The purpose of this study was to explore the variables affecting the quality of hospital dietary services. The quality of hospital dietary services was investigated in two ways, which can be named by factual quality and perceived quality The variables affecting hospital dietary services were classified into two categories, $\ulcorner$organizational environment variables$\lrcorner$ and $\ulcorner$work behavior variables$\lrcorner$. Quality readiness survey was conducted to investigate $\ulcorner$organizational environment variables$\lrcorner$ and $\ulcorner$work behavior variables$\lrcorner$ on 225 dietitians working in dietary departments of 45 general hospitals which had more than 400 beds. $\ulcorner$Organizational environment variables$\lrcorner$ were categorized into four variable group:'organizational work design', 'organizational culture', 'department head leadership' and 'top management leadership'. $\ulcorner$Work behavior variables$\lrcorner$ were categorized into three variable group: 'individual behavior', 'peer group behavior', and 'behavior toward supervisor'. Top management leadership (p< 0.01)' in the $\ulcorner$organizational environment variables$\lrcorner$ had significant impacts on the factual quality of hospital dietary services.

Objectives: This study examined the factors the oral health promotion in university students. It is to identify factors that affect activities for life style and subjective oral health status. Methods: The subjects are 385 students who agreed to participate in research Cheonan. Questionnaires were distributed and collected after they filled in by themselves. SPSS ver.20.0 was used for analysis to get the reliability of each analysis tool. The genral characteristics was analysis of frequency. For comparison oral health promotion and subjective oral health status related to the genral characteristics, it was used t-test, ANOVA. Pearson's correlation was used correlation of each variable. multiple linear regression analysis was used to comprehend that affects oral health promotion behavior. Results: There was statistical significant difference in factors affecting subjective oral health status, departments of health. dietary lifestyle was low correlated among sub factors of lifestyle. oral health promotion behavior wasn't related to subjective oral health status. dietary lifestyle had the most significant impact to oral health promotion behavior. Conclusion: To progess through oral health education program of the university students, it is asked to configure the content that can handle regular lifestyle, rather than focusing on smoking habits and drinking habits.
Purpose: This study was to explore the factors affecting on Dietary Behavior Change of the vulnerable elderly based on the Stage of Change. Methods: This study was a secondary analysis of the data collected from 1,262 elderly who were participated in the case management program. Total 984 participants who responded all questionnaire were included in the analysis. The variables included general characteristics, health behavior, health status, and dietary behavior stage. The data collected were analyzed by descriptive statistics, trend test and multi-variate logistic regressions. Results: about twenty four percent of the vulnerable elderly subject was pre-contemplation stage and 46.1% of them was contemplation stage of dietary behavior. Having a depressive mood, dependance of Instrumental Activity of Daily living, and being medicaid affected on starting or on maintaining healthy dietary behavior in vulnerable elderly negatively. Conclusion: The tailored nutritional intervention depending on dietary behavior stage are needed for the vulnerable elderly to improve the health. The program which can maintain the function remained of elderly and give psychological support together will be more effective.
