Mercury and methylmercury concentrations were measured in 225 marine fish samples purchased from retail markets in 5 major Korean cities in 2005. The results showed that the concentrations of mercury and methylmercury ranged from 0.006-0.455 (mean=$0.054{\pm}0.025$) mg/kg and 0.004-0.120 (mean=$0.021{\pm}0.008$) mg/kg, respectively, in fish caught from the coastal waters of the Korean Peninsula. The concentrations in deep-sea fish including tuna ranged from 0.066-2.315 (mean=$0.095{\pm}0.640$) mg/kg for mercury and 0.027-0.897 (mean=$0.281{\pm}0.182$) mg/kg for methylmercury. The estimated weekly intakes (EWIs) of mercury and methylmercury reached 3.92 and 4.70% of the provisional tolerable weekly intakes (PTWI), respectively. Consequently, the levels of mercury and methylmercury in marine fish from current retail markets do not pose any significant health risks for Koreans.

This study was performed to estimate daily intakes of aluminum from Platycodon grandiflorum A. De Candolle and evaluate their potential health risks for Koreans. Estimated daily intake of aluminum was calculated, whereas the actual level of aluminum in Platycodon grandiflorum A. De Candolle was analyzed using inductively coupled plasma mass spectrometry. Food consumption amount was drawn from Korea National Health and Nutrition Examination Survey (KNHANES VI-1). In analysed samples, aluminum values ranged from 0.54~564.38 mg/kg in peeled Platycodon grandiflorum A. De Candolle samples (n=53) and from 0.72~28.05 mg/kg in unpeeled ones (n=40). Statistically significant difference (P<0.001) was detected according to the type of skin. To estimate the dietary intake of Platycodon grandiflorum A. De Candolle, a total of 7,242 respondents (scenario I) were compared to 227 Platycodon grandiflorum A. De Candolle consumption subjects (scenario II). Estimated daily intake of aluminum was calculated based on point estimates. Level of safety for aluminum was evaluated by comparison with Provisional Tolerable Weekly Intake (PTWI), 1 mg/kg bw, set by the Joint FAO/WHO Expert Committee on Food Additives. For scenario I, mean estimated daily intake of aluminum was 0.001 mg/kg bw/d. For scenario II, mean estimated daily intake of aluminum was 0.033 mg/kg bw/d, and 95th percentile estimated daily intake was 0.610 mg/kg bw/d. For scenario II, aluminum from Platycodon grandiflorum A. De Candolle had a mean weekly intake that was the 23.1% of PTWI.

Trace metals concentrations in the tissue of edible marine fish (4 species), olive flounder (Paralichthys olivaceus), Korean rockfish (Sebastes schlegelii), file fish (Stephanolepis cirrhifer) and abbysal searobin (Lepidotrigla abyssalis), collected near the Yongho wharf in Busan were determined to assess the potential human health risk (HRA) of trace metals by fish consumption. Levels of Li, Cr, Ni, Cu, Zn, As, Cd, and Pb in the fish tissue were $0.005{\pm}0.009$, $0.77{\pm}0.30$, $0.29{\pm}0.34$, $0.49{\pm}0.14$, $15.96{\pm}2.52$, $10.62{\pm}4.67$, $0.001{\pm}0.002$, and $0.045{\pm}0.06mg/kgdw$ respectively. The estimated daily intakes of Cu and Zn and the estimated weekly intakes of As, Cd, and Pb from the fish collected near the Yongho wharf were 0.0032, 0.054-0.18% of PMTDI (provisional maximum tolerable daily intake) and 13, 0.0041, 0.020% of PTWI (provisional tolerable weekly intake) which were set to evaluate the food safeties by the JFCFA (The Joint FAO/WHO Expert Committee on Food Additives). Lifetime cancer risk and target hazard for local residents due to those fish consumption were found to be negligible.

