Phenolic Components and Antioxidant Capacity of Some Selected Fruit Juices and Fermented Grape Juices (과일즙 및 발효 포도즙의 페놀성 화합물 함량과 항산화 활성)

  • Some selected fruit juices and fermented red grape juices were investigated to determine the phenolic components by the Folin-Ciocalteu method and antioxidant capacity using α, α-diphenyl-β-picrylhydrazyl(DPPH) method. Commercial red grape beverages and red wines were also analyzed as control groups. In the juice, kiwi fruit had the highest phenolic components followed by orange(summer), red grape(Cambell Early:Yonng-Chun), mandarin orange(autumn), apple(Hong-Ok), cherry tomato, tomato and water melon. Whereas, on the antioxidant efficiency, tomato showed the highest free radical scavenging effect followed by orange(summer), cherry tomato, mandarin orange(autumn), apple(Aori) red grape(Cambell Early:Sung-Ju), kiwi fruit and water melon. The amount of pheonlic components of red wine was 2 times of that of fermented sugar added grape juice, however, the antioxidant efficiency of fermented sugar added grape juice was almost the same as that of red wine. It was found that no clear relationship could be shown between the content of phenolic component and antioxidant capacity of fruit juices and fermented red grape juices. The fruit juices from tomato, orange, cherry tomato, mandarin orange, red grape and fermented sugar added red grape juice showed high free radical scavenging effect and should be regarded as a valuable source of antioxidant.

Effect of Water Condition and Air Circulation on Fruit Fermentation of Oriental Melon (Cucumis melo L. var. makuwa Makino) (수분조건 및 송풍처리가 참외의 발효과 발생에 미치는 영향)

  • This study was conducted to assess effects of soil moisture condition and ventilation on development of fermented fruit of oriental melon. In higher soil moisture condition (-10 kPa), roots absorbed more water and transpiration was decreased under low temperature and high humidity conditions. Development of fermented fruit may be come from absorbed water concentrated placenta with higher soluble solid. Fermented fruit was developed with higher level at Shintozoa and Elite, was developed with lower level at Hongtozoa, and was not developed at self-rooting of oriental melon. Ventilation on fruit did not affect development of fermented fruit at Shintozoa, Elite, Hongtozoa and self-rooting seedling. Ca contents of flesh and placenta of fruit under ventilation treatment were higher than control but contents of Acetaldehyde, Ethanol and Ethylacetate were lower.

  • The contents of ascorbic acid in milk and fermented milk, yogurt added with fruits were determined by 2.6-dichlorophenol indophenol method using a Spectrophotometer. Threes sample of fruit milks and three of fruit yogurts were collected from the several markets in Busan City. The amounts of the vitamin as the reduced form were 0.16 mg/100m1 of strawberry milk, 0.31mg/100m1 of orange milk, and 0.08mg/100m1 of banana milk. The vitamin was not detected from the fermented fruit yogurt samples.

  • Diseases occurrence of hydroponic culture was less than that of soil culture, especially gummy stem blight, which was 39.9-53.3% of infection rate at soil culture, was not almost observed at hydroponic culture. Development of fermented fruit was higher at Shintozoa, Hongtozoa and self-rooting seedling in order at soil cultured but critically dropped at hydroponic culture without rootstock sort. Therefore proper moisture management at root zone can decrease the development of fermented fruit.

Anti-tumor Activity of Fermented Liquid Opuntia humifusa in Cervical Cancer Cells and Its Chemical Composition (손바닥 선인장(Opuntia humifusa) 발효액의 화학적 성분과 자궁경부암 세포주에 대한 항암작용)

  • The purpose of this study is to investigate anti-tumor activities, general composition, elemental composition and mineral contents of fermented liquid stem, root and fruit of Opuntia humifusa. In the general composition, the energy, crude protein, crude lipid and crude carbohydrate contents of fermented liquid stem were 86.21 Kcal, 0.92$\%$, 0.12$\%$, and 20.34$\%$, respectively. Fermented liquid fruit showed 65.32 Kcal, 1.04$\%$, 0.08$\%$, and 15.15$\%$. In mineral analysis, fermented liquid stem and fruit showed 1,800 and 388 mg of calcium per 100g. The ferrous concentrations of fermented liquid stem and fruit were 21 and 10 mg per 100 g, respectively. Methanol, ethanol and water extracts of nonfermented liquid stem and fruit did not inhibit the proliferation in human cervical cancer cells (Caski, SiHa and HaCaT), but the fermented liquid fruit showed the inhibition of Proliferation with dose-response manner in Caski and SiHa cells, but not HaCaT. Therefore, it suggests that fermented cactus may be used as one of potential adjuvant for the treatment of cervical carcinomas.

