학교 영양교육 수행 현황 및 영양교사 직무 비중 변화 인식 (Investigation of Status of School Nutrition Education and Changes in Perception of Nutrition Teacher's Job)

  • The purpose of this study was to investigate the status of school nutrition education and changes in perception of nutrition teacher's job in order to determine the need for redesign to achieve their ideal job. The questionnaire was distributed to 1,550 nutrition teachers, and a total of 1,487 usable data were collected with a 96% response rate from August to December 2015. Statistical data analysis was completed by using SPSS/Win 21.0 for descriptive analysis. The results were as follows: 45.5% of nutrition teachers periodically implemented nutrition education classes, and 32.7% of responses used creative activity times for nutrition and dietary life education. Various topics were taught such as strategies to improve dietary habits, choice of healthy foods and nutrition labeling, nutrition information, food safety, and environmental problems, etc. Current performance ratios of nutrition teacher's duties and tasks were as follows: nutrition operation 31.3%, foodservice hygiene and safety 28.0%, nutrition management 22.7%, nutrition and dietary life education and counselling 11.6%, and professional development 6.4%. Opinions about ideal job performance of nutrition teachers were investigated to determine needs for job redesign. Two in nutrition management duty tasks and four foodservice management duties duty tasks were reduced. On the other hand, another two nutrition management duty tasks and three nutrition and dietary life education and counselling tasks were increased compared to current job performance.

초등학교 고학년생의 성별과 영양지식 수준에 따른 식습관, 식품섭취빈도, 식태도 비교 (Dietary Habits, Food Frequency and Dietary Attitudes by Gender and Nutrition Knowledge Level in Upper-grade School Children)

  • This study was carried out to examine dietary habits, food frequency and dietary attitudes by gender and nutrition knowledge level in upper-grade school children. Subjects were 223 boys and 208 girls attending 13 elementary schools (5 th and 6 th graders). A self-administered questionnaire was developed to assess nutrition knowledge, dietary habits, food frequency, and dietary attitudes. Nutrition knowledge score assessed by 19 questions was significantly higher in girls than in boys. There were significant differences between boys and girls in several items in dietary habits such as enough breakfast time, dinner regularity, number of side dishes, eating speed, type of snack after dinner, and degree of saltiness of dishes. Girls consumed staple foods such as rice, noodles or bread more frequently, and consumed less frequently ramyun, fried foods, fast foods, and Chinese foods than boys. In addition, girls had more positive dietary attitudes in trying to reduce fast foods, Chinese foods, ramyun and fried foods. Also children in the high or moderate nutrition knowledge level groups had better dietary habits in frequency of meals, frequency of breakfast, enough breakfast time, dinner regularity, activity during the meal, number of side dishes, eating speed, type of snack after dinner, and better food choices by eating staple foods and vegetable side dishes, meats and beans more frequently, and fried foods, doughnuts/cakes, Chinese foods less frequently, and had better dietary attitudes in breakfast, vegetables and fruit intake than children in the low nutrition knowledge level group. Our results showed that dietary habits, food frequency and dietary attitudes were different by gender and nutrition knowledge level. These results suggest that in developing nutrition education program for elementary school children, the differences between gender and nutrition knowledge level should be considered. Nutrition education in elementary schools may change dietary habits and dietary attitudes through increasing nutrition knowledge.

스웨덴의 영유아 영양권장량 및 유아교육기관을 위한 급식지침 (Recommended Dietary Allowances for Young Children and Food Guideline for Preschool Children in Sweden)

  • The purpose of this study is to offer information related to recommended dietary allowances for young children and food guidelines for preschool children in Sweden. Sweden, located in Europe, is the most developed country for young child care system. Swedish nutrition policy background, Swedish recommended dietary allowances for young children, and food guidelines of early childhood education center in Sweden were used. The number of Swedish child care centers increased from 70,000 in 1970 to 700,000 in 2000. The Swedish Institute of Public Health promoted children's indoor and outdoor activity. The aim of the Swedish public health contains children's safety, good food habits, and eating food safely. Swedish Food Administration made recommended dietary allowance and food guidelines for children care centers. The aim of food guidelines was to increase energy, calcium, iron, and dietary fiber intake. Swedish RDA contains minimum and maximum intake as well as mean intake for macro and micro nutrients. The fat intake ratio of energy is increased for younger children. For preschool children, the food guideline is determined by dietary allowances for breakfast, lunch, and snack respectively. Food guideline contains meal time schedule, menu for each meal using food model, amount of food for age group, and recommended dietary allowance for each meal. It is recommended for Korean early childhood education center: 1) Korean RDA for young children should be made range of intake, minimum and maximum intake. 2) Food guideline should be make for Korean child care center. 3) Korean child care centers should offer an afternoon snack twice for children who return home late. 4) Nutrition education program for preschool teachers should be developed for children's good eating habits and health promotion.

