  • The purposes of this research were to assess dietary fatty acid patterns and to elucidate the relationship between the serum cholesterol levels and dietary fatty acid patterns, plasma fatty acid compositions, BMI (body mass index), and other lipid profile. The subjects were 151 adults aged 23 to 80 years, selected from the Outpatient Clinic and Cardiova-scular Department of the Seoul Municipal Hospital. Dietary data were obtained using three day food records. Sixteen dietary fatty acids were analyzed using Korean and US nutrient databases. The subjects were divided into three serum cholesterol levels: desirable (< 200 mg/dl, N = 44), borderline-risk ($\geq$ 200 - < 240 mg/dl, N = 35), and high-risk ($\geq$ 240 mg/dl, N = 72) groups. The high-risk group had higher BMI, waist, and waist to hip ratio (WHR) than the desirable and borderline-risk groups. Serum concentrations of triglyceride, LDL cholesterol and LDL/HDL cholesterol ratio were significantly higher in the high-risk group as compared to those in the other two groups. The serum cholesterol levels were highly correlated with BMI (r = 0.435), triglyceride (r = 0.425) and LDL/HDL cholesterol (r = 0.870) ratio. The highest fatty acid intake was from oleic acid (33 - 34% of total fatty acid intakes), which was followed by linoleic acid (27%), palmitic acid (19%), and stearic acid (7%). There was no correlation between the serum cholesterol levels and the dietary fatty acid intakes, polyunsaturateumonounsaturateusaturated fatty acids (P/M/S) and $\omega$6/$\omega$3 ratios. The correlation between plasma fatty acids such as myristic acid, oleic acid, linoleic acid, and docosahexaenoic acid and serum cholesterol levels was also weak. • This study examined the effect of CLA, flaxseed oil and fish oil and their combination forms on crude fat of liver and fatty acid profiles of liver, breast and thigh meat in broiler chicks. A total of 72, 1-day-old Cobb broilers were assigned to 6 groups, and fed an experimental diet supplemented with 5 different fat sources; conjugated linoleic acid (2% CLA), flaxseed oil (2% FXO), fish oil (2% FHO), CLA and flaxseed oil combination (1:1; 2% CXO), and CLA and fish oil combination (1:1; 2% CHO). Eight birds per treatment were processed, and liver, breast and thigh samples were investigated at 21 d of age. As a result of this study, most fatty acids of liver, breast and thigh meat were influenced by fat sources supplemented in the diet (p<0.05). CLA addition resulted in an increase of crude fat and saturated fatty acid (SFA) content but a concomitant decrease in n-3 to n-6 fatty acid ratio was observed in liver (p<0.05). Moreover, the same trends of SFA and n-3 to n-6 fatty acid ratio were also observed in breast and thigh meats of birds fed CLA alone. In the CXO-fed group or CHO-fed group, n-3 and n-3 to n-6 fatty acid ratio in both breast and thigh meat increased compared with CLA group, while SFA content decreased (p<0.05). FHO fed-groups had the lowest proportion of n-6 fatty acid in both breast and thigh meats compared to other fat source treatments (p<0.05). In conclusion, the increased levels of crude fat and SFA in liver and meats obtained by feeding CLA could be reduced by its combination with FXO or FHO. In addition, the combination of CLA and FXO or FHO fed to broiler chicks could increase the n-3 to n-6 fatty acid ratio of their meat along with the deposition of CLA.

