Universal Design characteristics shown in the Japanese model houses (일본 주택의 유니버설디자인 특성에 관한 연구)

  • Since aging has become one of most hot and serious issues in the whole global world, universal design as a strategic concept to enable the elderly age in place has received much attention and its importance is getting recognized. Japan has undergone the Aging phenomenon much earlier than Korea and other countries. During that time, through much trials and errors, it accumulated the wisdoms and techniques to precede aging friendly environment and products. Therefore current Japan house is a comprehensive setting which embraces lots of universal design features that has a valuable implication for Korean development that faces fast aging future. The purpose of this study was to delineate characteristics of universal design features appeared in Japanese Model houses. One site of housing park in the city where various model houses of representative housing construction companies was selected as a cluster area for data collecting. Data were collected mainly through field survey at the housing park of Tokyo during November, 2006, and additional data were collected through website and company information of relevant company. Universal design features were extracted for 17 houses of the housing park and sorted and analyzed according to the analysis frame. The frame were made using 2 major clusters; space area, and 8 universal design principle. Results showed a range of universal design feature and its detail universal design principle satisfied. The 8 principle currently developed became to house realistic practical examples and theory became proved its impractical power. The academic, educational and industrial implication were documented.

Effect of Mixed Soybeans Materials on Qulity Characteristics of Traditional Soybean Paste(Doenjang) during Aging (혼합콩이 전통된장의 숙성 중 품질에 미치는 영향)

  • The effects of five colored soybean (blue, red, yellow, white, and black) varieties on the quality characteristics of soybean paste (Doenjang) were investigated for proximate composition, salt content, pH, color, organic acid content, amino acid content, and mineral content after 80 days of aging. Soybean paste (Doenjang) samples were divided into TDS (traditional Doenjang prepared with soybean) and TDM (traditional Doenjang prepared with mixed soybeans, kidney bean, black soybean, kind of small bean, sword bean, green bean, red bean, at a radio of 1:1:1:1:1(w/w)). Moisture content was 49.66% for TDM and 49.52% for TDM. Protein and salt contents of the TDS sample were higher than those of TDM. The "L" values of the TDB sample increased the aging period was decreased. In contrast, the "L" and "$\alpha$" values of TDM did not show any significant differences. The main organic acids detected were malic acid > lactic acid > tartaric acid in the TDS and TDM samples. Glutamic acid contents were 2.83 g/100 g for the TDS sample and 2.15 g/100 g for the TDM. The levels of K, Mg, and Ca of the TDS sample were higher than those of TDM. No significant difference occurred between TDS and TDM regarding their quality characteristics after 80 days of aging. Further studies needed include sensory evaluation and functionality of soybean paste made from mixed soybean materials.

  • Free sugars of Kochujang which were prepared with different starch sources, i.e., glutinous rice, polished barley, wheat flour and sweet potato, were investigated for three months of aging. Glucose was found in all tested samples during aging period and the content increased with time, particularly higher for glutinous rice while lower for sweet potato. Fructose also was found through aging period, its content increased for a month and decreased later. The data showed higher fructose content in the order of sources of sweet potato, wheat flour, polished barley and glutious rice. Maltose and sucrose were detected only at the beginning of aging period and the content were less than 3.5% for maltose in all of samples and than 0.4% for sucrose with glutinous rice and wheat flour. Trace amount of rhamnose was detected in the Kochujang made from polished barley.

The Influencing Factors on Aging Anxiety of Middle-aged Men in Rural Areas During the COVID-19 Pandemic (코로나19 팬데믹 상황에서 농촌 거주 중년 남성의 노화 불안 영향요인)

  • The purpose of this study was to identify the influencing factors on aging anxiety by middle-aged men in rural areas during the COVID-19 pandemics. The design of this study was descriptive survey study. The participants were 180 middle-aged men aged 45 to 64 living in G province. Collected data were analyzed by descriptive statistics, t-test, ANOVA, Pearson's correlation coefficient and multiple regression analysis with SPSS statistics 26.0 program. As a result of regression analysis, As a result of regression analysis, influencing factors on aging anxiety were stress(β=.10, p=.004), economic difficulties (β=.16, p=.007), COVID-19 psychological distress(β=.18, p=.003), family care burdens(β=.50, p<.001), and the explanatory power of the variables was 60.5%(F=55.93, p<.001). In the future, interventions are needed to manage aging anxiety and stress in middle-aged men, and support policies are needed to reduce psychological distress and overcome economic difficulties caused by COVID-19.

