Monitoring of Chilled Fish Quality by Using Time-Temperature Integrator (TTI): Application at a Mock Store (시간-온도이력 지시계(TTI)에 의한 냉장 생선의 품질 모니터링: 모의상점에 적용)

  • TTI was applied to monitor the quality changes of fish displayed at a mock store. Chilled fishes were displayed with TTI on a styrofoam box filled with crushed ice. The ice was periodically refilled to maintain the fish freshness. The color of TTI and the qualities of mackerel and Alaska pollack were measured during displaying. VBN and Pseudomonas spp. were used as the quality factors of mackerel and Pollack, respectively. The spoilage time was regarded as when the factors reached their critical levels. The fishes were spoiled when the color of TTI reached an end-point. It was therefore found out that it is possible to predict the fish spoilage by observing the TTI color change.

  • Since a liquid-phase LPG injection system allows accurate control of fuel injection and increase in volumetric efficiency, it has advantages in achieving higher engine power and lower emissions compared to the mixer type LPG supplying system. However, this system also leads to an unexpected event called icing phenomenon which occurs when moisture in the air near the injector freezes and becomes frost around the nozzle hole due to extraction of heat from surrounding caused by instant fuel vaporization. As a result, it becomes difficult to control air/fuel ratio in engine operation, inducing exacerbation of engine performance and HC emission. One effort to mitigate icing phenomenon is to attach anti-icing injection tip in the end of nozzle. Therefore, in this study, the effect of engine operation parameters as well as surrounding conditions on icing phenomenon was investigated in a bench test rig with commercially-used anti-icing injection tips. The test results show that considerable ice was deposited on the surface near the nozzle hole of the anti-icing tip in low rpm and low load operating conditions in ambient air condition. This is because acceleration of detachment of deposited ice from the tip surface was induced in high load, high rpm conditions, resulting in decrease in frost accumulation. The results of the bench testing also demonstrate that little or no ice was formed at surrounding temperature below a freezing point since the absolute amount of moisture contained in the intake air is too small in such a low temperature.

  • Recently, 1-D model-based engine development using virtual engine system is getting more attention than experimental-based engine development due to the advantages in time and cost. Injection rate profile is the one of the main parameters that determine the start and end of combustion. Therefore, it is essential to set up a sophisticated model to accurately predict the injection rate as starting point of virtual engine system. In this research, procedure of 1-D model setup based on AMESim is introduced to predict the dynamic behavior and injection rate of diesel injector. As a first step, detailed 3D cross-sectional drawing of the injector was achieved, which can be done with help of precision measurement system. Then an approximate AMESim model was provided based on the 3D drawing, which is composed of three part such as solenoid part, control chamber part and needle and nozzle orifice part. However, validation results in terms of total injection quantity showed some errors over the acceptable level. Therefore, experimental work including needle movement visualization, solenoid part analysis and flow characteristics of injector part was performed together to provide more accuracy of 1-D model. Finally, 1-D model with the accuracy of less than 10% of error compared with experimental result in terms of injection quantity and injection rate shape under normal temperature and single injection condition was established. Further work considering fuel temperature and multiple injection will be performed.

Effects of Temperature and Humidity on the Glucose Measurements with Phenoxy-Methylamino Phosphazene Diagnostic Membranes (페녹시-메틸아미노 포스파젠 당뇨병 진단막의 글루코우즈 농도 측정에 미치는 온도와 습도의 영향)

  • The new types of phenoxy-methylamino phosphazene diagnostic membranes were prepared to measure blood glucose level of diabetics. Firstly, effects of mesuring environments on the glucose measurements were examined. With activated phosphazene membranes, the end-point results of varing absorbance values according to time (K/S) were measured at 5, 15, 25, 35, $50^{\circ}C$ and also at 20% to 80% of relative humidities (RH). The slope values of K/S and glucose concentration(DRS) were not seriously affected at high measuring temperatures and humidities. Secondly, after prepared membranes were stored at various environments, the effects of storage temperatures and humidities on the glucose measurements were examined. After 8 weeks at $50^{\circ}C$, the storage time and temperatures did not affect on the glucose measurements with the new phosphazene membranes. The stabilities of new phosphazene diagnostic membranes were confirmed even at RH 80%.