This study analyzed mycotoxins, aflatoxin B1, B2, G1, G2, fumonisin B1, B2, ochratoxin A and zearalenone, using LC-MS/MS and conducted risk assessment on 54 samples of seeds distributed in SeoulYangnyeongsi and the management status of extramural herbal dispensary facility. The matched calibration showed a good linearity as observed in 6 concentration levels(r2>0.999) as a result of method validation applied with Arecae semen. Limits of detection(LOD) and quantification(LOQ) were in the range of 0.02-0.11 ㎍/kg and 0.08-0.34 ㎍/kg, respectively. Recoveries also estimated, ranging from 65.1-99.7% with relative standard deviation(RSD) 0.5-6.3%. As a result of the method on 54 samples, mycotoxins were detected in 16 samples. Among them, two Thujae semen showed a degree of concentration that exceeded the aflatoxin specification. In the risk assessment, the human exposure safety standard values were calculated as ADI(Acceptable Daily Intake) for aflatoxin B1, fumonisin and zearalenone. Ochratoxin A was calculated as PTWI(Provisional Tolerable Weekly Intake). The MOE(Margine of Exposure) of aflatoxin B1 was in the range of 40.36-3536.88. And no items exceeded 100% in %TDI(Tolerable Daily Intake) and %TWI(Tolerable Weekly Intake) of fumonisin, zearalenone and ochratoxin A.
Forty-eight crossbred heifers ($378.1{\pm}18$ kg) were used in a 56-d feeding trial (four pens per treatment in a randomised complete block design) to evaluate the influence of ionophore supplementation on growth performance, dietary energetics and carcass characteristics in finishing cattle during a period of heat stress. Heifers were fed a diet based on steam-flaked corn (2.22 Mcal $NE_m/kg$) with and without an ionophore. Treatments were: i) control, no ionophore; ii) 30 mg/kg monensin sodium (RUM30); iii) 20 mg/kg lasalocid sodium (BOV20), and iv) 30 mg/kg lasalocid sodium (BOV30). Both dry matter intake (DMI) and climatic variables were measured daily and the temperature humidity index (THI) was estimated. The maximum THI during the study averaged 93, while the minimum was 70 (THI average = $79.2{\pm}2.3$). Compared to controls, monensin supplementation did not influence average daily gain, the estimated NE value of the diet, or observed-to-expected DMI, but tended (p = 0.07) to increase (4.8%) gain to feed. Compared to controls, the group fed BOV30 increased ($p{\leq}0.03$) daily gain (11.8%), gain to feed (8.3%), net energy of the diet (5%), and observed-to-expected DMI (5.2%). Daily weight gain was greater (7.6%, p = 0.05) for heifers fed BOV30 than for heifers fed MON30. Otherwise, differences between the two treatments in DMI, gain to feed, and dietary NE were not statistically significant (p>0.11). Plotting weekly intakes versus THI, observed intake of controls was greater (p<0.05) at THI values ${\leq}77$ than ionophore groups. When THI values were greater than 79, DMI of control and MON30 were not different (p = 0.42), although less than that of groups fed lasalocid (p = 0.04). Variation in energy intake was lower (p>0.05) in the ionophores group (CV = 1.7%) than in the control group (CV = 4.5%). Inclusion of ionophores in the diet resulted in relatively minor changes in carcass characteristics. It is concluded that ionophore supplementation did not exacerbate the decline of DM intake in heat-stressed cattle fed a high-energy finishing diet; on the contrary, it stabilised feed intake and favoured feed efficiency. Ionophore supplementation reduced estimated maintenance coefficients around 10% in finishing cattle during a period of heat stress. This effect was greatest for heifers supplemented with 30 mg lasalocid/kg of diet.

Fourteen Sahiwal ${\times}$ Friesian crossbred heifers were used in a 10-wk feeding trial to determine maintenance energy requirements and efficiency of gain. The heifers were individually fed with a diet consisting of 30% dry grass and 70% concentrates at either 110, 140 or 180% of the anticipated maintenance requirement ($494kJ\;ME/kg^{0.75}/day$). Liveweight of individual heifers was measured weekly to calculate diet requirements and average daily gain (ADG). Diet digestibility was determined for all heifers to determine ME intake. Retained energy (RE) of individual heifers was determined from changes in total body fat and protein using a TOH isotope dilution procedure and, assuming calorific values of 39.3 and 23.6 kJ/g for fat and protein respectively. The estimated ME for maintenance was 433 and $470kJ/kg^{0.75}/day$ by liveweight (ADG) equilibrium and energy (RE) equilibrium analysis respectively. ME requirement for one g of liveight gain was 28 kJ.
The nutritional value of Korean traditional diet was estimated by using the 7-dish meal of Kim Ho Jik (1944) and the standard weekly menu of Bang Sin Young (1957), and compared to the current Recommended Daily Allowance of Korean. The Korean traditional diets were estimated to be able to supply 2,000-2,500 Kcal and 80-90g of protein per day. The constitution of energy was made by 73-77% carbohydrate, 15-18% protein and 10-12% lipid. The content of animal protein was 20-30% of total protein. The Korean traditional diet could supply sufficient amounts of protein, minerals and vitamins for an adult male, if the energy intake exceeds 2,00 Kcal per day.