Evaluation of the physicochemical, metabolomic, and sensory characteristics of Chikso and Hanwoo beef during wet aging

  • Objective: This study aimed to evaluate the physicochemical, metabolomic, and sensory qualities of Chikso and Hanwoo beef during 28 days of wet aging. Methods: Rump and loins from Hanwoo and Chikso were obtained and wet-aged for 28 days at 4℃. The samples were collected at 7-day interval (n = 3 for each period). Physicochemical qualities including pH, meat color, shear force value, and myofibrillar fragmentation index, metabolomic profiles, and sensory attributes (volatile organic compounds and relative taste intensities) were measured. Results: Chikso showed a significantly higher shear force value than Hanwoo on day 0; however, no differences between breeds were found after day 14, regardless of the cuts. Overall, Chikso had more abundant metabolites than Hanwoo, especially L-carnitine and tyrosine. Among the volatiles, the ketone ratio was higher in the Chikso rump than the Hanwoo rump; however, Chikso had fewer alcohols and aldehydes than Hanwoo. Chikso rump showed higher taste intensities than the Hanwoo rump on day 0, and sourness decreased in Chikso, but increased in the Hanwoo rump on day 14. Wet aging for 14 days intensified the taste of Chikso loin but reduced the umami intensity of Hanwoo loin. Conclusion: Chikso had different metabolomic and sensory characteristics compared to Hanwoo cattle, and 14 days of wet aging could improve its tenderness and flavor traits.

Analysis of Changes in the Phytochemical Content of Tartary Buckwheat Flowers and Seeds during the Post-flowering Growth

  • Buckwheat (Fagopyrum esculentum), which is a traditional Korean crop, has been known as a health food due to its rich nutrition. This study was conducted to evaluate the change in flavonoid content of flowers and seeds during post-flowering growth of Korean tartary buckwheat variety 'Hwanggeummiso', with the aim of providing basic data for the development of functional food and feed additive. Tartary buckwheat took 69 and 99 days from the sowing date to reach the flowering and maturity stages, respectively. As a result of examining the flavonoid components of each part of tartary buckwheat, chlorogenic acid, rutin, and isoquercitrin of flowers increased from the flowering period on 22 May (0 days after flowering) to 42 days after flowering, while quercetin increased until 21 days after flowering and then decreased thereafter. In seeds, chlorogenic acid, rutin, and isoquercitrin were most abundant at the time of seed-bearing on 14 days after flowering, and showed a decreasing tendency thereafter. On the other hand, quercetin showed a tendency to increase until 21 days after flowering and then decrease. Overall, the flavonoid content was higher in flowers than in seeds, with rutin being particularly prominent. Based on this, the possibility as food materials and feed additives was confirmed using buckwheat produced in Korea.

Changes of Volatile Flavor Compounds of Seibel Grape Must during Alcohol Fermentation and Aging (Seibel 포도즙 알코올 발효 및 저장 중 휘발성 향기성분의 변화)

  • A great variety of the volatile metabolic by-products was formed in yeast cell during alcohol fermentation. The seibel grape (Vitis labrasca) which was grown in the Southern Korea used for wines. The objective of this research was to identify the volatile flavor compounds during alcohol fermentation and aging at 12$^{\circ}C$. saccharomyces cerevisiae and Schizosaccharomyces pombe were inoculated and fermented in seibel grape must. The volatile flavor compounds of logarithmic, stationary and death phases were extracted, concentrated and identified by gas chromatography/mass spectrometer (GC/MS). The volatile flavor compounds were determined by a Hewlett-Packard 5890 II Plus GC which was equipped with Supelcowax 10 fused silica capillary column (60m$\times$0.32mm$\times$0.25${\mu}{\textrm}{m}$ film thickness) wall coated with polyethyleneglycerol. The scan detection method allowed the comparison of the spectrum from the chromatogram of volatile flavor compounds to those in data Wileynbs base library. Among the volatile compounds collected by ether-hexane extraction method, the evolution of 20 main compounds, such as 9 esters (ethyl butyrate, isoamyl acetate, ethyl caproate, n-hexyl acetate, ethl caprylate, ethyl caprate, diethy succinate, ethyl hexadecanoate, 2-pheneethyl acetate), 4 alcohols (3-methyl-1-butanol, 1-hexanol, 1-heptanol, benzoethanol), 4 ketones and acids (2-octanone, caproic acid, caprylic acid, capric acid), 2 furan and phenol (2,6-bis(1,1-dimethyl ethyl)phenol, 2,3-dihydrobenzofuran) were observed during alcohol fermentation and aging. The production of the esters during alcohol fermentation with S. cerevisiae was higher than those of Sch. pombe. The sensory scores of the aged wine samples in aroma, taste and overall acceptability were not significantly different(p<0.05).

