Relationship between Deodorizing Condition and Production of Trans Fatty Acids in Soybean Oil (대두유의 탈취조건과 trans 지방산 생성의 상관관계)

  • Soybean oil (SBO) was carried out deodorization at 4 factors as controlled maximum deodorizing temperature (DT), vacuum degree (VD), cycle time (CT) and treating amount of stripping steam (TASS). The results were as follows, acid value (AV), peroxide value (PV) and trans fatty acid content (TFAC) in produced deodorized SBO. Obtained deodorized SBO at high DT had the lower AV, PV, but TFAC was increased relatively. A suitable level of VD and TASS was 4.0 torr and 2.0%(w/w), than the longer CT was appeared a superior quality level. As a result, the best deodorizing conditions in SBO for lower TFAC were maximum DT; $235^{\circ}C$, VD;4.0torr, CT; $14{\sim}15min$ and TASS; 2.0% (w/w). Deodorizing conditions for lower TFAC in deodorizing of SBO was the major factor, more than lower DT was difficult because of the others quality factors.

Formation of Dimeric Acids in Soybean Oil in the Deodorizing System (대두유의 탈취과정에서 생성되는 Dimeric Acids)

  • Deodorization of soybean oil was carried out at a temperature range of $220{\sim}280^{\circ}C$ for 1 or 2hrs. HPSEC(high performance size exclusion chromatography) method was used for the analysis of dimeric acids in deodorized soybean oil. Dimeric acid moieties were produced through the deodorization at $240{\sim}280^{\circ}C$ for 2 hrs. The amount of dimeric acids produced was found to be in the range of 0.36 to 3.39%. Dimeric acids were not detected under the deodorizing condition of $240^{\circ}C,\;2\;hrs\;or\;250^{\circ}C,\;1\;hr$. The soybean oil deodorized in these conditions had good quality by the color and viscosity tests. The best condition of minimizing the formation of dimeric acids in soybean oils was the deodorizing conditions of $240^{\circ}C,\;2\;hrs\;or\;250^{\circ}C,\;1hr$.

  • Deodorized soybean oils(DSO) were obtained to 2 types. Sample 1 was carried out a general refining process, which was degumming-alkali refining-bleaching-deodorizing. Sample 2 and 3 were not general refining process, its were carried out only both decantation of insoluble impurities and batch type deodorizing(BTD). At this time, BTD was composed of 3 stages, operating differences were vacuum degree, maximum temperature, stripping steam and retention time etc. DSO obtained were appeared original physicochemical characteristics. Sample 1 had acid value 0.034, Lovibond color, 9.1Y/0.9R, peroxide value 0 and thin yellow color's soybean oil. But sample 2 had acid value, 0.078, Lovibond color, 65.0Y/18.39R/4.2B/0.1N, peroxide value, 0.7 and bright green color's soybean oil. Sample 3 had acid value, 0.072, Lovibond color, 37.3Y/3.8R/0.1B/0.1N, peroxide value 1.6 and dark brown color's soybean oil. These colorful DSO were expects as raw-materials of various seasoning oils as like pine needle and/or perilla leaf seasoning oil.

Identification of Novel Extracts of Saccharina japonica with High Deodorant Performance and Antioxidant Activity (우수한 탈취율과 항산화능을 갖는 다시마 추출물의 규명)

  • The purpose of this study was to identify novel extracts of brawn algae with the high deodorant capacity and antioxidant activity. To achieves this, an composition, deodorant performance and free radical scavenging activity were analyzed in powder and water extracts of Ecklonia cava(PEC/EEC), Saccharina japonica(PSJ/ESJ), Eisenia bicyclis(PEB/EEB), Sargassum spp.(PSS/ESS) and Hizikia fusiformis(PHF/EHF) using several analytical methods. Major component of five powders was verified as PEC, phlorotannin; PSJ, alginic acid and glutamic acid; PEB, carotenoid, chlorophyll, phlorotannin, tocopherol and fucoxantin; PSS, ${\beta}$-carotene and polyphenol; PHF, tannin. The highest level of DPPH scavenging activity was detected in EEC($IC_{50}=23.018{\mu}g/ml$), followed by EEB, ESJ, EHF and ESS. The deodorizing performance to ammonia was maintained high level in PEC, PSJ, PEB and PSS, while PHF showed low level in the same condition. But, the deodorizing performance to acetic acid was slightly higher in PSJ and PEC than those of PEB, PSS and PHF. Based on the results of DPPH scavenging activity and deodorizing capacity, we selected fractions of S. japonica as leading extracts and further prepared the 70% acetone extract (AESJ) and 70% ethanol extract (EESJ) from PSJ. The contents of total flavonoid, total phenol and total condensed tannin was significantly increased with 112-209% in AESJ and EESJ compared to those of ESJ. Also, a similar enhancement was observed on the level of DPPH scavenging activity and deodorizing performance against ammonia/acetic acid in AESJ and EESJ. Therefore, these results suggest that AESJ and EESJ contained with high total phenol and total condensed tannin contents may exhibit high deodorant capacity and antioxidant activity as well as has the potential for use as a powerful biomaterial for antibacterial deodorant.

