학교급식 조리사 직무가 급식경영에 미치는 영향 (The Effect of the Cooks' Job on School Foodservice Management)

  • 학교급식 조리사 직무가 식중독 예방과 고객만족이라는 경영 효과를 도모하는지를 파악하는데 연구의 목적이 있다. 설문조사기간은 2008년 7월 1일부터 7월 31일 동안 전라도 지방에 소재한 중등학교 학생을 대상으로 실시하였다. 데이터는 수집하기 용이한 5개 학교를 선정하여 설문지 144부 중 120개의 설문지를 선택했다. 통계분석을 위하여 SPSS 12.0 패키지 프로그램을 사용하였으며, 신뢰성 검정과 회귀분석을 실시하였다. 분석결과 학교급식 조리사 직무가 식중독 예방과 고객 만족에 유의한 차이를 나타냈다. 그러므로 학교급식 경영 효과를 위해서 조리사 직무가 가장 중요한 것으로 나타났다.

Youth Social Networking Service (SNS) Behavior in Indonesian Culinary Activity

  • Purpose: In this paper, we provide an illustration of Indonesian youth Social Networking Service (SNS) behavior and its relation to their culinary activity. Specifically, their behavior of culinary activity preferences and also the factors affecting their action of spending their money. Data and methodology: We gathered primary data from stratified random questionnaire survey (406 youth). The gathered data was analyzed using text data mining and statistics using R statistical computing language. Results: 1) We found out why our respondents are interested in following the accounts of SNS food influencers: i.e. visually attracted to the posts, as their reference to find places to dine out, as their reference to try new food menu and to get nostalgic feeling about the food. 2) The respondents decide to actually go to the recommended culinary places because of several factors, specifically, its description (visual and text), location, word of mouth (WoM), the experience of being to that place and price. 3) Important factors affecting culinary spent are income, number of following food influencer account, SNS usage time and their interest when looking at WoM. Conclusions: SNS behavior influences Indonesian youth culinary activity preferences and spent.

AHP 분석기법을 이용한 조리전공자의 대학 선택 영향 요인의 우선 순위 분석 - 충청도에 위치한 대학을 중심으로 - (The Analysis of the Priority Order in the Factors Influencing College Choice of Culinary Art Majors using AHP - Focusing on the Colleges and Universities in Chungcheong-do -)

  • The purpose of this study is to investigate the priority order in the factors influencing college choice of students who are majoring in culinary art in Chungcheong-do. For the study, we set the decision-making factors of upper hierarchies and nineteen bottom hierarchies based on the literature review and employed the analytical hierarchical process(AHP). As a result, the first considering factor among 4 upper hierarchies for college choice was the educational environments of the department(0.378). The next came in the order named as follows: college and university grade(0.263), the educational environments of colleges or universities(0.244), recommendation(0.115). The first considering factor among the educational environments of the department was the aptitude for the major(0.323). The first considering factor in college and university grade was the entrance competitive rate(0.397). The first considering factors among the educational environments of the colleges or universities were scholarships and tuition fees(0.325). The first considering factor in recommendation was the recommendation of a high school teacher(0.295). This results of this study will contribute to the development of colleges and universities under the turbulent changes of educational environments.

Non-Muslim Customers' Purchase Intention on Halal Food Products in Malaysia

  • Halal market has been growing tremendously recently. The food products occupies the most share in the Halal market category. The phenomenon could be explained by the increased number of consumer among Halal products. Apart from Muslims, who consumes Halal product due to religious obligations, it is assumed that non-Muslims have also started consuming Halal products, especially food items. Halal food products have been perceived as safer, animal friendly and environmental sustainable. Hence, the awareness of Halal principles, Islamic Brand, moral obligation animal welfare and food safety have been studied in this research in order to investigate the influence of Halal food product purchase intention among non-Muslim consumer using quantitative research method. Food safety has been identified to be the most significant in predicting the purchase intention of Halal food product. Furthermore, future studies are suggested to include additional variables such as habit and self-awareness.

