Objectives: A higher consumption of vegetables is emphasized as the core component of most dietary guidelines. Thus, this research investigated the dietary habits and influencing factors of vegetable preferences of adolescents. Methods: This study was conducted by using a self-administered questionnaire. 400 students from two high schools in Gyeongnam (193 boys, 207 girls) participated in the survey. The questionnaire consisted of the following variables: dietary habit, dietary action guide and factors based on Social Cognitive Theory (SCT). Results: The dietary habits of subjects showed significant differences depending on whether they prefer vegetables or not. The subjects in the group who liked vegetables had better dietary habits than the other group. Also, the study determined that the most important reason for liking or disliking vegetables is due to the taste. In the practice of dietary guidelines, the group of subjects who liked vegetables followed dietary guidelines more closely than the other group (p < 0.001). When the factors based on SCT were analyzed, personal factors showed significant differences between the groups: outcome expectation (p < 0.001), self-efficacy (p < 0.001) and affective attitude (p < 0.001). Personal factors and rated vegetable preferences showed a significant correlation in multiple regression analysis (F=42.015, p < 0.001). Conclusions: These results showed that vegetable preference is associated with a key point of desirable dietary habits among subjects. In order to increase vegetable preference or consumption, it is important to focus on strengthening not only self-efficacy of students, but also affective attitude of vegetable.
The purposes of this study were to assess dietary intake obtained by easy method and to compare dietary behavior of house wife and female college students in Yanbian. The subjects consisted of 276 house wives and 228 female college students. Mean daily energy intake of house wives was 1926.0kcal and that of female college students was 1949.0kcal. Calcium intake as NAR(Nutrient adequacy ratio) was lowest in house wife and female college student. Iron intake was also low in subjects and lower in female college student than in house wife. Meal frequency per day was regular in subjects. Skipping meal time in subjects was breakfast and snaking time was late evening generally. Frequency of eating out was rare in most subjects and 60.6% of subjects preferred chinese food in eating out, while house wives preferred Korean food than female college student in eating out. The vegetables were preferred than meat or fish and used by fried in sauces. Hot and sour tastes were more like than greasy taste in subjects. Nutrient intake levels and dietary behaviors of house wife were to be like as those of female college students in general. BMI(Body mass index) was lower in female collage students than house wives, similarly in Korean. According to these results, house wives and female college students in Yanbian had similar dietary patterns. Calcium intake was tend to be low and dietary pattern was regular, dietary qualifies of subjects were adequate. Nutrient intake and dietary pattern in Yanbian were to be like as in Korean, and the Korean-Chinese in Yanbian maintained traditional dietary pattern.
Although food insecurity might be associated with poor dietary intake, this relationship has not been researched in Korea. This study examined the association of food security with dietary intake from the third Korea National Health and Nutrition Examination Survey. Food security was measured by a self-reported hunger measure on the dietary situation of subjects' households in the previous year and approximately 2/3 of the subjects lived in food-insecure households. Dietary intake was based on a 24-hour dietary recall. Food insecurity was significantly associated with low nutrients intake and nutrients intake compared to dietary reference intakes (DRI) was also lower among subjects in food-insecure households. Overall diet quality based on dietary diversity score (DDS) was worse in food-insecure subjects. Food security should be considered an important issue to public health because dietary change due to food insecurity may affect health status.

