참나무 (Quercus Mongolica)로부터 수용성 식이섬유소의 제조 및 기능성 검증 (Preparation of Soluble Dietary Fiber from Oak Wood (Quercus Mongolica) and Its Physiological Function in Rat Fed High Cholesterol Diets)

  • 본 연구에서는 참나무(oak wood)류중 신갈나무(Querrus mongolica)로부터 수용성 식이섬유소의 제조와 제조된 수용성 식이섬유소의 생리적 기능성을 검정하고자 하였다. 신갈나무로부터 수용성 식이섬유소의 분리는 전처리 기술로써 폭쇄처리를 하였으며 최적 폭쇄전처리 조건은 25kgf/$\textrm{cm}^2$의 압력으로 6분간 처리하였다. 폭쇄시료를 탈리그닌 처리하기 위해 가장 효과적인 방법중 1% NaOH 용액으로 수회여과 처리 하였다. 앞에서 탈리그닌된 시료를 효소가수분해 처리하기 위 해 사용된 효소로는 Onnozok R-10보다 Cellusoft 효소의 가수분해율이 효과적이었다. 제조된 수용성 식이섬유소의 분자량 분포는 약 1,200-348 사이에 존재하는 oligomer 형태의 소당류로 분포되어 있었다. 제조된 수용성 식이섬유소의 생리적 기능성을 검정하기 위해 실험동물은 Sprague-Dawley종 수컷을 이용하여 정상군과 고콜레스테롤식이 실험군으로 나눈 후 고콜레스테롤 실험군을 다시 섬유소 종류와 공급수준에 따라 섬유소를 공급하지 않은 무섬유식이군 (FF군), 시판 식이섬유소를 5%공급한군 (5P군) 10%공급한군 (l0P군) 제조 식이섬유소를 5% 공급한 군 (5M군) 10% 공급한 군(10M군) 등 각 10마리씩 6군으로 나누어 4주간 사육하였다. 식이섭취량은 섬유소공급군이 FF군에 비해 증가되었으며 체중증가량은 섬유소공급군에서 FF군에 비해 유의적 (p<0.05)으로 낮았다. 식이효율은 FF군에 비해 모든 식이섬유소군에서 유의적 (p<0.05)으로 낮았으며 특히 10% 공급군에서 가장 낮았다. 간 무게근 FF군에 비하여 식이섬유소 공급군에서 유의적 (p<0.05)으로 감소되었으며 소장 및 맹장무게는 정상군과 무섬유식이군에 비하여 식이섬유소 공급군에서 증가되었다. 혁청 GOT 활성은 식이섬유소 공급군이 FF군에 비해 유의적 (p<0.05)으로 저하되었다. GPT 활성은 정상군에 비해 무섬유식이군인 FF군에서 증가되었으며 섬유소 공급관들은 다소 감소되는 경향이었다. 간조직 중 GST 활성은 FF군에 비해 식이섬 유소 공급군 모두 활성이 증가되었다. 그리고 이러한 생리적 기능은 제조된 수용성 섬유소군이 시판 수용성 섬유소와 차이가 없었다. 결론적으로 제조된 수용성 식이섬유소와 시판되는 수용성 식이섬유소가 생리져 기능이 거의 비슷하고 무독성이 관찰됨으로써 신갈나무로부터 제조된 수용성 식이섬유소의 제조 방법이 우수하다고 볼 수 있다.

여대생의 식습관과 영양소 섭취상태가 피부상태에 미치는 영향 (Effects of Dietary Habits and Nutrient Intakes on Skin Condition of Female University Students)

