MS 발효 잔반사료가 청둥오리의 육질에 미치는 영향 (Meat Quality of Mallard by Feeding of MS-Fermented Food Waste)

  • 본 연구는 대조구로서 일반배합사료에서 사육된 청둥오리와 처리구로서 일반배합사료에 MS 발효 잔반사료를 20% 또는 50%를 혼합하여 일정기간 사육한 후 사육효과를 알아보았고 이화학적 분석 및 아미노산과 지방산 분석 등을 통해 처리구에 따른 육질을 비교함으로서 MS 발효 잔반사료의 오리사료로서의 효율성을 검토하였다. 사육효과에 대한 결과로서 도체율 및 각 장기무게는 대조구와 처리구간에 유의적 차이가 발생되지 않았으나, 사료효율에 있어서는 처리구보다 대조구에서 좋은 결과를 보여주었다 (P<0.05). 이화학적 분석으로서 보수성과 pH는 모든 처리구간에 있어서 유의차가 없었다. 그러나 육색에 대한 결과를 보면 명도($L{\ast}$)는 대조구가 20% 또는 50% MS 처리구보다 높은 값을 나타냈고 (P<0.05), 적색도($a{\ast}$)에서는 각 처리구가 대조구보다 더 높게 나타났다 (p<0.05). 관능평가로서 냄새와 기호성에서 있어서는 각 처리구간 유의적 차이가 없었다 (p>0.05). 한편 각 처리구의 부위별 아미노산 분석에 있어서 다리고기의 경우는 20% MS 처리구가 가장 많은 함량을 가지는 것으로 분석되었고, 가슴고기에 있어서는 대조구가 20% 또는 50% MS 처리구보다 더 높게 나타났다. 지방산 분석에 있어서 각 처리구별 불포화지방산 함량은 대조구보다 MS 발효 잔반사료 처리구에 더 많은 함량이 함유된 것으로 분석되었다. 이와같은 결과를 종합해 볼 때 청둥오리 사육에 있어서 시판 배합사료에 50% 수준까지 MS 발효 배합사료를 혼합급여하여도 성장 및 육질에 큰 영향을 주지 않음을 알 수 있었다. 비록 사료효율 측면에서 시판 배합사료에 비해 MS 발효 잔반사료 처리구가 더 낮게 나타났으나, 음식물쓰레기로 인한 경제적 및 환경적 손실을 감안할 때 본 연구결과가 주는 의미는 크다고 여겨진다.

십전대보탕 부산물과 발효홍국 홍삼박의 혼합제재를 여러 가지 제형에 따라 오리사료에 첨가 시 오리 가슴육의 변화 (Physicochemical Properties of Pekin Duck Breast Meat from Ducks Fed Diets Containing Different Types of Sipjeondaebo-Tang by- Products and Red Ginseng Marc with Fermented Red Koji)

  • This study investigated the physicochemical properties of Pekin duck breast meat obtained from ducks fed diets consisting different types of sipjeondaebo-tang by-products and red ginseng marc with fermented red koji during storage. A total of 180 Pekin ducks (0-day old) were divided into four groups, each consisting of three replicates (15 ducks per pen). This study investigated diets with four types of treatments: control (basal diet),1% blend powder, pelleted 1% blend, and coated pellets of 1% blend; the blend was a mixture of sipjeondaebo-tang by-products powder and red ginseng marc with fermented red koji. There was no significant difference (p>0.05) in duck breast meat pH on storage days 3 and 7, TBARS on storage days 0 through 7, and DPPH radical scavenging on storage days 0 and 7. However, the pH values on storage day 0 and DPPH radical scavenging on storage day 3 were significantly different (p<0.05) in the meats from control and treated diet fed ducks. Especially, on storage day 7, the breast meat from ducks treated with different types of sipjeondaebo-tang by-products and red ginseng marc with fermented red koji showed lower TBARS values and increased DPPH radical scavenging activity compared to the control. In conclusion, addition of different types of sipjeondaebo-tang by-product and red ginseng marc with fermented red koji to 1% blend might be helpful in increasing antioxidant effects and reducing product wastage.

