유아 대상의 오감을 활용한 채소 선호도 증진 프로그램의 개발 및 효과 평가 (Development and Performance Evaluation of Education Program to increase Children's Preference for Vegetables through Five Senses)

  • This study developed a vegetable preference increase program that can be applied at the Center for Children's Foodservice Management (CCFM) for children in child-care facilities and kindergarten and the training performance was evaluated by 192 5-year old children. Teachers considered 'disliked food' ($3.23{\pm}0.85/out$ of 5) as the most serious nutritional problem and typical disliked food was 'vegetables' (54.2%). Based on this finding, to increase the preference for vegetables, a five-phase education program was developed. In this program, each phase was composed of activities to increase children's interest in vegetables by using each sense out of the five senses. Center dieticians had visited and conducted the program in 12 facilities. By using an illustration assessment tool, the training performance was evaluated by comparing the children's knowledge level and their preference changes in vegetables. Consequently, as examined by 10 questions on the knowledge of vegetables, trained children's (in total 192) knowledge of vegetables had considerably increased (p<0.01, p<0.001), and their preference for 15 out of the 16 vegetables, except for carrots, also showed a considerable preference increase after the training (p<0.01, p<0.001). Therefore, this program is considered to have contributed to reducing disliked vegetable eating behaviors.

  • The aim of this study is to identify needed consumer education changes through the analysis of the consumer education in elementary schools. The findings of this study are:1. The current situation of elementary school consumer education was examined through analysis of the curricula of elementary schools. 2. Teacher attitudes and perceptions toward elementary school consumer education were also examined. Although the elementary school teachers clearly understood the importance of consumer education, the problem is that a training workshop or program has not been provided for them. This deficiency needs to be addressed quickly. 3. The third part of the study consisted of an analysis of the curriculum of the 11 Teacher’s Colleges in Korea. This partof study revealed that consumer education was not systematically addressed at Teacher’s Colleges. This finding suggests that it is important to have an included with other opening lecture on consumer education, cultural subject. The content of the consumer education must be positively emphasized and applied systematically.

  • Objectives : The aim of this study was to improve the prevention and curative effect for gastroenteric disease through Oriental medicine literary investigation. Method :The present study was surveyed Oriental medicine literary about regimen for gastroenteric disease Results and Conclusion : The regimen for gastroenteric disease require regimen of timely action, emotional regulation, living conditions, diet adjustment and exercise. 1. The regimen for timely action is making adaptation of seasonality. 2. The regimen for emotional regulation is to be moderate in the anger, sorrows, worry, thinking and need the mental rest. 3. The regimen for living conditions is a balance of mind and body and a training physical strength. 4. The regimen for diet adjustment is to be moderate in eating and drinking 5. The regimen for exercise is to take proper exercise like a walk lightly or therapy of breathing technique or techniques of tuina, etc.

  • The purpose of this study is to get data of architectural planning in the special school for the Blind. To this end the chilcren's learning activities were analyzed, and their characteristics were noted in relation with the corresponding rooms. The findings may be summarized as follows. i) The pattern of study activities are multivarious. ii) Variety in learning spases is required. And it needs a space which can accommodate simultaneously both static and dynamic study activities. iii) The learning space must be conveniently planned in relation to those facilities for basic life activities such as eating and washing so that the children receive training in those activities as well.

대전 지역 저소득층 및 다문화가정 아동의 성장에 대한 보고 (A Study on the Growth of Low Income and Multicultural Families' Children in Dae-jeon Area)

  • Objectives The purpose of this study is to evaluate the growth of low income and multicultural families' children in Dae-jeon area via growth indices, obesity indices and metabolic risk factors. Methods Six to 13-year-old children were enrolled in this study. Children were examined their body composition and bone age and their blood samples were collected. Results Current growth of children in low income and multicultural families was under the average compared to that of average children in the same age. Also, boys were more prone to be overweight than girls and their skeletal maturity was more rapidly progressing. Conclusions Intensive management and more training in regards to exercise and eating habits will be needed to low income and multicultural families' children.

'감각·소비자과학'이란? (What is sensory and consumer science?)

  • Sensory and consumer science is one of the four core sciences in food science training. In early years, this field of studies are focused on providing food technologists information of sensory attributes of food for quality control and product optimization, and referred as sensory evaluation or sensory science interchangeably. Yet, during the last decades, its scope has been much broadened looking at sensory properties of food not just as product attributes but consumer-perceived properties, emphasizing human experience. Attentions are increased for sensory fundamentals(sensory psychology and physiology) and multidisciplinary integration of theories and measurement methods for improving satisfaction of consumers' sensory experience and promoting healthy eating and wellbeing. The Sensory Evaluation(SE) division of Korean Society of Food Science and Technology(KoSFoST) has recently changed its name to Sensory and Consumer Science(SCS) division in order to address such evolution of the field and sensory professional's role.

