In order to at day evaluate effect of dietary 2.0 % brown seaweed(Undaria pinnatifida) with bean extract on performance and nutrients utilization during acute phase response, one day-old broiler chicks were fed basal diet and diets substituted with 2.0 % brown seaweed and 2.0 % brown seaweed with bean extract instead of wheat bran in basal diet for 4weeks. Dietary 2.0 % brown seaweed with bean extract enhanced dietary ME value and protein accumulation due to the increased NB and decreased UAN excretion. increased feed intake during acute phase response and had the highest body weight among birds fed experimental diets. The resulted indicated that dietary 2.0 % brown seaweed with bean extract improved performance of broiler chicks due to the increased protein accumulation during acute phase response.
The survey was conducted by using questionnaires in order to investigate the expectation of over middle aged people on dietary living during their elderly life. Many persons(41.9%) anticipate that some kind of change will happen in dietary living during their elderly life. They are willing to prepare their own meals by themselves (73.5% of male and 86.6% of female). It is expected that they prefer various kinds of foods, korean traditional foods, home-made foods, natural food to processed food, and nutritionally balanced foods. The balance of nutrition and easiness of digestion should be primarily considered as a base of food choice, and then taste or convenience. The result of this study indicates that korean traditional food culture can not be easily changed. If food industries had a plan to produce some items for future silver generation, they should make efforts to develop processed foods considered the nutrition and digestibility, natural foods packed conveniently for home-cooking, and food preparation equipment used easily by elderly people.
Good health and longevity is the goal of huamn beings. Recently, 'Dietary treatment' has become influential as one of the means for it in western medicine. Whereas in oriental medicine, 'Dietary treatment' was not recognized as therapeutic method but care of health. in this paper, the viewpoints of 'Dietary treatment' in oriental and western medicine was compared and searched for new possibilities in oriental medicine. And the results were as follows. 1. In oriental and western medicine, food was obviously recognized as a source of nourishment, and moreover oriental medicine took even a human soul into consideration. 2. Western medicine made much of nourishment and was analytical and therapeutic-centered. on the other hand, oriental medicine took a serious view of prevention and care of health. 3. Oriental medicine considered that intake of food was a adoption of Gi(氣) and then it helped a circulation of Gi and beneficial for the production of Jeong(精). 4. The principles of diet in oriental medicine was reasonable combination of food, balance of Oh-Mi(五味), temperance of food and intake by physical constitution.
The objectives of this study were to assess food intake frequency and food behavior of infants and toddlers by using the Nutrition Quotient (NQ). A total of 368 subjects (infants 111, toddlers 257) in Ganghwa county were analyzed in this study. The NQ was examined using an NQ questionnaire, which consisted of 19 food behavior checklist items. The items were grouped into five categories: balance, diversity, moderation, regularity, and practice. All data were statistically analyzed by SPSS 20, and significant difference was evaluated by Student's t-test and $x^2-test$. The BMIs of infants and toddlers were $16.54kg/m^2$ and $16.01kg/m^2$, respectively. The frequencies of consumption of vegetables and fruits were higher (p<0.001) in girls and toddlers compared to boys and infants, respectively. Food behavior of meal regularity (p<0.001), breakfast eating (p<0.001), and chewing well (p<0.001) were also higher in toddlers compared to infants. Total NQ score of infants and toddlers were 62.05 and 64.91, respectively, which were within medium grade. The NQ score of toddlers was higher than that of infants (p<0.0.5). NQ score was positively correlated with parent's education, monthly income, age, and exercise. Therefore, children and their parents need proper nutrition education and counseling to correct their eating habits and improve their nutritional status.