  • The purpose of this study was to investigate the effects of dietary habits and nutrient intakes on skin condition of female university students. The subjects were 95 female university students in Daegu. This study examined anthropometric measurements, dietary intake, food intake habits and skin condition (moisture, elasticity, sebum (U-zone, T-zone), pores, evenness and melanin pigmentation. The subjects in this study had an average age of 21.4, an average height and weight of 161.2 cm and 52.9 kg, respectively, and the average body mass index (BMI) was 20.3 $kg/m^2$. The means of skin elasticity, pores, evenness, and melanin pigmentation were within the normal range of women in their 20s and the skin moisture state was slightly lower than the normal range, which showed a dry tendency. The sebum in the U-zone and the T-zone was lower than the standard values, which showed less secretion in both areas. The subjects with high nut intake showed a better skin pore state (p < 0.05). Those with a high intake of instant foods showed a sig-nificantly low skin moisture and a significantly higher sebum rate (p < 0.05). The group with high skin elasticity and the group with less melanin pigmentation showed a significantly low animal protein intake (p < 0.05). The group with high skin elasticity also showed a significantly higher vitamin A and niacin intakes as well (p < 0.05). The group with high skin evenness showed a significantly lower animal lipid intake and a significantly higher vitamin E intake (p < 0.05). In addition, those with high skin elasticity and evenness as well as low melanin pigmentation showed a tendency of high intake of antioxidant vitamins, such as vitamin A, carotene, vitamin C or vitamin E. In summary, a moderate intake of plant-based products and also the antioxidant vitamins within such products seems to have a beneficial effect on maintaining a healthy and good skin condition.

청년기 여성의 체형과 체중조절 경험에 따른 영양소 섭취량과 건강상태에 대한 비교 연구 (Comparative Study of Nutrient Intakes and Health Status with Body Size and Weight Control Experience in Adolescent Females)

  • This study was conducted to investigate how body size and weight control experience affect the nutrient intakes and the health status of adolescent females. The survey was carried out by self-questionnaires with 463 female high school and college students in Daegu. Analysis of data was done by using a t-test, and ANOVA with the SAS computer program. The average height, weight and BMI of the subjects were 161.2 cm, 53.4 kg, and 20.51 kg/$m^2$ respectively. However, 25.1% of the subjects belonged to the underweight group when we divided the subjects into 3 groups- underweight, normal-weight, overweight-according to their present body size. The average Fe intake of the subjects was less than 50% of the Korean recommended dietary allowances. The dietary intakes of energy and Vit. A were significantly higher in the underweight group than in other groups. However, no significant differences among body size groups were observed in the dietary habit score and the nutritional knowledge score. It also appeared that the dietary habit score and the nutritional knowledge score of the weight control attemptees were worse than those of the non-attemptees. The physical health status of the subjects significantly differed according to weight control experience, and the psychological health status of the subjects differed with present body size. The physical health condition of the weight control attemptees was worse than the non-attemptees. and the psychological health condition of the overweight group was worse than other groups. The results indicated that unnecessary weight control in adolescent females induces unhealthy food behavior which is linked to undesirable health status.

Dietary behaviors and body image recognition of college students according to the self-rated health condition

  • This study was done to investigate the relationship between the perception of body image, body weight satisfaction or dietary behavior and self-rated health status in Korean college students. Subjects, 285 college students, were divided into three groups (healthy, normal, and unhealthy) according to the answer for the self-rated health question. Information about demographic status, self-rated health condition, height and weight, perception of body image, satisfaction of body weight, concern for body weight control, dietary behavior, nutritional knowledge, and health-related characteristics collected by a self-reported questionnaire. The proportion of men and women in each group was not significantly different. The academic year, major, experience of nutritional education, and type of residence were not significantly related with self-rated health but the pocket money range was significantly associated (p<0.05) with self-rated health. The proportion of subjects rated their health as unhealthy was the lowest in 210-300 thousand won pocket money range and was increased in less than 210 thousand won or over 300 thousand won pocket money ranges. There were no significant differences for age, height, weight and BMI between the groups. The body image perception and body weight satisfaction levels of healthy group was significantly higher than those of unhealthy group (p<0.01 and p<0.001, respectively), but the level of concern for body weigh1 control in healthy subjects was significantly lower than that in unhealthy subjects (p<0.05). The proportion of subjects reported as healthy was significantly increased with increased frequencies of following food behaviors; weekly use of protein foods (p<0.01), vegetables (p<0.05) and dairy products (p<0.01), and food habits such as "regularity of meal time" (p<0.01), "eating in moderation" (p<0.05), and "eating breakfast" (p<0.001). Overall results suggested that the college students have tended to have a better perception of health when they have better body image perception, body weight satisfaction and dietary behaviors.