Distribution Strategies for Service Delivery: Focus on Verbal and Non-verbal Communication at Counter Service Restaurants

  • Purpose: This study investigated the impact of staff verbal and non-verbal communication on consumer satisfaction and revisit intention. The study sought to identify differences in demographic and eating out characteristics on perceived verbal and non-verbal communication. Research design and methodology: This study used a survey method to collect data. The questionnaire asked about previous experience with verbal and non-verbal communication with staff at a counter service restaurant. The study measured degrees of perceived verbal and non-verbal communication. In addition, the effect of verbal and non-verbal communication on satisfaction and revisit intention was measured. The principal results: Results of ANOVA showed significant differences in monthly income on verbal communication and monthly income and budget for dining out on verbal and non-verbal communication. Both verbal and non-verbal communication affected satisfaction and revisit intention significantly with slightly more power of verbal communication than non-verbal communication. Major conclusions: Results of this study suggest that consumers are affected by both verbal and non-verbal communication. Staff communication is critical to increasing consumer satisfaction and revisit intention; hence, training staff in effective communication is necessary.

여자체조선수의 영양생리학적 요인 개선을 위한 교육프로그램의 효과분석 (Implementation and Evaluation of a Nutrition Education Program to Improve the Nutritional an Physiological Status of Female Gymnasts)

  • This study was conducted with 20 female gymnasts to examine the relationship between eating patterns, diet menstrual function and hematological status. According to the baseline data a nutrition counseling and education program was developed and evaluated improved the nutritional status and health of female gymnasts. Mean body weight at the onset of the study was 42.1$\pm$7.0kg and was reduced to 41.8$\pm$6.1kg after the nutrition counseling and education program. The percent of body fat was significantly reduced from 13.9$\pm$3.7% to 13.1$\pm$3.1%(p<0.01) skinfold thickness of subscapular and thighs was reduced significantly(p<0.01, p<0.05) Mean daily intake levels of energy, protein calcium iron thiamin riboflavin and niacin were significantly elevated after the nutrition counseling and education program but were lower than the Recommenced Dietary Allowances. For the nutrition knowledge and food habits, the posttest mean scores showed a significant increase. The hematological status(hematocrit, serum ferritin) and the early follicle level of estradiol were elevated to a mild degree although it was not significant,. The follicular stimulating hormone level was elevated significantly(p<0.01) Gymnastica has been one of the sports implicated by the medical profession as having probable detrimental effects. The implications of such training to childs growth and maturation have yet to be determined . Most female athletes, however, experience poor nutritional status and delayed puberty The priorities were to prepared a more effective nutrition program and education material status and delayed puberty. 정신지체장애인의 구강보건교육 효과에 관한 연구 (A Study on the Effect of Oral Health Education on the Mentally Retarded Children)

  • The purpose of this study was to develop effective oral health education programs for mentally retarded children and promote their oral health, by offering oral health education for 45 mentally retarded children between age 6 to 20, tracking the change of their knowledge depending on the frequency of education, and examining the educational effect before and after oral health education. The children with mental retardation attended a special school for idiots in Gweonseon-gu, Suwon, Kyonggi Province, being able to take training(IQ 25-49). The education program was designed to be suitable for their cognitive power after consultation with a special school teacher. A teacher provided the same education seven times, once a week, and an interview was held with each of them to assess their correct answer rate. The findings of this study were as below: 1. The repeated oral health education served to have the children with mental retardation acquire better knowledge about harmful food for the teeth, what had to be done after eating cookies or candies between meals, the right time for toothbrushing, the concept of dental caries, and how to cope with dental caries(p<0.01). But after that education was offered four times, the frequency of that education made no difference. 2. The repeated oral health education increased, their knowledge on the role of the teeth and the right choice of toothbrush(p<0.01), yet there was no significant difference in their knowledge about oral health behavior, because they had already been familiar with that. 3. As a result of investigating the change of their oral health know-ledge before and after oral health education according to the type of handicap, the type of handicap made no significant difference to the change of their oral health knowledge. 4. The oral health education for the children with menial retardation had a significantly different effect on their knowledge about harmful food for the teeth, what had to be done after eating between meals, the right time for toothbrushing, the role of the teeth. the right choice and use of toothbrush, how to do toothbrushing, and fluorine(p<0.01).
