  • This study was conducted to evaluate dietary fat intake and its effect on the plasma lipids and fatty acids composition in plasma and red blood cells(RBC) in 96 healthy Korean female college student. Three-day food intakes were recorded, and fasting blood samples were collected and analyzed for plasma total cholesterol and triglyceride. Fatty acid compositions were determined in plasma and RBC membrane. Oleic acid was the most abundant in diet, followed by palmitic and linoleic acids. Mean daily intake of cholesterol was 219$\pm$127mg, mean plasma cholesterol was 160$\pm$24mg/이 and mean plasma triglyceride was 68$\pm$25mg/dl. Plasma fatty acids were mostly composed of linoleic, palmitic and oleic acids, while palmitic, stearic and arachidonic acids were high in RBC membrane. Plasma triglyceride showed positive correlation with BMI. Among dietary fatty acids, arachidonic acid, EPA and DHA showed negative correlation with plasma total cholesterol. Plasma triglyceride levels were negatively correlated with dietary arachidonic acid, plasma n-6 fatty acids and plasma polyunsaturated fatty acids. Dietary EPA and DHA levels were positively correlated with plasma EPA, dietary n-3/n-6 ratio were positively correlated with plasma n-3 fatty acids and n-3/n-6 ratio. Highly significant correlations were shown between the levels in plasma and RBC for several fatty acids.

  • The purpose of this study was to examin height, weight and body composition nutrient intakes and serum lipids for high school girls in urban and fishing area. The subjects consisted of 78(44 fishing and 34 urban) high school girls aged in average 17.3 and 17 years. Their dietary intakes were assesed for 1 day by means of 24 hours dietary recall method. Concentrations of serum lipids, percentage of body fat and volume of total body water were measured. The mean energy intake of the subjects were 1431 ㎉ in fishing and 1659 ㎉ in urban area. The subjects in fishing area(urban) consumed 58(67) g protein, 27(36) g lipid, 459(634) mg calcium, 676(945) mg phosphorous, 11(14) mg iron, 786(574) RE retinol, 2.8(3.6) mg tocopherol, 0.9(1.0) mg thiamin, 1.2(1.1) mg riboflavin, 16.9(20.5) mg niacin and 64.1(92.8) mg ascorbic acid, respectively. Energy, calcium, iron and tocopherol intakes were lower than the Korean RDA in both girls. The mean percentage of fishing girls were 19.8% and significantly lower than 25.6% in urban. These values seem to fall in the desirable range in fishing girls, but high school girls in urban is seemed to overweight. The mean saturated fatty acid(SFA), monounsaturated fatty acid(MUFA), polyunsaturated fatty acid(PUFA) and dietary cholesterol(Chol) intakes were 7.3 g, 8.1 g, 7.2 g and 263 mg for fishing girls were 13.1 g, 12.1 g, 9.1 g and 216 mg for urban girls respectively. The fat, SFA and MUFA intakes in fishing girls were significantly lower than urban girls. The P/M/S ratio was 0.9/1.1/1 for fishing, was 0.7/0.9/1 for urban. The mean serum triglyceride(TG), total cholesterol, HDL cholesterol, LDL-cholesterol concentrations were 77.7(61.8) mg/dl, 124.5(142.3) mg/dl, 59.3(22.4) mg/dl and 49.6(107.8) mg/dl in fishing girls(urban girls), respectively. All of these values seem to fall in the desirable range but HDL-chlesterol concentrations in fishing girls were significantly higher than urban girls and LDL-cholesterol concentrations in fishing girls were significantly lower than urban girls. There were positive correlations between body fat percent and total cholesterol or LDL-cholesterol concentration : negative correlations between between body fat percent and HDL-cholesterol concentration : positive correlation between fat intake and LDL-cholesterol concentration : negative correlations between serum HDL-cholesterol concentration and fat or SFA or MUFA intakes. • The purpose of this study is to verify the relation between vegetarian diet and the risk factors of cardiovascular disease. To do the present study the vegetarians were selected;245 Buddhist nuns(age: 23-79yrs). For control subjects, 235 healthy female adults(age: 23-79yrs) were selected. They were the teachers, the nurses and the housekeepers living in Chinju Gyeongsang Namdoo Province. Study period was from October 1996 to February 1997. The contents are consist of survey, anthropometric measurement, and clinical examination. The average ages of the subjects were 44.20yrs for vegetarians and 40.52yrs for non-vegetarians respectively. Average body mass indice(BMI) of vegetarians and non-vegetarians were 22.47 and 21.08, WHR was 0.85 and 0.84, percentage of body fat was 28.79 and 26.55 and the average duration of vegetarian diet of the vegetarians was 13.16 years. On the nutrient related lipid, fat, the energy ratio of fat, saturated fatty acid, total fatty acid, monounsaturated fatty acid and total-cholesterol were significantly lower(p<0.01) but the ratio of p/s was significantly higher(p<0.01) in vegetarians than non-vegetarians. The vegetarians were significantly higher than the non-vegetarians in intake of fiber, vitamin C. In vegetarians, variables that significant negative correlation with fiber were total-cholesterol, AI, blood sugar. In non-vegetarians, variables that significant negative correlation with fiber were TG, total-cholesterol, blood sugar, systolic blood pressure. In both subjects, the serum lipid concentration and the blood pressure were getting lower with fiber intakes. Consequently, vegetable diet can be considerably effective in making the level of the risk factors causing in cardiovascular disease lower. (Korean J Nutrition 34(3) : 313∼321, 2001)

