소에서 clostridium botulinum에 의한 중독증 발생 사례 (A case report of clostridium botulinum in cattle)

  • Type C botulism was broken out in cattle at Pochun country, Kyonggi in Korea. The main cause was on the feed of fermented food contaminated with Clostridium botulinum. It was supposed to be contaminated with C botulinum during producing the fermented food because of either using contaminated food residues or adding contaminated additive materials like sausage. One hundred and twenty out of 642 cattle in 11 farms showed typical botulism symptoms and 95 among them died. The incubation period was from 2 to 14 days and the average incubation period was 8 days. The mortality in this case was 18.3%.

Diet of Red Ginseng-Cheonggukjang Improves Streptozotocin-induced Diabetes Symptoms and Oxidative Stress

  • Protective effects of cheonggukjang fermented with 20% red ginseng (RC) were observed in streptozotocin (STZ)-induced diabetic rats by measuring levels of blood glucose, serum lipid profiles, and hepatic reactive oxygen species generating and scavenging enzymc activities. RC diet was prepared by mixing with AIN-76 diet at the final concentration 2%, and it was fed to STZ-induced diabetic rats for 3 weeks. The RC dict was significantly improved body weight, feed efficiency ratio, levels of serum glucose, and serum and hepatic lipids in diabetes. The significantly elevated O type activity of xanthine oxidase in diabetes was also greatly decreased by the RC diet. The treatment of RC showed the improved hepatic glutathione s-transferase activities in the diabetic animals. The present study indicates that cheonggukjang fermented with red ginseng could ameliorate STZ-induccd diabetic symptoms such as aggravated blood glucose levels, serum lipid profiles, and even the conditions of oxidative stress.

Role of Fermentation in Improving Nutritional Quality of Soybean Meal - A Review

  • Soybean meal (SBM), a commonly used protein source for animal feed, contains anti-nutritional factors such as trypsin inhibitor, phytate, oligosaccharides among others, which limit its utilization. Microbial fermentation using bacteria or fungi has the capability to improve nutritional value of SBM by altering the native composition. Both submerged and solid state fermentation processes can be used for this purpose. Bacterial and fungal fermentations result in degradation of various anti-nutritional factors, an increase in amount of small-sized peptides and improved content of both essential and non-essential amino acids. However, the resulting fermented products vary in levels of nutritional components as the two species used for fermentation differ in their metabolic activities. Compared to SBM, feeding non-ruminants with fermented SBM has several beneficial effects including increased average daily gain, improved growth performance, better protein digestibility, decreased immunological reactivity and undesirable morphological changes like absence of granulated pinocytotic vacuoles.

Current status and prospects for in-feed antibiotics in the different stages of pork production - A review

  • Antibiotics have long been of great benefit for people, both in the medical treatment of human disease and in animal food where they improve the growth performance and feed utilization during animal production. Antibiotics as in-feed supplements affect all stages of pork production, including the gestation, nursing, growing, and finishing stages, although the effects show stage-dependent differences. However, the use of antibiotics in animal feed has become a worldwide concern. This review describes why sub-therapeutic levels of antibiotic additives in animal feed have become an integral part of animal feeding programs for more than 70 years, particularly in pork production. It also discusses the threat of the long-term use of sub-therapeutic levels of antibiotics in pork production. In recent years, the effectiveness of in-feed antibiotics has tended to decrease. This review analyzes this change from various perspectives. First, the equipment used at pig farms has improved dramatically and is more sanitary. Worldwide, more pig farms use pig farrowing crates, gestation crates, piglet nursery crates, flooring devices, piggery ventilation and cooler systems, automatic pig feeders, piggery heating equipment, and artificial insemination systems. In addition, scientists have replaced the use of antibiotics with organic acids, fermented mash, probiotics, prebiotics, minerals, oligosaccharides, enzymes, herbs/flavors, and protein/amino acids, and have improved management and husbandry techniques. In addition, animal welfare legislation has been aimed at improving the quality of the floors and living space, ensuring that animals have permanent access to fresh water, and setting a minimum weaning age. Finally, the prospects and the possibility of replacing antibiotics in pork production are described, in line with recent research results.