Effects of Ichungwhan on the Aging Process (이정환(二精丸)이 노화과정에 미치는 영향)

  • Objectives: It is well known that aging and aging-related diseases are linked to the increased level of oxidative stress caused by reactive oxygen species(ROS) and reactive nitrogen species(RNS). Nonprotein-SH decreases during aging, while substances such as ROS, nitric oxide(NO), peroxynitrite($ONOO^-$), myeloperoxidase(MPO), and dityrosine show a significant increase. This study investigated the effect of Ichungwhan on the aging process by examining its effect on the generation of the above-mentioned substances. Methods: Four comparison groups of SD rats were used. They were 6 month-old rats, 24 month-old rats, and 24 month-old rats fed with food containing 0.1% and 0.3% of Ichungwhan extract. The amount of NO, $ONOO^-$, and ROS in the rats' kidneys were examined using a fluorescence microplate reader. The reagents used for this purpose include: dihydrorhodamine 123 (DHR 123), 2',7' -dichlorodihydrofluorescein, diacetate(DCFDA), and 4,5-diaminofluorescein(DAF-2). A spectrophotometer was used to investigate the reactivity of nonprotein-SH and myeioperoxidase(MPO), using reagents such as trichloroacetic acid(TCA) and tetramethylbenzidine(TMB). The amounts of MPO protein and dityrosine were measued by western blot. Results: The observed effects of Ichungwhan on rats were as follows: increase of nonprotein-SH; effective decrease of RNS level by suppression of the generation system of $ONOO^-$ and NO; decrease of ROS level; decrease of the MPO reactivity and the subsequent reduction of amount of MPO protein; retardation of dityrosine formation. It can be hypothesized, therefore, that Ichungwhan affects both the earlier and later phases of the molecular inflammatory process, and retards the aging process. Conclusions: Empirical evidence in this study supports a role for Ichungwhan in generation mechanisms of aging process-linked substances ROS, NO, $ONOO^-$, nonprotein-SH, MPO and dityrosine. Affects contrary to the aging process observed in rats beg further empiricism to investigate potential application of Ichungwhan as a medication for age-related diseases in humans.

EFFECTS OF AGING TREATMENT ON MICROSTRUCTURE AND STRENGTH OF WELD HEAT AFFECTED ZONE OF 6N01-T5 ALUMINUM ALLOY

  • Effects of the aging treatments on the microstructure and strength of heat affected zone(HAZ) in the welds of a age-hardened Al-Mg-Si alloy, 5N01-T5, were investigated. The base metal aging treatments before MIG welding were conducted at 423K to 473K for 28.8ks Post weld heat treatment(PWHT) to recover the HAZ strength was performed at 448K for 28.8ks. Microstructure observations, hardness measurements and tensile tests were conducted to study properties of the MIG weld joints. The position of the softest region in HAZ where the hardness insufficiently recovered after natural aging and PWHT was at a distance of approximately 15mm from the center of the fusion zone. Hardness of the softest regions after natural aging and PWHT decreased with increase in the base metal aging temperature. TEM observation clarified that strengthening ${\beta}$"(Mg$_2$Si) precipitates and coarse ${\beta}$′ precipitates affected the hardnes of HAZ. Incomplete recover of hardness in HAZ after PWHT was caused by the precipitating of non-hardening ${\beta}$′ phase during the weld thermal cycle. In order to examine the effects of weldheat input and welding speed, the laser weld joints were also investigated and compared with the MIG weld ones. Laser welding had the narrower width of the softened regions in HAZ compared with MIG welding. The hardness of the softest regions of the laser welds after PWHT was higher than that of the MIG welds. Quantitative relations between hardness of the softest region and base metal aging temperature were obtained for both welding processes. Accordingly, the equations to estimate the strength of the weld joints after PWHT with varying base metal temperatures were proposed for MIG welding and laser welding.

Bezafibrate prevents aging in in vitro-matured porcine oocytes

  • Bezafibrate, a fibrate drug used as a lipid-lowering agent to treat hyperlipidemia, is a pan-agonist of peroxisome proliferator-activated receptor alpha. It can enhance mitochondrial fatty acid oxidation, oxidative phosphorylation, and mitochondrial biogenesis. After ovulation, oocytes may get arrested at the metaphase II (MII) stage until fertilization beyond optimal timing, which is termed as post-ovulatory aging. Post-ovulatory aging is a disease that degrades DNA, mitochondria, and oxidative system, and has a negative impact on embryo development and quality; however, the impact of bezafibrate during post-ovulatory aging has not been fully defined. In the present study, we assessed the ability of bezafibrate to prevent the progression of aging in in vitro conditions as well as the underlying mechanisms in pigs. An appropriate concentration of this drug (50 µM) was added, and then oxidative stress, reactive oxygen species downstream, mitochondrial biogenesis, and mitochondrial function were analyzed via immunofluorescence staining and real-time polymerase chain reaction. Bezafibrate significantly alleviated reactive oxygen species and ameliorated glutathione production simultaneously in oocytes and embryos. Moreover, it diminished H2A.X and attenuated CASPASE 3 expression produced by oxidative stress in oocytes and embryos. Furthermore, bezafibrate remarkably improved the mitochondrial function and blastocyst quality as well as markedly reduced the mitochondria/TOM20 ratio and mtDNA copy number. The elevated PARKIN level indicated that mitophagy was induced by bezafibrate treatment after post-ovulatory aging. Collectively, these results suggest that bezafibrate beneficially affects against porcine post-ovulatory oocyte aging in porcine by its antioxidant property and mitochondrial protection.