Objective : This study was conducted to quantify chronic lead exposure from various media(ie. working environment, food, ambient air), and to certify the usefulness of exposure assessment using Monte-Carlo simulation in the fields of occupational health. Methods : Data were obtained from Korean Industrial Health Association, Korea Food and Drug Administration, and the Ministry of Environment. Then lead worker's exposure was estimated indirectly from various media and parameters (ie. volume inhaled, body weight, dietary intake, etc.). Uncertainty was analyzed by Monte Carlo simulation with Crystal Ball software. Exposure doses and hazard indices were simulated with various hypothetical scenarios including weekly working hours and respiratory protective equipment. Results : Without respiratory protective equipment, the total exposure dose per kilogram of body weight of lead workers was estimated as $5.45{\times}10^{-3}mg/kg/day$, and hazard index was estimated as 2.26, and exposure contributions were calculated as follows : working environment(82.42 %); foods(17.57 %); and ambient air(0.01 %). But, if working condition has changed - reduction of working hours and using respiratory protective equipment, the total exposure dose per kilogram of body weight was estimated between $1.34{\times}10^{-3}-1.49{\times}10^{-3}mg/kg/day$, and hazard index was estimated between 0.56 - 0.62. Conclusions : This study suggested that occurrence of hazardous impact(ie. increased blood pressure) through lifetime lead exposure would be expected, and that the Monte-Carlo simulation was useful for the fields of occupational health.
The aim of this study was to determine total mercury and methyl mercury level in fishes (Deep-sea Fish, Tuna, Billfish) and fishery products. A total of 101 fishes and 44 fishery products samples collected from commercial market in Gyeonggi-do. Total mercury were analysed by mercury analyzer and methyl mercury were analyzed by gas chromatography with electron capture detector. In the fishes, total mercury was detected in all samples and methylmercury was detected in 92 samples of them. The detection rate of methylmercury was 91.1% in fishes. The mean concentration (mg/kg) of total mercury and methylmercury were $1.968{\pm}0.505/0.496{\pm}0.057$ for Billfish, $0.665{\pm}0.091/0.252{\pm}0.033$ for Deep-sea Fish and $0.577{\pm}0.085/0.218{\pm}0.025$ for Tuna, respectively. The Swordfish contains the highest level of total mercury (1.968 mg/kg) and methylmercury (0.496 mg/kg). In Mabled rockfish, the ratio of methylmercury's contents about total mercury's contents was the highest as 66.5%. In case of fishery products, frozens made of 100% of raw material contained the highest level of total mercury and methyl mercury. The weekly intake of total mercury and methylmercury was calculated in 4.72% and 5.24% of Provisional Tolerable Weekly Intake (PTWI) respectively. This study showed that the weekly intake of methylmercury from Deep-sea Fish, Tuna and Billfish was less than the PTWI recommended by the Joint FAO/WHO expert committee on food additives.
This study estimated the heavy metal contents of vegetables grown in Korea (n=234). The samples were digested using the microwave method. The contents of heavy metals (Pb, Cd, As, Cr, Cu, Mn, and Zn) were determined using inductively-coupled plasma spectrometry (ICP). The average values of heavy metals in vegetables were as follows [mean (minimum-maximum), mg/kg)]; Pb 0.0026 (ND-0.0313), Cd 0.0017 (ND-0.0280), As 0.0005 (ND-0.0332), Cr 0.0156 (0.0010-0.1798), Cu 0.3767 (0.0556-1.3980), Mn 3.0214 (0.0182-26.4100), and Zn 3.5796 (0.8300-14.4600). The heavy metal contents of vegetables available on the domestic market were almost the same as or lower than those reported in other studies. Further, the weekly average intake of heavy metals was lower than the Provisional Tolerable Weekly Intake (PTWI) or the Provisional Maximum Tolerable Daily Intake (PMTDI), which was established by the FAO/WHO. Our results can be utilized as a reference to establish specific standards for various vegetables in Korea.
