Knowledge and attitudes on current selection of fats and oils were surveyed among college students and USDA extension off campus faculties. The objective of this survey was to obtain information about the nutrition knowledge and attitudes toward fats and to assess relationships between the nutrition knowledge, general attitudes toward dietary fats, and specific attitudes toward the eating of certain foods. The attitudes toward and nutrition knowledge of dietary fat sections consisted of 22 and 39 statements respectively. Avoiding red meat and eggs and avoiding fats as a flavoring were attitudes whose maintenance may require special, long-term intervention strategies. Replacing high-fat foods with low-fat foods, modification(cutting fat off any meat) and substitution were easily adopted and maintained low-fat habit. The responses to wanting to lose some weight and feeling better if increasing exercise were favorable. The attitudes toward the possible relationships between fat consumption and health were favorable. Respondents on the nutrition knowledge test attained a mean score of 129.69 and a median score of 127 our of the highest possible score of 200. Extension off campus faculties, nutrition majoring/majored subjects, and over 41-year-olds tended to have more favorable general attitudes and specific attitudes toward the consumption of certain foods and higher knowledge. Senior students had more negative general attitudes and specific attitudes, and college graduates and graduate students had more nutrition knowledge. Nutrition know-ledge was related to general attitudes toward dietary fats, but not to more specific attitudes toward the eating of certain foods. Nutrition education will not be effective in modifying the intake of dietary fats in the population because nutrition knowledge related to general attitudes toward dietary fats and general nutrition practice but not the eating of certain foods.
The study purpose was to investigate pattern of dining-out and effects of obesity on the dietary attitude of the 213 male employees with high educational background. The results are as follows : Subjects were 20's bachelor and unmarried mostly. Mean height weight BMI and fat(%) were 172.1cm 70.5kg 23.8 and 21.3% respectively. The most frequency for dining-out was 3∼4 times/week Younger unmarried subjects had more dining-out. The most common meal for dining-out was dinner there being no connection with age, education level marrige and income. The most favorite food style among the subjects was Korean-style. Obese subjects answered that the took more consideration into nutritional balance regularity and proper amount of diet. Also they showed more food-intake especially animal protein and fats. all subjects had scores in dietary attitude there being no connection with obesity. Despite of high education they showed poor dietary attitude. Thus it is necessary to develop the nutritional education program for proper nutritional status of employees.
To determine the effect of dietary fat and calorie level on protein kinase C(PKC) activity in mouse epidermal cells, female BALB/C mice (4weeks of age) were placed on high (24.6% ), moderate(5%) fat or calorie-restricted diets for at least 4 weeks. Diets were formulated on a nutrient/kcal basis such that the mice consumed the same amounts of protein. vitamins, minerals and fiber per kcal. PKC was assayed by the procedure of Wise et at. An apparent increase of PKC activity was observed from the aminal fed high fat diet when compared with the aminal fed moderate fat diet. PKC activity was decreased 40% by calorie restriction. In summary levels of dietary fat may contribute to mechanism of tumor promotion by increasing PKC activity in the mouse skin model.

Background: Ventilator dependency constitutes a major problem in the intensive care setting. Malnutrition is considered a major determinant of extubation failure, however, attention has been attracted to modulating carbon dioxide production through decreasing carbohydrate loading and increasing the percent of fat in enteral feeds. The detected interrelation between substrate oxidation and ventilation outcome became the base of several research to determine the appropriate composition of the nonprotein calories of diet in ventilated patients. Purpose: We aimed to assess the effect of high-fat dietary modification and nutritional status on ventilatory and final outcomes of pediatric intensive care. Methods: Fifty-one ventilated children (1 month to 12 years of age) with pulmonary disease who could be enterally fed, in the Cairo University Pediatric intensive care unit, were divided into 2 groups: group A included 25 patients who received isocaloric high-fat, low-carbohydrate diet; group B included 26 patients who received standard isocaloric diet. Comprehensive nutritional assessment was done for all patients. Results: Group A had a significant reduction in carbon dioxide tension, but no similar reduction in the duration or level of ventilatory support. Assisted minute ventilation was predicted by weight-for-age and caloric intake rather than the type of diet. Poor nutritional status was associated with higher mortality and lower extubation rates. Mild hypertriglyceridemia and some gastrointestinal intolerance were significant in group A, with no impact on the adequacy of energy or protein delivery. Conclusion: The high-fat enteral feeding protocol may contribute to reducing carbon dioxide tension, with mild hypertriglyceridemia and negligible gastrointestinal intolerance as potential adverse effects. Optimization of nutritional status rather than dietary modification may improve ventilatory and survival outcomes in critically ill-ventilated children.
