To develop cosmetics using Jindalae flowers (Rhododendron mucronulatum), the surface tensions of extracts were measured and the properties and stability of cream with extracts were investigated. The surface tension of 0.1% ethanol extract was 30.42 mN/m and that of distilled water was 72.2 mN/m. The surface tension of cream with 0.1% ethanol extract was similar to that of sample cream and the measured pH were weakly alkalic. The surface tension of 1% ethanol extract was the lowest value of 24.98 mN/m, the measured pH of cream with 1% ethanol extract was weakly acidic and the particle size of cream was stable. According to an oscillatory test, linear viscoelastic region was extended by adding of 1% water extract and 1% ethanol extract to cream, indicating that the cream had greater enhanced resistance for preserving inner structure as compared to outside stress. Besides, as a result of the diminished loss angle of ethanol extract cream, the elasticity of cream was increased more than that of sample cream and cream with 0.1% ethanol extract. In contrast, in the case of the increased loss angle of water extract cream, the viscosity of cream was increased. In conclusion, Rhododendron mucronulatum can be deliberated as a cosmetic material because 0.1% water and ethanol extracts showed efficacious physiological activities and cream with 1% extracts could extend linear viscoelastic region.
This study was carried out to examine the antioxidant effects of cheonggukjang combined with Phellinus linteus extract. The electron-donating activity (EDA) of cheonggukjang containing 0.3% P. linteus extract (0.3% CPLE) was higher than that of cheonggukjang only. EDA of the ethanol extract from cheonggukjang was higher than that of the water extract. The water and the ethanol extracts showed strong antioxidant activity with regard to peroxide value. However, the ethanol extract showed a higher peroxide value than the water extract. The nitrite scavenging activity of the ethanol extract was greater than that of the water extract, crresponding to the EDA and peroxide values for each extract. Therefore, the antioxidant effects were enhanced by adding 0.3% of extract from P. linteus in manufacturing cheonggukjang. It is suggested that P. linteus extract could be put into practice as an effective antioxidant agent.
The purposes of this study were to investigate the effects of bamboo (SasacoreanaNakai)extracton chemical characteristics and biological activities. pH ranges of bamboo extract using water and ethanol were between 5.2 and 6.1. The concentration of total phenol compounds using ethanol extract was 0.51%, which was about 2.0 fold higher than that of water extract. The mineral concentrations were order of K, Mg, Ca, and Na, respectively. The nitrite scavenging ratio of bamboo extract using ethanol was 20.4% in vitro. In the case of bamboo extract using water, it was 18.0%. Especially, the maximum nitrite scavenging ratio was obtained at pH 1.5. On the other hand, when pH was increased from 3.0 to 6.0, the nitrite scavenging ratio was decreased from 16.2% to 3.0%. The antioxidant activity of bamboo extract in vitro was increased from 100 to 160% when bamboo extract using ethanol was increased from 10 to $50{\mu}L$. These results suggest that the bamboo extract of Sasa coreana Nakai using ethanol can be used in bioactive and functional material.

Physiological activities of hot-water extract and various concentration ethanol extracts from Bokbunja (Rubus coreanum F. ) were examined. Total phenol content of extract showed higher content in hot-water extract (41.4 mg/g) than other extracts, Optimum condition of extraction for phenolic was $60\%$ ethanol extract (41.3 mg/g). The ABTS radical decolorilization and antioxidant protection factor were determined. Results shown inhibition rate on ABTS of $60\%$ ethanol extract $(99.8\%)$ and antioxidant protection factor of water extract (1.2 PF). Electron donation ability on DPPH was higher 60$\%$ ethanol extract than another percent ethanol extracts. Also hydroxyl radical scavenging activity of extracts was higher $60\%$ ethanol extracts $(0.03\times100\mu\;M)$ than another extracts because the value of TBARS was lower than another extracts. But hot-water extract had higher inhibitory activities on xanthine oxidase and pancreatin $\alpha$ -amylase than $60\%$ ethanol extract. ACE (angiotensin converting enzyme) inhibitory activities were equaled to hot water exract and $60\%$ ethanol extract. Protocatecuic acid was the most abundant phenolic compounds as analyzed by HPLC. The results will be useful as natural antioxidants and functional foods for understanding the physiological activities of Bukbunja extracts.
