서울지역 소비자의 패스트푸드점 영양 성분 표시에 대한 인식 (Consumer Perceptions of Nutrition Labeling at Fast-Food Restaurants in Seoul)

  • This study investigated customer perception of nutrition labeling at fast-food restaurants in Korea. Five hundred and fourteen customers with previous experience at fast-food restaurants were surveyed in July 2012 in Korea. A total of 502 completed questionnaires were analyzed (98.0%). The questionnaires asked about the general characteristics of the subjects, their perceptions and opinions of nutrition labeling at fast-food restaurants, any nutrients they would like to see included in nutrition labels, and their preferred nutrition labeling methods at fast-food restaurants. Of the respondents, 59.4% were male and 40.6% were female; 42.4% indicated that they eat at fast-food restaurants two to three times a month. Half of respondents (54.2%) knew of nutrition labeling of fast-food restaurants, with females being more aware than males. Males trusted nutrition labeling at fast-food restaurants more than females did, and more males than females responded that nutrition labeling helps when selecting healthy menu items. As for satisfaction with nutrition labeling at fast-food restaurants, males were more satisfied than females, and customers between 30 and 39 years old showed the highest rates of satisfaction. Calories was the criterion that most respondents (66.3%) wished to pre-displayed, followed by sodium and trans fat levels. Respondents mostly preferred nutrition labels at fast-food restaurants to be in the form of symbolic icons (36.5%). The results of this study can help shape the application of nutrition labeling at fast-food restaurants and can be used to help establish guidelines for nutritional education for customers in Korea.

Development of a Multiplex Polymerase Chain Reaction Method for Simultaneous Detection of Genetically Modified Soy and Maize

  • This study was aimed to develop a novel qualitative multiplex polymerase chain reaction (PCR) for simultaneous detection of genetically modified (GM) soy and maize within a single reaction. The specific primers designed to detect four respective GM events (A2704-12, MON88017, Bt11, and MON863) were included in the tetraplex PCR system. Each of PCR products for four GM events could be distinguished by agarose gel based on their different lengths. The specificity and reproducibility of this multiplex PCR were evaluated. This multiplex PCR consistently amplified only a fragment corresponding to a specific inserted gene in each of the four GM events and also amplified all four of the PCR products in the simulated GM mixture. These results indicate that this multiplex PCR method could be an effective qualitative detection method for screening GM soy and maize in a single reaction.

초등학생의 식품영양표시에 대한 인식 및 이용실태 (A Study on Recognition, Utilization of Food and Nutrition Labelling of Elementary School Students)

  • The purpose of this study is to provide a fundamental research data that is necessary in an education of dietary life so that the students have sound dietary life through a right food purchase after investigating perception of children's dietary habit and activity, food labelling, and nutrition labelling for 400 students of the 5 and 6th grades. The result of the study are as followings. In terms of perception questions over food labelling, on the whole, "know it little bit" was the highest. Girls and country was higher than boys and city. A list of item that is important in contents of food labelling were period of circulation, data of manufacturing, price, used ingredient, origin of product, nutrition contain labelling, manufacturer, quantity in contents(quantity, the number). A meaningful difference was shown in gender(p<.05) and area(p<.01). In 30 perception questions over nutrition labelling, "know it little bit" was the most, and girls and country were higher than boys and city. In ascertaining nutrition labelling at the time of purchasing the food, "look often" was the most. Girls and city were higher than boys and Gun in average but no difference was statistically shown in knowledge mark in utilization and perception of nutrition labelling. The response rate in girls(p<.01) and country(p<.05) was higher in a question of "if nutrition labelling is displayed, nutriment that is harmful for our body will be eaten less" and girls' response rate was higher in the question of "being educated for my health". Therefore, practice centered nutrition education is necessary to purchase the food after ascertaining food nutrition labelling out of an attitude in habitually purchasing the processed food. The students develop comprehensible food nutrition labelling the direction to emphasizing nutrition educational labelling and recognizing that the healthy nutriment is contained without conventional and food safety centered labelling should be changed.
