The consciousness and eating habits of the housekeeper directly influence the stress level and health quality of the household occupants. In Korea, most housewives are in charge of dietary life. Accordingly, their attitudinal clusters toward dietary (eating) life were researched in relation to their stress and health. The research results showed that irregular eating habits cause stress. Therefore, it is necessary for housewives to have a regular eating habit. The results were as follows. The house wives' attitudes toward dietary life were categorized into 5 clusters: regular and speedy overeating, regular and frequent eating, regular and light eating, irregular and light eating, irregular and speedy overeating. The cluster of regular and frequent snacks was 24.3%. The cluster of irregular and speedy overeating caused the most stress. Especially the house wives' group belonging to the cluster of irregular and speedy overeating were under social and emotional stress, while the cluster of regular and light eating and the cluster of irregular and light eating were under concentration stress. The cluster of regular and frequent snacks and the cluster of irregular and light eating had negative effect on their health, while the cluster of regular and speedy overeating had negative effect on their family's health by their social stress.
Fat in meat greatly improves eating quality, yet many consumers avoid visible fat, mainly because of health concerns. Generations of consumers, especially in the English-speaking world, have been convinced by health authorities that animal fat, particularly saturated or solid fat, should be reduced or avoided to maintain a healthy diet. Decades of negative messages regarding animal fats has resulted in general avoidance of fatty cuts of meat. Paradoxically, low fat or lean meat tends to have poor eating quality and flavor and low consumer acceptability. The failure of low-fat high-carbohydrate diets to curb "globesity" has prompted many experts to re-evaluate of the place of fat in human diets, including animal fat. Attitudes towards fat vary dramatically between and within cultures. Previous generations of humans sought out fatty cuts of meat for their superior sensory properties. Many consumers in East and Southeast Asia have traditionally valued more fatty meat cuts. As nutritional messages around dietary fat change, there is evidence that attitudes towards animal fat are changing and many consumers are rediscovering and embracing fattier cuts of meat, including marbled beef. The present work provides a short overview of the unique sensory characteristics of marbled beef and changing consumer preferences for fat in meat in general.

This research empirically analyzed whether the foods which came from a non-Muslim majority country, such as South Korea, could play an important role in affecting the consumer intention in a predominantly Muslim country. Online survey methods were used to investigate the proposed hypothesis. 318 responses were used for further analysis. Forty-six reflective constructs were adapted from literature and designed by using a five-point Likert scale to facilitate measurement. Estimation models and structural models were examined through SEM-PLS analysis techniques using SmartPLS 3.0 application as the data processing tool. The results showed that religiosity and halal awareness had a positive and significant effect on attitude toward halal labels, including the mediating effect from consumer attitudes towards halal labels which had a positive but insignificant effect on purchase intention. Halal awareness plays an important role for Muslims in the decision-making process for purchasing food. In contrast to the initial hypothesis, the country of origin actually did not have a positive effect on attitudes towards the halal label. In a Muslim-majority country like Indonesia, findings halal food is not difficult, so this research basically is a reminder to marketers to follow those halal principles in implementing their marketing strategies.

This study explores consumer perceptions of the Metaverse, a new concept emerging post-pandemic. It applies the Technology Acceptance Model and Theory of Reasoned Action to examine how perceived usefulness, ease of use, attitudes, subjective norms, and intentions to adopt new technology are connected. The study analyzes samples obtained from a self-administered online survey, assessing experienced and inexperienced individuals to compare their perceptions toward Metaverse in the food service industry. The data is processed with SPSS and AMOS, utilizing factor analysis and structural equation modeling. Results show perceived usefulness and ease of use influencing attitudes, which, along with subjective norms, impact behavioral intentions, supporting hypotheses. As online experiences grow, Metaverse marketing could affect dining behaviors and purchases. The study offers insights for food service companies to enhance behavioral intentions, contributing to Metaverse advancement.