폐경 여성의 비타민 D 섭취량, 옥외활동시간, 혈청 25-OH 비타민 D 수준과 계절 및 연령과의 관련성 (Vitamin D intake, Outdoor Activity Time and Serum 25-OH Vitamin D Concentrations of Korean Postmenopausal Women by Season and by Age)

  • Objectives: The purpose of this study was to examine the relative impact of seasonal differences and age on dietary vitamin D intakes, outdoor activity time and serum vitamin D status among Korean postmenopausal women. Methods: A cross-sectional study was conducted with 164 free-living postmenopausal women (mean age=55.4 years) in Daegu, Korea. Dietary intake, daily physical activity patterns and fasting blood samples were collected during summer and winter. We compared the results from 75 women during summer and 89 women during winter. Dietary intake of vitamin D was assessed by 24-hour recall method. Daily outdoor activity time was derived from physical activity diary. Results: The average dietary intake of vitamin D of the participants was $3.7{\mu}g$ during summer, $3.3{\mu}g$ during winter, showing no significant difference between the two seasons. The average time spent on outdoor activities was not significantly different between summer ($=35.1{\pm}75.0min/d$) and winter ($=48.5{\pm}76.8min/d$). The average serum 25-(OH) vitamin D concentrations of participants was $17.5{\pm}7.5ng/mL$ in the summer and $13.4{\pm}4.3ng/mL$ in the winter, showing no significant differences by season. Dietary intake of vitamin D was not related to age. When total subjects were divided into two groups by age, the average serum 25-(OH) vitamin D concentration was significantly higher in older group (p=0.047) and time spent on outdoor activities was also (p=0.018) significantly higher in the older group. Conclusions: In order to improve the current vitamin D status of Korean postmenopausal women, nutrition education programs should focus more on adequate intake of vitamin D, while maintaining enough outdoor activities over the season.

  • Objectives: This study was intended to examine the seasonal differences in outdoor activity times and dietary vitamin D intakes, and explicates their relative impact on improving serum 25-(OH) vitamin D status among Korean young women. Methods: A cross-sectional study was conducted with 135 free-living women aged 19-39 years in Daegu-Kyungbook, Korea. We compared the results from 52 women for the summer and 83 women for the winter. Dietary intake of vitamin D was assessed by 24 hour recall method for non-consecutive three days as well as by food frequency method. Daily outdoor activity times were derived from 24 hour physical activity diary. Results: The average dietary intake of vitamin D of the participants by 24 hour recall method was 3.1 ${\mu}g$ during the summer, 3.3 ${\mu}g$ during the winter, showing no significant difference between the two seasons. Times spent on outdoor activities (p < 0.01) in the summer (= $23.8{\pm}23.6$ min) were much longer than that in the winter (= $10.8{\pm}13.4$ min). The serum 25-(OH) vitamin D levels of participants were $17.5{\pm}7.5$ ng/mL in the summer and $13.4{\pm}4.3$ ng/mL in the winter, showing that the latter was significantly lower than that of the former (p<0.001). The serum 25-(OH) vitamin D levels of subjects were positively related to outdoor activities (r=0.315, p<0.05) during the summer, while related to dietary intake (r=0.252, p<0.05) during the winter. Conclusions: In order to improve the current vitamin D status of Korean young women, nutrition education programs should focus on increasing more dietary intake especially during the winter, and performing more outdoor activities in other seasons.

Effects of Multidisciplinary Health Promotion Program Among Children in Community Childcare Center

  • In this study, the effects of a 12-month multidisciplinary education program on the health status, dietary quality, and eating habits of children and adolescents attending community childcare centers were investigated. A total of 88 participants aged 7 to 17 years from 7 community childcare centers in Gyeonggi-do were enrolled. The intervention consisted of 12 multidisciplinary education sessions covering topics such as nutrition, exercise, and psychological education. All participants received the same education, and the effectiveness of the program was evaluated by categorizing them into a high participation group (HPG) and a low participation group (LPG) based on their participation rates. After intervention, in physical activities, moderate-intensity exercise was significantly reduced in the LPG, and there was no significant difference in psychological parameters. However, notable differences were observed in nutritional data. After intervention, intakes of calorie, carbohydrate, protein, and fat were significantly increased in both groups, and in particular, the change was found to be greater in HPG. Additionally, dietary fiber intake compared to the 2015 Korean Dietary Reference Intakes was increased in both groups. Daily food intake also increased dietary fiber intake in HPG, and meat and fruit intake was increased in LPG. In the nutrition quotient, there was a significant difference in HPG's pre- and post-scores in the diversity category, and in nutrient adequacy ratio (NAR), the NAR of phosphorus was increased in both groups. The findings of this study suggest that multidisciplinary education implemented at community childcare centers primarily enhanced nutrition-related factors rather than physical activity or psychological aspects.