Effect of Air Circulation Velocity on the Rate of Lumber Drying in a Small Compartment Wood Drying Kiln (소형 목재인공건조실에 있어서 공기순환속도가 목재건조율에 미치는 영향)

This study indicates that above the fiber saturation point the drying rate can be increased with increasing the velocity of the air circutation, i.e., the drying rate of sample boards is proportional to the air velocity, but below the fiber saturation point, the effect of the velocity of air circulation is very low as shown in Figs. 1 and 2. 2. Under the controlled temperature and humidity in the kiln, the more the sample boards have moisture, the higher drying rate of it can be obtained. In other words, this means that even though in the case of drying various moisture content of wood, at the final drying stage, approximately the same percentage of moisture content of wood can be secured by employing the higher velocity of air circulation. 3. This study shows that the rate of drying in kiln changes distinctly at the fiber saturation point, i, e., above the fiber saturation point, the drying curve shows concave aginst the X axsis, but below the fiber saturation point, in the range from 30 percent of moisture content to 20 percent of moisture content, the curve shows convex as shown in Fig. 3. As the drying progresses, however, the drying curve shows concave again below 20 percent of moisture content. This means that inflection point of drying curve may be located clearly at the fiber saturation point, i.e., 30 percent of moisture content. As mentioned above, the 30 percent of moisture content of wood at which the inflectional point appears can be recognized as a critical point, i. e., the fiber saturation point at which all free water was removed from wood. The existence of inflectional point indicates that the evaporation of hygroscopic water in a cell wall is more difficult than the evaporation of free water in a cell cavity and the minor space of cell wall. The convex curve in the range of moisture content from 30 percent to 20 percent means that the evaporation of capillary condensed water has a tendency of the same rates of drying approximately, but as approaching to the 20 percent of moisture, the transfusion of moisture from wood becomes difficult because of having less moisture in cell wall. Below 20 percent of moisture content, the drying curve shows concave again, which means that it is difficult to remove the moisture located nearer to the surface of cellulose molecules and the surface bound water. These relations were revealed in Fig. 4. In comparison AC curve which does not have the two inflection points with BD curve which has two inflection points, i.e., Band D, they are mentioned already, by existence of the inflection points, the curve BD shows that the change of drying rate in the interval from 20 percent of moisture content to 30 percent of moisture content is not greater than in the case of the curve AC in the same interval. At the inflection point of 30 percent of moisture content, it can be noticed that the changing of the drying rate is very conspicuous. This phenomenon also can be recognized, as it is noticed by the Fig. 3, the drying rate from green to 30 percent of moisture content is very great. But the inclination of the curve is very slow from 30 percent of moisture content to 20 percent of moisture content, i.e., the inclination of the curve becomes almost horizontal lines. Effect of Fermentation Temperature on Quality Characteristics of Apple Wine (발효온도가 사과와인 품질 특성에 미치는 영향)

  • The objective of this study was to investigate the effect of fermentation temperature on quality characteristics of apple wine. Apple wine mashes were fermented in 15, 20, and $25^{\circ}C$ water bathes for 9 days. The pH levels of all samples were below 4 from 24 h of fermentation until the end. Total acidities of 0.05% acetic acid solution were 7.8, 7.4, and 7.0% in the 15, 20, and $25^{\circ}C$ fermented samples, respectively. The evaporation of esters generated by combining alcohol and organic acids might be the reason for lower total acidity for high temperature fermentation. Alcohol contents of the 20 and $25^{\circ}C$ fermented samples were 6.5 and 6.6% (v/v), respectively, whereas that of the $15^{\circ}C$ fermented sample was 5.6% (v/v) and significantly lower than the others (P<0.05). Methanol contents were 0.68, 0.82, and 1.69 mg/L in the 15, 20, and $25^{\circ}C$ fermented samples, respectively. Fermentation at higher temperatures generated higher methanol content in apple wine. On the other hand, acetaldehyde contents were 3.43, 2.39, and 1.02 mg/L in the 15, 20, and $25^{\circ}C$ fermented samples, respectively, due to the lower boiling point of acetaldehyde ($20.2^{\circ}C$). Based on the results, a fermentation temperature of $20{\sim}25^{\circ}C$ is effective for apple wine fermentation.

A Study on the Measurement of Ultrasound Velocity to Evaluate Degradation of Low Voltage Cables for Nuclear Power Plants (원전 저압케이블 열화도 평가를 위한 초음파 음속계측에 관한 연구)