Mugwort and pine needle were extracted with water and 70% ethanol. Electron donating ability(EDA) of extracts were ranged from 50% to 57% in mugwort water extract(MGW) and ranged from 51% to 64% in mugwort ethanol extract(MGE) at 300-1,000ppm. EDA of extracts were ranged from 52% to 60% in pine needle water extract(PNW) and ranged from 68% 71% in pine needle ethanol extract(PNE) at 100-500ppm. EDA of PNW was 70% and that of PNE was 77% at 1,00(ppm. Nitrite scavenging ability(NSA) of extracts measured at various pH(1.2, 3.0, 4.2, 6.0) was the highest in all extracts at pH 1.2 and decreased with increasing pH, suggesting it is pH dependent. NSA of mugwort extracts at 1,000ppm, water extract was 37% and ethanol extract was 27% at pH 1.2. NSA of pine needle extracts at 1,000ppm, water extract was 65%and ethanol extract was 53% at pH 1.2. EDA and NSA of pine needle extracts were higher than mugwort in both of water and ethanol extract. EDA of ethanol extracts were higher than water extracts while NSA of water extracts were higher than ethanol extracts in both of mugwort and pine needle.
This study was carried out to investigate the extraction yield, the contents of total phenol substances and antioxidative substances, electron donating abilities, nitrite scavenging abilities of water and ethanol extracts from Cassia tora L. and Pueraria thunbergiana and antioxidative activity of water and ethoanol extract from Cassia tara L. Tatal phenol substances of water and ethanol extract from Cassia tora L. and Pueraria thunbergiana showed nearly the same levels, and the antioxidative substances of water and ethanol extract from Pueraria thunbergiana has as much as two times higher than those from Cassia tara L.. The nitrite scavenging abilities were measured at pH 1.2, 3.0, 4.2 and 6.0, respectively. Water and ethanol extracts from Cassia tora L showed 14.9%∼22.3% and 49.1%∼56.7%, and those from Pueraria thunbergiana revealed 57.7%∼61.0% of nitrite scavenging abilities, respectively. Especially the extracts from Pueraria thunbergiana showed higher pH dependence than those from Cassia tora L. The electrol donating abilities of water extract from Cassia tora L. were higher than those from Pueraria thunbergiana, and vice versa in the case of ethanol extracts. In the antioxidative activitiy of extracts from Cassia tora L. against linoleic acid during storage of 20 days at 50$^{circ}C$, peroxide values at the addition level of 5mg and 10mg were consoderably lower than 2mg although peroxide value increased above 375 after 12days of storage compared with the control(BHA-added) of 129 at 8days.
Antioxidative activities of pine, oak, and lily pollen extracts were evaluated based on 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging ability and inhibition of lipid peroxidation in animal tissues. Each pollen was extracted with 50% ethanol, 100% ethanol or water. DPPH radical-scavenging capacity of 50% ethanol extract ($EC_{50}$ 40.0 mg/mL) of pine pollen was higher than those of water (46.8 mg/mL) and 100% ethanol (131.2 mg/mL) extracts of pollen. Fifty percent ethanol (3,2 mg/mL) was also better than 100% ethanol (4.5 mg/mL) and water (8.3 mg/mL) for extraction of oak pollen. For preparation of lily pollen extracts, 100% ethanol was most effective (14.0 mg/mL), followed by water (18.8 mg/mL) and 50% ethanol (24.0 mg/mL). Oak pollen showed higher DPPH radical-scavenging activity than others. Lipid peroxidation in rat brain homogenate induced by ascorbate-Fe3+-EDTA and rat kidney homogenate were inhibited by water extracts of all pollens in dose-dependent manner. Extracts of oak and lily pollen showed higher lipid peroxidation inhibition than pine pollen extract. Polyphenol content was highest in oak pollen extract $(32.5{\pm}0.7\;{\mu}g/mg\;pollen)$, followed by lily extract $(25.9{\pm}1.4\;{\mu}g/mg\;pollen)$ and pine extract $(9.3{\pm}0.7\;{\mu}g/mg\;pollen)$.
