The Effects of Online Home Learning in Connection with Extracurricular Activities for Lifelong Education for the Disabled at University on Cafeterias Cooking Assistance Skills of Job Search Persons with Developmental Disabilities

  • The purpose of this study is to analyze the effects of online home learning in connection with extracurricular activities for lifelong education for the disabled in university on the cooking aids skills of cafeterias for the job search persons with developmental disabilities. Three people with job search developmental disabilities who have been in a state of unemployment for three years after graduating from a special high school course participated in the experiment. In order to verify the meaningful functional relationship between independent variables and dependent variables, multiple probe design across subjects, one of the main techniques of a single object study, was used. The experimental conditions according to the research design consisted of the steps of baseline, intervention, maintenance, and generalization. The dependent variable of this study is the restaurant cooking aid skills in the cafeteria, and three subskills such as side dish arrangement, sink arrangement, and dish washing were combined by task analysis. And the independent variable of this study was composed of procedures and methods to teach the environment, tools and materials related to the performance of dependent variables to the developmental disabled people at home by using real-time image technique through zoom service, and the contents of the performance by stages of task analysis. In addition, independent variables were applied to the subjects in the course of the extracurricular activities with the theme and contents of lifelong education for the disabled at university. Students who completed the above extracurricular activities practiced the intervention scene of the researcher through the screen sharing of zoom service. As a result, the subjects with developmental disabilities effectively acquired and maintained the positive response performance of dependent variables through independent variables. The subjects also showed high positive responses to generalization tests conducted in kitchens in cafeterias located elsewhere in the same university.

Optimization of extrusion cooking conditions for seasoning base production from sea mustard (Undaria pinnatifida)

  • Sea mustard (Undaria pinnatifida), an important edible seaweed belonging to the brown algal family of Alariaceae, contains copious physiologically active substances. It has long been popular in Korea as a food and is frequently consumed in the form of soup. It is also commercially available as a home meal replacement. In this study, we developed a seasoning key base with a high degree of sensory preference from sea mustard using the extrusion cooking process. Extrusion cooking conditions were optimized through response surface methodology. Barrel temperature (X1, 140℃-160℃) and screw speed (X2, 158-315 rpm) were set as independent variables, and overall preference was determined as the dependent variable (Y, points). An optimal condition was obtained at X1 = 148.5℃ and X2 = 315 rpm, and the dependent variable (Y, overall acceptance) was 7.95 points, similar to the experimental value of 7.81. Umami taste had a relationship with the overall acceptance of sea mustard seasoning. In the electronic nose and tongue, increased sourness and umami intensities were associated with the highest sensory score. The samples were separated well by each characteristic via principal component analysis. Collectively, our study provides imperative preliminary data for the development of various seasonings using sea mustard.

Standardization of the Preparation Methods of Korean Foods (III) - For the focus on Pibimbab (Mixed Rice) - (한국음식의 조리법 표준화를 위한 연구(III) -비빔밥류-)

  • This study was attempted to standardize preparation methods of Korean foods; Pibimbab (mixed rice) and Kongnamul Pibimbab (sprout mixed rice with soybean). We followed cooking method by using cookbooks, food service operation recipes , materials distributed by commercial food restaurants from their own experimental kitchens, and home recipes. Before those recipes were standardized, we thoroughly analyzed and modified. The total yield and portions were determined together with weights and procedures. And we evaluated food made by standardized recipes for acceptability by taste panels from Sookmyung Women's University. It concluded that yield volume for Pibimbab and Kongnamul Pibimbab after cooking for 10 persons was 6.5 kg, optimum service temperature was 7$0^{\circ}C$, preparation time was 6 hours, service volumes by one person was 650 g. This presentation for above on food materials and material weights, preparation methodsas well as cautions and references are attached in this research paper.

  • This study was attempted to standardize preparation methods of Korean foods; Chigae (Stew) such as Deonjang chigae (soybean stew) and Kimchi chigae (Kimchi stew). We followed cooking methods by using cookbooks, food service operation recipes, materials distributed by commercial food restaurants from their own experimental kitchens, and home recipes.   • With the advent of power semiconductor switching devices, power electronics relating to high frequency electromagnetic eddy current based induction heating technology have become more suitable and acceptable. This paper presents high-frequency induction heating cooking appliance circuit based on the zero current switching-PWM single ended push-pull(ZCS-PWM SEPP) resonant inverter added AC-DC converter. This inverter uses pulse-width-modulation(PWM) control method with active auxiliary quasi-resonant lossless inductor snubbers and a switched capacitor. To improved the transient performance, the PI controller is applied for this system. For the systematic parameter optimization of the PI controller, the gradient-based optimization algorithm is applied. The performance of optimized parameters is evaluated using simulation and experimental test. These results show that the proposed systematic optimal tuning method improve the transient performances of this system.

The Problem on Riboflavin Content Inference of Common Foods for Korean (한국인 상용식품중의 리포블라빈 함량추정에 관한 문제점)

  • In order to study on the riboflavin content of common foods for Korean and the rates of destruction of riboflavin during cooking 26 kinds of the foods were selected and 3 kinds of menu were cooked by standardized method. For each food item and menu riboflavin content was measured by AOAC method. The experimental values of 13 kinds of food such as rice oak mushroom carrot squarsh tangle dried large anchovy apple(Fuji) dried laver ramyun pork soybean curd fried soybean curd and danmugi were almost consistent with food compo-sition values. Whereas those of 12 kinds of foods such as cabbage onion potato kimchi beef sausage dried medium anchovy hair tail soybean paste and egg were considerably different from food composition table values, up to now Alaskan pollack maize loaf bread hamburger bread etc have not been analyzed in food composition table, The rates of retention of riboflavin in menu 1, 2, and 3 cooked by standardized method were 24% 69% 46% respectively. The overally retention rate was in inverse proportion to the time of sunlight exposure during cooking.