제 5기, 6기 국민건강영양조사 자료를 활용하여 성인의 우유 섭취와 만성질환 유병률 사이의 관련성 연구 (Study on relationship between milk intake and prevalence rates of chronic diseases in adults based on 5th and 6th Korea National Health and Nutrition Examination Survey data)

  • 본 연구는 사회경제적 요인, 식행동 및 신체활동에 의한 만성질환 (고혈압, 고중성지방혈중, 저HDL콜레스텔롤혈증, 당뇨병, 복부비만, 비만 및 대사증후군) 유병률에 우유와 유제품 섭취가 매개변인으로 작용하였을 때의 효과를 평가하고자 하였다. 본 연구에 활용한 자료는 제 5기, 6기 국민건강영양조사 (2010~2015) 자료를 활용하여, 만 30세이상의 성인 남녀를 대상으로 하였고, 질환이나 체중조절을 위해 식이요법을 실시하고 있거나 임산부는 분석대상에서 제외하였다. 고혈압, 고중성지방혈중, 당뇨병, 복부비만, 비만, 대사증후군의 유병률은 남자에서 유의적으로 높았고, 저HDL콜레스테롤혈증은 여자에서 유의적으로 높아 만성질환 유병률은 성별에 따라 차이를 보였다. 사회경제적요인, 식행동 및 신체활동은 남녀에 따라 차이를 보이고 있으나 만성질환 유병률에 영향을 미치는 요인 이었다. 복부비만과 비만을 제외한 고혈압, 고중성지방혈증, 저HDL콜레스테롤혈증, 당뇨병 및 대사증후군의 유병률은 남녀 모두 사회경제적 수준 (가구내 소득수준, 교육수준)이 낮을 경우 높았고, 신체활동 (걷기, 중등도 및 격렬한)을 실천할 경우 낮았다. 반면 복부비만과 비만의 유병률은 남자의 경우 사회경제적 수준이 높을수록, 여자 경우 사회경제적 수준이 낮을수록 높은 것으로 나타나 성별에 따라 유의적인 차이를 보였다. 흡연을 만성질환의 유병률을 증가시키는 요인이었고, 음주의 경우 저HDL콜레스테롤혈증을 제외한 질환의 유병률을 증가시키는 요인이었다. 외식은 남자의 비만 유병률을 증가시키는 요인이었으나, 성인 여자에서는 비만과 대사증후군의 유병률을 감소시키는 요인이었다. 만성질환과 유의한 관련성을 보인 사회경제적, 식행동 및 신체활동 요인 (설명변수)에 우유 섭취를 매개변인으로 추가한 후의 효과를 평가한 결과 성인 남자의 경우 교육수준은 당뇨병에서, 음주는 고혈압, 고중성지방혈증, 저HDL콜레스테롤혈증, 대사증후군에서, 아침식사는 대사증후군, 외식은 비만, 중등도 신체활동은 고중성지방혈증에서 부분통제됨으로서 하루 200 g 이상의 우유를 섭취할 경우 교육수준, 음주, 아침식사, 외식 및 중등도 신체활동에 의한 만성질환 유병률을 낮추는 효과가 있었다. 성인 여자의 경우 가구 내 소득수준은 고중성지방혈증, 당뇨병, 복부비만에서, 교육수준은 고혈압, 복부비만에서, 음주, 아침식사, 외식 및 걷기 실천은 저HDL콜레스테롤혈증에서, 중등도 신체활동은 고중성지방혈증과 저HDL콜레스테롤혈증에서 부분통제됨으로 인해 우유 섭취가 이들 설명변수에 의한 만성질환 유병률을 감소시키는 효과를 보였다. 이외 성인 남자와 여자에서 유의적인 관련성을 보인 변인은 우유, 유제품 섭취에 의해 완전통제 또는 완전매개 되어 우유 섭취 시 이들 설명변수가 만성질환 유병률에 미치는 영향은 사라졌다. 본 연구결과, 하루 200 g 이상의 우유를 섭취할 경우 사회경제적 요인, 식행동 및 신체활동에 의한 효과가 통제 또는 매개하는 영향이 있는 것으로 나타나고 있으므로 적정수준의 우유 섭취는 고혈압, 고중성지방혈증, 저HDL콜레스테롤혈증, 당뇨병, 비만, 복부비만 및 대사증후군을 예방하는 효과가 있었다. 그러나 본 연구는 국민건강영양조사 자료를 활용한 후향적 관측 연구이고, 우유 및 유제품 섭취에 의한 매개효과를 파악한 것이므로 추후 한국인의 만성질환 예방을 위한 적정수준의 우유 및 유제품 섭취 수준에 관한 가이드라인 선정을 위해서는 대단위 실험 설계나 코호트 자료 분석을 통한 다양한 연구가 수행되어야 할 것이다.

