Body Image, Eating Problems and Dietary Intakes among Female College Students in Urban Area of Korea (일부 도시지역 여대생들의 신체상과 섭식 장애 및 영양 섭취 양상)

  • Concern about body weight among young females is too much, so distorted body image and restrained eating are serious problems among Korean young females. A society preoccupied with thinness give a psychological burden to women, this burden may have adverse effects on health physically and psychologically. We tried this study to investigate body image, eating problems, and dietary intakes among female college students in urban areas of Korea. We satisfactorily surveyed using their body weight, desired weight dieting, binge eating, and night eating by self-questionnaires with 500 female college students. We evaluated their dietary intakes by semi-quantitative food frequency questionnaires to assess their usual intakes. After removing incomplete data, we analyzed 469 data by SAS 6.10. The 469 women aged 21.1 years. Their mean height, weight, and BMI were 161.4cm, 52.5kg, and 20.2kg/$m^2$ respectively. Though the frequency of obesity was only 2.6$\%$, the frequency of dissatisfaction with their body weight was 84.7$\%$. Female college students desired their hight, weight, and BMI to be 165.8cm, 48.2kg, and 17.5kg/$m^2$, respectively. The frequency of binge eating and night eating were 20.7$\%$and 6.8$\%$. The odds ratios for binge eating and night eating were 10.9(95$\%$ CI : 2.6-15.1) and 6.0(95% CI : 1.8-14.8) in the group satisfied with their body weight compared with the dissatisfied group. The odds ratios for binge eating and night eating were 2.6(95% CI : 1.6-4.4) and 2.4(95% CI : 1.1-5.4) in the dieting group compared with the non-dieting group. The mean caloric intake was 1, 840kacl and percent intakes of carbohydrate, protein, and fat wee 57.2$\%$, 16.3$\%$, and 24.0$\%$, respectively. The dieting group showed deficient intakes of protein and calcium significantly compared with the non-dieting group showed deficient intakes of protein and calcium significantly compared with the non-dieting group. Almost all women college students in urban area had dissatisfaction with their body shape, and desired severe undrerweight. The frequency of binge eating and night eating increased according to dissatisfaction with body weight, diet, and distortion of body image. Dieting has adverse effect on the intakes of essential nutrients. Educations is needed to correct distorted body image, and bad eating habits in young females, and marked preoccupation with thinness among women should then be reduced. The Clinical Study on Ordinary Symptoms and Pathological Symptoms of Stroke In-patients based on Sasang Constitutional Medicine (중풍입원환자의 체질별 소증(素證)과 중풍 발생 후 병증(病證)에 관한 임상적 연구)

  • 1. Objectives The purpose of this study is to investigate constitutional ordinary and pathological symptoms differences among each constitutional groups of stroke in-patients. 2. Methods 101 stroke in-patients(Soyangin(SY) $n^{a)}=52$, Taeumin(TE) n=39, Soeumin(SE) n=10) hospitalized at Kyung-Hee Oriental medical center from Nov. 2003 to Sept. 2004 were investigated through questionnaire which consists of 18 parts, 289 questions(156 questions concerned ordinary symptoms and 133 pathological symptoms). The answers were analyzed statistically in order to find the questions which represent the significant differences among each constitutional groups. ( a) number of patients) 3. Results As for the ordinary symptoms, majority of the Soyangin group replied that they experienced "frequent dreams during sleep" and "scarce constipation". Majority of the Taeumin group affirmed to "dark redness of face", "dry nose", "low intolerance of heat", "good appetite and digestion", and "frequent overeating experiences". Majority of the Soeumin group affirmed to "pale face", "insomnia", "frequent constipation", "poor appetite and digestion", "small amount of diet", "slow eating", "fond of warm or hot water", and "easily tired(especially after sweating)". As for the pathological symptoms, majority of the Taeumin group affirmed to "frequent optic fatigue", "frequent tinnitus", "frequent bitter mouth", "fond of cold water", "flatulent", "stuffiness in the navel area", "irregular stool habits", "frequent constipation", "large amount of sweat", and "frequent rigidity of neck". Majority of the Soeumin group affirmed to "bad appetite", "fond of warm or hot water", "drink small amount of water", "sensitive during sleep" and "frequent heavy head". 4. Conclusions Through this study, We found statistically significant questions distinguishing the characteristics of each constitutional group.