This study aimed to investigate the possibility of replacing the isolated soy protein (ISP) as a binding agent for wheat, oat, and bamboo shoot dietary fibers. Dietary fibers and ISP were added to manufacturing process of pork emulsion, respectively, for investigate quality properties. Moisture contents of pork emulsion added wheat fiber-treated group was significantly higher than ISP-treated group (p < 0.05), and protein contents of dietary fiber-treated group were significantly lower than ISP-treated group (p < 0.05). Raw pork emulsion CIE a⁎ value of oat, bamboo shoot fiber-treated group were significantly lower than ISP-treated group (p < 0.05). After cooking pork emulsion CIE L⁎ value of dietary fiber-treated group were significantly higher than ISP-treated group (p < 0.05). Raw pork emulsion water holding capacity (WHC) of wheat, oat fiber-treated group were significantly higher than ISP-treated group (p < 0.05), and cooked pork emulsion WHC of wheat, bamboo shoot fiber-treated group were higher than ISP-treated group (p < 0.05). Cooking loss of ISP-treated group was significantly higher than dietary fiber-treated group (p < 0.05), and viscosity of ISP-treated group was lower than dietary fiber-treated group. Hardness of ISP-treated group was significantly lower than dietary fiber-treated group (p < 0.05); however, cohesiveness of ISP-treated group was significantly higher than dietary fiber-treated group (p < 0.05). In conclusion, dietary fiber added as binding agent to manufacturing process of pork emulsion was suitable to replacing ISP.
Aim of this study is to investigate the nutrition knowledge, dietary behaviors, and dietary habits by the gender in high school students in Chungnam province. Girls students had a higher score than boys students for nutritional knowledge, not in the significant difference. However, boys students had a higher score for dietary behaviors than girls students. Dietary habits showed a significant difference in the unbalanced food habit and eating speed by the gender, and the eating speed of boys students was faster than that of girls students. For boys students, the nutritional knowledge and dietary behaviors did not have the significant correlation. Otherwise, girls students had the positive correlation between the nutritional knowledge and dietary behaviors, and had the characteristics of behaviors that the higher the nutritional knowledge score, the better eating habit. In addition, the boys and girls students had the positive correlation between the score of nutritional knowledge and the frequency of breakfast, and the score of nutritional knowledge and the frequency/regularity of breakfast, respectively. Because some dietary habits/behaviors are related closely to their nutritional knowledge, the high school students need the systematic and steady nutritional education to apply their known nutritional knowledge to actual life.
This study is to analyze the effects of dietary life education of elementary school students by gender and by grade to seek for solutions of activating the rural convergence industry in linkage with dietary life education. Subjects were 152 students of eight elementary schools in Chungcheongnam-do. As a result of the study, after application of the dietary life education program, the scores were statistically significantly improved and four sub areas(education at the dining table, practice of green dietary life, reduceing food wastes, learning about local foods) showed a statistically significant improvement. Scores by gender were statistically significantly improved among both male and female students and the results of analyses by gender in four sub areas of dietary life education were also statistically significantly improved. Scores by grade were statistically significantly improved in all grades and the results of analyses by grade in four sub areas of dietary life education were also statistically significantly improved. Since the dietary life education program in the present study is effective for dietary life improvement, the results of the present study are expected to be utilizable in education of elementary school students and lead to the consumption of regional foods by increasing the ability to select proper foods.
The purpose of this paper was to clarify the actual conditions of the 'Dietary externalization' mainly by using the economic and nutrition-related data, accompanied by the economic development in Korea and Japan. 'Modernization of food style' and other modernization have taken place, among which 'Dietary externalization' in particular has recently drawn interest. At the time this paper clarified with econometric analysis whether there are differences between the two countries in term of the modernization of food style and dietary externalization trend. The trends of Dietary externalization of both Korea and Japan were studied using Principal Component Analysis method. The food subgroup were investigated based on the annual report on the household income and expenditure survey of Korea and the annual report on the family income and expenditure survey of Japan. The statistical data from both country were analyzed by SAS program. The results are as follows; 1. In Korea, the ratio of carbohydrates in the total calorie intake is quite high and animal protein is rather low compared to those in Japan. 2. Traditional food such as grains and vegetables are consumed much more in Korea than in Japan. 3. The Principal Component 1, 2 were extracted in both countries during the whole analysis period, which suggested the 'Dietary externalization' 4. Principal Component 1 has a positive factor loaded in all food items including meals outside the home and process food. In other words, it is apparent that the 'Dietary externalization' tread in Korea has a simple pattern suggesting that all externalization related items are on the rise. 5. Principal component 1, 2 which indicated the dietary externalization, were detected in Japan.