The purpose of this study is to evaluate the relationship of blood pressure with dietary habit and level of physical fitness of middle-aged male workers by age. The study subjects included 511 male employees who have worked at a company in C City, whose age was more than 40 years old. Between April 10 and May 30. 1998, all of the study subjects measured physical fitness (Balance, strength, power, agility, flexibility and endurance) and blood pressure. A questionnair was administered for dietary habit and socio-demographic characteristics. The average age (SD) of the study subjects was 46.61(3.98) years. The study subjects were classified by age into 3 groups; 40-44 aged group(34.6%), 45-49 aged group(41.3%), and 50-54 aged group (24.1%). The score of dietary habit of 40-44 aged group was $69.77{\pm}5.82$. that of 45-49 aged group was $69.77{\pm}5.83$, and that of 50-54 aged group was $71.85{\pm}6.82$(p=0.005). But age of health physical fitness tend to weaken in the age of 40-44. Systolic(p=.011) and Diastolic blood pressure (p= .011) were significantly increased with age increment. Diastolic blood pressure and dietary habit of 45-49 aged group showed the significant negative-correlation(r= .280. P<0.05). and Diastolic blood pressure and age of health physical fitness of 40-44 aged group showed the significant positive-correlation(r= .182. P<0.05). On the basis of the results of this study. I hope occupational nurses should play an active role to improve dietary habit and physical fitness for prevention of hypertension with increase of age in middle-aged male workers.
The purpose of this study was to assess dietary variety by body mass index, waist circumference and exercise habits in 138 female university students residing in Bucheon and its adjacent area. Body mass index(BMI), waist circumference (WC) and exercise habits were assessed via a self reporting questionnaire, and a 3-day dietary recall survey was conducted by interviewing. Dietary variety was assessed by dietary diversity score(DDS), meal balance score(MBS), and dietary variety score(DVS). The average BMI, WC, DDS, MBS, and DVS were $20.7{\pm}2.59\;kg/m^2$, $69.3{\pm}5.03\;cm$, $3.87{\pm}0.57$, $7.27{\pm}1.48$, and $12.59{\pm}3.14$, respectively. The DDS for breakfast, lunch, supper and snack were $1.80{\pm}0.92$, $2.45{\pm}0.48$, $2.49{\pm}0.55$ and $0.53{\pm}0.52$, respectively. DDS, MBS, and DVS were not significantly correlated with BMI, WC and exercise habits. However, DDS for breakfast and supper were significantly higher(p<0.05) and lower(p<0.05) respectivly in subjects who exercised regularly compared to those who did not exercise regularly. And DDS for snack was significantly higher in subjects whose awareness of health status was good or somewhat compared to those whose that was bad(p<0.05). These findings suggest that nutritional education based on female university students' eating variety and regular exercise may be required to improved dietary variety.

Objectives: The study purpose is to develop a content system for a healthy dietary education program for after-school care in lower grade in elementary school. Methods: The contents of healthy dietary education in the 2015 revised curriculum and textbooks and the major education programs related to dietary life that are currently used in elementary school education were analyzed. Focus group interviews were held with field experts related to lower grade in elementary care class. Accordingly, the structuring of the education area and the detailed education contents were systematized. Results: From the analysis results, the contents of curriculum, textbook, and administrative department were classified as hygiene safety, health, and culture. The goal of the educational content system was divided into three areas: nutritional dietary life, food hygiene and health, and food culture. The subjects consisted of dietary balance, healthy body weight, digestion and absorption, food hygiene, Korean agricultural products, traditional food, and table manners. The curriculum was composed of 12 content elements. Conclusions: In order to ensure that after-school care students can grow into healthy, growth-oriented and creative talents, the role of the caring guide is important, and associated guidelines are needed in the future.