Influence of Yeast Fermented Cassava Chip Protein (YEFECAP) and Roughage to Concentrate Ratio on Ruminal Fermentation and Microorganisms Using In vitro Gas Production Technique

  • The objective of this study was to determine the effects of protein sources and roughage (R) to concentrate (C) ratio on in vitro fermentation parameters using a gas production technique. The experimental design was a $2{\times}5$ factorial arrangement in a completely randomized design (CRD). Factor A was 2 levels of protein sources yeast fermented cassava chip protein (YEFECAP) and soybean meal (SBM) and factor B was 5 levels of roughage to concentrate (R:C) ratio at 80:20, 60:40, 40:60, 20:80, and 0:100, respectively. Rice straw was used as a roughage source. It was found that gas production from the insoluble fraction (b) of YEFECAP supplemented group was significantly higher (p<0.05) than those in SBM supplemented group. Moreover, the intercept value (a), gas production from the insoluble fraction (b), gas production rate constants for the insoluble fraction (c), potential extent of gas production (a+b) and cumulative gas production at 96 h were influenced (p<0.01) by R:C ratio. In addition, protein source had no effect (p>0.05) on ether in vitro digestibility of dry matter (IVDMD) and organic (IVOMD) while R:C ratio affected the IVDMD and IVOMD (p<0.01). Moreover, YEFECAP supplanted group showed a significantly increased (p<0.05) total VFA and $C_3$ while $C_2$, $C_2:C_3$ and $CH_4$ production were decreased when compared with SBM supplemented group. In addition, a decreasing R:C ratio had a significant effect (p<0.05) on increasing total VFA, $C_3$ and $NH_3$-N, but decreasing the $C_2$, $C_2:C_3$ and CH4 production (p<0.01). Furthermore, total bacteria, Fibrobacter succinogenes, Ruminococcus flavefaciens and Ruminococcus albus populations in YEFECAP supplemented group were significantly higher (p<0.05) than those in the SBM supplemented group while fungal zoospores, methanogens and protozoal population remained unchanged (p>0.05) as compared between the two sources of protein. Moreover, fungal zoospores and total bacteria population were significantly increased (p<0.01) while, F. succinogenes, R. flavefaciens, R. albus, methanogens and protozoal population were decreased (p<0.01) with decreasing R:C ratio. In conclusion, YEFECAP has a potential for use as a protein source for improving rumen fermentation efficiency in ruminants.

Effects of Adding Glucose, Sorbic Acid and Pre-fermented Juices on the Fermentation Quality of Guineagrass (Panicum maximum Jacq.) Silages

  • This study was conducted to evaluate the effects of adding glucose (G), sorbic acid (S), pre-fermented juice of epiphytic lactic acid bacteria (FJLB) and their combinations on the fermentation qualities and residual mono-and di-saccharides compositions of guineagrass silage. The additives used in this experiment were 1% glucose, 0.1% sorbic acid and FJLB at a theoretical application rate of 9.0${\times}$105 CFU $g^{-1}$ on the fresh weight basis of guineagrass, respectively. There was a total of eight treatments in this experiment: (1) C (without additives), (2) FJLB, (3) S, (4) G, (5) FJLB+S, (6) FJLB+G, (7) S+G, (8) FJLB+S+G. After 30 days of storage, the silos were opened for chemical analyses. Based on the results, all additives were efficient in improving the fermentation quality of guineagrass silage. This was well indicated by significantly (p<0.05) lower pH and BA content and significantly (p<0.05) higher LA content in the treated silages except for the FJLB than in the C. However, there was only a slight increase in LA for the FJLB as compared with the C, which might be due to the low WSC content of the original guineagrass (34.4 g $kg^{-1}$). When the FJLB+S and FJLB+G were added, there were significant (p<0.05) decreases in pH and significant (p<0.05) increases in LA as compared with the FJLB alone. This indicated that the G, S and FJLB were of synergestic effects on the silage fermentation quality. The G combination treatments including the G alone showed large improvements in the fermentation quality as compared with the treatments without the G. This suggested that adding fermentable substrates (G) to plant materials such as guineagrass, which contain low WSC, intermediate population of epiphytic LAB, CP and DM content, is more important and efficient for improving the fermentation quality of silages than adding a number of species of domestic LAB (FJLB) and aerobic bacteria inhibitor (S).

Replacing Concentrate with Wheat Straw Treated with Urea Molasses and Ensiled with Manure: Effects on Ruminal Characteristics, In situ Digestion Kinetics and Nitrogen Metabolism of Nili-Ravi Buffalo Bulls