Monitoring of Food and Nutrition Information in the Articles of Four Major Daily Newspapers

  • This study was done to analyze the contents of food and nutrition information in daily newspapers. Articles in four newspapers(Chosun, Donga, Hankook, Joongang Ilbo) published during November 2003 to April 2004 were monitored. In analysis, 216 articles were used. Classifying the articles by topics, cuisine/cooking $(19.4\%)$ and food/ nutrition related to diseases $(18.1\%)$ were most common. Articles regarding food sanitation or safety, obesity and diet accounted for $12.5\%$, respectively. Other topics in articles included food culture$(11.1\%)$, balanced meals/eating habits $(10.6\%)$ and functional foods $(7.9\%)$. About $77\%$ of articles were written for unspecified persons. Regarding the types of articles, news articles made up $44\%$ of monitored articles, followed by feature articles $(14.8\%)$, advertisement by articles $(12.9\%)$, serials by professionals $(11.6\%)$, and information of daily life $(8.8\%)$. Nineteen percent of articles did not have specific sources, while $20.8\%$ were based on interviews with professionals. Other sources of articles included research reports $(14.8\%)$, field reports $(12.1\%)$ and literature $(8.8\%)$. Contents analysis showed that four-fifth of articles were evaluated as 'contents and titles are consistent', 'not difficult to understand', 'contents are not exaggerated', and 'information is not overgeneralized'. Seventy-one percent of articles were evaluated positively on increasing awareness regarding food/nutrition, while $56.5\%$ were evaluated as providing practical information. The major problems in articles were 'intentional or indirect advertisements of specific items/companies' ($74.6\%$ of articles applicable), 'lacking in scientific basis/explanation' $(65.3\%)$, 'presenting unbalanced information due to focusing on specific area' $(46.7\%)$, 'unclearness of contents' $(38.4\%)$, and 'lacking in explanation of technical terms' $(35.2\%)$. To provide reliable information, stating the sources of articles clearly and supplementing the articles with scientific basis and balanced information on specific topics are needed. It is also necessary to explain the contents and technical terms clearly and to reduce the contents of intentional, indirect advertisement in nutrition-related articles.

Perception and Preference of Elementary Schoolchildren on Rice Foods in Changwon and Gimhae City (창원.김해 지역 초등학생의 쌀음식에 대한 인식 및 기호도 조사)

  • This study was based on the information provided by 1,180 elementary school children (630 boys and 550 girls) of 5th or 6th grade in Changwon and Gimhae of Gyeongnam province. They were asked about perception and preference for rice foods by questionnaires. The purpose of this survey was to find the way of encouraging rice intake and preference which is currently getting lower because of increasing simple westernized eating habits, and to provide basic information needed for inheriting and improving our traditional rice-based dietary culture. The results are summarized as follows. Most of subjects (91.2%) thought that steamed rice is better than bread for own health. The reason why they chose to eat steamed rice was 'because it is good for health' (61.2%), and 'because it is staple food item that we eat everyday' (26.4%). Seventy one percent of girls and 52.7% of boys gave the answer 'because it is good for health' as the reason for eating steamed rice. The reasons for the importance of the rice-based dietary culture were 'because of its superior nutritional value' (40.8%), and 'because it is our traditional eating culture' (28.6%). While significantly more girls (42.9%) answered as 'because of its superior nutritional value', more boys (39.0%) answered as 'because it is our traditional dietary culture'. More boys (59.0%) preferred noodles than girls' (54.7%), and fruits were preferred more by girls than boys as substitution foods for steamed rice showing significant difference (p<0.01). They wanted rice product developed in the forms such as Ssalamyun (29.8%), Ssalmandoo (24.1%), rice noodles (20.6%), and rice bread (15.6%). The preference score on rice products of subjects was one dish meals (4.27) and drinks (4.26), snacks (3.72), convenience foods (3.61), and steamed rice (3.44) in order. Preferred food showing points over 4 were Ssalbap (plain steamed rice) (4.29) in steamed rice type food, Kimchi bokeumbap (4.56), Bokeumbap (4.55), Bibimbop (4.45), Omelet rice (4.44), Kimbap (4.42), Ddukkuk (4.33), Curried rice (4.33), Jajangbap (4.28), and Ddukmandookuk (4.24) in one dish meal type food, Samgak Kimbap (4.26) in convenience type food, Songpyun (4.48), Injulmi (4.18), Teokbokki (4.71), Ddukkochiguyi (4.46), and rice cookies (4.24) in snack type food, and Shikhye (4.61) and Misugaru (4.28) in drink type food. Based on these results, it may be said that elementary school children think the rice-based diet is good for health and this dietary culture should be inherited and developed not only in a traditional aspect but also in a nutritional aspect. Therefore, more studies are needed to develop various forms of rice food products and cooking recipes.