This study was undertaken to determine the effect of dietary fat to carbohydrate ratio on plasma glucose. free fatty acid level and hepatic glucokinase activity in normal or insulin treated diabetic rats. Sprague-Dawley male rats were fed with 3 different but isocaloric diets for 5 weeks. Diet 1 made to have low fat(4% corn oil and 65.8% corn starch wt/wt) : diet 2 medium fat (12% : 47.8%) : diet 3 high fat (20% : 29.8%) In the normal rats an apparent increase of GK activity was observed from the animal fed low fat diet when compared with other groups. GK activities were decreased in all the alloxan-diabetic rats than the normal rats. When insulin was injected the GK activities in all the livers of alloxan-diabetic rats restored to normal level and GK activity was highest in low fat group. In the entire group significant relationships were seen between the plasma glucose and GK activities(r=-0.6, p<0.001) FFA levels and GK activities(r=-0.63 p<0.001) Both in normal and insulin treated diabetic rats significantly depressed level of hepatic GK activity was observed in the livers of animals fed high fat diet for 5 weeks and depressed level of GK activity may be related to insulin resistance.
The present study was conducted to analyze the status of food and nutrients intakes of the colorectal cancer patients in the Daegu$\cdot$Kyungpook area and to find dietary risk factors related to the occurrence of colorectal cancer in this community. The case subjects (123) were selected from the patients recently diagnosed as colorectal cancer at Kyunrpook National University Hospital, the control subjects (182) were selected from the patients of the Department of Orthopedic Surgery at the same hospital and from the healthy volunteers who did not have any gastrointestinal diseases. The food consumption survey was done by individual interviews using semi-quantitative food kequency questionnaire and nutrients intakes were analysed by CAN program. The results of the study suggested that dietary factors which are speculated as the risk factors of colorectal cancer in Daegu$\cdot$Kyungpook area were high consumption of cereals and oils low consumption of fruits and mushrooms, high consumption of energy and fat, especially animal fat, low consumption of dietary fiber, high percentage of energy intake from cereals and potatoes, high intakes of protein, fat, vitamin A and cholesterol from egg, low intake of calcium from vegetables, and high intake of iron from meats and eggs. These findings might be useful for the nuation education to prevent colorectal cancer in the community. However it is recommended to conduct more extensive and systematic survey to reconfirm these dietary risk factors under taking into consideration of the dietary characteristics in this region.
This study was performed to investigate the adequacy of dietary fat and protein intakes among female college students. Daily intakes of energy, fat, protein, major amino acids and other nutrients were measured in 52 female college students. Daily energy intake was 75.8% of the recommended intake. Fat and protein consist 19.2% and 16.7% of the total calorie, respectively. The average protein consumption per day was 105% of the recommended intake. Essential amino acids intakes were more than the recommended amounts which appears in the 6th edition of Recommended Dietary Allowances for Koreans. However, when the intake of each essential amino acid was compared to the recommended amino acid requirement pattern, these subjects did not meet the estimated requirements. There was a highly significant correlation between daily protein intake and lipid intake implying the major sources of protein in the diet were also major sources of fat. Daily intakes of dietary fiber, vitamin C, iron, and phosphorous were above the recommended levels of intake. However, blood hemoglobin concentration was marginal indicating dietary iron consumption is not a good marker for iron status. Also, calcium intake was only 63.5% of the recommended intake. Therefore, these results imply that main problems for these subjects are low energy consumption, low calcium intake, and the quality of protein. However, as opposed to the hypothesis, the main energy sources were not the food items high in saturated fats such as instant foods, which should be emphasized further.