  • The dietary effect of water extracts of Liriopis tuber(WELT) in the diabetic SD-rats on the level of blood sugar and serum cholesterol was investigated. The experimental plots divided into normal group(N), diabetic control(DC), 5% WELT-group(WELT-I) and 10% WELT-group (WELT-II). Each group was fed for 6 weeks, then continuously fed for 1 more week after streptozotocin injection. The loss of the body weight fed for one week after induction of the diabetes was 2.2~6.3% in the WELT-I and -II groups, but it was 18.6% in the DC-group. There was no significant difference in the feed intakes after diabetes induction between N-group and WELT-group, while it was significantly increased in DC-group. The feed efficiency ratios before diabetes induction were 1.70 in WELT-I group, 1.53~1.59 in the N, DC and WELT-II group, while the ratios after diabetes induction were 0.92 in DC-group, 1.51~1.83 in the N, WELT-I and -II group. While the amounts of water intakes for one week after diabetes induction was 625.4 mL in the DC-group, and it were 364.3~371.1 mL in the WELT-groups showing no significant difference with N-group. The excretion amounts of urine were 431.96 mL in DC-group for one week after diabetes induction, and it was 182~192.84 mL in WELT-groups. The ratios of liver weight against body weight were 2.74% in N-group, 2.93~2.96% in WELT-groups, but it was 4.01% in DC-group. The level of blood glucose in WELT-groups fed for one week after diabetes induction were 136.8~138.6 mg/dL showing no significant difference with N-group, but it was 357.8 mg/dL in DC-group. The level of serum triacylglycerol and serum total cholesterol were 93.8 and 68.7 mg/dL in N-group, 120.1 and 101.6 mg/dL in DC-group, 97.4~100.6 and 60.8~67.7 mg/dL in WELT-groups, respectively, showing no significant difference between N-group and WELT-groups. HDL-cholesterol/total cholesterol ratio were 0.63 in N-group, 0.57~0.67 in WELT -groups, which was significantly higher than that of DC-group(p<0.05). Atherogenic index were 0.58 in N-group, 0.49~0.74 in WELT-groups, but it was 1.32 in DC-group. The above results suggest that the WELT diets may have both preventive and curing effects against the diabetes.

  • This study was conducted to investigate the effects of different dietary lipid sources on the growth, feed utilization, body composition and tissue fatty acid profile of olive flounder Paralichthys olivaceus. Five isonitrogenous and isocaloric diets were formulated by adding various lipid sources including soybean oil (SO), eicosapentaenoic acid triglyceride (EPATG) and ethyl ester (EPAEE) forms, docosahexaenoic acid triglycerides (DHATG) and a 1:1 blend of soybean oil and DHATG. Triplicate groups of fish ($6.8{\pm}0.01g$) were fed one of the experimental diets to apparent satiation twice daily for 8 weeks. Fish fed the DHATG diet had the highest growth, protein efficiency ratio and feed efficiency values which were significantly higher than those fed the SO and EPAEE diets. Whole body proximate composition and somatic parameters were not influenced by the dietary treatments. Muscle of fish fed with SO diets were rich in 18:1n-9, 18:2n-6 and 18:3n-3, whereas those of fish fed with EPATG, EPAEE and DHATG diets were rich in n-3 highly unsaturated fatty acids (HUFA). These findings indicated that the inclusion of n-3HUFA oils in olive flounder feed could be beneficial for the fish while simultaneously increasing the concentration of beneficial n-3HUFA in fish fillets destined for the human consumer.

  • The present study undertaken to investigate the interrelationship among their regular dietary fatty acid intake, body fat content(BFC), and plasma lipid fractions(PLF) of middle-aged Korean women. Forty-nine women (age 30 to 49) participated in this study in which the aim was to determine their total nutrient intake per day, BFC and PLF, and to analyse the intercorrelations of these. Strong correlation was seen among their body mass index, mid-upper-arm-circumference, and BFC which were positively correlated with plasma total lipids(TL) and triglycerides(TG). Dietary myristic acid and lauric acid were positively correlated with both total cholesterol(TC) and LDL-cholesterol (LDL-C) in plasma. Palmitic acid, stearic acid, oleic acid, and total monounsaturated fatty acid(MUFA) were negatively correlated with HDL-cholesterol(HDL-C). Although dietary total saturated fatty acid (SFA) was not correlated with TC and LDL-C, it was positively correlated with TL and TG in plasma. However, dieary n-3 polyunsaturated fatty acid(PUFA) in regular Korean diet was not correlated with any of lipid fractions in plasma which might be due to the high ratio of n-6/n-3 in their diet. From the above results, it was concluded that plasma lipid fractions were modulated by their dietary nutrients, especially the types of the fatty acids. Dietary SFA and MUFA intake not PUFA are strongly correlated with LDL-C and HDL-C in the Korean diet This may relate to the frequency of coronary heart disease in the age group.