Lipolytic Changes in Fermented Sausages Produced with Turkey Meat: Effects of Starter Culture and Heat Treatment

  • In this study, the effects of two different commercial starter culture mixes and processing methodologies (traditional and heat process) on the lipolytic changes of fermented sausages manufactured with turkey meat were evaluated during processing stages and storage. Free fatty acid (FFA) value increased with fermentation and during storage over 120 d in all fermented sausage groups produced with both processing methodologies (p<0.05). After drying stage, free fatty acid values of traditional style and heat processed fermented sausages were between 10.54-13.01% and 6.56-8.49%, respectively. Thiobarbituric acid (TBA) values of traditionally processed fermented sausages were between $0.220-0.450mg{\cdot}kg^{-1}$, and TBA values of heat processed fermented sausages were in a range of $0.405-0.795mg{\cdot}kg^{-1}$. Oleic and linoleic acids were predominant fatty acids in all fermented sausages. It was seen that fermented sausage groups produced with starter culture had lower TBA and FFA values in comparison with the control groups, and heat application inhibited the lipase enzyme activity and had an improving effect on lipid oxidation. As a result of these effects, heat processed fermented sausages had lower FFA and higher TBA values than the traditionally processed groups.

국균발효사료(麴菌醱酵飼料)의 첨가(添加)가 닭의 산육성향상(産肉性向上)에 미치는 효과(效果)에 관(關)한 연구(硏究) (Studies on the Effects of Fermented Feeds for the Increasing of Fowl Meat Production)

  • This experiment was conducted to observe the effects of fermented feed by Aspergillus oryzae and Aspergillus niger on the improvement of feed value and the effect of fermented feed additive for meat production of broiler. The results of fermented feed on the improvement of feed value were as follows; I; The effects of fermented feed value improvement were as follaws; 1) There were little difference between fermented feeds by Asp. oryzae and Asp. niger, compared with wheat bran, crude protein contents of Koji was highly increased and its nitrogen free extract and crude fat contents were decreased, but crude fiber and ash were little difference. 2) Total amino acids were highly increased as to fermented feeds but proline in Asp. niger koji feed, and proline and valine in Asp. oryzae koji feed were decreased and other amino acid were increased 2) The effect of fermented feeds on meat production of broiler were as follows; 1) Fermented feeds groups appeared higher weight (p<0.01)than weight of control on end of experimental period, but little difference were recognized between 5% and 10% fermented feed groups. 2) On the weight gain per day, highly significant were recognized(p<0.05) between control and test groups, 10% Asp. oryzae koji group was highest ($12.15{\pm}0.46g$) between all groups. 3) On the yield of carcass, there were significant highly difference (p<0.01) between control and test groups but little difference were recognized between each of 5% groups and 10% groups of fermented feeds. 4) Fermented feed groups appeared higher carcass yield (p (0<0.05) than control. But between all fermented feed groups were a little difference in partly. 5) On the influence of fowl meat composition, amount of moisture contents was a little decrease in fermented feed groups, and crude protein and crude fat were increased. 6) Feed conversion rate resulted a little amount decreasing. Specially, 10% Asp oryzae koji group was lowest (2.89) compare with control (3.35) 3. As a result of economical analysis appeared highest low income in koji groups. Low income were more gained percent of 40.22 in 10% Asp oryzae koji and 33.19 in 10% Asp. niger koji than control.

