Purpose: Changes in eating habits and malnutrition due to dysphagia are important health problems for older adults. This study investigated the effects of an educational program aimed at improving diet quality in community-dwelling older adults at risk for dysphagia in South Korea. Methods: We assessed 27 individuals in the experimental group and 26 individuals in the control group between September and October 2015. All participants were aged 65 years or older and were at risk for dysphagia. A combined diet and exercise program was applied to the experimental group (n = 27) for six weeks. We examined changes in participants' eating habits and their knowledge and attitudes concerning dysphagia risk. The nutrition intake of all participants was measured before and after the intervention using 24-hr dietary recall. Results: There was a significant increase in knowledge of dysphagia risk in the experimental group, with scores increasing from 3.7 to 7.1, out of 10 points (p < 0.001). There were also significant improvements in eating habits after the intervention in the experimental group, with scores increasing from 21.9 to 28.3, out of 36 points (p < 0.001). The attitude score of participants in the experimental group increased significantly, from 15.2 to 16.7, out of 20 points (p = 0.016). Conclusion: Developing educational programs can help older adults living in the community lead a healthier lifestyle and improve their ability to manage their diet.
Objectives: This study aims to evaluate the effectiveness of a lifestyle intervention on the improvement of obesity, health behaviors and behavioral determinants among Korean adults. Methods: Obese adults aged 30 to 59 years (n=76) were randomly assigned to the intervention group (IG) or the comparison group (CG). The IG received a 3-month multi-component lifestyle intervention, while the CG received minimal information on obesity. The program consisted of health counseling, health education booklet and health diary. Health examination and self-administered survey were conducted before and after the intervention to determine the effectiveness of the program. Results: After the intervention. health indices of the IG were significantly improved in weight(p=.003), waist circumference(p=.011), % body fat(p=.021), and total abdominal fat area(p=.041). The reduction of waist circumstance among IG participants was better than that of those in the CG(p=.017). The IG demonstrated significant improvements in dietary behaviors(p=.013), periodic measurement of waist circumstance(p=.005), pros of weight control(p<.001) and awareness of one's current biomarkers(p=.038) better than the CG did. The proportion of normalized participants in waist circumference was 21.1% in the IG and 8.7% in the CG(p=.017). Conclusions: Lifestyle intervention program can improve the obese status and health behaviors in adults.

This study was performed to evaluate the differences in blood pressure, sodium intake and dietary behavior changes according to the extent of session attendance on sodium reduction education program for pre-hypertensive adults in a public health center. Sodium reduction education program consisted of 8 sessions for 8 weeks. Fifty three patients who completed the pre and post nutritional assessments were classified into 2 groups according to the session attendance rate. Nineteen participants who attended the education program 3 times or less (≤3) were categorized into the less attendance (LA) group and 34 participants attended 4 times or more (≥4) into the more attendance (MA) group. Blood pressure, anthropometric measurements, serum lipid profile, nutrient intakes including sodium, nutrition knowledge and dietary behavior score were assessed before and after the nutrition education program. Mean sodium intakes (p<0.001), systolic/diastolic blood pressure (p<0.001), and weight (p<0.001) were significantly decreased in the MA group after sodium reduction education program. Compared to the MA group, mean sodium intakes, systolic/diastolic blood pressure were not significantly changed after the education program even with significantly increased nutrition knowledge (p<0.05) and dietary behavior score (p<0.01) in the LA group. It appears that pre-hypertensive adults need to attend the sodium reduction education program for at least 4 times or more to gain beneficial effects from the intervention. Positive feedback of healthcare team or offering more cooking classes may be needed to raise the attendance rate in the sodium reduction education program.

