To increase the production efficiency in dairy industry, proper artificial insemination is the most important operation. For the successful artificial insemination, accurate estrus detection is required. The Korean dairy farmers usually depended on visual observation for estrus detection of cows. Mounting behaviour is one of major inidications observed when cows are at an estrus. A mounting activity detection system for cows using radiotelemetry was developed. This system included a transmitter with a pressure switch, a receiver, a serial communication interface, a personal computer and a computer software. All components and a whole system were tested both in a laboratory and in a farm. The results of this study are as follows: 1. All components including transmitter, receiver and serial interface were operated according to the design specification. 2. A whole system tested with simulated mounting activity of 400 times showed 100% of success rate. 3. In the farm test for 4 days with three cows expecting estrus, one cows experiencing mounting activities showed correct response with this system. However two cows did not show mounting activities because of weak estrus and cold weather during the testing period.
Recently, functional foods and bioactive components in foods have drawn the attention and interest of food scientists, nutritionists, health professionals, and general consumers. Bioactive whey protein is a highly concentrated milk serum isolate or concentrate, which is high in protein (80~90% protein by weight), carbohydrate- and sugar-free, and nonfat or very low in fat. Bioactive whey protein enhances both healthy and deficient immune systems. In general, ultrafiltered whey protein contains various whey protein concentrate peptides, which could be used for manufacturing probiotics added to health beverages. Hence, the objective of this paper was to review the published literature on research of new functionally improved health beverages using various bioactive components extracted from milk and dairy products.
This experiment was performed to identify the improvement of raw milk quality after introducing raw milk grading system(1993, June). The purpose of this experiment was to investigate chemical component and microbiological quality of raw milk in jeju. This experiment made it possible to spread high standard of quality of raw milk or milk product including yoghurt, ice cream etc., and to provide dairy industry information for the construction of Jeju international free city master plan. As a result, automatic milking system is improved a lot after introducing raw milk grading system and sustained good condition compared with other provinces. High ratio was shown dairy farm in jeju for pre-milking, pre-cooling system equipment and self laboring. Otherwise, the ratio of dairy farm doing test of mastitis is low. The ratio of first grade distribution in Jeju is 80.64%, which means that was improved before introducing raw milk grading system. The number of somatic cells found in summer more than that of other seasons in raw milk. However, these data is a little higher than the nation wide data medium. Also, general components, annual lipid ratio is 3.90% that improved compared with before introducing raw milk grading system. These data showed low in summer and similar to nation wide.

The objective of this study was to characterize factors influencing genetic improvement of dairy cattle for milk production at farm level. Data were accumulated from 305-day milk yields and pedigree information from 1,921 first-lactation dairy cows that calved from 1990 to 2007 on 161 farms in Central Thailand. Variance components were estimated using average information restricted maximum likelihood procedures. Animal breeding values were predicted by an animal model that contained herd-year-season, calving age, and regression additive genetic group as fixed effects, and cow and residual as random effects. Estimated breeding values from cows that calved in a particular month were used to estimate genetic trends for each individual farm. Within-farm genetic trends (b, regression coefficient of farm milk production per month) were used to classify farms into 3 groups: i) farms with negative genetic trend (b<-0.5 kg/mo), ii) farms with no genetic trend (-0.5 kg/$mo{\leq}b{\leq}0.5$ kg/mo), and iii) farms with positive genetic trend (b>0.5 kg/mo). Questionnaires were used to gather information from individual farmers on educational background, herd characteristics, farm management, decision making practices, and opinion on dairy farming. Farmer's responses to the questionnaire were used to test the association between these factors and farm groups using Fisher's exact test. Estimated genetic trend for the complete population was $0.29{\pm}1.02$ kg/year for cows. At farm level, most farms (40%) had positive genetic trend ($0.63{\pm}4.67$ to $230.79{\pm}166.63$ kg/mo) followed by farms with negative genetic trend (35%; $-173.68{\pm}39.63$ to $-0.62{\pm}2.57$ kg/mo) and those with no genetic trend (25%; $-0.52{\pm}3.52$ to $0.55{\pm}2.68$ kg/mo). Except for educational background (p<0.05), all other factors were not significantly associated with farm group.
The objective of this study was to determine the effect of soaking in dairy products on the reduction of fishy odor in steamed crab meat using a mass spectrometer-based electronic nose. The steamed crab meat was soaked in three different dairy products (whole milk, soymilk, and yogurt) and the changes in the pattern of volatile components were analyzed by discriminant function analysis. The discriminant function first score (DF1) moved significantly from a negative position to a positive direction with an increase in soaking time. This suggested that the intensity of the fishy odor became weaker as soaking time increased. The effect of whole milk on the reduction of fishy odor was better than that of yogurt. The results of this study demonstrate that off-flavors can be reduced using dairy products.