식사 Pattern의 차이가 단백질 영양상태에 미치는 영향 (The Effect of Different dietary Patterns (between Non-Vegetarian and Vegetarian) on Protein Nutritional Status during Short-term)

  • The purpose of this study was to describe the protein nutritional status of female collegians between nonvegetarian diet groups(14) and vegetarian diet groups(19). Daily intake, protein were calculated from food direct measurement. Urea/creatinine, muscle mass, fatique conditions and hematological parameter were calculated. Blood samples were analyzed for total protein, albumin ammonia, urea, uric acid, creatinine, BUN contents. The results obtained are summarized as following : 1) On total dietary intake, especially Fe, vitamin C, niacin intake, vegetarian groups were higher than non vegetarian groups. 2) On composition of EAA(essential amino acids), vegetarians were highter than non vegetarian of leucine contents, but were lower lysine and threonine contents. 3) On urea / creatinine excretion, vegetarians were higher than non begetarians. Muscle mass were non signicant, fatique condition, vegetarians were normal state. 4) Non vegetarians were increased serum albumin total protein, uric acid, ammonia but vegetarians were decreased BUN, ammonia after experimental diet intake. 5) In process of time after meal, non vegetarians were increased serum albumin total protein, BUN, but vegetarians were decreased ammonia.

아동 . 청소년기 식이패턴 분석과 복부비만에 영향을 미치는 요인 - 1998, 2001, 2005년 국민건강.영양조사 자료를 근거하여 - (Dietary Pattern Analysis and Factors Affecting Abdominal Obesity in Children and Adolescents)

  • Purpose: This study was performed to identify the socioeconomic factors, the health behavior factors and dietary pattern that have an influence on abdominal obesity, as measured by using the waist circumference in children and adolescents. Methods: This study used data collected from 1998, 2001, 2005 Korean National Health and Nutrition Examination Survey (NHANES). Final sample included 3,596 subjects from 10 to 19 years old who had completed necessary health examinations, health behaviors survey, and nutrition survey. Results: 12 dietary patterns emerged from factor analysis with different factor loading. Logistic regression analysis of the factors that affect abdominal obesity showed that the education level, BMI(Body Mass Index) and dietary pattern, 'Kimchi' including Korean cabbage and radish affected the abdominal obesity in children and adolescents. Conclusions: Abdominal obesity is a risk factor for morbidity and mortality, and it is associated with chronic diseases, including cardiovascular disease and diabetes. Based on the findings, it is essential to modify dietary pattern for preventing abdominal obesity, which is a condition associated with the incidence of chronic disease in adults.

추출법에 따른 큰실말(Cladosiphon novae-caledoniae kylin) 부산물 식이섬유의 항산화 효과 및 HT-29 대장암 세포에 대한 항암 작용 (Effects of Dietary Fiber from Mozuku (Cladosiphon novae-caledoniae kylin) Residue on Antioxidant Activity and Anticancer in HT-29 Human Colon Cancer Cells according to Extraction Condition)

  • 본 연구에서는 큰실말 부산물의 추출 조건(HCl, $H_2SO_4$, NaOH, $Na_2CO_3$, $Na_2EDTA$)에 따른 식이섬유 함량을 조사하였다. 또한 큰실말 부산물로부터 분리한 식이섬유의 총 폴리페놀과 플라보노이드양을 측정하고 HT-29 대장암 세포에서의 증식 억제를 통한 항암효과를 확인하였다. 1.5% $Na_2EDTA$와 0.05 N HCl이 큰실말 부산물로부터 가용성 식이섬유를 추출하는데 효과적이었으며 추출 시간과 온도도 가용성 식이섬유의 추출수율에 영향을 주었다. 큰실말 부산물 식이섬유의 총 폴리페놀과 플라보노이드 함량은 1% NaOH 추출물에서 가장 높게 측정되었다(총 폴리페놀 $34.4{\pm}0.055$ mg gallic acid/g dry basis, 총 플라보노이드 $34.7{\pm}0.023$ mg naringin/g extract dry basis). 또한 DPPH 라디칼 소거능 측정에서도 1% NaOH 추출물에서 가장 높은 항산화 효과를 보였다. 대장암 세포주의 세포 생존율 측정 결과, D.W.와 0.05 N HCl 및 0.5% $Na_2CO_3$ 추출물에서 농도의존적 세포 증식 억제를 보였다. 이들 결과는 큰실말 부산물로부터 분리한 가용성 식이섬유가 항산화 및 대장암에서의 항암효과에 중요한 기능이 있음을 시사한다.