  • The experiment was conducted to investigate the relationship between $Ca^{2+}$ uptake and development of fermented fruit through the forced-air circulation of ambient fruit. Air circulation of ambient fruits were adjusted with 0.3m/sec wind velocity for three hours a day from 10:00 to 13:00. Treatments consisted of 0, 10 day, 20 day, 30 day of forced air circulation of ambient fruit. Although the results varied depend on the duration forced air circulation, in general, treated fruit increased fruit weight, flesh thickness, fruit hardness, soluble solids, and chromaticity, and decreased the number of fermented-fruit. $Ca^{2+}$ content in fruit.

Characteristics of Fermented Fruit and Vegetable Mixed Broth Using by Bacteriocin-producing Lactic Acid Bacteria and Yeast (박테리오신 생성 젖산균과 효모를 이용한 과채발효액의 특성)

  • A mixed culture of bacteriocin-producing lactic acid bacteria and yeast was used to prepare unique fermented fruit and vegetable beverage which contains bacteriocin. Fruit and vegetable broth fermented by Lactococcus lactis 11454 showed inhibitory activity against foodborne pathogens such as Listeria monocytogens and Staphylococcus aureus, and Streptococcus mutans which is a major causative agent for dental caries. Bacteriocin was detected at the end of fermentation of fruit and vegetables and its antimicrobial activity was stable for 5 weeks during storage at $4^{\circ}C$. These results suggest that the presence of bacteriocin in beverages during fermentation and storage will provide a safeguard against foodborne pathogens and spoilage bacteria. To improve flavor of the fermented broth, post-fermentation of the fermented broth was carried out at $4^{\circ}C$ by using yeast isolated from raw material mixture. Total acidity of the post-fermented broth was slightly decreased, but significant increase in the concentration of succinic acid was observed in the post-fermented broth. It was also observed that bitter and disagreeable taste compounds such as phthalates were decreased, and mild acidic and fruity flavor esters and alcohols were increased by the post-fermentation of the fermented broth with yeast.

  • The effects of $CaCl_2$ foliar application on inhibition of the occurrence of abnormally fermented fruit and chemical composition of oriental melon (Cucumis melo L. var. makuwa Mak. cv. Gumssaragi-eunchun) were examined. $CaCl_2$, applied at 0.3~0.7%, had an apparent inhibitory effect on occurrence of abnormally fermented fruit when sprayed three times at five days intervals from 10 days after flowering. The effect of $CaCl_2$ was diminished when the field was irrigated during the ripening period. Sugar content in the fruits was not affected by the $CaCl_2$ treatment. The Ca content was higher in the normal fruit than in the fermented ones, but no difference was noted in the K and Mg levels. The occurrence of fermented fruit was increased when the applying nitrogen levels were less (10kg) or higher (25kg/10a) than normal supply. The nitrogen application had no effect on the calcium content in fruits.

  • The fermented fruit and vegetable mixed broth was prepared by using bacteriocin-producing lactic acid bacteria to evaluate the possibility of developing isotonic beverage with anticariogenic activity. Optimum conditions were also established to produce bacteriocin by a mixed culture system consisting of Lc. lactis and Leu. mesenteroides in a fruit and vegetable mixture. Production of bacteriocin was not observed when both strains were simultaneously innoculated, but pH adjustment of the broth fermented by Leu. mesenteroides to nearneutral pH stimulated the production of bacteriocin by Lc. lactis. The concentration of sodium of the fermented broth was higher than those of commercial products. Color change of the fermented broth was not observed during storage. The fermented broth showed strong inhibitory effect against Streptococcus mutans which is an oral inhabitant with a cariogenic activity. Bacteriocin activity in the fermented broth was retained very stable for 4 weeks at 4$\^{C}$. The results indicated that bacteriocin-producing lactic acid bacteria can be used for the preparation of a Korean style thirst-quenching beverage containing bacteriocin.

Analysis of γ-Aminobutyric Acid Content in Fermented Plant Products by HPLC/UV

  • ${\gamma}$-Aminobutyric acid (GABA) content in fermented plant products and their main plant materials (aerial part of Acanthopanax sessiliflorus, fruit of Crataegus pinnatifida, and whole plant of Morus alba) was determined by high-performance liquid chromatography. GABA was quantified using a reverse-phase column with a gradient elution program (water:acetonitrile =90:10 to 0:100 for 40 min). UV detection was conducted at 280 nm. GABA content was measured in fermented plant products (15.07 mg/g), aerial part of A. sessiliflorus (4.49 mg/g), fruit of C. pinnatifida (10.59 mg/g), and whole plant of M. alba (2.31 mg/g). The presence of GABA in fermented plant products, including A. sessiliflorus, C. pinnatifida, and M. alba is important in industrial application for health supplements.