  • As the studies on effective utilization of polyunsaturated lipids in sardine (Sardinops melanosticta), the conditions of deacidification, decoloring, and deodorization for processing of refined sardine oil were investigated In the process of refining, phosphoric acid treatment was not effective in removing phosphatides, and optimal condition to neutralize the crude sardine ill was treating for 30min at $40^{\circ}C$. with $0.5\%$ excess of 3M NaOH solution. Decoloring was optimized by adding $5\%$ bleaching earth and treating for 20min at $50^{\circ}C$ under vacuum, and deodorizing was done by steam destillation at $180^{\circ}C$ under 3 torr of vacuum. When deodorizing temperature exceeded $200^{\circ}C$, some changes occured in fatty acid composition and artifacts were appeared on GLC chromatogram.

A Study on Removal Performance of $NH_3$ Odor Gas Using High Frequency Surface Discharge Body (고주파 연면방전체를 이용한 $NH_3$ 처리성능에 관한 연구)

  • The purpose of this study was to evaluate the decomposition efficiency of $NH_3$ odor gas using high frequency surface discharge body. The results from this study are as follows; 1, Voltage and frequency of electric elements have effects on removal of $NH_3$ odor. The higher these two elements were set up, the more efficiently deodorizing processing worked. In this experiment, the optimum voltage and frequency applicable were observed around AC 6.0 kVp-p and 24.0 kHz respectively. 2. The temperature, humidity and residence time were observed strong variables for NH$_3$ removal process. Its performance had limits at high temperature and humidity conditions. The longer the residence time continued, the more efficiently deodorization process worked. The experimental results showed that the deodorization was efficiently processed under such conditions as $30.0^{\circ}C$ in temperature, 60rh% in humidity and 0.3 sec in residence time. 3. It was observed that in deodorization experiment, $NH_3$ odor gas was perfectly decomposed under the concentration condition below 15.0ppm. Moreover it was considered as economic and practical in terms of maintenance cost when compared with other deodorization methods.

Changes in an Ammonia-like Odor and Chondroitin Sulfate Contents of Enzymatic Hydrolysates from Longnose Skate (Rasa rhina) Cartilage as Affected by Pretreatment Methods

  • To reduce ammonia-like odor in chondroitin sulfate, longnose skate (Rasa rhina) cartilage was processed by washing, autoclaving, and alkali pretreatments. Content of total volatile basic nitrogen (TVB-N), index of ammonia-like odor, of raw skate cartilage without pretreatment was 254 mg/100 g, whereas those of skate cartilage pretreated with washing and autoclaving increased to 630 and 636 mg/100 g, respectively. TVB-N of skate cartilage pretreated with sodium hydroxide sharply decreased to 15 mg/l00 g at optimal condition of 0.12 M and 3.6 volume of NaOH, as determined by surface response methodology of central composite design for optimization. Alkali pretreatment resulted in 97.6% deodorizing. Washing and autoclaving pretreatments had almost no effect on the yield of chondroitin sulfate (approximately 30%), whereas decreased to 16.0% after alkali pretreatment, showing chondroitin sulfate of skate cartilage as chondroitin sulfate C.