Objectives: This study was performed to examine dietary habits, life stress, and nutrition knowledge among high school students in Gyeonggi area. Methods: A total of 431 high school students (210 males, 221 females) in Gyeonggi area participated in this study from November to December of 2011. The study was a questionnaire-based survey that included dietary habits, dietary attitudes, life stress, and nutrition knowledge. Results: Body weight, height, and body mass index were all higher in male students than in female students (P < 0.001, respectively). For dietary habits, the average score (P < 0.01) and scores for considering combination of food groups (P < 0.05), eating green and orange vegetables (P < 0.05), eating meat, fish, eggs, or beans everyday (P < 0.05), drinking milk (P < 0.001), and eating seaweed (P < 0.01) were higher in male students than in female students. For dietary attitudes, the average score (P < 0.05) and scores for the five items were significantly different between male and female students. Male students showed a significantly lower nutrition knowledge score than female students (P < 0.05). Life stress score of students largely was attributable to academic factors, and female students showed higher stress score for academic, personal, and surrounding environmental (P < 0.05, respectively) factors than male students. Dietary habit score (P < 0.01) and nutrition knowledge score (P < 0.05) in female students as well as dietary attitude score (P < 0.05) in male students were negatively correlated with life stress score. Dietary habit scores in male and female students were positively correlated with dietary attitude score (P < 0.01, respectively). Need for nutrition education was significantly higher in female students than in male students (P < 0.05). Conclusions: This study provides basic information on dietary habits, dietary attitudes, life stress, and nutrition knowledge according to sex and suggests gender-specific practical nutrition education programs to address undesirable dietary habits and attitudes in students with higher stress levels.
This study investigated the correlations among the health consciousness, nutrition knowledge, dietary habits and nutrition attitudes of school teachers. The subjects of this study were 75 male and 152 female leachers in elementary and middle schools in Masan city. The survey was conducted by using a questionnaire. Even though the average body mass index (BMI) and the obesity index were normal in both male and female subjects, 33.3% of the male subjects were overweight/obese, while 18.5% of the female subjects were underweight, according to the obesity index. The food components of most concern during mealtime were (in order of importance) salt, MSG and cholesterol by male subjects, and salt, fat and MSG by female subjects. The subjects considered self-relaxation as the most important factor in maintaining optimal health status, followed by resting, bathing or use ova sauna, moderation in diet, exercise, decreasing alcohol intake, and no smoking. Newspapers/magazines and TV/radio were the primary sources of nutrition and health information of the subjects. As the degree of health consciousness increased, scores of the dietary habits and nutrition attitudes increased. Nutrition knowledge scores and nutrition altitudes scores increased with subjects'increased level of perception of the importance of acquiring nutrition knowledge and nutrition information. There was a highly significant correlation between the degree of health consciousness and dietary habit score (${\gamma}$ : 0.3, p<0.001). The degree of health consciousness was also significantly correlated (${\gamma}$=0.6, p<0.001) with nutrition attitudes scores. But the correlation between the degree of health consciousness and nutrition knowledge was not statistically significant. The degree of the perception of the importance of nutrition knowledge showed a positive correlation with nutrition attitude (${\gamma}$:0.4, p<0.001) and dietary habit (${\gamma}$:0.3, p<0.001). The degree of perception about the importance of nutrition knowledge and nutrition information was positively correlated with nutrition knowledge (${\gamma}$:0.2, p<0.001) and nutrition attitudes (${\gamma}$:0.3, p<0.001).
The object of this study was done to assert the dietary habits, food intake, and dietary attitudes of 332 middle school students in a small city. The subject were divided into doe groups based on weight length index (WLI). Anthropometric data showed that the mean height and weight were 169.5 $\pm 8.2 cm and 55.1 $\pm 11.5 kg in the male students and 158.9 $\pm 5.9 cm and 48.1 $\pm 7.6 kg in the female students. The mean WLIs for male and female students were 103.0 $\pm 19.7 and 96.3 $\pm 12.8, respectively. Of the male students 27.9% and of the female students 32.1% were underweight, and of the male students 28.9% and of the female students 13.0% were overweight based on WLI index. Lack of good dietary habits in the overweight group tended to be the highest, the normal group was the second highest, and the underweight group was the lowest. The regularity of eating breakfast and flood prejudice scores in the overweight group were significantly higher than those in the normal and underweight group. With respect to flood intake, the normal group tended to consume grains, yellow or green vegetables, vegetables with light color, fruits, milk, yogurt, cheese, seaweeds, fat-floods, instant floods, sweet floods, carbonated drinks, and spicy and salty floods more frequently. The underweight group tended to consume meat-ham, eggs, fish and fried, stir-fried flood more frequently In dietary attitudes, the overweight group tended to have more favorable dietary attitudes, and the normal group tended to have negative dietary attitudes. The underweight group showed more negative responses to trying to eat/drink milk, yogurt, or cheese everyday than the overweight groups. It might be suggested that more effective nutritional programs should be developed and implemented to ensure good dietary habits in middle school students, including the overweight, as well as the underweight group. Further research on the comparison of dietary characteristics is needed, with consideration of the subjects WLI.