Fast Food Consumption Pattern and Food Habit by Fast Food Intake Frequency of Middle School Students in Wonju Area (원주지역 중학생의 패스트푸드 섭취정도에 따른 패스트푸드 이용태도 및 식습관 비교)

  • The purpose of this study was to investigate fast food consumption, awareness of fast food and food habit of middle school students in Wonju area according to their intake frequency of fast foods. Subjects were categorized into 3 groups according to intake frequency of fast foods : frequent users($\geq$ 1 times/week, 29.5%) users(2~3 times/month, 50.7%), non-users($\leq$ 1 time/month, 19.8%). As for the purpose of eating fast food, many ate fast food between meals. The most favorite fast food was chicken regardless of intake frequency, followed by pizza, hamburger, the reason being that it tasted good. Regarding if there was any room for improvement, the largest number of the students asked for inexpensive price, irrespective of fast food intake frequency. Compared to users, non-users intake more diverse foods, vegetables, dairy products, fruits, protein foods and seaweed. Users or frequent users of fast food more felt drowsy, cold in the hand and foot, rough skin symptoms than non-users. In conclusion, frequent consumption of fast foods can lead unbalanced diet intakes for middle school students, and those who consumed fast foods frequently showed undesirable food habits in their daily meal.

  • The purpose of this study was to develop a teaching learning process plan applying Keller's motive induction strategy to 'Nutrition and Meal' unit of the middle school home economics(HE). Five different problems were developed based on the 7th revised HE curriculum: "What should I do for a physical and mental health?", "What should I do to intake a required nutrient of my body?", "What should I do to take a well balanced diet?", "What should I do to build a desirable eating habits?" and "What should I do to deal with a nutrition issues?". This study was performed as the following procedures: the 'Nutrition and Meal' unit of the revised 7th middle school HE curriculum and the present HE textbooks were analyzed. And then the teaching learning process plan was designed, developed, evaluated, and revised. The motive induction strategies were developed based on the Keller's Motivational Tactics Checklist.

The Relationships between Self-care Knowledge and Compliance of Ischemic Stroke Patients with Diabetics (당뇨병을 가진 허혈성 뇌졸중 환자의 자가간호 지식과 이행 간의 관계)

  • The purpose of this study was to investigate relationships between self-care knowledge and compliance of ischemic stroke patients with diabetic. The participants were 117 ischemic stroke patients with diabetics who were outpatients at the P university hospital. Data were collected from July 1 to August 31, 2013. Data were analyzed using SPSS 18.0., specifically descriptive statistics, t-test, ANOVA, and Pearson's correlation analysis. Total mean score and correct answer ratio of self-care knowledge were 14.69 points, 63.9%. Total mean score and compliance ratio of self-care compliance were 2.24 points, 44.8%. The correlation coefficient between self-care knowledge and compliance was a significant positive correlation (r=.54, p<.001). Among sub-elements, diet(r=.24, p=.011), medication(r=.43, p<.001), living habits(r=.19, p=.042) and cautions and warnings(r=.45, p<.001) were significant positive correlations. Based on the results of this study, we need to develop integrated nursing intervention education programs for self-care knowledge and compliance promotion of ischemic stroke patients with diabetic.

Antioxidant Nutrient Intakes and Health Behaviors of Rheumatoid Arthritic Patients (류마티스 관절염 환자의 항산화 영양소 섭취상태와 생활습관)

  • Previous studies have indicated that incidence of rheumatoid arthritis (RA) is partly related to the damage of antioxidant systems, but etiology of RA is not fully identified. This study was performed to evaluate nutrient intakes including antioxidants, health related behaviors and food habits of RA patients and controls. RA patient group (n = 68) and sex-matched healthy controls (n = 68) were joined in this study. Nutrient intake was estimated using a semiquantitative food frequency questionnaire. As mean age of RA ($52.9{\pm}13.8$ years) was significantly higher than those of controls ($48.7{\mp}5.9$ years), data were analyzed by using Student's t-test, adjusted for age. There was no significant difference between two groups in body mass index. Compared with those of controls, frequencies of drinking (p < 0.001) and coffee consumption (p < 0.05) of RA groups were lower. RA groups had lower frequencies of fruit (p < 0.01), vegetable (p < 0.05) and fatty meat (p < 0.05) consumptions and balanced diet (p < 0.01), and higher frequencies of fried dishes (p < 0.01), and salty dishes (p < 0.01), compared to controls. The most nutrient intakes including energy intake of RA were tended to be lower than those of controls. Vitamin A, ${\beta}$-carotene and vitamin C intakes were significantly lower in RA than controls (p < 0.001). Daily vitamin A, ${\beta}$-carotene and vitamin C intakes of RA were lower than those of control (vitamin A: RA $360.6{\pm}252.23{\mu}g$ RE, control $844.5{\pm}426.2{\mu}g$ RE, p < 0.001; ${\beta}$-carotene: RA $1450.9{\pm}1019.0{\mu}g$, control $3968.8{\pm}2248.21{\mu}g$, p < 0.001; vitamin C; RA $40.6{\pm}21.48mg$, control $84.7{\pm}40.29$, p < 0.001) These results suggest sufficient consumption of antioxidant nutrients may prevent and improve RA status.