  • To evaluate the effects of replacing concentrate with urea molasses treated fermented wheat straw (FWS) ensiled with cattle manure (CM) on ruminal characteristics, in situ digestion kinetics and nitrogen (N) metabolism was studied in Nili Ravi cannulated buffalo bulls in a $4{\times}4$ Latin Square Design. Wheat straw treated with urea (4%) and molasses (6%) was ensiled with cattle manure (CM) (70:30) and fermented for 40 days. Four iso-nitrogenous and iso-caloric diets were formulated. In the FWS0, FWS10, FWS20 and FWS30 diets 0, 10, 20 and 30% of the concentrate was replaced with FWS, respectively. Daily intake by bulls was restricted to 1.5% dry matter (DM) of body weight. Ruminal ammonia nitrogen concentration was greater (p<0.05) in bulls fed FWS diet than for those fed FWS0 diet at 3, 6, 9 and 12 h post-parandial. Bulls fed FWS 20 and FWS 30 diets had higher ruminal pH at 3 and 6 h post-parandial than bulls fed FWS10 and FWS0. Ruminal total volatile fatty acid (VFA) concentrations 3 h post-parandial were greater (p<0.05) in bulls fed FWS0 than those fed FWS diets. However ruminal VFA tended to increase at 6, 9 and 12 h post-parandial as the level of FWS increased. In situ ruminal DM and neutral detergent fiber (NDF) degradation, rates of disappearance and extent of digestion were higher (p<0.05) for bulls fed FWS30 diet than those fed FWS0. Ruminal DM and NDF lag time tended to decrease (p<0.05) as FWS concentration in the diet increased. Feed intake, nitrogen intake, N-balance and blood urea-N did not differ (p>0.05) in buffalo bulls fed different diets. Wheat straw treated with urea and molasses and ensiled with CM enhanced the nutritive value of wheat straw and improved nutrient utilization in buffalo bulls when up to 30% of the concentrate was replaced with FWS; no adverse effects on ruminal characteristics and nutrients digestibilities were detected.

느티만가닥버섯 수확후배지 발효사료 급여가 산란계에 미치는 영향 (Effect of dietary fermented spent mushroom (Hypsizygus marmoreus) substrates on laying hens)

  • 느티만가닥버섯 수확후배지 발효사료 급여가 산란계에 미치는 영향을 조사하기 위하여 도준농산에서 수거한 느티만가닥버섯 수확후배지를 Bacillus subtilis EJ3 배양액과 혼합하여 2주 동안 발효시킨 것을 공시사료로 사용하였다. 실험동물인 12주령된 Hy-line brown 갈색계 24수는 시판사료 급여구인 대조구(T0)와 5(T1), 10(T2), 15%(T3)의 버섯수확후배지 발효산물이 첨가된 시판사료 급여구인 시험구로 나누어 12주 동안 공시사료를 급여하였다. 12주동안 평균 산란율은 대조구에 비해 5% 버섯수확후배지 발효산물 첨가구에서 증가하였다가 버섯수확후배지 첨가량이 증가할수록 감소하였다. 사료섭취량은 대조구와 5% 버섯수확후배지 발효산물 첨가구에서는 큰 차이를 보이지 않았지만 버섯수확후배지 발효산물 첨가량이 증가할수록 약간 증가하였다. 사료요구율은 대조구와 5% 버섯수확후 배지 첨가구에서 비슷하게 나타났으며 10% 버섯수확후배지 첨가구부터는 버섯수확후배지 첨가량이 증가할수록 높게 나타났다. 산란량과 산란율은 대조구보다는 5% 버섯수확후배지 첨가구에서 높게 나타났다. 총 12주의 사양시험기간 동안 난중, 난각강도, 난각두께, 난황색 모두 5% 버섯수확후배지 발효산물을 첨가한 처리구에서는 대조구와 큰 차이가 없었지만 버섯수확후배지 발효산물의 첨가량이 증가할수록 감소하는 경향을 나타내었다. 계란의 내부 품질을 평가하는 기준인 난황색은 5% 버섯수확후배지 발효산물 첨가구에서는 대조구와 차이가 없었으나 10% 이상의 버섯수확후배지 발효산물을 첨가한 처리구에서는 난황색이 대조구에 비해 낮게 나타났다. 계란의 내부 오염 지표인 육반과 혈반에서는 처리구간의 차이는 없었으며 외부 품질 기준인 난각색도 처리구간에 차이를 나타내지 않았다. 그러나 계란의 포장과 수송과정에서 계란의 상품성에 영향을 미치는 요인인 난각중과 난각 두께는 5% 버섯수확후배지 발효산물 첨가구에서 대조구보다 높게 나타났다. 버섯수확후배지 발효산물의 급여구에서 산란계의 가스발생량은 버섯수확후배지 첨가량이 증가할수록 암모니아 가스 발생량이 감소하는 경향을 나타내었다.