The purpose of this study was to investigate dietary fat and individual fatty acids intake pattern of 174 college women living in Seoul and Gyong-gi province through internet nutritional assessment system. Each of the subjects was required to input their own food intake for three days, which included two days during the week and one day of the weekend, on the web program directly and all of the data collected were used for statistical analysis. The mean daily caloric intake of the subjects was 1,500.9 kcal which was at 71.5% of Estimated Energy Requirement (EER). Dietary fat contributed 27.6% of the total caloric intake which was slightly higher than the recommended limit of 25%. Daily cholesterol intake was 310.0 mg, which was also high to some degree. Mean daily N6 and N3 fatty acid intake was 6.1 g and 0.9 g, respectively, and calory % calculated from each were 3.63% and 0.53%. This result showed the intake of N3 fatty acid fell in Acceptable Macronutrient Distribution Ranges (AMR) $0.5\sim1.0%$ but that of N6 fatty acid was somewhat lower than the AMDR $4\sim8%$. N6/N3 ratio 8.5/l, however, was within the desirable range $4\sim10/1$. Considering overall dietary fatty acids intake, oleic acid was the most abundant, followed by linoleic and palmitic acid. And among polyunsaturated fatty acids intake, linoleic acid was exclusively high, accounting for 97.4% of total N6 fatty acid intake. On the contrary, three fatty acids, linolenic (67.3%), DHA (21.1%) and EPA (10.0%), together supplied 98.4% of total N3 fatty acid intake. Mean P/M/S was 0.9/l.1/1.0. The subjects' intake of fat, many fatty acids and cholesterol came from diverse food groups including meats, fats and oils, milk and milk products, eggs, fish, and soybean products. Nevertheless, the subjects tended to show unfavorable fat and fatty acids intake pattern in terms of quantity and quality. Based on these results, it is important to monitor dietary fat intake pattern of the general population continuously and an internet program such as the one used for this study would be valuable, especially for assessing dietary patterns in the younger generation.
This study was performed to investigate the effect of dietary dried anchovy and non-fat dried milk on serum and femur Ten months old female rats were divieded into 6 groups(ST, A-middle, A-high, M-middle, M-high, A+M), and fed the diet containing different level of food calcium for 8 weeks. The results obtained were summerized as follow: 1. The rats' weight gain were not significantly different from the fed groups, but food intake were significantly higher or lower level in the group of A-high than the other groups. 2. Serum calcium concentration was significantly increased in the A-middle group, the M-high group were significantly decreased. Serum phosphorous contents of M-high group were increased significantly higher than ST group. The serum magnesium contents were increased significantly higher than in the A-middle group. Serum iron contents of other experimental groups were significantly higher than ST group. All experimental groups were significantly lower copper contents in serum than ST group. 3. The more rats took dried anchovy and non-fat dried milk, the longer the length of femur. But this trend is not statistically difference. In the breaking force of left femur, most of all experimental group were stronger than ST group. 4. The calcium, phosphorous contents of ash, dry, wet weight of right femur in A+M group were higher than any other groups.
The effect of lycopene supplementation on the antioxidant system was investigated by analyzing lipid peroxide levels, glutathione contents, and antioxidant enzyme activities in Mongolian gerbils fed a high fat diet. Gerbils were fed on each experimental diet for 6 weeks; normal diet (NC), normal diet with 0.05% lycopene (NL), high fat diet (HF), and a high fat diet with 0.05% lycopene (HFL). Dietary supplementation of lycopene increased hepatic lycopene level in gerbils fed a normal or high fat diet (P < 0.05). Liver and erythrocyte concentrations of lipid peroxide increased in gerbils fed a high fat diet, whereas lycopene supplementation decreased liver and erythrocyte concentrations of lipid peroxide (P < 0.05). Hepatic total glutathione content was higher in the NL group than that in the NC group (P < 0.05). Total antioxidant status in plasma increased following lycopene supplementation compared with that of the non-lycopene supplemented groups (P < 0.05). Hepatic catalase activity increased following dietary lycopene supplementation (P < 0.05). Superoxide dismutase activity in liver remained unchanged with lycopene supplementation, but erythrocyte superoxide dismutase activity increased in NL group compared with NC group (P < 0.05). Glutathione-S-transferase activity increased in the NL group compared to NC group (P < 0.05). Liver and erythrocyte glutathione peroxidase activity increased significantly in the NL group compared to that in the HF group (P < 0.05). Liver glutathione reductase activity was higher in the NL group than that in the NC group (P < 0.05). These results suggest that lycopene supplementation may be efficient for preventing chronic diseases induced by oxidative stress related to high fat diet.
