  • This study examined the effects of 'Dietary education for children's health UP' (DECHUP) on the changes in knowledge, attitudes, and practice (KAP) of nutrition and food safety in $5^{th}$ grade elementary school students in Incheon. The DECHUP program was conducted from May to October 2018 and consisted of education and activities focusing on the children's levels of understanding. Data were collected before, immediately after, and 6 weeks after DECHUP using the same method. All data were analyzed using SPSS ver 20.0. The level of knowledge and attitudes of the subjects to nutrition and food safety was significantly higher after than before DECHUP, but the attitude of boys did not show any significant difference after 6 weeks. Although there were no significant differences in the behavior for nutrition in the practice of the subjects, there were significant positive changes in the behavior of food safety. The higher the satisfaction of DECHUP, the more positive the change in knowledge, and the more positive the attitude and practice behaviors. Therefore, DECHUP has positive effects on the KAP of the subjects, and it will be helpful for elementary school students to form desirable eating habits if it can be carried out periodically and continuously.

대사증후군 대상자들의 건강코칭프로그램 평가 (The Evaluation of a Health Coaching Program on Metabolic Syndrome Patients)

  • Objectives: We assessed the feasibility of health coaching for health coaching program on metabolic syndrome. Methods: We developed a 6 month health coaching program on metabolic Syndrome. We recruited people with metabolic syndrome according to modified NCEP-ATP III. The participants were 9 men over 30 years of age who had taken a health screening at general hospital. We collected data such as demographics, BMI, body fat, blood pressure, HDL-cholesterol blood sugar and triglyceride. The program was analyzed by using Wilcoxon signed rank test. Results: Participants showed significantly decreased BMI, weight, waist circumference, body fat after 6 month program. They talked the awareness about their own behavior. They changed into better for eating habits, physical activities, and self management. Their discipline increased and eating habits became regular. They were satisfied to this program and showed strong confidence about their own change. Conclusions: Coaching did not direct certain behavioral change but guided self awareness and practice. Health coaching program showed long maintained effect to participants. We suggested health coaching as a helpful individual program to intervene risky health behavior especially for metabolic Syndrome.

기혼 여교사의 건강행위 실천에 영향을 미치는 요인 (Factors Affecting Health Behavior Practices of Married Women Teachers)

  • Purpose: To assess the health behavior practices and related factors among married women teachers. Methods: A descriptive correlation research design was employed. The subjects were 216 married women teachers who were conveniently sampled from 14 elementary schools, two middle schools and one high school. The data were collected using structured questionnaires and were analyzed via $x^2$-test, t-test, and logistic regression. Results: In terms of health behavior practices, 48.8% of subjects exercised more than once per week, 61.9% were consumers of alcohol, all of the subjects were non-smokers, 39.5% practiced healthy eating habit and 35.5% got an appropriate amount of sleep. In our logistic regression analysis, the significant factors affecting exercise practice were marriage years, and personality type. Factors affecting alcohol consumption were school grade and factors affecting eating habit were personality type, and school grade. Age was the only factor influencing adequate sleeping hours. Conclusion: We determined that each of the health behavior practices of married women teachers varied considerably in accordance with age, personality type, school grade, duration of work, and job stress, job satisfaction. The findings provide information that should be useful for the development of an integrated health promotion program for married women teachers.

Comparative study on body shape satisfaction and body weight control between Korean and Chinese female high school students

  • This study was conducted to compare body shape satisfaction, body image perception, weight control status, and dietary habits of Korean and Chinese female high school students in order to provide information for proper body image perception of adolescents. 221 students in Yongin, a city in Korea, and 227 students in Weihai, a city in China, were surveyed using questionnaires. Body shape satisfaction was significantly higher in Chinese students (P < 0.001) compared to Korean students. 76.2% of Korean students and 72.7% of Chinese students wanted a thinner body shape than their present body shapes. Experiences of weight control, laxative or diuretics uses, eating during weight control, and vomiting after eating were significantly higher in Korean students (P < 0.05-P < 0.001) compared to Chinese students. The score for dietary habits was significantly higher in Chinese students (P < 0.001) compared to Korean students, suggesting a more desirable dietary habit among Chinese students. Students of both countries showed a significantly positive correlation between body shape satisfaction and dietary habits, suggesting that as body shape satisfaction increases, dietary habits become more desirable. In conclusion, Korean female students showed a more distorted body image perception and had more poor dietary habits than Chinese students. Nutritional education for the establishment of normal body weight, proper body image perception, and healthy dietary habits are needed.

