the classes with materials that were provided to them. The subjects were asked to fill out a questionnaire before and then after completion of the program. The data were analysed by SPSS. The results showed that there were significant positive differences in the children's nutrition knowledge scores after the program (p<0.001). In terms of dietary attitude, the rate of 'yes' responses, as a desirable answer to many questions, had increased (p<0.001); however, this positive change in scores was not statistically significant. For dietary habit changes, it was shown that the proportion of children regularly eating breakfast five days a week had improved to 3.3%. And the proportion of children eating fast foods and instant foods decreased. There was no change in fruit intake, but vegetable intake increased (p<0.001). However, the children's overall dietary habit scores did not show a significant change. In the evaluation of the program, 52.3% of the subjects answered that was helpful, and they viewed 'fast food' as the most interesting topic, whereas 'nutrition labeling' was the most difficult topic in the program. The program's effectiveness was positive in terms of enhancing the 'nutrition knowledge', 'dietary attitudes', and 'dietary habits' of the children. Therefore, the above results indicate that this type of program, provided by community health centers, was effective for nutrition education.