In Korea, chemical analysis of animal feed is done through authorized feed analysis laboratories (AFALs). Analysis results among the AFALs need to be similar or within acceptable variations; however, there is no experimental evidence of their comparability. We aimed to determine the level of variation of feed chemical analysis results from different AFALs. For this, we requested analysis of four kinds of feed (corn, soybean meal, corn gluten feed, and ryegrass) to eight AFALs and the Cumberland Valley Analytical Services (CVAS) which is an internationally well-recognized feed analysis laboratory. The AFALs spent more time on analysis than did CVAS. Fiber analysis results varied significantly among laboratories. However, moisture, CP, and ash content values showed almost no variation. At least one AFAL obtained results with significant differences from CVAS for all tested values. These differences can be explained by the followings: 1) the standard methods for feed analysis (SMFA) established for AFALs are not detailed enough to control the analytical variations among different laboratories and 2) guidelines are insufficient for the quality control of analysis results in Korea. Failure to accurately identify the nutritional components of the feed could mean failure to provide adequate nutrients to the animals. Therefore, efforts to reduce the differences among AFALs, such as revising SMFA and publishing guidelines on quality control of feed analysis results, are important.
To analyze the components of dense coat fractions associated with fat globule membrane, The membrane was treated with various concentrations of Triton X-100, a non-ionic detergent, and the composition of lipids associated to the detergent insoluble material was analyzed. The amount of protein, phospholipid, cholesterol and ganglioside in milk fat globule membrane was reduced consistently with increasing concentrations of Triton X-100. Butyrophilin (band 12), xanthine oxidase (band 3) and band 16 as constituents of insoluble coat materials was revealed after electrophorisis on SDS-polyacrylamide gels. Phosphatidyl ethanolamine, phosphatidyl choline, phosphatidyl serine, phosphatidyl inositol and sphingomyelin were identified as the major phospholipids of the coat materials without selective concentration relative to the original membranes. Percentages of total phospholipid were not changed by any of the treatments. Fatty acids of total lipid were myristate, palmitate, stearate (major saturated acids), oleate and linoleate (major unsaturated acids). Cholesterol contents on a protein basis were slightly reduced with increasing concentrations of Triton X-100. Cholesterol adhered to protein more tightly than other constituents The contents of gangliosides was proportionally refuted with increasing concentration of Triton X-100.
In this paper, two statistical methods were applied to optimize medium components to improve the production of the milk-clotting enzyme by Bacillus amyloliquefaciens D4. First, wheat bran juice, skim milk powder, and $Na_2HPO_4$ were shown to have significant effects on D4 enzyme production using the Plackett-Burman experimental design. Subsequently, an optimal medium was obtained using the Box-Behnken method, which consisted of 3.31 g/l of skim milk powder, 5.0 g/l of sucrose, 0.1 g/l of $FeSO_4{\cdot}7H_2O$, 0.1 g/l of $MgSO_4{\cdot}7H_2O$, 0.1 g/l of $MnSO_4{\cdot}2H_2O$, 0.1 g/l of $ZnSO_4{\cdot}7H_2O$, 1.52 g/l of $Na_2HPO_4$, and 172.45 g/l of wheat bran juice. With this optimal medium, the milk-clotting enzyme production was remarkably enhanced. The milk-clotting enzyme activity reached 3,326.7 SU/ml after incubation of 48 h, which was 1.76-fold higher than that of the basic medium, showing that the Plackett-Burman design and Box-Behnken response surface method are effective to optimize medium components, and B. amyloliquefaciens D4 possessed a high rennet-producing capacity in the optimal medium.
This study was performed to develop an index assessing the overall diet quality for Korean. The study subjects consisted of preschool children (PC), elementary school children (EC), high school students (HS), college students (CS), and adults over 30 years old living Seoul and the surrounding areas. The subjects over 30 years old were classified to 30-49 years, 50-69 years, and over 70 years. A dietary survey was conducted using 24-hour recall method and data were collected from 2392 people. Newly developed Korean diet quality index (KDQI) was an index assessing the overall diet quality from the view point of balance. KDQI was based on the nutritional problems of Koreans, dietary risk factors for chronic degenerative diseases, 5 major food groups, and dietary guidelines. The ten components of KDQI were vegetables, fruits, dairy products, dietary variety score, calcium intake, iron intake, energy intake, fat intake, and cholesterol intake. The full score of each component was 10 points and the score of KDQI was calculated by summing the scores of the 10 components. When the KDQI was applied to this study subjects, the distribution of subjects KDQI scores was similar to normal distribution. Mean score of KDQI was 56.0 and the range of the mean by age was from 45.7 for the subjects over 70 years old to 60.7 for the elementary school children. The components which composed the lowest three means were dairy intake, fruit intake, Ca intake in most age groups. Mean score of DVS was one of the highest three but not for the subjects over 50 years old. After subjects with KDQI score over 70 were classified to higher poop and those with KDQI score under 40, to lower group, nutritional characteristics were compared. Energy contributions of carbohydrate, proteins, and fit, percentages of RDA for major nutrients, and dietary diversity scores were more adequate in the higher poop than in the lower group. The lower poop had more risks for chronic degenerative diseases. According to the results, KDQI was valid index to assess the overall diet quality and it could be used to detect risk group for malnutrition and chronic degenerative diseases.