The principal objective of this study was to identify the dietary and physical activity patterns of obese preschoolers, and to determine the association between child obesity and mother's' dietary habits or thoughts regarding dieting/weight. This is a cross-sectional, community based study, and 305 preschoolers who attended kindergarten in Seoul and its surrounding area were selected. The measurements of dietary habits both in preschoolers and their mothers, physical activities of preschoolers, and daily servings of foods were based on parents' self report. Weight and height were used to calculate WLI (weight length index) in preschoolers and BMI (body mass index) in their mothers. The subjects were divided into two groups 245 normal weight preschoolers (including underweight 15.1% and normal weight 65.6%) and 59 obese subjects (overweight 14.4% and obese 4.9%). With regard to dietary habits in normal and obese preschoolers, we noted significant differences in 5 questions, such as mostly eating heavy meals, one serving size, eating speed, overeating, and obsession about eating. No differences in daily servings of major foods and snacks, except fruits and potatoes, were noted between normal and obese children. Among 13 questions regarding mothers' dietary habits, only 3 questions-"preferred to instant foods", "finish meals within 15 minutes", "use nutritional information for selecting foods" were significantly different between normal and obese subjects. The total scores of mothers' dietary habits was significantly and negatively correlated with number of mother's dieting experiences or mother's BMI, but was not correlated with preschooler's obesity.
This study was performed to investigate the variation in dietary fiber and fat intakes, and the contribution of food groups to dietary fiber and fat consumption in relation to age and to examine the relationship between dietary fiber and fat intakes in 337 urban adults aged 20-49 year. Dietary intakes were evaluated with one-day 24-hour recall and two-day dietary record method. Significantly higher intakes of fat in males and saturated fatty acid, monounsaturated fatty acid, polyunsaturated fatty acid, and cholesterol in females were associated with younger age. The ratio of fat to the total energy intake slightly exceeded 20% at 20s and 30s in both males and females. The main source of dietary fiber was vegetables in all age groups of males and 30s of females, but grains in 20s and 40s of females. The main source of fat was meats in all age groups of males and 40s of females, but grains in 20s and 30s in females. The main source of cholesterol was eggs in both males and females. Dietary fiber intake was positively correlated with all fat-related parameters except cholesterol in 20s and 40s and was positively related with fat in 30s of males. For females dietary fiber intake was positively correlated with polyunsaturated fatty acid in 20s and with monounsaturated fatty acid and polyunsaturated fatty acid in 40s. These findings show that there is considerable variation in intake of dietary fiber and fat in relation to age among adults and suggest that these factors should be considered at interventions aimed toward improvement of nutritional status.
This study was conducted to investigate the changes of dietary attitudes and behaviors in relation to the use of computers of elementary school children in Seoul. The total of 451 elementary school children, consisting of 235 females and 216 males, participated in the study. The result of domestic characteristics, dietary attitudes and behaviors, the level of the use of computers, and health-related symptoms of the subjects were achieved through the questionnaires as follows: The average height, weight, BMI and obesity-index of the participants were 149.0 cm, 42.4 kg, 19.0, -8.6, respectively. Anions subjects, 42.8% answered their bed times were between 11~12 pm, and 82.4% answered that they had extracurricular activities. The most desired activity as their leisure was computer works (female: 44.3%, male: 62.5%). 38.4% of children used the computers for 1~2 hours a day and the most general usage of computers was a computer game (66.1%). The changes in dietary habits of the subjects were such as eating faster(30.2%), having lots of snacks(28.8%), eating anything at hand(26.4%), skipping breakfast due to over-sleeping(18.4%). As changes in life patterns, those in the time managements for watching T.V.(35.3%), reading(35.0%), exercising(31.9%), sleeping(27.5%), relaxing(27.5%) and other hobbies(26.4%) were observed. In conclusion, many children were being affected by the socioeconomic factors changing the environments, especially by the need for the use of computers. The rates of eating alone and skipping breakfast were getting higher in the dietary patterns of elementary school children. We found that the changes in social environments according to the heavy use of the computer were affecting on their dietary pattern. The direction and method of nutrition education had to be established for the proper understanding of the desirable dietary behaviors.