어린이 영양지수를 이용한 강화군 영·유아의 식행동 실태 평가 (Evaluation of Dietary Behavior of Infants and Toddlers in Ganghwa County by Using Nutrition Quotient (NQ))

  • The objectives of this study were to assess food intake frequency and food behavior of infants and toddlers by using the Nutrition Quotient (NQ). A total of 368 subjects (infants 111, toddlers 257) in Ganghwa county were analyzed in this study. The NQ was examined using an NQ questionnaire, which consisted of 19 food behavior checklist items. The items were grouped into five categories: balance, diversity, moderation, regularity, and practice. All data were statistically analyzed by SPSS 20, and significant difference was evaluated by Student's t-test and $x^2-test$. The BMIs of infants and toddlers were $16.54kg/m^2$ and $16.01kg/m^2$, respectively. The frequencies of consumption of vegetables and fruits were higher (p<0.001) in girls and toddlers compared to boys and infants, respectively. Food behavior of meal regularity (p<0.001), breakfast eating (p<0.001), and chewing well (p<0.001) were also higher in toddlers compared to infants. Total NQ score of infants and toddlers were 62.05 and 64.91, respectively, which were within medium grade. The NQ score of toddlers was higher than that of infants (p<0.0.5). NQ score was positively correlated with parent's education, monthly income, age, and exercise. Therefore, children and their parents need proper nutrition education and counseling to correct their eating habits and improve their nutritional status.

A study on the consumer behavior and attitude toward low-sodium convenience store foods

  • BACKGROUND/OBJECTIVES: This study aims to explore the potential of convenience stores as platforms for healthy food consumption, including low-sodium options, in response to the increasing trend of meal behaviors at convenience stores and the growing demand for healthy eating. SUBJECTS/METHODS: In the study, 627 Korean participants aged 10 to 39 were involved. A self-reported questionnaire survey was used and questions were regarding purchase patterns, consumption behaviors, perceptions and selection attributes of convenience store foods, and consumer perception factors for low-sodium options. Data analysis was conducted using SPSS 26.0 (SPSS, Version 26.0 for Windows, SPSS Inc., Chicago, IL, USA). RESULTS: The study uncovered significant disparities in the consumption behavior and perception of convenience store foods, as well as variations in the importance and satisfaction levels with convenience store food attributes, including consumer perception factors for low-sodium options, based on sex and age. Furthermore, it was observed that awareness of the need for low-sodium options significantly influenced purchase intentions. CONCLUSION: This study analyzed consumer attitude toward low-sodium convenience store foods to assess the potentiality for promoting healthy eating in convenience stores. These findings indicate the important role that convenience stores can play as platforms for healthy food sales.

Evaluation of dietary quality of adolescents using Healthy Eating Index

  • The aim of this study was to use the Healthy Eating Index-2005 (HEI-2005) to assess diet quality and determine the relationship between the HEI-2005 and the energy and nutrient intakes of adolescents. A cross-sectional study was conducted on 1,104 healthy adolescents, mean age of $15.8{\pm}1.24$ years. Dietary intake was measured with the 24-hour dietary recall method, and dietary quality was assessed by means of the HEI-2005. Diet quality scores ranged from 23.7 to 77.5. The mean score was found to be $51.5{\pm}9.07$ according to the HEI-2005. There were no differences according to gender, 42.8% had a poor diet and 57.2% had a diet that needs improvement. No subjects had a "good diet". Lower mean subgroup scores were found for whole grains, total vegetables, total fruits, dairy products, and meat and beans. Fruits and vegetables scores were significantly high in girls, whereas sodium, oil, and meat and beans scores were significantly high in boys. Total HEI-2005 scores were increasingly associated with parental education level when age and gender were adjusted. There was a negative correlation between HEI-2005 scores and age, total energy intake, and fat intake. Positive correlation was only observed in the HEI-2005 scores for protein and dietary fibre intakes. Consequently, the overall diet quality and nutritional habits of Turkish adolescents need modification and improvement. In the family, measures should be initiated by the government, including advertisements and campaigns.

Regional disparities in healthy eating and nutritional status in South Korea: Korea National Health and Nutrition Examination Survey 2017

