A total of fifty Hanwoo steers raised from 14 to 29 months were used to investigated the effects of dietary mugwort on the performance and meat quality during refrigerated storage. A feeding trial was tested for 14.7 months and experimental diets included 0 and 2% dried wild mugwort. Total weight gain and average daily gain in this study were significantly higher in mugwort treatment than control treatment. Feed efficiency was improved by mugwort treatment compared with control treatment. Any difference in GOT (glutamic oxaloacetic transaminase), GPT (glutamic pyrubic transaminase), and BUN (blood urea nitrogen) was not observed between groups. Carcass weight and longissimus muscle area were higher for mugwort treatment than control. As fattening increased, total cholesterol in blood increased. Total cholesterol in blood tended to be lower in mugwort treatment than control treatment (p<0.05). The heating loss, $L^*$, $a^*$, $b^*$, chroma, and hue unit of all treatments were not affected treatment, but showed a significant decrease in all treatments during refrigerated storage. For fatty acid composition in longissimus muscle, dietary mugwort supplementation increased unsaturated fatty acid than saturated fatty acid (p<0.05). Based on these findings, it is obvious that supplementation of mugwort at 2% level will be useful to decrease cholesterol, increase unsaturated fatty acid, and improve growth performance of Hanwoo steers.
The objective of the study was to evaluate fattening performance, carcass value and meat quality in pigs of Prestice Black-Pied breed in relation to slaughter weight (SW) and gender (barrows and gilts, resp.). Pigs were divided into weight categories: SW1 (75 to 99.9 kg), SW2 (100 to 109.9 kg) and SW3 (110 to 130 kg) and all individual traits were analyzed by the general linear model procedure (SAS 9.3). Average SW of each weight group was as follows: SW1 94.2 kg, SW2 105.8 kg, and SW3 115.2 kg. Differences among average backfat thickness of 36.07 mm in SW1, 40.16 mm in SW2, and 43.21 mm in SW3 were significant (p<0.01). Lean meat content was 48.94% (SW1), 48.78% (SW2), and 48.76% (SW3). Pigs were slaughtered at average weight of 105.7 kg for barrows and 104.4 kg for gilts. Average backfat thickness for barrows was 40.90 mm and 38.72 mm for gilts (significant difference p<0.05). Lean meat content was 48.75% in barrows and 48.91% in gilts. The values of pH45, characterizing the meat of very good quality. The loin in SW3 was darker than the muscles of SW1 and SW2. Drip loss was the lowest in SW1 (1.96%), compared to the highest drip loss in SW3 (2.59%). Content of intramuscular fat was 2.68% in SW3, 2.79% in SW2, and SW1 had the lowest content 2.47%. The values of pH45, colour lightness and drip loss were similar in both genders. However barrows had higher intramuscular fat content by 0.31% than gilts (p<0.05).
This study was conducted to investigate the effects of sex, environmental factors, and feeding system on the carcass traits of Hanwoo (Korean Native Cattle). Data were collected from 7,866 heads slaughtered in Chungnam province during one-year period. Using the collected carcass traits data which greatly influence a Hanwoo's carcass grade, the effects of sex class, slaughter season, and feeding system were estimated. Backfat thickness of steers was significantly higher than that of bulls (p < 0.05). Marbling score was also the highest in steers when compared with cows and bulls (p < 0.05). Live weight and carcass weight were significantly higher in winter than in summer (p < 0.05). However, backfat thickness was significantly lower in summer than in other seasons (p < 0.05). Marbling score was higher in spring and fall than in summer and winter (p < 0.05). In terms of feeding systems, TMR (Total mixed ration) and TMF (Total mixed fermentation feed) fed groups showed the highest carcass grade (p < 0.05). However, the group fed TMR and formula feed at the final fattening period showed the lowest performance (p < 0.05) and it is assumed that some stress was associated to the feed change. The results reconfirm that castration may be recommended in order to improve meat quality and marbling scores in bulls. There was no consistent trend of seasonal effects of slaughter on carcass traits although some traits were significantly affected. Regarding the feeding system, either TMR or TMF can be supplied to achieve high feed efficiency and good carcass characteristics in Hanwoo.