Purpose: The purpose of this study was to develop the dietary approaches to stop hypertension (DASH) diet education program tailored to Korean adults and to examine the effect of the DASH diet education program on bone mineral density in middle aged women. Methods: The subjects of this study were 26 middle aged women, pre and post menopause, who attend a church located in Kyung-In district. The DASH group I (n=13) was provided with the DASH diet education program only, while the DASH group II (n=13) was provided with DASH diet education program along with calcium supplements (1 g/day). The DASH diet education program included one lecture on DASH diet, one face to face counseling, and five telephone counseling sessions during the 8 weeks period. Results: The knowledge and subjective compliance level of DASH diet increased significantly in both groups, at 4 and 8 weeks after the intervention. The level of objective compliance of DASH diet in both groups increased over the study period, but it was not significant as compared to those of the baseline. Bone mineral density of both groups decreased at 8weeks as compared to the baseline after the intervention. Conclusion: Although 8weeks of DASH diet education program increased the knowledge and compliance of DASH diet, it was not effective to bring the changes in bone mineral density among the middle aged women.
Purpose: This study was to examine the effects of a Self-management program on physical function and quality of life of women with knee osteoarthritis. Method: The participants for this study, who had knee osteoarthritis, were recruited from an arthritis clinic, at a university hospital located in S city, Korea between February 16, 2004 and June IS, 2004. Seventeen subjects in the control group received no intervention and 18 subjects in for experimental group received an individual Self-management program. The self-management program consisted of dietary education and home-based exercise; walking and resistance exercise. The subjects performed this program 5 times per week during 8 weeks and recorded a diary for diet and exercise. In order to verify the effects of the Self-management program, physical function and Quality of life as a dependent variable were measured at three points in time: before, week4 and week8 after the interventions. Result: There were significant increases on physical function (F=5.08, p=.002) and significant interaction effects (F=7.42, p=.002) in the intervention group over the three measurement points in time. In addition, there were significant increases on quality of life (F=8.08, p=.002) and significant interaction effects (F=4.89, p=.016) in the intervention group over the three measurement points in time. Conclusion: This study revealed that a Self-management program can be used as an efficient nursing intervention for women with knee osteoarthritis.

Most elderly have difficulties in managing food safety and nutrition by themselves. Various nutrition educations for the elderly have been developed, but food safety and nutrition education program and educational tools for the elderly are very limited. The aim of the study was to evaluate a food safety and nutrition education program based on the Health Belief Model (HBM) for the elderly. Education program was implemented for 220 seniors (137 educated group and 83 control group) aged over 65 years at senior welfare community centers. The intervention study was carried out on a weekly basis during each of 5 weeks, and each session lasted about 35 or 40 minutes. The effectiveness of the program was assessed with a questionnaire before and after education. Education program consisted of a 5 week program, and topics were 'Dietary changes for the elderly's healthy life', 'Prevention of food poisoning in everyday life', 'Safe food handling for my health', 'Healthy dietary life to prevent chronic disease', and 'Safety! nutrition! healthy dietary life'. Education program materials such as slides, handouts, videos, leaflet, and booklets were developed. As a result, there were score improvements in knowledge, dietary behaviors, and health belief after intervention in the intervention group, which were higher than those of the control group. In particular, there was a meaningful interrelation between dietary behavior and health belief (r=0.520, P<0.001). This finding suggests that changing beliefs is very important to make desirable dietary behavioral changes. For this reason, we can conclude HBM theory is an effective model to educate nutrition and food safety for the elderly. Furthermore, food safety and nutrition education programs are implemented and delivered continuously at various settings such as a health center or community welfare center, and those will contribute significantly to enhance perception and change their desirable dietary behaviors for the elderly.