  • BACKGROUND/OBJECTIVES: Concerns about regional disparities in heathy eating and nutritional status among South Korean adults are increasing. This study aims to identify the magnitude of regional disparities in diet and nutritional status among Korean adults who completed the 2017 Korea National Health and Nutrition Examination Survey (KNHANES). SUBJECTS/METHODS: The participants were a nationally representative sample of Korean adults aged 19 years and older from the 2017 KNHANES (n = 6,126). We employed the svy commands in STATA to accommodate the complex survey design. The relative concentration index (RCI), absolute concentration index (ACI) and index of disparity were used to measure regional nutritional inequalities. RESULTS: Overweight and obese adults were more prevalent among the poor than among the rich in urban areas (RCI = -0.041; P < 0.05), while overweight and obese adults were more prevalent among the rich than among the poor in rural areas of South Korea (RCI = 0.084; P < 0.05). Economic inequality in fruit and vegetable intake ≥ 500 g per day was greater in rural areas than in urban areas in both relative size (RCI = 0.228 vs. 0.091, difference in equality = 0.137; P < 0.05) and absolute size (ACI = 0.055 vs. 0.023, difference in equality = 0.032; P < 0.05). CONCLUSIONS: This study provides useful information identifying opposite directions in the relative concentration curves between urban and rural areas. Adult overweight/obesity was more prevalent among the poor in urban areas, while adult overweight/obesity was more prevalent among the rich in rural areas. Public health nutrition systems should be implemented to identify nutritional inequalities that should be targeted across regions in South Korea.

식이 지방에 대한 영양 지식과 태도에 관한 조사 (The Nutrition Knowledge and Attitudes toward Dietary Fats)

  • Knowledge and attitudes on current selection of fats and oils were surveyed among college students and USDA extension off campus faculties. The objective of this survey was to obtain information about the nutrition knowledge and attitudes toward fats and to assess relationships between the nutrition knowledge, general attitudes toward dietary fats, and specific attitudes toward the eating of certain foods. The attitudes toward and nutrition knowledge of dietary fat sections consisted of 22 and 39 statements respectively. Avoiding red meat and eggs and avoiding fats as a flavoring were attitudes whose maintenance may require special, long-term intervention strategies. Replacing high-fat foods with low-fat foods, modification(cutting fat off any meat) and substitution were easily adopted and maintained low-fat habit. The responses to wanting to lose some weight and feeling better if increasing exercise were favorable. The attitudes toward the possible relationships between fat consumption and health were favorable. Respondents on the nutrition knowledge test attained a mean score of 129.69 and a median score of 127 our of the highest possible score of 200. Extension off campus faculties, nutrition majoring/majored subjects, and over 41-year-olds tended to have more favorable general attitudes and specific attitudes toward the consumption of certain foods and higher knowledge. Senior students had more negative general attitudes and specific attitudes, and college graduates and graduate students had more nutrition knowledge. Nutrition know-ledge was related to general attitudes toward dietary fats, but not to more specific attitudes toward the eating of certain foods. Nutrition education will not be effective in modifying the intake of dietary fats in the population because nutrition knowledge related to general attitudes toward dietary fats and general nutrition practice but not the eating of certain foods.

Comparisons of food security, dietary behaviors and nutrient intakes between adult North Korean Refugees in South Korea and South Koreans

  • BACKGROUND/OBJECTIVES: North Korean refugees (NKRs) in South Korea are a unique population as they must adapt in a new country with similar cultural traits but different social, political, and economic systems, but little research has been conducted on diet and nutrition in this population. This study examined food security, dietary behaviors, and nutrient intakes among adult NKRs living in South Korea and compared them to those of South Koreans. SUBJECTS/METHODS: The subjects were 139 adult NKRs (25 men, 114 women) living in the Seoul metropolitan area, and 417 age- and sex- matched South Korean controls (SKCs; 75 men, 342 women) selected from the Korea National Health and Nutrition Examination Survey (KNHANES). Food security and dietary behaviors (meal skipping, eating-out, meals with family, nutrition education and counseling, and nutrition label knowledge and utilization) were obtained using self-administered questionnaires. Nutrient intakes were assessed by 24-hr recall. The statistical analysis was performed using IBM SPSS ver. 23.0. RESULTS: In South Korea, food security had improved over the previous 12 months, but remained significantly poorer for NKR women than SKC women. Meal skipping was three times more frequent than for SKCs and eating-out was rare. Average energy intake was 1,509 kcal for NKR men and 1,344 kcal for NKR women, which was lower than those of SKCs (2,412 kcal and 1,789 kcal, respectively). Significantly more NKRs (men 24.0%, women 21.9%) showed simultaneously deficient intake in energy, calcium, iron, vitamin A, and riboflavin than SKCs (men 2.7% (P = 0.003), women 7.0% (P < 0.001)). NKR women had a significantly higher index of nutrient quality (INQ) for some nutrients than SK women. CONCLUSIONS: This study reports significant differences in food security, dietary behaviors, and nutrient intakes between NKRs and SKCs. Generally, NKRs reported lower intakes despite improved food security, but relatively good INQs across nutrients. Further research is needed to understand processes of food choice and consumption among NKRs to provide appropriate support aimed at improving diets.