Present study was conducted to investigate the optimal feeding levels for producing the high quality meat on the basis of the information deriving from the comparison of the growth performance and carcass characteristics among breeds(Holstein vs F1, Holstein♀×Hanwoo♂), sex(steer vs heifer) and interaction between breed and sex. Thirty two animals on 4 treatments(i.e. eight head each) were used for 540 days from seven to 24 months of age. The results obtained are summarized as follows; the range of average daily gains was 0.733 to 1.018, 0.994 to 1.255, 0.947 to 1.259 and 0.736 to 0.824kg for the growing, the early-fattening, the mid- fattening and the finishing periods, respectively. The range of average daily gains for the entire period was 0.882 to 1.061kg. The gains were higher for Holstein(7.3%) and the steers(10.5%) than F1 and the heifers, respectively. Concentrates and total digestible nutrients intakes per kg gain were higher for Holstein and the heifers than F1 and the steers, respectively. These findings may indicate that feed utilization is higher for Holstein than F1, and higher for the steers than the heifers. In carcass characteristics, back fat thickness was thicker for Holstein than F1, and rib-eye area was smaller for Holstein than F1. The rib-eye area per kg carcass weight was larger for F1 and the heifers than Holstein and the steers, respectively. Meat color was better for Holstein than F1, but the sex distinction did not show any differences. In physicochemical properties of longissimus dorsi, shear force, cooking loss, water holding capacity and the panel test scores of juiciness, tenderness and flavor for F1 and the heifers were better than those for Holstein and the steers, respectively. According to the above results, we may conclude that F1 and heifers rather than Holstein and steers are recommended for high quality meat production. In steers and heifers of Holstein and F1, the optimal feeding levels may be 1.9% of apparent body weight for concentrates and 25% of concentrates intake for rice straw.

This study was carried out to investigate the effect of feeding whole crop barley silage (WBS) on the growth performance, gain, feed requirement, carcass grade and beef quality of Hanwoo steers in 1999 to 2001. Twenty one steers were allocated, and divided into three treatment groups which fed rice straw only (control), WBS only, and fresh rice straw silage plus WBS during overall period ad libitum. Concentrates were fed at 1.5% level of live-body weight during growing stages, 4~12 months of age, at 1.8% level of live-body weight during early fattening stages, 13~18 months of age, and ad libitum after late fattening stages, 19~27months of age. The production yields of WBS were 17,135 kg as a silage, and 6,011 kg as a dry matter per ha, and the quality of WBS was 2~3 grade, while that of rice straw silage was 4grade. The daily gain with feeding of WBS (0.70 kg) during experimental period was higher than that of control group (0.65 kg), and the concentrate requirement (7.31 kg) per kg gain in WBS was lower than that of control (8.95 kg). The effects of gain and feed efficiency were very distinct during growing stage. i.e., the daily gain of WBS (0.84 kg) was increased by 65% compared to control (0.51 kg), and the concentrate requirement (4.16 kg) per kg gain in feeding of WBS was decreased by 35%, compared to control (6.39 kg). Meat quality with WBS was higher than that of control. Frequency rate of 1 and/or $1^+$ grade, and marbling score of feeding of WBS were 62.5% and 4.38, while those of control were 37.5% and 2.75, respectively. The results of the sensory evaluation showed that Hanwoo beef fed with WBS were better than that of control. In conclusion, feeding of WBS was desirable to improve daily gain, reduction of concentrates, feed efficiency and meat quality of Hanwoo steers.

This study was conducted to investigate effects of a potato byproduct on growth performance, blood metabolites, and carcass characteristics of Hanwoo steers. The palm oil coated potato byproduct was supplemented to the diet of Hanwoo steers to estimate the effect on growth performance, blood metabolites, and carcass characteristics during the late fattening period. Thirteen steers with initial body weight of control ($676.8{\pm}31.7kg$), treatment 1 ($671.8{\pm}46.2kg$) and treatment 2 ($672.8{\pm}31.1kg$) were used for 60 days, respectively. Average daily gain of steers in treatment 2 and control was greater than that in treastment 1 (p > 0.05). All steers in treatment 2 had a grade quality grading system than B in meat quantity and had a meat quality higher than the $1^{st}$ grade. According to the physicochemical analysis of longissimus muscle, treatment 2 had high brightness resulting from high meat quality (p > 0.05), and a decrease in redness and yellowness is seen as a dilution effect due to muscle hypertrophy (p > 0.05). The fatty acid composition showed low levels of linoleic acid (p = 0.039) and arachidonic acid (p = 0.008) in treatment 2. This resulted in lower polyunsaturated fatty acid (PUFA) levels (p = 0.034). On the other hand, high levels of oleic acid resulted in high levels of MUFA (p > 0.05). These results indicate that potato byproduct had similar effects with ${\beta}_2-adrenergic$ agonist (${\beta}_2-AA$). And there was no negative effect on the intramuscular fat. In conclusion, palm oil coated potato byproduct could be potentially used as an alternative growth enhancer.
This study was conducted to estimate the effects of high quality cubed roughage and red clay (0%, 1%, 2%) on growth performance, meat quality and economical benefits. Thirty-six 6 month-old Korean native cattle, averaging 156kg of BW, were assigned to six groups in a 2 (rice straw : RT, rice straw+cubed roughage : RCT) ${\times}$ 3 (0, 1, 2% red clay). During experimental period, the high quality cubed roughage added into rice straw treatment (RCT) was superior to the only rice straw treatment (RT) on daily gain and feed efficiency and final weight 10%, 6.8%, 8.2% (P$<$0.05) respectively. But the addition of red clay did not affect and even 2% addition decreased those parameters. For meat quality and economical analysis, the addition of high quality cubed roughage made an outstanding result and for RT treatment, only 1% red clay indicated good effects while both 1% and 2% red clay were better than 0% for RCT treatment. From these results, it is assumed that the addition of red clay for fattening Korean native cattle has no effects on growth performance but 1% treatment has good results on improving meat quality and economical benefits. It also suggests that the combination high quality roughage and concentrated red clay is beneficial for producing high quality meat in with economical benefits.