위탁 급식 업체에 대한 중요도와 만족도에 관한 연구 - 제주지역 대학업체를 대상으로 - (A Study on the Satisfaction and the Importance of Contract Foodservice in Colleges in Jeju)

  • In this study, to improve the quality of school lunch in local colleges, we conducted a survey on students who attend 2 year colleges in Jeju region. With its own unique regional characteristics and the change of its school lunch program from direct management to consignment, there were some questions about how each factor in school lunch program affects on students' satisfaction with it and we tried to present helpful data to improve school lunch programs in each region. The survey took place from May 5 to May 10, 2005 covering the colleges only in Jeju region. There were 200 sets of questionnaires issued and distributed to the students who are currently using school lunch programs. Only 168 sets were retrieved and processed statistically. 2 sets out of 168 questionnaires had to be thrown away because there were wrong entries of some questions, which made overall retrieving rate 83%. In this study, SPSS 10.0 , one of the statistical package programs, was used as an analyzing tool to make Frequency Analysis. To verify credibility, Cronbach's Alpha Element Analysis was done and T-test and ANOVA was also made. After Recurrence Analysis for elements of satisfaction regarding main factors that is considered to be important to customers, we found that importance of following factors: appearance of food, incongruity between main and side dishes, availability of seasonal food, availability of preferred menu, absence of food stock, waiting time, accessibility of food counters, space between chairs, presentation of a menu, food tray's shape, and color of food trays. The importance of those showed high but satisfaction with the same factors was low. So the primary improvement on these factors should be made to increase satisfaction. Finally we concluded that in large extent, importance of each factor definitely affects on students' satisfaction.

학교급식 환경에 따른 급식조리사의 직무 만족과 조직 몰입에 관한 연구 (A Study on the Job Satisfaction and Organization Commitment of Employees according to the School Food Service Environments)

  • The purpose of this study is to identify the job satisfaction and organization commitment of employees according to the school food service environments. The questionnaire to measure was completed by 150 employees in the Seoul and Gyeonggi area. The demographic data showed that 48.7% of respondents were in their fifties and most of them were females(96.6%). They were employed in the middle and high schools. The results were as follows : Frist, factors that influenced job satisfaction were student preference and rule-observance. Second, the importance of school food service environments didn't influence the compensation factor for job satisfaction. Third, factors that influenced job satisfaction among school food service environments were kindliness and the management of employees and rule-observance. Rule-observance showed the highest satisfaction scores among the rest of them. Forth, it was concluded that the management of employees, food quality and student preference influenced the organization commitment of food service employees. The research results show that rule-observance of food service environments and the importance of managing employees have influence on co-worker relations, job and organization commitment.

외식조리 대학생의 음주행위에 대한 부정적 인식과 긍정적 인식이 학교생활 만족도와 스트레스의 관계 연구 - 만족도와 스트레스의 관계에서 학교생활 연관성의 매개효과 중심으로 - (Study of the Relationship of Positive and Negative Perceptions Awareness of Culinary Student Drinking Behavior and School Life Satisfaction/Stress)

  • 본 연구 외식조리전공 대학생들의 음주 행위에 대한 부정적 인식과 긍정적 인식이 학교생활 만족도와 스트레스에 대한 관계 연구이다. 대학생활중에 음주습관과 행위는 곧바로 사회생활로 이어진다는 데서 그 심각성이 더 크다고 볼 수 있으며, 특히 조리와 같은 특수 직업분야에서 음주습관은 향후 경력관리에도 영향을 끼친다고 볼 때, 본 연구의 결과를 적용하는 것은 매우 효과적일 것으로 사료된다. 연구결과, 음주에 대한 긍정적 인식과 부정적 인식 모두 학교생활 만족도 및 스트레스와 매개 효과 연관성이 통계적으로 유의하게 나타났으며, 특히 음주에 대한 긍정적 인식은 학교생활 연관성과 ${\beta}=-.219$, p<0.01로 부(-)의 관계를 나타냈다. 음주에 대한 부정적 인식은 통계수준 ${\beta}=.445$, p<0.01에서 정(+)의 영향을 미치며, 역시 만족도와 스트레스에서도 ${\beta}=.213$, p<0.01 유의성을 보이고 있다. 음주 빈도나 습관에 있어서는 남녀 차이가 없으며, 이러한 결과는 전통적으로 남자가 음주에 더 많이 노출될 수 있다는 고정관념이 사라지고, 음주는 남녀 모두의 문제로 대두되었다는 것을 보여주는 예가 될 것이다. 연구의 시사점으로 대학전공을 구체적으로 연구를 하였지만, 졸업 후 직업을 가지고 업무를 수행하는 과정에서 나타나는 음주 행위와 어떠한 연관성을 갖는지를 파악하는 지속적 연구인 종단 연구가 필요하다.