맥주박 발효사료 및 대두의 급여가 한우 거세우의 육성성적 및 도체등급에 미치는 영향 (Effects of Fermented Feedstuff with Wet Brewer’s Grain and Soybean on Fattening Performance and Carcass Grade in hanwoo Steers)

  • 본 연구는 한우 거세 비육우에 맥주박을 이용하여 개발한 발효사료 및 분쇄대두의 급여가 육성성적, 혈액성상 및 도체등급에 미치는 효과를 검토하고자 실시하였다. 공시축은 한우 사육농가에서 평균 체중 455$\pm$25.9㎏의 한우 거세 비육우 20두를 공시하여 실시하였다. 시험구 처리는 모든 처리구에 배합사료와 볏짚을 기본사료로 급여하였으며, 배합사료를 전량 급여하는 대조구(Control), T1(배합사료:맥주박 발효사료=60:40), T2(배합사료:분쇄대두=80:20), T3 (배합사료:맥주박 발효사료:분쇄대두=50:40:10) 및 T4(배합사료:맥주박 발효사료:분쇄대두=40: 40:20)로 구분하였으며, 본 연구의 결과를 요약하면 다음과 같다. 일당증체량은 비록 통계적인 유의성은 인정되지 않았지만 대조구에 비해 처리구들에서 다소 증가하는 경향을 보였다. 사료효율의 경우 대조구, T1, T2, T3 및 T4에서 각각 11.90, 8.25, 9.44, 6.69 및 7.71로 나타나 T2를 제외한 처리구들에서 대조구에 비해 사료효율이 유의적으로 개선되는 결과를 보였다(P<0.05). 혈중 BUN 농도는 대조구에 비해 T4에서 유의적으로 높은 것으로 나타났으나(P<0.05), 반면에 혈중 creatinine 농도의 경우에는 대조구에 비해 T4에서 유의적으로 낮은 결과를 보였다(P< 0.05). 대조구, T1, T2, T3 및 T4의 혈중 glucose 농도는 각각 51.00, 59.39, 62.44, 62.17 및 54.00mg/$d\ell$로 나타나 대조구에 비해 처리구들에서 대체적으로 높은 결과를 보였다. 등지방두께의 경우 T3에서 대조구 및 다른 처리구들에 비해 다소 두꺼워지는 것으로 나타났다. 배최장근단면적의 경우 T1, T3 및 T4에서 대조구에 비해 개선되는 것으로 나타났다. 대조구, T1, T2 및 T4의 A등급 출현율은 각각 66, 33, 75 및 33%로 나타났다. 결과적으로 맥주박 발효사료를 단독 급여하게 되면 사료단가는 낮추면서도 비육우의 증체율 및 도체등급에는 영향을 미치지 않게 되는 장점이 있을 뿐만 아니라 분쇄대두와 맥주박 발효사료를 혼합 급여하게 되면 증체율 및 사료효율을 증가시킬 수 있는 효과가 있기 때문에 맥주박 발효사료와 적정 비율의 분쇄대두(농후사료 급여량의 10%)는 거세우를 위한 비육사료로서 효과적으로 이용될 수 있는 것으로 판단된다. 또한 맥주박 발효사료 제조과정에서 사료에 대한 발효처리는 맥주박 발효사료의 저장성을 크게 높여주기 때문에 맥주박과 같이 고수분부산물을 가축의 사료자원으로 활용하는데 있어서 의미하는 바가 큰 것으로 판단된다.

Evaluation of Megasphaera elsdenii supplementation on rumen fermentation, production performance, carcass traits and health of ruminants: a meta-analysis

  • Objective: This study was conducted to evaluate the use of Megasphaera elsdenii (M. elsdenii) as a probiotic on rumen fermentation, production performance, carcass traits and health of ruminants by integrating data from various related studies using meta-analysis. Methods: A total of 32 studies (consisted of 136 data points) were obtained and integrated into a database. The parameters integrated were fermentation products, rumen microbes, production performance, carcass quality, animal health, blood and urine metabolites. Statistical analysis of the compiled database used a mixed model methodology. Different studies were considered random effects, while M. elsdenii supplementation doses were considered fixed effects. p-values and the Akaike information criterion were employed as model statistics. The model was deemed significant at p<0.05 or had a tendency to be significant when p-value between 0.05<p<0.10. Results: Supplementation with M. elsdenii increased (p<0.05) some proportion of fermented rumen products such as propionate, butyrate, isobutyrate, and valerate, and significantly reduced (p<0.05) lactic acid concentration, acetate proportion, total bacterial population and methane emission. Furthermore, the probiotic supplementation enhanced (p<0.05) livestock production performance, especially in the average daily gain and body condition score. Regarding the carcass quality, hot carcass weight and carcass gain were elevated (p< 0.05) due to the M. elsdenii supplementation. Animal health also showed improvement as indicated by the lower (p<0.05) diarrhoea and bloat incidences as well as the liver abscess. However, M. elsdenii supplementation had negligible effects on blood and urine metabolites of ruminants. Conclusion: Supplementation of M. elsdenii is capable of decreasing ruminal lactic acid concentration, enhancing rumen health, elevating some favourable rumen fermentation products, and in turn, increasing production performance of ruminants.