지역사회 대상의 휴대폰 문자메시지를 이용한 건강교육 중재의 효과 (Effects of Health Education using Short Messaging Service of Cellular Phone)

  • Purpose: The aim of the study was to identify the effects of education from using cellular phones and a short messaging service. Methods: Collected data included baseline demographics, blood pressure, abdominal circumference, total cholesterol, body mass index and health behavior index (Dietary Practice Guidelines Score, Physical Activity, Drinking frequency, Stress score, Subjective health status, and Action change stage score). Data were collected at public health centers in Chungcheongnam-do from January to December, 2011. Data obtained from Individual health counseling Programs in Chungcheongnam-do. Analysis was divided into health risk group and Disease management group, using a paired t test. Results: Following the education of using short messaging service of cellular phones Health risk group was a reduction in the systolic blood pressure, diastolic blood pressure, waist circumference. Disease management group was a reduction in the systolic blood pressure and body mass index. In both groups, there were improvement in the Health behavior index; dietary practice guidelines score, physical activity, stress score, subjective health status and action change stage scores. Conclusion: These results indicated that education using short messaging service of cellular phone for Community was effective in improving health behaviors and status. By applying the results, development of customized teaching messages for stable settlement is required.

초등학교 저학년용 영양교육 소책자 개발 및 효과 분석 - 개인별 맞춤형 하루 필요 식품군 단위수 교육을 중심으로 - (Development and Effects' Analysis of Nutrition Education Pamphlet for the Lower Grades Elementary Students - Focused on Individual Daily Needed Food Exchange Units -)

  • The purpose of this study was to investigate effects of nutrition education program and pamphlet for the lower grades elementary students focused on individual daily needed food exchange units using Food Exchange System. Program consisted of four lessons (40 min/lesson), "5 major nutrients & function", "6 food group and sources", "daily needed food exchange units for normal body weight", and "smart snack choice and exercise". Pamphlet as activity book was developed for the program. The subjects were 3rd grade elementary students (educated group, 31 vs. non-educated group, 31). Educated group were lessoned as group and/or individual. We examined the differences in nutrition knowledge, dietary attitudes, dietary intakes and satisfaction of the program and pamphlet. In educated group, there were positive improvements on nutrition knowledge score "function and foods of 5 nutrients" and on dietary attitudes "type of breakfast and snacks". In the evaluation of dietary intakes according to KDRI, there were positive improvements on intakes level of riboflavin, vit. C, folate, Ca, P, Fe and Zn in educated group. In satisfaction with the program and pamphlet, contents, font size, visual, figure, difficulty and program curriculum were over 2.90/3.0. It showed that the developed nutrition education program and pamphlet focused on individual daily needed food exchange units using Food Exchange System improved nutrition knowledge, dietary attitudes and nutrients intake level in the lower grades elementary students.

Diet and Physical Activity in Relation to Weight Change among Breast Cancer Patients

  • Background: This study aimed to provide an overview of lifestyle changes after breast cancer diagnosis and to examine the relationship between dietary and physical activity changes with weight changes in breast cancer patients. Women with breast carcinomas (n=368) were recruited from eight hospitals and four breast cancer support groups in peninsular Malaysia. Dietary and physical activity changes were measured from a year preceding breast cancer diagnosis to study entry. Mean duration since diagnosis was $4.86{\pm}3.46$ years. Dietary changes showed that majority of the respondents had decreased their intake of high fat foods (18.8-65.5%), added fat foods (28.3-48.9%), low fat foods (46.8-80.7%), red meat (39.7%), pork and poultry (20.1-39.7%) and high sugar foods (42.1-60.9%) but increased their intake of fish (42.7%), fruits and vegetables (62.8%) and whole grains (28.5%). Intake of other food groups remained unchanged. Only a small percentage of the women (22.6%) had increased their physical activity since diagnosis where most of them (16.0%) had increased recreational activities. Age at diagnosis (${\beta}$= -0.20, p= 0.001), and change in whole grain (${\beta}$= -0.15, p= 0.003) and fish intakes (${\beta}$= 0.13, p= 0.013) were associated with weight changes after breast cancer diagnosis. In summary, the majority of the women with breast cancer had changed their diets to a healthier one. However, many did not increase their physical activity levels which could improve their health and lower risk of breast cancer recurrence.