  • This study investigated the effects of dietary lipid sources on growth performance and body composition of juvenile far eastern catfish, Silurus asotus. Three replicate groups of fish (average weight 3.6 g) were fed with one of the following experimental diets containing 10% beef tallow (BT), 5% BT plus 5% corn oil (CO), 5% BT plus 5% linseed oil (LO), or 5% BT plus 5% squid liver oil (SO) as the lipid source for 5 weeks. No significant difference was observed in the survival among groups. The weight gain of fish fed the LO (high in 18:3n-3) and SO (high in n-3 highly unsaturated fatty acid) diets was significantly higher than that of the fish fed the CO (high in 18:2n-6) and BT diets (P<0.05). The feed efficiency of fish fed LO and SO diets was significantly higher than that of the fish fed the BT diet (P<0.05), but not significantly different from that of the fish fed the CO diet. The protein efficiency ratio of fish fed the SO diet was significantly higher than that of fish fed the CO and BT diets (P<0.05), but not significantly different from that of fish fed the LO diet. The 18:1n-9 of whole-body polar lipid fraction in fish fed the BT diet increased compared to that of fish fed the other diets. Fish fed the CO and LO diets had significantly higher contents of 18:2n-6 and 20:4n-6, and 18:3n-3, than the fish fed the other diets in polar and non-polar lipid fractions, respectively (P<0.05). Significantly higher contents of 20:5n-3 and 22:6n-3 were observed in the whole-body polar lipid fraction of fish fed the SO diet compared with fish fed the other diets (P<0.05). The study results indicate that linseed oil and squid liver oil containing n-3 fatty acids are good dietary lipid sources for the growth of far eastern catfish.

  • This study was designed to observe the effects of the feeding mixed with the sardine oil containing n-3 EPA, DHA and the safflower oil in which rich n-6 linoleic acid on the improvement of the lipids and on the fatty acid matabolism of serum lipoprotein in the dietary hyperlipidemic rats. Experimental oils mixed with 16% butter(control group) and 8% butter+8% olive oil, 8% butter and various level of sardine and safflower oils were administered to the male rats of the Sprague Dawley for 4 weeks. Concentrations of total cholesterol in serum lipoproteins were highest in the LDL, followed by VLDL, HDL and chylomicron components. in the triglyceride concentrations, chylomicron were highest, and much VLDL, LDL, HDL components. There were highest in the HDL, followed by LDL, VLDL and chylomicron in phospholipid concentrations of serum lipoproteins. Concentrations of total cholesterol, triglyceride and phospholipid in serum lipoprotein were lower in the other groups than in the control groups, and particularly, lowest in the group 5(4% sardine oil+4% safflower oil). From this results, the feeding equal quantity mixed oil with n-3 PUFA rich sardine oil and n-6 PUFA rich safflower oil were effective on the improvement of the lipid composition in the serum lipoprotein. It might be due to the effects of appropriate rations of P/S, 0.85 and n-6/n-3P, 2.85 in the test lipids. In the fatty acid composition of serum lipoprotein, ratio of P/S and n-3/n-6P were influenced from the fatty acid compositions of the mixed test lipids. And EPA contents were higher in the chylomicron components.