This study examined the influence of forage source (grass hay and rice straw) and shipping time (24, 26, 28 and 30 months) on feed conversion ratio, growth performance and carcass characteristics of Hanwoo steers. Sixty four Hanwoo steers at 6 months age were fed either grass hay (n=32) or rice straw (n=32) for 24, 26, 28 and 30 months of age. Steers fed on mixed grass hay gained significantly higher body weight at 24, 26, 28 and 30 months compared with those fed on rice straw. Feed efficiency was slightly better in steers fed mixed grass hay compared to those fed rice straw. Back fat thickness and marbling score were increased with the age of steers (p<0.05). Carcass quality traits (meat color, fat color, texture and maturity) were not affected by forage source and shipping time. Shear force, cooking loss and water holding capacity of beef were reduced with advancing age of steers (p<0.05). Moisture content was lower and fat content was higher in beef produced from steers fed mixed grass hay than those fed rice straw (p<0.05). Beef juiciness was reduced with the advancing shipping time of steers. In conclusion, it would be beneficial to feed hay compared with rice straw during whole period of Hanwoo steer to produce high quality beef.
Background: Following the ban on the importation of import-dependent fed ingredients in most developing countries, the need to look inward for local content is now compelling. Thus, leaf meals that have phytogenic additive potentials are envisaged will be a viable feed ingredient in rabbit diets. Methods: The effect of dietary inclusion of gliricidia leaf meal (GLM) with or without multi-enzyme (E) supplementation in rabbits was investigated using ninety-six 35-day old rabbits of crossbreed (Newzealand and Chinchilla). One basal diet that met the requirements of growing rabbit was formulated (Diet 1). Thereafter, another two diets were formulated to contain 15% GLM and 15% GLM plus multi-enzyme at 1 g/kg and designated as diets 2 and 3 respectively. The rabbits were randomly distributed into the 3 diets (32 rabbits/treatment; 4 rabbits/replicate) and fed their respective experimental diets for 8 weeks. Results: The body weight and daily weight gain of the rabbits fed on GLM free diet and those on GLM-based diets (diets 1 and 2) were similar at finishing period of 63-91 day but have lower (P < 0.01) values than those rabbits fed GLM + E based diet (diet 3) at finishing period (63-91 days) and whole fattening period (35-91 days). The apparent dry matter and crude protein digestibility of rabbits fed control diet and those fed 15% GLM based diet were lower (P < 0.05) than those fed 15% GLM + E-based diet. Triglycerides concentration of rabbits fed 15% GLM-based diet without enzyme addition were lower (P < 0.05) than those observed for rabbits on the rest test diets. Cholesterol and Low-Density Lipoprotein levels of rabbits fed 15% GLM and 15% GLM + E-based diets were lower (P < 0.05) than those fed the GLM free diet. The superoxide dismutase and glutathione peroxidase of rabbits fed the GLM free diet (diet 1) were significantly (P < 0.05) lower than those fed the 15%GLM and 15% GLM + E-based diets. Conclusion: Dietary inclusion of GLM at 15% of the diet did not have a negative effect on the rabbits postweaning period (35-63 days) but will require multi-enzyme supplementation to enhance growth indices at finishing period (63-91 day) without precipitating negative effect on the rabbits' health status.
In order to investigate the effect of floor condition on the fattening performance of cattle, sixteen finishing Hanwoo steers of weighting 570kg were fed for 16 weeks to slaughter on two types of sawdust bedding pen oriented to the south(SP) and the north(NP) then obtained following results. The floor condition of SP roofed by transparent material was dry and flat during overall experimental period, whereas, that of NP roofed by solid slate was muddy and rough even in summer and fall, and then frozen in winter period resulted in interfering with the locomotion and resting behavior of steers. Average daily dry matter intake of steers was not different between tow treatments, however, the average daily gain of steers in NP and SP was 0.64kg and 0.75kg, respectively, meaning that gained 14.3% less for the NP group(p<0.05), accordingly, feed requirement(feed/gain) and TDN/gain increased by 15.9% and 15.5%, respectively. No significant differences were found in slaughter weight, carcass weight, dressing percentage, meat yield index and meat quality traits between two treatments. In conclusion, this study revealed that poor floor condition of feeding pen could decrease weight gain and feed efficiency of cattle by increasing energy consumption for locomotion and conductive energy loss while resting on the floor surface. These results indicates that housing orientation of cattle shed and the selection of roof material are important factors in beef cattle production.