도시에 거주하는 여자노인의 영양상태와 건강상태에 관한 조사연구 (A Study on the Nutritional Status and Health Condition of Elderly Women Living in Urban Community)

  • This survey was carried out to obtain the information concerning nutritional status, including factors of food intake and health condition of elderly women living in Ulsan city. Main results were as follows. 1) Dietary intake data showed the average daily intake of energy, protein, vitamin A, riboflavin and ascorbic acid were lower than Korean recommended dietary allowances (RDA). According to the percentage of RDA, Vitamin A was the nutrient found to be least sufficient. 2) Among the various influencial factors, pocket money, meal-mate, skip meal and health concern influenced on nutrient intake considerably. A meal condition score based on influencial factors, showed significant correlations with all nutrient intake(P<0.001). A health score based n the subjects complains about health condition, showed significant correlations with intake of energy, carbohydrate, thiamin, and niacin(P<0.05). 3) Average hight was below Korea reference, while average body weight of subjects was close to Korean reference. Average body mass index was 23.0. 4) The average systolic and diastolic blood pressure was 140mmHg/88mmHg, the proportion of hypertension was 32.4 percent. The average hemglobin concentration was 12.7g/dl, only 6.7 percent of subjects were anemic. Serum cholesterol concentration was normal range(140~220mg/dl) in all subjects.

식이 섬유소 및 실크 펩타이드 보충이 영양소 섭취상태 , 체적지수 및 복부 비만에 미치는 영향에 관한 연구 (Study on Consequent Nutrient Intake Status , Body Mass Index , and Fat Distribution after Silk Amino Peptide and Dietary Fiber Supplementation)

  • This study is to investigate consequent nutrient intake status, influence of body mass index(BMI), and fat distribution on the silk amino peptide(SAP) and dietary fiber supplementation. During 2 months of this research (January to March, 2002), 45 women aged 20yr – 30yr (average age 24.6yr) were selected as subjects. Nutrient intake was investigated by questionnaire, 24-hr recall method. Antropometric assessments of the subjects were investigated by SBIA method(Segmental bioimpedance assay, In body 3.0). The results are as follows: mean body weight 57.7kg, mean body height 161.9cm mean BMI 22.0, and mean food habit score was 8.47. Defecation frequency was increased by dietary fiber supplementation. Frequency of pain during defecation was significantly decreased by dietary fiber supplementation (p<0.01). Feeling of residual feces was significantly improved by dietary fiber supplementation(p<0.001). Status of energy and carbohydrate intakes significantly decreased after dietary fiber supplementation(P<0.05). Body fat and WHR(waist hip ratio) significantly decreased after dietary fiber supplementation(P<0.001), and percent body fat was decreased by dietary fiber supplementation, significantly(P<0.05). Above results of this study show that dietary fiber-added routine diet improves defecation condition, and lessens body fat, percent body fat without losing body muscle. Especially, declination of abdominal fat and WHR were notable. That meant decreased risk factor.

Effect of Steam Explosion Condition on the Improvement of Physicochemical Properties of Pine Chips for Feed Additives

  • Dietary fiber is considered a feed ingredient with high nutritional value in the broiler feed industry. Pine chips contain a large amount of dietary fiber and require some modification for use as broiler feed. In this study, pine chips were subjected to steam explosion under different severity factor (Ro) conditions to improve the chemical and physical properties of dietary fiber. The highest water-holding capacity, oil-holding capacity, and swelling capacity were found for Ro 4.0, followed by Ro4.5 and 3.5. The optimal condition for the steam explosion was determined to be Ro 4.0 (reaction temperature of 210℃, and reaction time of 6.0 min). Under these conditions, the water-holding capacity, oil-holding capacity, and swelling capacity of steam-exploded pine chips were 8.3 g/g, 6.5 g/g, and 5.0 mL/g, respectively. This study may contribute to the application of lignocellulose and related products in the broiler feed industry.