Fermented red ginseng and red ginseng extract diet supplementation on the effect of growth performance, nutrient digestibility, and meat quality of growing-fattening pigs

  • The influence of fermented red ginseng (FRG) and red ginseng extract (RGE) on the growth, nutrient digestibility, and meat quality of growing-fattening pigs was evaluated in the present study. In total, 120 growing-fattening crossbred pigs with a bodyweight of 21.77 kg (SE1.88) were allocated to 3 treatments with 8 repeats of 5 pigs (2 boars and 3 gilts) for a 22-week experimental period. The pigs were supplemented with a basal diet (CON group) or a basal diet containing 0.1% FRG or 0.1% RGE. Pigs fed the FRG diet had a higher (p < 0.05) average daily gain (ADG) from days 1 to 42 and during the whole period. The apparent nutrient digestibility of dry matter (DM) and nitrogen (N) was improved (p < 0.05) in the FRG treatment in week 6 and that of DM in week 10. Moreover, the drip loss of the meat from the FRG pigs was reduced (p < 0.05) on days 1, 5, 7, and 9. Taken together, this study revealed that the supplementation of 0.1% FRG in the diet improved the ADG and the apparent nutrient digestibility of DM and N and decreased the drip loss of the meat. However, the addition of RGE did not affect the growth of the growing-fattening pigs.

전자선 조사된 원료육과 Stater Culture의 사용이 발효육의 숙성 중 품질에 미치는 영향 (Effects of Starter Cultures on the Quality Traits of Electron Beam Irradiated Fermented Meat during Aging)

  • 본 연구의 목적은 시판 중인 스타터를 이용한 발효육제품과 스타터를 이용하지 않고 자연발효시킨 육제품의 발효 및 숙성 중 미생물학적, 이화학적인 특성에 미치는 영향을 연구하고, 원료육에서의 전자선 조사(2 kGy) 효과를 검증하고자 한다. 2 kGy로 전자선 조사한 스타터 첨가구는 발효 및 숙성 중 pH가 급격히 감소하였으며(p<0.05), 최종 pH 는 4.25를 나타내었다. 총균수와 젖산균수는 스타터 첨가에 의해 좌우되는데 발효가 진행됨에 따라 총균수와 젖산균수가 유사한 경향을 나타내었다. TBARS 값은 발효 및 숙성기간이 증가함에 따라 모든 처리구에서 증가하였다. 본 연구결과를 통해 발효육 생산 전 2 kGy로 전자선 조사처리한 경우 총균수를 감소시키고 젖산균수는 증식하는 것을 확인하였다. 조사처리 후 육에 스타터를 첨가하게 되면 발효육 생산에 매우 유용하게 이용될 수 있을 것으로 사료된다.

Effects of Fermented Red Ginseng Supplementation on Growth Performance, Apparent Nutrient Digestibility, Blood Hematology and Meat Quality in Finishing Pigs

  • This study was conducted to evaluate the effects of fermented red ginseng (FRG) on growth performance, apparent nutrient digestibility, blood hematology and meat quality in finishing pigs. A total of 96 ((Landrace${\times}$Yorkshire)${\times}$Duroc) pigs ($71.64{\pm}1.20\;kg$) were randomly allocated into one of the following dietary treatments: i) CON, basal diet; ii) FRG1, basal diet+1 g/kg fermented red ginseng; iii) FRG2, basal diet+2 g/kg fermented red ginseng and iv) FRG3 basal diet+4 g/kg fermented red ginseng. There were 6 replications per treatment with 4 pigs (2 gilts and 2 barrows) per pen. Throughout the whole period of the trial, there were no effects of FRG addition on ADG or G/F. Pigs fed FRG2 diet had lower ADFI (p<0.05) than those fed CON diet during 0-4 weeks while FRG2 and FRG3 treatments decreased ADFI (p<0.05) compared with CON treatment both during 5-8 weeks and the entire experiment. No differences were observed in apparent nutrient digestibility and blood hematology. However, FRG2 and FRG3 administration decreased the drip loss compared with CON (p<0.05). Pigs in FRG2 treatment had higher LMA (p<0.05) and lower WHC (p<0.05) than those in CON treatment. In conclusion, the supplementation of FRG had a minor effect on performance while partially improved meat quality in finishing pigs.