  • The purpose of this study was to investigate the pattern of individual fatty acid intake and to compare serum lipid levels and total serum fatty acid composition of high school students in Seoul (total : 234 ; male : 91 ; female : 143) In serum lipid levels, total cholesterol (Chol.), HDL-Chol. and LDL-Chol. levels of female students were significantly higher than those of male students and there was no significant difference between High Fish & Low Meat intake (HFLM) and Low Fish & High Meat intake (LFHM) groups. The average fat intake was 22-25 energy % of total subjects and especially, that of LFHM group was 29%, which were over the recommendation level. Although the average P/M/S ratio of dietary fat was 1.1/1.2/1.0, the average range of $\omega6/\omega3$ fatty acid ratio of dietary fat was found to be 17.9-20.7, which was far beyond the suggested range, 4-10. The average intake of cholesterol of total subjects was 360mg. LFHM group had more meats and beverages such as carbonated drinks and tended to have less beans, vegetables and mushrooms. In addition, LFHM group had more energy and fat intake than those of HFLM group, the P/S ratio of dietary fat (0.73) was lower than the recommended ratio. Serum C16 : 0 composition of LFHM group was significantly higher than that of HFLM group, and EPA and DHA composition of HFLM was significantly lower than that of LFHM. Therefore, in HFLM group, the P/S ratio of serum fatty acids was significantly higher and the $\omega6/\omega3$ ratio was lower. Dietary C18 : 0 was negatively correlated with serum EPA and DHA composition. Individual PUFA intake was negatively correlated with serum C16 : 0 and sum of SFA, and positively correlated with serum C18 : $2\omega6(LA)\;,\;sum\;o;\omega6$ and sum of PUFA. Serum C18 : 1, C18 : $3\omega3\; and\; C20\;:\;4\omega6$ (AA) compositions were not correlated with dietary fatty acid. Only serum triglyceride (TG) levels were significantly correlated with serum fatty acid compositions. Sum of SFA, C14 : 0, C16 : 0, sum of MUFA and C18 : 1 compositions were positively correlated with serum TG levels, but LA, AA, sum of PUFA and P/S ratio were negatively correlated with it.

  • Objectives: This study evaluated usual dietary intakes of total fat and fatty acids among the Korean population based on the revised Dietary Reference Intakes for Koreans 2020 (2020 KDRIs). Methods: This study utilized data from the eighth Korea National Health and Nutrition Examination Survey (KNHANES 2019-2021). We included 18,895 individuals aged 1 year and above whose 1-day 24-hour dietary recall data were available. To calculate the external variability using the National Cancer Institute 1-day method, data from the U.S. NHANES 2017-March 2020 Pre-pandemic dataset were employed. The total fat and fatty acid intake were evaluated based on the Acceptable Macronutrient Distribution Ranges (AMDRs) and Adequate intake (AI) of 2020 KDRIs for each sex and age groups. Results: Approximately 86% of the Korean population obtained an adequate amount of energy from total fat consumption (within the AMDRs), indicating an appropriate level of intake. However, the percentage of individuals consuming saturated fatty acids below the AMDR was low, with only 12% among those under 19 years of age and 52% aged 19 years and older. On a positive note, approximately 70% of the population showed adequate consumption of essential fatty acids, exceeding the AI. Nevertheless, monitoring the intake ratio of omega 3 (n-3) to omega 6 (n-6) fatty acids is essential to ensure an optimum balance. Conclusions: This study explored the possibility of estimating the distribution of nutrient intake in a population by applying the external variability ratio. Therefore, if future KNHANES conduct multiple 24-hour recalls every few years-similar to the U.S. NHANES-even for a subset of participants, this may aid in the accurate assessment of the nutritional status of the population.

  • The purpose of this study was to examine the effect of resistant starch(RS) in hyperchlesterolemia and colon cancer. The subjects of this study was eight college women participating in the general starch diet(GSD) period for 5 days and resistant starch diet(RSD) period for 7 days. RSD contains 30g or the RS. On the last day of each program blood were collected. And for the last 3 days of each diet period, the amount of all the food consumed by the subjects and feces were collected. Food was measured to determine and compared the energy, protein and fat intakes. The amount of total cholesterol, HDL-cholesterol, LDL-cholesterol and volatile fatty acids in plasma and the amounts of bile acids in feces were measured by gas chromatography. The results obtained were as follows, Daily energy intake was higher in the RSD compared with the GSD, Protein and fat intakes were lower in the RSD compared with the compared with the GSD. Volatile fatty acid contents in plasma, the amounts of acetic acid, propionic acid and valeric acid were higher in the RSD compared with the GSD. The amounts of bile acids in feces, cholic acid, chenodeoxycholic acid and lithocholic acid were higher in the RSD compared with the GSD, But the amount of deoxycholic acid n the RSD period was significantly low. Secondary/primary ratios of bile acids was lower in the RSD compared with GSD, respectively. We speculate that , RS consumption decreases colonic mucosal proliferation as a result of the decreased formation of cytotoxic secondary bile acids. Thus, RS intakes may contribute the prevention of heart disease and colon cancer in humans. (Korean J Nutrition 33(8) : 802-812, 2000)