In this study, housewives' attitudes toward genetically modified foods (GM foods) and their willingness to purchase GM foods were examined. The findings of this study could provide useful information for consumer education and consumer policy development regarding GM foods. The specific purposes of this study were: (1) to examine consumers' attitudes toward GM foods, (2) to analyze the effect of the perception of GM foods and demographic variables on consumers' attitudes toward GM foods, and (3) to analyze the effect of the perception of GM foods and demographic variables on consumers' willingness to purchase GM foods. The questionnaire used in the survey was constructed by the author, based on existing literature. The survey was conducted with 1,100 housewives, and 723 of the completed survey forms were used in the final analysis. Frequencies, percentages, means, standard deviation, t-tests, ANOVA, Duncan-test, Pearson's Correlation, factor analysis, and discriminant analysis were employed for data analysis methods. Major findings are: (1) Consumers' attitudes toward GM foods consist of three factors, that are, attitude regarding potential danger, attitude regarding the use of GM technique on plants, and attitude regarding the use of GM technique on animals. (2) Consumers with a higher level of education tend to perceive GM food as more dangerous, whereas consumers with a lower level of education tend to accept more the use of GM technique on plants. (3) Consumers who tend not to consider GM foods as dangerous, and those who acknowledged benefits in using GM technique on plants are more willing to buy GM foods.
With the advent of highly active anti-retroviral therapy (HAART), the perceptions of HIV therapy have changed from treating acute and terminal diseases to managing complex chronic diseases. Due to needs for specialists with professional knowledge on anti-retroviral therapies, pharmacists have been recognized as established and integral members in HIV multi-disciplinary care teams. Nevertheless, the roles of Korean pharmacists for HIV/AIDS therapy were highly limited. According to the transition of '2+4'-year pharmacy school curricula in Korea, it is necessary for pharmacy students to possess improved knowledge about and proper attitudes toward HIV/AIDS as future pharmacists. However, there have been little studies regarding the assessment of HIV/AIDS knowledge, attitudes, and risk perceptions of pharmacy students in Korea. Thus, this study was to examine Korean pharmacy students' knowledge levels, attitudes, and risk perceptions about HIV/AIDS and compare them according to pharmacy educational systems. The self-reported questionnaire was utilized to collect data. Total 238 students responded to the survey questionnaires. Most pharmacy students who participated in this study knew that the main transmission routes of HIV were unprotected sex, unscreened blood, occupational exposure, and intravenous drug use. However, they did not properly know post exposure prophylaxis for HIV. The pharmacy students under '2+4'-year curricula were more competent with treatment, care, counseling for HIV patients than those under 4-year curricula. Most pharmacy students thought that all healthcare students and professionals should receive mandatory HIV testings. The results from this study may contribute to developing new educational programs about HIV/AIDS. Additionally, further studies regarding the changes of Korean pharmacy students' attitudes and risk perceptions will need to be performed after they participate in these kinds of the programs.
The purpose of this study was to develop various nutrition education materials, including an animated CD, for day care center children and their teachers and in order to apply the nutrition education programs systematically. We evaluated the effect of the nutrition education programs on nutrition knowledge in the first year, and the effect of the nutrition education programs on nutrition knowledge, food attitudes and eating behaviors in the second year in day care center children. In the first year, nutrition education foundational materials, such as the animated CD-ROM, videotape, textbook, panels, posters, slogans, leaflets, picture disks, hand puppets, stickers for compensation and poster boards were developed. The subjects were 537 children (286 boys,251 girls) aged four to six years. In the second year, nutrition education materials, such as the animated CD-ROM and textbook were developed. The nutrition education group included 368 children (177 boys 191 girls) aged four to six years, and the comparison group consisted of 108 children (54 boys,54 girls) Regarding the nutrition knowledge test results in the first year, the pre-test mean of children was 6.82, however, the post-test mean was 11.35 and showed a significant increase (p < 0.001). Regarding the nutrition knowledge test and the food attitude test results in the second yew, the nutrition education group had significantly higher scores than the comparison group in a post-test (p < 0.001). For the eating behavior test results, the post-test means between the comparison group and the nutrition education group were not significant. The test results show that several months of nutrition education is not enough to improve eating behaviors. As a result, nutrition education has improved nutrition knowledge and food attitudes in day care center children but short-term nutrition education was not sufficient to induce a change in eating behaviors. To improve eating behaviors in day care center children, nutrition education programs must be applied to day care center children in addition to their Parents and Persistent education will have to be continued.