Refining of Squid Viscera Oil (오징어 내장유의 정제)

  • As a part of basic investigation for utilizing by-products derived from marine food processing more effectively as a food source, refining of viscera oil of squid caught off Newzealand were investigated. In the process of refining, degumming with 3% of phosphoric acid at $60^{\circ}C$ for 30 min was effective in removing phosphatides, and optimal condition to neutralize was treating with 0.6% excess of 20% sodium hydroxide solution at $80^{\circ}C$ for 20 min. Bleaching was optimized by adding 10% activated clay and treating for $100^{\circ}C$ for 20 min under vacuum, and deodorizing was done by steam destillation at $180^{\circ}C$ for 60 min under 4 torr of vacuum. Acid value, peroxide value and chromaticity of refined squid viscera oil were 0.20, 0.8 meq/kg and 0.019, respectively. The ratio of polyenoic acid composition to saturated acid composition of refined squid viscera oil was 1.28 and its major fatty acids were 16 : 0, 18 : In-9, 20 : 5n-3 and 22 : 6n-3.

Effects of a Dye from Artemisia, the Natural Dyeing Material, on the Functionality of Dyeing in Mind-Peace Education for the Silver Generation (실버세대 감성교육을 위한 천연염재 쑥속(Artemisia)식물의 염료가 염색의 기능성에 미치는 영향)

  • The experience of natural dyeing is expected to be effective in promoting health through good exercise, in giving emotional stability based on the functional aromatic components of the dyeing material, and in improving self-esteem and increasing positive experiences through the behavior of creation. A natural dyeing material easily found around us, artemisia has long been used in food and Oriental medicine and was recently found to contain antioxidative, anticancer, deodorizing, antibacterial, anti-obesity, and anti-diabetes substances through chemical analysis. It has also been reported that group reminiscence therapy using the fragrance of artemisia is effective in relieving pain and depression and in promoting ego integrity in the elderly population. This study aimed to make a comparative analysis of dyeability, washing fastness, and deodorization between Artemisia princeps, Artemisia iwayomogi, and Artemisia annua, all of which are considered to be healthful and functional dyeing materials, among about thirty domestic plants in the genus of Artemisia and to provide basic data concerning natural dyeing in mind-peace education for the silver generation. The fabric dyed and post-mordanted at $80^{\circ}C$ for 40 minutes showed the greatest surface color variation; in this condition, artemisia princes (32.29) gave the greatest color difference, followed by artemisia iwayomogi (31.07) and artemisia annua (26.17). While all the types of artemisia were excellent in washing fastness, dry-cleaning fastness, and rubbing fastness at the fourth- or fifth-grade, light fastness was at the third grade for artemisia princes, at the second to third grade for artemisia annua, and at the second grade for artemisia iwayomogi; therefore, artemisia princes was found to give better fastness than the other two types of artemisia. In determining functionality of the fabric dyed with artemisia, deodorization test also found that the fabric dyed with artemisia princes had 20% higher deodorization.

Dyeing Property of Bamboo Leaves Extract on Hemp and Ramie Fiber (대나무잎 추출물에 의한 삼베와 모시섬유의 염색성)

  • Bamboo leaves, as natural dye provide unartificial fresh green, are known for expert property at anti-bacterial, anti-aging, anti-oxidation, skin whitening, moisturizing, peeling of horny, deodorizing and some skin disease like as eczema and inflammation without any allergic response. Also, It is quite common to obtain bamboo leaves from our surrounding but most of them were not in use. On purpose of development the way of recycle with common material to dye, bamboo leaves were used to dye on ramie fiber which is valuable for both of apparel and industrial field and investigated their dyeing property. Using extract from bamboo leaves, dyeing property was examined with dyeability, colorimetric property, light fastness and wash fastness under different conditions by extract density, dyeing time, dyeing method and mordants. As results, dyeing was generally colored in yellowish, K/S Value was shown more higher on hemp fiber than ramie. The most optimum dyeing condition was investigated on pre-mordant treatment, dyeing temperature $60^{\circ}C$, dyeing time 30min and extract density 400%. On the treatment with mordant(Al, Fe, Cu), dyebility on both of hemp and ramie fiber were increased by mordant. Especially with Copper(Cu) as mordant, dyebility was highly increased than any other mordants and dyeings showed in deep color. Also on the fastness test which is the most important to natural dyeing, wash-fastness showed good performance with 4-5 grade but light-fastness was above 4 grade on both of hemp and ramie fiber, lower than wash-fastness overall.