Epidemiological studies have indicated that a relationship between overweight and cardiovascular disease exists. To assess the relationship of unfavorable changes in serum lipid concentrations, apolipoprotein B, lipoprotein(a), blood sugar and blood pressure to anthropometric variables, nutrient intakes and dietary behavior,64 obese children were chosen as subjects and 24-hour dietary intake, dietary behavior as well as blood pressure, apolipoprotein B, lipoprotein(a), three kinds of cholesterol concentrations were measured in November 1976. More than half(57.8%) of the children had serum cholesterol concentrations over 175mg/d1, and 26.6% of them had over 200mg/d1 and this group could be classified as a high risk group. Abdominal obesity as measured with waist circumference and waist hip ratio was negatively co..elated to high density lipop개tein(HDL) cholesterol. Dietary behavior rather than nutrient intakes appeared to have associations with unfavorable lipid profiles. Total dietary behavior scores and fish and bean product consumption had strong correlations with potentially atherogenic lipoprotein concentrations. This study suggests that fir the early prevention of cardiovascular disease, waist hip ratio together with obese rate should be included in selective programs to identify risk group of children in Korea. furthermore, interventions in cardiovascular disease risk groups in obese children should emphasize maintenance of ideal body weight through reducing body fat and adopting desirable dietary behaviors such as increasing intake of fish or bean products. Objectives: The purpose of this study was to investigate the health food consumption patterns and their relationship to dietary behavior in middle-aged women (45-60 years). Methods: The exclusive face-to-face interviews by well-trained interviewers guaranteed a scientific data collection and the quality of survey data of 731 women. Subjects were divided into two groups according to the intake of the health foods, 'Intake' group (${\geq}3.2$, n = 488) and 'Non-intake' group (n = 243). Data were analyzed using the SPSS 20.0 program. Results: The average age of the subjects was 49.8 years and 66.8% of subjects were taking the health foods. Vitamins and minerals were consumed by the subjects. The major reason for intake of health foods was that they provide nutrient supplements may prevent diseases. More than 70% of the subjects reported checking nutrition information, ingredients, recommended daily intakes, instructions, when they bought the health foods. The average dietary life score of the intake group was significantly higher (p < 0.05) than that of the non-intake group. In analysis of exploratory factors of dietary life, the intake group showed significantly higher score (p < 0.001) in 'moderation of food intake' among the 4 exploratory factors. Conclusions: These results showed that women who took health foods had better dietary behavior than others suggesting a positive relation between the dietary behavior and the health food consumption. Therefore, we suggest that developing guidelines and then educating women about those guidelines could improve the ability of choosing health foods appropriately for their own benefit.
From the onset of puberty or during its progress, eating and health behaviors are important in establishing optimum growth and healthy fitness in middle school students. This study investigated the dietary and health behavior of first grade middle school students(male 260, female 255) selected from 3 middle schools in Suwon. Results were analyzed using the statistical program(SAS ver. 8.1). Usual dietary habits were scored by the Likert scale of 5 points and obtained the mean and standard deviation. Obtaining significant gender difference, chi-square and student t-test were also done. Daily breakfast intake was 70% of all students but some of them ate alone(27.3%). The amount of food intake was slightly less(34.8%) but sufficient food for dinner(53.2%). The purpose of each meal was solving hunger(57.4%). However, they want to change their current eating habits because of an unbalanced diet. Usual dietary habits were similar in gender, but 'apply nutrition knowledge' and 'consider food combination' were better in female students (p<0.01), 'regular meals' were higher in males(p<0.01). With respect to health behavior, the subjects went for daily walks for less than an hour(39.9%) and got 7-8 hours of sleep per day(33.8%). The amount of sleep was sufficient(22.6%) in males but in insufficient (33.8%) in female students(p<0.01). Weight control efforts for reducing(female 27.5% male 20.8%) and for increasing(male 10.6%) differed according to gender(p<0.01). As the result of the above analyses, the direction of nutrition education would be oriented to the nutrition knowledge and food combination applying to the diets of male students and regular meals for females. And also sleep dissatisfaction needs to be altered with taking care weight control trials.
Purpose: The aim of this study was to examine BMI, body fat mass, percent body fat, waist-hip ratio, soft lean mass, skeletal muscle mass, and fat free mass, and to determine the association between dietary behavior and exercise and body composition among students at women's colleges, and decide on the relationships among them. Method: This study employed a cross-sectional study design and a convenient sampling method. Ultimately, a total of 404 students participated in the study, which was conducted from September 1 to December 22, 2009. Measurements administered were comprised of dietary behavior and a questionnaire on exercise. The SPSS Win 18.0 statistics program was used for analysis of final data. Results: Major findings are as follows: 9.9% of participants showed a high BMI, and more than 56% and 38% of participants showed a high percent body fat and waist-hip ratio, respectively. Dietary behavior showed a significant negative association with percent body fat (r=-0.110, p=0.027) and waist-hip ratio (r=-0.118, p=0.018). Compared with the non-regular exercise group, the regular exercise group showed a high level of soft, lean mass (t=4.15, p<0.001), skeletal muscle mass (t=3.13, p=0.002), and fat free mass (t=4.00, p<0.001). Conclusion: For maintenance of proper body composition, health promotion programs for management of dietary behavior and regular exercise for students at women's colleges should be developed.