  • This paper presents an effective control scheme incorporated in the voltage-fed half-bridge series resonant inverter for induction heating applications, which is based upon a load-adaptive tuned frequency tracking control strategy using PLL(Phase Locked Loop) and its peripheral control circuit. The proposed control strategy ensures a stable operation characteristics of overall inverter system and ZVS(Zero Voltage Switching0 operation in spite of sensitive load parameters variation as well as power regulation, specially in the non-magnetic heating loads. The simulation results and the performance characteristics in the steady-state are shown as compared with the experimental results for a prototype induction cooking system rated at 1.2kW.

Treatments Effect on Biological Values of Defatted Rice Polishings

  • Defatted rice polishings (DRP) was subjected to chemical treatments i.e., 0.4 N HCl, and 6% $H_2O_2$, with or without physical treatment i.e. extrusion cooking. The treated DRP was evaluated chemically and biologically using male broiler chicks (108) of approximately uniform weight, selected out of 220 chicks, previously fed on commercial diets for 7 days as a settlement period. The chicks were then divided into 36 experimental units of 3 chicks each. Each experimental diet was randomly allotted to three experimental units and fed for 10 days to broiler chicks. The experimental diets were designated as A (Commercial), B (10% HCl treated DRP), C (20% HCl treated DRP), D (10% HCl plus extruded DRP), E (20% HCl plus extruded DRP), F (10% $H_2O_2$ DRP) and G (20% $H_2O_2$ DRP), H (10% $H_2O_2$ plus extrusion DRP) and I (20% $H_2O_2$ plus extrusion DRP), J (10% untreated DRP), K (20% untreated DRP) and L (Protein free). The birds fed on diet L were used to measure the endogenous nitrogen loss. The biological evaluations of diets containing differently treated DRP were compared with a commercial feed and feeds containing untreated defatted rice polishings. It was observed that these treatments liberated bound nutrients, making them more accessible to the normal digestive enzymes and increased their apparent nutrient availability. This process probably also detoxified the anti-nutritive factors i.e. phytates, lectin, trypsin inhibitor present in DRP. The results of the feeding trials revealed that diets containing 6% $H_2O_2$ treated DRP showed better weight gain, feed consumption and utilization, protein efficiency and digestibility, biological value and net protein utilization than all other treatments.

Hypoglycemic Effects of Boiled rice made from Unpolished rice, Job' tear, and Extract From Medicinal Herbs Mixture on Diabetic Rat (당뇨 쥐에 대한 한약재복합추출물로 만든 현미율무밥의 혈당강하 효과)

  • Objectives : The purpose of this study was to evaluate boiled rice made from unpolished rice, Job's Tears, and extract from medicinal herbs mixture (HGMCJE) for hypoglycemic effect on STZ-induced diabetic rats. Methods : In the response of glucose tolerance, control and diabetic rats groups was intubated with glucose and HGMCJE. Furthermore, boiled 100% polished rice (P rice), boiled unpolished rice mixed with white rice and Job's tears (polished rice:unpolished rice:Job's tears=60:25:15, UPJ-rice), and UPJ rice made from HGMCJE (HUPJ-rice) were intubated to control and diabetic rats groups, respectively. Then, blood glucose concentration, incremental blood glucose, and area under the curve (${\Delta}AUC$) were analyzed in every experimental groups, and these data were used to evaluate glycemic response. Results : When glucose and p rice were intubated in control and diabetic rats, blood glucose concentration, incremental blood glucose, and incremental response ${\Delta}AUC$ of diabetic groups were significantly increase than control groups. But administraion of a single dose of extract from medicinal herbs mixture and HUPJ-rice in control and diabetic rats inhibited the remarkable increase the level of postprandial blood and ${\Delta}AUC$ at 60, 90, and 120 min Conclusions : These results indicate that when intubation of glucose and P rice were out of control on postprandial glycemic response in diabetic rats. But postprandial glycemic response was well-modulated by administrating a single oral dose of HGMCJE and HUPJ-rice. Therefore, HGMCJE can be developed as an effective hypoglycemic agent.

Optimization of Extrusion Cooking Conditions for the Preparation of Seasoning from Manila Clam Ruditapes philippinarum (바지락(Ruditapes philippinarum) 조미소재 제조를 위한 Extrusion Cooking 공정의 최적화)

  • The Manila clam Ruditapes philippinarum, is an important marine bivalve that is widely distributed along the west and north coasts of South Korea. It has been used in a variety of Korean foods owing to its superior umami taste. In the present study, we developed a flavoring with an excellent sensory preference from Manila clam using extrusion cooking processing. Optimization of extrusion cooking conditions was performed using response surface methodology (RSM). Barrel temperature (X1, 140-160℃) and screw speed (X2, 400-560 rpm) of the extruder were chosen as independent variables. The dependent variable was overall acceptance (Y, points). The estimated optimal conditions were as follows: overall acceptance (Y): X1=140℃ and X2=560 rpm. The indicated value of the dependent variable overall acceptance (Y) under the optimal conditions was 8.94 points, which was similar to the experimental value (8.82 points). Overall acceptance of the Manila clam flavoring was related to its umami and Manila clam tastes. The electronic nose and tongue results successfully segregated different clusters of the samples between the lowest and highest sensory scores. The sample with the highest sensory score had higher sourness, umami, and sweetness intensities, and the lowest sensory scored sample showed more off-flavor compounds.