Red ginseng extracts were prepared with various concentrations of ethanol. Extract yields were examined and saponins in the extracts were identified and determined by TLC and HPLC, respectively. Yields of the extracts, $19.7{\sim]50.3%$, were the highest in water extract and showed significant decrease with the increase of ethanol concentration used for extraction. Contrary to the extract yields, saponin yields from red ginseng were conspicuously increased with the increase of ethanol concentration and were $3.47{\sim}5.13%$ of crude saponins and $1.28{\sim}1.93%$ of six major ginsenosides. Saponin contents in the red ginseng extracts were $6.9{\sim}24.2%$, of crude saponin and $2.57{\sim}9.22%$, of six major ginsenosides.
Objectives : This study was performed to investigate the antioxidant activity of water and ethanol extracts from Sasa borealis leaves, stems and roots. Methods : Sasa borealis leaves, stems and roots extract were prepared using water and ethanol. The total polyphenol and total flavonoid contents were analyzed. 2,2-diphenyl-1-picrylhydrazyl(DPPH) radical scavenging activity, SOD like activity, 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid)(ABTS), hydroxyl radical scavenging activity, and Nitrite scavenging activity assays were carried out to determine the antioxidant activities. Results : The antioxidant activities of the Sasa borealis appeared higher in ethanol extract than water extracts. Total polyphenol and total flavonoids contents in ethanol extracts of leaves were $24.6mg/m{\ell}$ and $14.3mg/m{\ell}$, respectively, which were much higher than those of any other parts. SOD like activity was 70% ethanol extract of the leaves was highest with 15.68%. Electron donating ability was 70% ethanol extract of the leaves had the highest 59.07%. It exhibited high electron donating ability than BHT(45.68%). Nitrite scavenging activity of 70% ethanol extract was higher than the water extract at pH 2.5 and pH 4.2. Nitrite scavenging activity was 70% ethanol extract of the leaves was the highest 75.2%. Hydroxyl radical scavenging activity was 70% ethanol extract of the leaves was highest with 16.16%, showed very low activity than BHT(61.56%). Conclusions : These results suggest that 70% ethanol extracts from Sasa borealis leaves, exhibited higher antioxidant activities than those of root and stem, and can be potentially used as proper natural antioxidants.
In an effort to develop novel mushroom-derived anti-obesity nutraceuticals, water and ethanol extracts containing the lipaseinhibitory compound from Phellinus linteus were prepared, and their nutritional components were determined. The optimal conditions for the extraction of P. linteus lipase inhibitor involved the treatment of the fruiting bodies with distilled water at $80^{\circ}C$ for 72 hr and 80% ethanol at $100^{\circ}C$ for 60 hr, respectively. The distilled water extract and ethanol extract contained 10.9% and 6.11% of crude protein, and 0.96% and 15.86% of crude fat, respectively. Additionally, the distilled water extract contained a large quantity of minerals, including 239.5 mg of K, 39.3 mg of Mg, and 39.3 mg of Na. The free amino acid content of the distilled water extracts was also higher than that of the ethanol extracts, and in particular, the distilled water extracts contained 5,139 mg of asparagine, 3,891 mg of tryptophan, 2,598 mg of alanine, and 2,066 mg of serine in 100 g of the distilled water extracts. 100 g of the distilled water and ethanol extracts were found to contain 12.31 g and 8.16 g of malic acid, respectively.