The objective of this study was to investigate the effect of dietary education on undergraduate student's health, environment, and consideration. A total of 54 participants were recruited from an undergraduate student in Seoul. We conductive quantitative analysis of a structured questionnaire and qualitative analysis of interviews recorded by photovoice. There are significant differences among knowledge, dietary attitude, and food behavior in the field of health (p<0.001). In the field of health, photovoice data were categorized as 'health care practice', 'Korean dietary lifestyles', or 'awareness of importance of health' (p<0.001). In the field of environment, photovoice data were categorized as 'environment-friendly dietary lifestyle' and 'environmental contamination minimization'(p<0.001). In the field of consideration, photovoice data were categorized as 'gratitude for others', 'joy of cooking'or 'eating meals together'(p<0.01). In conclusion, we found that dietary education about health, environment, and consideration may affect healthy dietary lifestyle among undergraduate students. Our findings may warrant further studies to develop significantly effective dietary education for undergraduate students.

The purpose of this study was to investigate the effects of dietary behavior on the nutritional status of university students in Korea. A dietary intake survey of 603 university students (223 males and 380 females) was conducted using a 24-hour recall method. The resulting data on dietary behavior and nutrient intakes were analyzed by the SAS program package. The main results were as follows : 1) Most of the subjects were in their twenties and no obese cases were found. 2) Dietary intake data showed that, except for vitamin C in the female students, the average daily intakes of most nutrients did lot meet the Korean Recommended Dietary Allowances (RDA). The study also showed that most of the subjects, especially the female students, were concerned about having satisfactory physical appearances. Fat provided 25% of the daily energy intake, and this level was higher than the 20% recommended by the Korean Dietary Guidelines. In the female students, the iron intake from animal foods was lower than that from plant foods. 3) Male students were not very serious about healthy eating. However, the female group, who obtained a high score in dietary behavior, consumed more vegetables and had higher intakes of energy, protein, Ca, p, vitamin A, and vitamin C than the male group, even though they did not meet the Korean RDA in most nutrients. Energy intake from fats, as a percent of total energy intake, was lower than in the group of females who obtained higher stores in dietary behavior than the other groups. To sum up, the university students surveyed in this study were found to have the typical dietary behavior of young adults, such as frequent eating out and snacking. Female students were extremely conscious of their body images this can exert an important direct influence on their dietary intakes and health status. It is very important for university students to develop healthy lifestyles and desirable dietary behaviors, to best enable them to continue to lead a healthy lift: in their later years.
Objectives: Diet and incidence of chronic diseases are highly related. This study examined the characteristics of dietary safety awareness and competency for chronic disease prevention among adults. Methods: Data were collected from 247 adults in Daegu and Gyeongbuk areas using a self-administered questionnaire in May and June of 2018. Data were analyzed by frequency analysis, χ2-test, factor analysis, reliability analysis, t-test, one-way analysis of variances, and correlation. Results: The results of the factor analysis indicate that dietary safety awareness of health management was classified into chronic disease anxiety and obsession. Awareness of dietary safety management was sub-grouped into difficulty in acquiring knowledge, lack of awareness of over and malnutrition, food safety anxiety, importance of weight management, education requirement for cancer prevention, and knowledge. Dietary safety behavior composed of a balanced diet, unhealthy diet, and health-functional pursuit. Dietary safety management competency was comprised of health management, food management, and cooking. The competency scores of dietary safety management factors were significantly different according to sex, age, and education level (P < 0.05). Balanced diet factor was significantly correlated with knowledge, health-functional pursuit, health management, food management, and cooking capacity factors (P < 0.01). Conclusions: Active education for dietary safety management competency according to age, gender, and education level should provide dietary safety education to reduce anxiety and obsession regarding chronic diseases and sustainable health management.