발효 머루 부산물을 급여한 돈육의 품질 및 기호성 (Quality and Palatability of Pork Meats Fed with Fermented Wild Grape By-product)

  • This study was carried out to investigate the feeding effects of fermented wild grape by-product on pork meat qualities. The samples consisted of the pork not fed fermented wild grape byproduct(FWG-X) and the pork fed fermented wild grape byproduct(FWG-O). The moisture, crude protein, crude fat and crude ash were not significantly different between samples. The cholesterol and TBARS of FWG-O were lower than those of the FWG-X, and the salt soluble protein extractability of FWG-O was higher than that of the FWG-X(p<0.05). The calorie, cooking loss, water holding capacity, pH and volatile basic nitrogen were not significantly different between FWG-X and FWG-O. The meat colors of the a and b value of FWG-O were higher than those of the FWG-X, and in case of the fat color, the a value of FWG-O was higher than that of the FWG-X. The hardness, springiness, cohesiveness, gumminess, chewiness and shear force were not significantly different between FWG-X and FWG-O. The total amino acid contents of FWG-X and FWG-O were 74.35 and 69.59g/100g protein, respectively, The raw meat color of FWG-O was higher than that of the FWG(p<0.01), and the cooked meat color(p<0.05), taste(p<0.001), flavor(p<0.001), juiciness(p<0.01) and palatability(p<0.01) were superior to those of the FWG-X. This study showed that fermented wild grape by-product decreased the cholesterol content and lipid oxidation with enhancing the sensory score.

Effect of Fermented Soybean, "Natto" on the Production and Qualities of Chicken Meat

  • Natto is a Japanese traditional soybean product fermented by Bacillus natto. The effect of natto supplement on the production and qualities of chicken meat was studied since the effective use of various waste foods is required in Japan. Dried natto prepared by heating at $60^{\circ}C$ was added to a basic diet at an amount of below 2%. The supplementation of dried natto did not influence the weights of the carcass, breast and thigh meat, fillet or abdominal fat. Growth of the thighbone such as the length, thickness of cortex bone, and Ca/P ratio in bone ash were not altered by the addition of natto. However, the pH of male meat decreased following the supplementation of dried natto from days 28 to 80. The water-soluble protein content in male thigh meat increased in the group fed 2% natto from days 28 to 80. Free peptides increased in male thigh meat by feeding 2% natto from days 0 to 80. The supplementation of natto increased free glutamic acid in thigh meat regardless of sex. Moreover, the supplementation of natto specifically decreased meat cholesterol in female chickens though the effect was not shown in male chickens.

Effect of acid whey and freeze-dried cranberries on lipid oxidation and fatty acid composition of nitrite-/nitrate-free fermented sausage made from deer meat

  • Objective: This study evaluated the effect of acid whey and freeze-dried cranberries on the physicochemical characteristics, lipid oxidation and fatty acid composition of nitrite-free fermented sausage made from deer meat and pork fat. Antioxidant interactions between acid whey and cranberry compounds were also explored. Methods: Four formulations of fermented venison sausage were prepared: F1 (control), F2 (with 5% liquid acid whey), F3 (with 0.06% of freeze-dried cranberries), and F4 (with 5% liquid acid whey and 0.06% of freeze-dried cranberries). Each sample was analyzed for pH, water activity ($a_w$), heme iron content, 2-thiobarbituric acid reactive substances (TBARS) value and conjugated dienes at the end of the manufacturing process and at 30 and 90 days of refrigerated storage. Fatty acid composition was measured once at the end of the manufacturing process. Results: At the end of ripening, all samples presented statistically different values for a pH range of 4.47 to pH 4.59. The sum of the unsaturated fatty acids was higher, while the conjugated diene and the TBARS values were lower in sausages with freeze-dried cranberries as compared to the control sausage. The highest content of heme iron (21.52 mg/kg) at day 90 was found in the sausage formulation with the addition of freeze-dried cranberries, which suggests that the addition of cranberries stabilized the porphyrin ring of the heme molecule during storage and thereby reduced the release of iron. The use of liquid acid whey in combination with cranberries appears to not be justified in view of the oxidative stability of the obtained products. Conclusion: The results suggest that the application of freeze-dried cranberries can lower the intensity of oxidative changes during the storage of nitrite-free fermented sausage made