The study was carried out to evaluate leucaena seeds as a protein replacement of mustard seed cake (MSC) in the concentrate mixture of growing lambs. Fifteen owing male lambs (Local${\times}$Corridale) with an average body weight of 16.3 kg were allocated into three dietary treatments (T1, T2, and T3) with five animals in each group. Animals were offered dry mixed grass, berseem hay and concentrate mixture to meet their nutrient requirements. In concentrate mixture of T1, (Control) MSC was used as protein source, while in T2 and T3 groups, 25 and 50% of MSC was replaced by leucaena leucocephala seeds. On completion of three months (90 days) of feeding, a digestion cum-metabolism trial was conducted to determine DMI, nutrient utilization, and nitrogen balance. Changes in body weight were recorded at 15 day internals and eating patterns were recorded for 3 consecutive days at the end of the feeding trial. MSC had higher CP contents than leucaena seeds (27.0%). Mimosine contents in leucaena seeds were 1.1 compared to 0.2 and 0.4% in concentrate mixture of T2 and T3 group, respectively. Dry matter intake varied non-significantly ($79.3{\pm}1.2$ to $83.4{\pm}1.3g/kg$$w^{0.75}$) across the dietary treatments. Digestibility of DM and cell wall polysaccharides (NDF, ADF. Cellulose and hemicellulose) were comparable, however CP digestibility was relatively lower in leucaena luecocephala seeds based groups (T2 $45.5{\pm}1.7$ and T3 $46.7{\pm}3.5$) compared to MSC supplemented group (T1 $47.7{\pm}0.9%$). The growth rate of lambs was non-significantly higher in T1 ($79.2{\pm}5.4$) compared to T2 ($73.8{\pm}8.8$) and T3 ($73.9{\pm}7.0$), respectively. The animals were in positive nitrogen balance and N-balance varied from 1.8 to 2.9 g/d across treatment groups. The eating rate (% of total offered) of concentrate up-to 15 min was relatively higher in T1 (82.4) than T2 (74.2) and T3 (77.8%). However no effect of leucaena seeds was recorded on total DMI of animals. The results of the study revealed that the inclusion of up to 50% leucaena seeds, as protein source in concentrate mixture of lambs had no adverse effect on DMI, nutrient utilization, eating patterns, nitrogen balance and growth performance of lambs.

It has been proposed that differences in diet between smokers and nonsmokers may partially explain the positive association between cigarette smoking and chronic diseases such as cancer and coronary heart disease. To investigate the potential for this confounding, the authors studied the relation between cigarette smoking and dietary pattern including nutrient intake in 152 Korean elderly people aged 59∼84years. Dietary intake was determined by a 24-hour recall method and a food frequency questionnaire. Male smokers were lighter than nonsmokers and had a lower body mass index(BMI)(p<0.05). But there were no differences in body weight and BMI between female smokers and nonsmokers. Female smokers had lower intakes of energy and carbohydrates than nonsmokers(p<0.05), but in male, smokers and nonsmokers did not show the difference in energy intake. The mean intake of fiber, protein, fat, minerals, and vitamins did not vary significantly by smoking status. However, both male and female smokers consumed fewer fruits than nonsmokers and ate fresh fruits less often than nonsmokers. The total food frequency score which reflect dietary quality of smokers was lower than those of nonsmokers(p<0.05). Male exsmokers' diet were similar to those of smokers, but in female, dietary patterns of exsmokers were similar to those of nonsmokers. These results confirm that elderly smokers have partially different nutrient and food intake patterns from nonsmokers. The decreased ingestion of fruits and less balanced diet by cigarette smokers could contribute to their increased risks of chronic disease compared with those by nonsmokers. The increased ingestion of nutrients and improved nutritional balance in the diet of exsmokers may help to reduce their risks as well.
The purpose of this study was to evaluate nutrient and food intake status and dietary, quality according to obesity based on nutrient and food group intake, in female university students. Surveys were conducted using questionnaires and 3 days, dietary record in 360 female university students residing in Seoul. The subjects were divided into two groups by percent of body fat: an overweight group(percent of body fat more than 23%, n=249) and normal group(percent of body fat below 23%, n=111). The overweight group had a larger proportion of subjects who binged compared to the normal group. There was no significant difference in energy intake between the two groups. The densities of plant calcium and dietary fiber in the overweight group were significantly lower than those of the normal group. However, animal fat density was significantly higher in overweight subjects. The Korean's dietary diversity score(KDDS) of the overweight group was 4.65, and that of the normal group was 4.67, indicating no significant difference. There was no significant difference of DQI-I between the overweight group(50.8) and normal group(51.1). However, the macronutrient ratio score was significantly lower in the overweight group. These results indicate that overweight female college students may have improper dietary habits, and have lower overall balance aspect macronutrient ratios.