  • Several kinds of low voltage cables have been used in nuclear power plants for the supply of electric power, supervision, and the propagation of control signals. These low voltage tables must be inspected for safe and stable operation of nuclear power plants. In particular, the degradation diagnosis to estimate the integrity of low voltage rabies has recently been emphasized according to the long use of nuclear power plants. In order to evaluate their degradation, the surrounding temperature, hardness of insulation material, elongation at breaking point (EAB), etc. have been used. However, the measurement of temperature or hardness is not useful because of the absence of quantitative criteria; the inspection of a sample requires turning off of the power plant power; and, the electrical inspection method is not sufficiently sensitive from the initial through the middle stage of degradation. In this research, based on the theory that the ultrasonic velocity changes with relation to the degradation of the material, we measured the ultrasonic velocity as low voltage cables were degraded. To this end, an ultrasonic degradation diagnosis device was developed and used to measure the ultrasonic velocity with the clothing on the cable, and it was confirmed that the ultrasonic velocity changes according to the degradation of low voltage cables. The low voltage cables used in nuclear power plants were degraded at an accelerated rate, and EAB was measured in a tensile test conducted after the measurement of ultrasonic velocity. With the increasing degradation degree, the ultrasonic velocity decreased, whose potential as a useful parameter for the quantitative degradation evaluation was thus confirmed.

Optimization of Time to Activate Time-Temperature Integrator (TTI) in Cold Chain System of Alaska Pollack (명태의 냉장유통 단계에서 시간-온도이력 지시계(TTI) 부착시점의 최적화)

  • It was mathematically analyzed at which steps to activate TTI in the cold chain for Alaska pollack, assuming that the performance of a commercial TTI product, and Fresh-check, could not always be optimized for the pollack. Three places were selected for the TTI activation, such as on fishing ship, Busan cooperative fish market, and mart. First, the kinetic and Arrhenius temperature dependent models were experimentally built under isothermal conditions. The color index of TTI and the level of Pseudomonas spp. of pollack were measured at time intervals. Second, the resultant models were used in the mathematical calculations for dynamic temperature conditions included in the cold chain. As a result, the TTI activated at the mart place showed the best agreement between the spoilage time of the pollack and the time for the TTI color to reach its end-point. It was therefore found that it is practically important to optimally select the TTI activation place or time when using a commercial TTI product.

Quality Characteristics of Seoktanju Fermented by using Different Commercial Nuruks (시판누룩 사용 별 석탄주의 품질특성)

  • We investigated quality characteristics of Seoktanju (one of the Korean traditional rice wine) which was fermented using five kinds of Korean commercial Nuruks. The purpose of this study was to research what effects on the quality of Seoktanju by using different Nuruks. We analyzed general component such as each mash's temperature change patterns, pH, titrable acidities, reducing sugar contents, volatile acids, and sugar contents during fermentation periods and studied sensory evaluation of produced Seoktanju (10 days). On the whole, temperature change patterns in the each mashes were depend on room temperature. All Seoktanju's pH was reduced rapidly up to three days after first mashing (pH 3.13-3.57) and after that was increased gradually. The end of fermentation pH was pH 3.6-4.05. Mostly, acidities were indicated high(0.59%) and Nuruk-B was showed highest acid value. These results seems to be different as occasion organic acids producing activity depend on the number of yeast, material contents, optimal temperature in the each mashes by fungi and lactic acid bacteria in Nuruks. In reducing sugar contents and sugar contents, Nuruk-C treatment were showed the highest value with 5.36%, $23^{\circ}brix$, respectively and alcohol content was lowest with 8.6%. In the five kinds of reproduced Seoktanju, alcohol content was the highest in the treated Nuruk-A group. Volatile acid value was the highest with 132.6~263.7 ppm at the 3 day after first mashing day but as the fermentation time goes on, it was reduced sharply by 5.25~5.94 ppm. Sensory evaluation was performed with 5 point scale, the Seoktanju using Nuruk-D was presented by 4 point, while Nuruk-A was presented lowest by 2.77 point on overall acceptability.

  • Numerical analysis was done to evaluate the chemical reaction and the reduction rate inside of selective non-catalytic reduction to denitrification in combustion process. The $NO_X$ reduction in selective non-catalytic reduction is converted to not only nitrogen but also nitrous oxide. Simultaneous $NO_X$ reduction and nitrous oxide generation suppressing is required in selective non-catalytic reduction because nitrous oxide influences the global warming as a greenhouse gas. The current study was performed compare the computational analysis in the same temperature and amount of NaOH, and in comparison with the previous research experiments and confirmed the reliability of the computational fluid dynamics. Additionally, controlling the addition amount of NaOH to predict the $NO_X$ reduction efficiency and nitrous oxide production. Numerical analysis was done to check the mass fraction of each material in the measurement point at the end of selective non-catalytic reduction. Experimental Value and simulation value by numerical analysis showed an error of up to 18.9% was confirmed that a generally well predicted. and it was confirmed that the widened temperature range of more than 70% $NO_X$ removal rate is increased when the addition amount of NaOH. So, large and frequent changes of the reaction temperature waste incineration facilities are expected to be effective.