레스토랑 종업원의 유머감각이 직무만족과 이직의도에 미치는 영향에 관한 연구 (Effects of Restaurant Employees' Sense of Humor on Job Satisfaction and Turnover Intention)

  • 본 연구는 외식기업의 효율적인 인적자원관리를 위한 기초자료를 제공하기 위해 외식산업에 종사하는 서울지역 레스토랑 종업원을 대상으로 유머감각이 직무만족과 이직의도에 미치는 영향에 대해 실증적으로 분석하였다. 유머감각은 메타메시지 감수성, 유머의 선호도, 정서의 표현성, 유머에 의한 대처 요인으로 도출되었다. 연구결과는 다음과 같다. 첫째, 유머감각 요인 중 유머에 대한 선호도, 유머에 의한 대처, 메타메시지 감수성 순으로 직무만족에 정(+)의 영향을 미치는 것으로 나타났으며 정서의 표현성은 영향을 미치지 않는 것으로 나타났다. 둘째, 유머에 대한 선호도, 정서의 표현성순으로 이직의도에 부(-)의 영향을 미치는 것으로 나타났으며 메타메시지 감수성, 유머에 의한 대처는 영향을 미치지 않는 것으로 나타났다. 따라서 유머감각이 직무만족과 이직의도에 유의한 영향을 미친다는 연구결과를 토대로 유머감각에 대한 중요성을 인식하고 종업원 선발시 유머감각에 대한 평가가 고려되어야 할 것이다.

혜전대학 호텔조리과 학생이 인식하는 서비스 가치에 관한 연구 (A study on perceived service value among the students of Hotel Culinary Department in Hyejeon College)

  • The result of this study suggests that students' perception of service value is related to functional value with regard to need and satisfaction, epistemic value, image, emotional value, functional value with regard to price and quality, and social value. Specifically female students give less importance to epistemic value than their male counterparts. Students in the 2nd grade gave less favorable scores to the functional value with regard to need and satisfaction, epistemic value, image, emotional value and functional value with regard to price and quality than students in the 1st grade. Students in the night class gave less scores to epistemic value and functional value with regard to price and quality than students in the day class. It is confirmed that the difference between groups by the period in school is in functional value with regard to need and satisfaction, image, emotional value, and functional value with regard to price and quality. And it is also revealed that these results are similar to the results of analysis by the grade. In conclusion college operators should not overemphasize that the department of Hotel culinary arts occupies the leading position of the culinary academic world in Korea and the firms of food service industry positively evaluate the department of Hotel culinary arts, and in order to cope with the rapidly changing environment of the culinary education consistent investment constant changes and of efforts should not be stopped. On one hand the teaching staff of the department of Hotel culinary arts should reconsider their original role, and need behavior and practice to fill their deficiency with steady efforts in terms of students' perceived service value. In addition the students of the department of Hotel culinary arts should not be shackled by the past tradition, should not take a pessimistic view of the present situation, should not take an optimistic view of the future, and should always cultivate their ability to provide for the future.

외식업체 조리사들의 테크놀로지 주방시스템이 지각된 용이성.유용성과 태도 및 직무성과에 미치는 영향연구 (Effects of Culinary Staff's Technology Kitchen System upon Perceived Ease of Use, Usefulness, Attitude, and Job Performance in the Foodservice Industry)

  • The purpose of this study was to understand effects of culinary staff's technology kitchen system upon perceived ease of use, usefulness, attitude, and job performance in the foodservice industry. Based on a total of 387 samples obtained from empirical research, this study reviewed the reliability and fitness of the research model and verified a total of four hypotheses using the Amos program. The hypothesized relationships in the model were tested simultaneously using a structural equation model (SEM). The proposed model provided an adequate fit to the data, ${\chi}^2$=226.501 (df=85), p<.001, CMIN/df 2.665, RMR .066, GFI .927, NFI .926, IFI .952, TLI .941, CFI .952. The results show that culinary staff's perceived ease of use(${\beta}$=.534) had a significant positive effect on perceived usefulness. Also, perceived ease of use (${\beta}$=.350) and perceived usefulness (${\beta}$=.297) had a positive significant effect on attitude. Further, attitude (${\beta}$=1.647) had a significant positive effect on job performance. Limitations and future research directions are also discussed.