Macronutrient, Mineral and Vitamin Intakes in Elderly People in Rural Area of North Kyungpook Province in South Korea (경북 농촌지역 60세 이상 성인 및 노인의 열량영양소 및 무기질, 비타민 섭취조사)

  • Poor dietary habits and inadequate nutrient intakes are of concern in the elderly, even it is worse in rural areas. In the present study, we conducted the anthropometric measurement and the dietary intakes including macronutrients, minerals and vitamins to assess the nutrient intakes and nutritional risk in elderly people in rural kyungpook province in South Korea. Subjects (n = 168, mean age, 67.3 yrs) were interviewed using d general questionnaire and 3 days of 24-hours recall for dietary intake. Nutrient intakes were analyzed using CAN-pro soft program and compared to Korean RDA and nutrition reference values (NRV). The anthropometric measurement showed that the weight and the height of the subjects in the rural area were below the average of the same age of Korean elderly people. The energy and protein intakes were 85% and 90% of Korean RDA, respectively. The intakes of lipid, cholesterol and dietary fiber were 62%, 40% and 22% of NRV for Korean adults. Main sources for protein and lipid intakes came from the vegetable sources and this pattern was more prominent in female elderly people. Ca intake was half of Korean RDA (56%), while P intake was 132% of Korean RDA. For the antioxidant trace mineral (Fe, Cu, Mn, Zn, and Se) intakes, Fe and Zn intakes were 78% and > 103% of Korean RDA. Cu, Mn and Se intakes were > 113%, > 275%, and > 185% of Korean NRV. Thiamin, niacin and vitamin C intakes were above Korean RDA, but the intakes of vitamin A and riboflavin were 88% and 63% of Korean RDA, respectively. On summarizing the results of the present study, the elderly people in rural area consume less lipid, cholesterol, Ca, and dietary fiber. Ca intake is lower, while P intake is higher, and this would be the potential risk for bone health. Also, Na intake was high, which can be the potential risk for the cardiovascular disease prevailance. Vitamin intakes were fairly good status, excepting riboflavin. Antioxidant mineral intakes were much higher than Korean NRV, unexpectedly. The results suggest that the elderly people in rural area have inadequate intakes of protein, lipid, dietary fiber and Ca, which mainly should be supplied from animal products. Recommendations to increase diet variety would be emphasized for this nutritionally poor-conditioned subjects, specially including animal food products and high dietary fiber food.

Study on the Eating Out Behavior of Middle School Students (중학생의 외식 실태에 대한 연구 - 2016년 청소년 식품소비행태조사 -)

  • This study examined the actual condition of middle school students' dining out based on the data of the 2016 youth food behavior inquiry data of the Korea Rural Economic Institute. The eating out behavior of 278 middle school students' according to gender, average eating-out cost per person, average monthly eating out cost per person, weekly frequency of breakfast, and dietary information source were calculated into a chi-square value by cross analysis. The main results of this study are as follows. First, in middle school students' eating-out status, most students answered 'eating out', and the highest frequency of eating out was 1~3 times a week. The reason for eating out was 'to enjoy delicious food', and 'costly price' was the most common reason for not eating out. Food taste was the most common standard for selecting eating out, and a restaurant was the most common place to eat out. The main restaurant was the 'snack bar (kimbap specialized store)'. Second, there was no significant difference in all items of eating-out status according to the gender. A significant difference in eating out frequency was observed according to average eating-out cost per once (p< .001), standard for selecting eating out (p< .001), main eating out places (p< .001), and main restaurants (p< .01). There was a significant difference in the frequency of eating out (p< .001) in the eating-out status according to average eating out cost per month. Third, the eating-out status according to the breakfast frequency of middle school students had a significant difference in the reason for eating out (p< .001). The eating-out status according to the dietary information source of middle school students had a significant difference in eating out or not (p< .05) and the frequency of eating out (p< .05). These results highlight the importance of school diet education so that middle school students can achieve healthy eating habits and plan to increase their interest and utilization of school dietary education.