  • The objective of this study was to evaluate whether nutrient intakes and serum biochemical indices are associated with the skin condition of humans. Anthropometric data, skin surface hydration, ceramide content, dietary intake of nutrients and serum lipids (total cholesterol, HDL-, LDL-cholesterol, TG, MDA: malondialdehyde, TAS: total antioxidant status) were obtained from 36 healthy young women. Subjects were classified into 2 groups {LM: Low Moisture Group (n = 20) , HM: High Moisture Group (n = 16)} by forehead skin hydration. The results of this study were as follows: The average age, BMI, total body water, LBM, body fat$\%$, WHR, forehead hydration, ceramide content were 20.2 yrs, 20.7, 28.81, 39.2 kg, $28.0\%$, 0.8, $44.3\%$, and 1.05 $\mu$g/$\mu$g protein, repectively. The intakes of SF A (saturated fatty acid) , MUFA (monounsaturated fatty acid) in the HM group were significantly higher (p < 0.05) than in the LM group, but zinc intakes in the LM group were higher than in the HM group. Serum levels of TAS in the LM group (1.27 mmol/l) were significantly higher (p < 0.05) than that of in the HM group (1.20 mmol/l). Whereas other lipid levels were not significantly different, intakes of vitamin $B_{6}$ and folate showed significant positive correlation with the forehead hydration (r = 0.447, r = 0.377). Intakes of calcium and phosphorus showed significant negative correlation with forearm ceramide content (r = -0.496, r = -0.485). Several associations between nutrient intakes and skin conditions were observed, indicating that changes in baseline nutritional status may affect skin health.

  • The correlation between maternal lipid nutritional status during pregnancy and gestational length was investigated. Subjects consisted of 30 full-term delivery mothers, 30 preterm delivery mothers, and babies of both groups. Dietary fat intake during pregnancy and serum lipid levels in mother and umbilical serum were measured. The mean daily intake levels of fatty acid during pregnancy were lower than the recommended dietary allowances, while $\omega$6/$\omega$3 ratios of dietary fatty acids were acceptable. For preterm delivery mothers, fatty acid intake levels to be lower than those in full-term delivery mothers, especially DHA intake of these two groups was significantly different. During gestation, hyperlipidemia was apparent in the pregnant women. The serum lipid contents of preterm delivery mothers tended to be lower than those of full-term delivery mothers, and umbilical cord serum lipid contents of the preterm delivery group tended to be higher than those of the full-term delivery group. Total cholesterol levels in the umbilical cord serum of preterm babies were significantly higher than those of full-term delivery group. On the other hand, total cholesterol and HDL-cholesterol levels between umbilical cord serum and maternal serum were positively correlated in the preterm delivery group. Concerning, energy and fatty acid intakes were more closely associated with umbilical cord serum lipid levels in full-term babies, but negatively associated in preterm babies. It was concluded that gestational length was related to the dietary intake of fatty acids such as DHA in pregnant women. For better understanding, the ralationship between placental lipid transport mechanisms and gestational length needs to be explored.

  • This experiment was conducted to examine the effects of fish oil supplementation with low does on the lipid concentration and fatty acid composition of plasma and the fatty acid composition of plasma phospholipid and erythrocyte of infants. Among 18 breast-fed infants, 6 were in control group and 12 were in fish oil groups. The subjects in fish oil groups were nursed by their mothers who supplemented with fish oil 1.96g/d or 3.92g/d, respectively for 2 weeks from 10 to 12 weeks postpartum. The nursing mothers consumed their usual diets at home. Blood samples were collected at the final day of experiment. There were no significant changes in daily intakes of total lipid, triglyceride, free fatty acid, phospholipid and cholesterol of infants by fish oil supplementation. However, the content of EPA (eicosapentaenoic acid)increased and that of ARA (arachidonic acid) decreaed significantly in plasma PC(phophatidylchline). And also, there were tendencies to increase triglyceride concentration and to decrease cholesterol and phopholipid concentrations of plasma. As the above results, atherogenic index (AI) showed a tendency to decrease, but not significant. DHA (docosahexaenoic acid) and EPA contents in plasma PC and PE (phosphatidylethanolamin) as well as those of erythrocyte tended to increase. In these results, we concluded that fish oil supplementation with low dose to lactating women does not obviously affect of the plasma lipid concentrations and fatty acid composition of plasma PC and PE as well as erythrocyte. However the increase of EPA content of plasma PC and the tendency to increase DHA and EPA contents of plasma as well as erythrocyte membrane indicate that there may be some beneficial effect on infant lipid metabolism of fish oil intake of nutsing mother were increased.