Objectives: The purpose of the study was to develop dietary change program items that could be used to improve dietary life of the elderly and investigate their validity. Methods: The survey was were analyzed by SPSS program (Ver. 21) and descriptive statistics was performed; a t-test, χ2 test, One-way ANOVA and Friedman test were used to determine the priority. Results: Programs for feeding senior citizens that need to be newly established are largely divided into two fields, namely, application of welfare facilities and application of home care, classified into large, medium and sub-classes. The large class was divided into nutrition management, sanitary control, and other health management. The medium class of nutrition management was divided into nutrition education, nutrition intervention, and menu management and supply. The sub-class was composed of division into application of welfare facilities for the elderly and application of home care for the same age group. Responses showed high rate saying that all the categorized items were necessary and valid. With respect to expectation effect on a community program for old people feeding, 'yes' was 65 people (55.6%) showing very high expectation toward the question whether a community program for old people feeding are newly set up. Conclusions: It is believed that nutrition for the aged will be improved and it will be a help not only to a small facilities without obligation of employing a dietician but also to the aged at home if a community program for old people feeding are newly established.
Purpose: This study targeted female university students in their 20s and created an antioxidant improvement program with a health contract, one of the behavioral modification therapies, based on King's (1981) 'goal attainment theory.' The aim of this study is to investigate the effects of physiological indicators, eating habits, dietary attitudes, and health behaviors by conducting a walking exercise and anti-oxidation diet program with reinforcement therapy. Methods: This study had a nonequivalent control group pretestposttest design. There were a total of 50 participants, with 25 participants in the experimental group and 25 participants in the control group and the study period was 10 weeks. The antioxidant improvement program consisted of walking and antioxidant diet education with health contracts. Data analysis was statistically processed using the SPSS/WIN 24.0 program. Results: The program showed a high achievement rate by providing continuous motivation and positive reinforcement during the program, and it affected the eating habits, dietary attitudes, and health behavior. Besides, physiological variables, such as antioxidant indices and body composition showed positive changes. Conclusion: This study, based on the goal attainment theory, confirmed that antioxidant improvement program is an effective nursing intervention for continuous health promotion through interaction and exchange between healthy participants and researchers.
The aim of this study was to develop a Dietary Education Program focused on Slow Life (DEPSL) and verified its effectiveness in elementary school children using the extended Theory of Planned Behavior (TPB). The DEPSL was developed effectively according to the systematic program development model, ADDIE. The developed DEPSL was applied to the Education group (EDU), which was total of 130 students aged 12-13 in an elementary school by trained instructors for five weeks. The control group (CON) composed of 100 students of the same age was not given any dietary education. Pre- and post- questionnaires were collected from the students in both groups to compare the change in students' dietary life during educational intervention between EDU and CON. EDU showed significant positive effects in all extended TPB variables (p< .01), but CON showed a significant difference only in the 'knowledge' and 'behavior intention' (p< .05). In addition, the extended TPB model verified its conformity to determine if the effect of education leads to a change in the children's behavior. In conclusion, the DEPSL has a positive impacts on dietary life in school children. Nevertheless, further research will be needed to develop various and specialized dietary education programs with different level of grades in other school areas.
This study was performed to investigate the effectiveness of nutrition education and exercise intervention in a weight management program. The subjects were 24 obese women whose body mass index (BMI) was over 25kg/m2. Nutrition education was given once a week, and subjects did swimming three times a week. The program lasted for 12 weeks. Nutrient intakes were assessed by 24 hour recall method. Also food habits, dietary behavior and nutrition knowledge were examined by self-administered questionnaires before and after the weight control program. Height, weight, body composition and blood composition were measured before and after the weight control program. Over the 12 weeks in the weight control program, body weight significantly decreased from 69.7kg to 65.8kg(p<0.001). Body fat and BMI also significantly decreased(p<0.001). Cholesterol level significantly decreased at p<0.001 and blood sugar also significantly decreased (p<0.05). After taking nutrition education, dietary behavior and nutritional knowledge scores increased, energy intakes decreased from 1426.5kcal to 1408.5kcal and calcium from animal products significantly increased(p<0.05). A negative correlation between nutrition knowledge and BMI(r=-0.42) existed(p<0.05). A negative correlation of eating behavior with EER(r=-0.48) showed(p<0.05). We concluded that combined nutrition education and exercise was an optimal method for reducing weight.