  • Objective: The aim of this experiment was to evaluate the effect of dietary supplementation with the docosahexaenoic acid (DHA)-rich microalgae, Aurantiochytrium limacinum (AURA) on pig performance, carcass traits, and the fatty acid composition of pork Longissimus lumborum (LL) and backfat. Methods: A total of 144 Pig Improvement Company (PIC)${\times}$Goland finishing pigs (72 females and 72 castrated males) of mean weight 117.1 (${\pm}13.1$) kg were blocked by sex and body weight and provided with 0% or 1% AURA in isonutritive and isocaloric diets. A total of 24 pens provided 12 replicates per treatment. Animals were weighed on day 0 and 28 with feed and water intake recorded per pen. After 31 days supplementation (28 days of study and 3 days until the slaughtering date) three animals per pen (n = 72) were slaughtered and the LL and backfat thickness, lean meat content and dressing percentage were recorded for the carcasses. The fatty acid (FA) profile of the LL and backfat was established by direct FA methyl ester synthesis. Results: No differences were observed for any performance parameters or carcass traits. Supplementation with AURA resulted in significant changes to the FA profiles of both the LL and backfat with male and female pigs responding differently to supplementation in terms of particular FAs. Overall, pork LL samples had significantly higher eicosapentaenoic acid (p<0.001) and DHA concentrations (p<0.001), and higher omega-3 (n-3) FAs (p<0.001), as well as an increased omega3:omega6 (n-3:n-6) ratio (p = 0.001). For backfat, supplementation resulted in significantly higher amounts of DHA (p<0.001) and n-3 FAs (p<0.001). Conclusion: These results indicate that dietary supplementation with 1% AURA over a 31 day period can increase the FA composition of pork LL and backfat, specifically the DHA, with no major impact on growth performance and carcass traits.

  • The objectives of the present study were to investigate the effects of different dietary ratios of whole-crop corn silage and alfalfa hay on nitrogen (N) digestion, duodenal flow and metabolism across the portal-drained viscera (PDV) of growing beef steers, and to elucidate their relationships. Four steers (236${\pm}$7 kg BW) fitted with duodenal cannulae and chronic indwelling catheters into the portal and mesenteric veins and abdominal aorta were used in a 4${\times}$4 Latin square design. Animals were fed (at 12-h intervals) the 4 diets consisting of whole-crop corn silage (C) and alfalfa hay (A) in 80:20 (C8A2), 60:40 (C6A4), 40:60 (C4A6) and 20:80 (C2A8) ratios of which dietary crude protein (CP) was 10.5, 12.0, 13.5 and 15.0% of dry matter (DM), respectively. Feeding level was restricted to 95% of ad libitum intake to measure N digestion, blood flow and net flux of N across the PDV. Digestibility of DM and neutral detergent fiber and digestible energy intake linearly increased as the ratio of alfalfa hay increased. The N intake, duodenal flow and intestinal disappearance increased linearly with increasing alfalfa hay. Arterial and portal concentrations of ${\alpha}$-amino N showed a quadratic response to increasing levels of alfalfa hay and were the highest in steers fed the C6A4 diet. The net PDV release of ${\alpha}$-amino N and ammonia N increased linearly with increasing alfalfa hay, but urea N uptake by PDV did not differ among diets. As a percentage of apparently digested N in the total gut, net PDV release of ${\alpha}$-amino N linearly decreased from 66 to 48% with increasing alfalfa hay. Conversely, net PDV recovery of ${\alpha}$-amino N to intestinal N disappearance varied with increasing alfalfa hay accounting for 49, 50, 58 and 61% on C8A2, C6A4, C4A6 and C2A8 diets, respectively. Net PDV uptake of urea N, relative to apparently digested N, linearly decreased from 81 to 25% as alfalfa hay increased from 20 to 80% of DM intake. Considering PDV uptake of urea N, microbial efficiency and conversion of total tract digested N to PDV ${\alpha}$-amino N net supply, a diet consisting of 80% whole-crop corn silage and 20% alfalfa hay (10.5% CP) was the best, while considering the quantities of intestinal N disappearance and ${\alpha}$-amino N absorption, a diet of 20% whole-crop corn silage and 80% alfalfa hay (15% CP) would be preferred. The proportion of ${\alpha}$-amino N recovered by PDV relative to the intestinal N disappearance may vary with energy intake level of mixed forage diets.
