Rhizopus Koji를 이용한 무증자 쌀탁주 양조 (Takju Brewing of Uncooked Rice Starch Using Rhizopus Koji)

  • 쌀 전분을 이용하여 무증자 당화 발효법으로 쌀 탁주를 제조하였으며 증자 당화 발효법에 의한 종래적인 방법과 비교하였다. Rhizopus속 균주를 증자하지 않은 생쌀에 접종하여 통상적인 방법에 따라 koji를 제조하여 사용하였으며 원료미를 분쇄해여 증자하지 않은 상태로 발효하였다. 무증자 당화 발효의 경우 종래적 방법에 의한 발효의 경우보다는 최종 alcohol 함량이 pH 1.8 높았고 유기산 생성이 급격히 이루어져 별도의 pH 조정이 필요없었다. 효모의 숫자는 차이가 없었고 세균은 무증자의 경우 2단 사입 후 24시간 까지는 증자의 경우보다 많다가 발효가 종료될 시점에서는 비슷하였다. 발효가 끝난후 제성주로 하였을 때 무증자의 경우는 fusel oil 함량은 증자의 경우보다 적었고 아미노산 함량은 약 2배로 높았으며 원료미에서 유래된 생취(raw flavor)가 유지되었다.

Aroma Characteristics of Raw and Cooked Tenebrio molitor Larvae (Mealworms)

  • This study compared aroma compositions and sensory aroma attributes of raw and cooked Tenebrio molitor larvae (mealworms). Main sensory aroma attributes of raw mealworms were strong wet-soil-like, and less-intense oily, shrimp-like and sweet-corn-like. Quantitatively, the major aroma components of raw mealworms were hydrocarbons and aldehydes. As cooking proceeded, sweet-corn-like, roasted, and fried-oil-like sensory attributes were increasingly perceived with steaming, roasting, and frying, respectively. Some pyrazines, pyrrolidines, and carbonyls increased or appeared in roasted and fried mealworms. Partial least squares regression also showed differences in raw and cooked mealworms based on aroma components and their sensory attributes. Unlike raw mealworms, steamed mealworms had a relatively strong sweet-corn-like aroma attribute, which was related to 2,4,6-trimethyl-heptane, 2,4-dimethyl-dodecane, and 3,5-dihydroxy-6-methyl-2,3-dihydropyran-4-one. In comparison, roasted and fried mealworms exhibited roasted, shrimp-like, and fried-oil-like aroma attributes, which were associated with intermediates of the Maillard reaction and lipid oxidation, such as pyrazines, alcohols, and aldehydes. This result during thermal reactions was very similar to those of meat and/or seafood. The use of mealworms as a savory-type flavor enhancer can be expected.

  • As the treatments of many kinds of explosive objects increase recently, it is in the trend that explosion accidents increase. Thus, many studies on HPFRCC (High-performance Fiber-reinforced Cement Composites) whose ductility is enhanced are being conducted actively in order to minimize the damages from explosion accidents. However, HPFRCC, the self-shrinkage of HPFRCC is on the rise as a problem since it becomes ultra-high strengthened by using low W/B. Thus, in this study, it is intended to evaluate the capacity for reducing the self-shrinkage of HPFRCC depending on some changes of ERCO(Emulsified Refined Cooking Oil) replacement ratio and the fiber replacement ratio between some short steel fibers (SS) and some long organic fibers (OL). As a result, it was found that some excellent effects are exerted since the self-shrinkage was reduced a lot as the ERCO replacement ratio increases and the fiber replacement ratio of SS rather than OL increases.

콩의 종류와 건조 방법에 따른 비지 분말의 이화학적 특성 (Physicochemical Properties of Soybean Curd Residue Powder by Different Soybean and Drying Methods)

  • This study compared the physicochemical properties of soybean curd residue and black soybean curd residue produced by hot air-drying and freeze-drying. Regardless of drying method, the crude protein, crude ash, crude fiber contents, pH, L, a, b color values and water soluble index were higher in soybean curd residue, whereas total polyphenol contents and antioxidant activity were higher in black soybean curd residue. Significant differences in water absorption index, oil absorption capacity and emulsion activity were observed between soybean curd residue and black soybean curd residue in freeze-drying. On the other hand, the emulsion stability was not significant difference in both hot-air drying and freeze-drying. The crude protein and crude fiber contents of soybean curd residue were not significant difference between hot-air drying and freeze-drying. Freeze-drying resulted in higher crude ash contents, pH, water absorption index, water soluble index, oil absorption capacity, emulsion activity and emulsion stability than hot-air drying. Hot-air drying have caused significantly higher water contents, water activity, total polyphenol contents and antioxidant activity in soybean curd residue than freeze-drying. In conclusion, soybean type and drying methods affect the physicochemical and quality characteristics of soybean curd residue, which could be important factors in the manufacture of processed foods.

ZnDTP를 첨가한 혼합윤활유(광유/식물성 오일)의 마모, 산화 및 전단 특성 (Wear, Oxidation and Shear Characteristics of Mixed Lubricating Oil (Mineral/Vegetable oil) with ZnDTP)

  • Vegetable oils can contribute to the goal of energy independence and security owing to their naturally renewable resources. One of the representative vegetable oils is biodiesel, which is being used in domestic and European markets as a blended fuel with automotive diesel. Vegetable oils are promising candidates as base fluids to replace petroleum lubricants because of their excellent lubricity and biodegradability. We prepared biodiesel with a purity of 99.9% via the esterification of waste cooking oil. Blended biodiesel and Petro-lube base oil were mixed to produce five types of mixed lubricating oil. We analyzed the various characteristics of the blended biodiesel with Petro-lube base oil for different blending ratios. The lubricity of the vegetable lubricant improves as the content of biodiesel increases. In addition, since zinc dialkyldithiophosphates (ZnDTPs) are widely used as multifunctional additives in petroleum-based lubricants, we optimized the blending ratio for lubricity, oxidation stability, and shear stability by adding ZnDTP as a performance additive to improve the biodiesel properties, such as oxidation stability and hydrolysis. The optimized lubricants improve by approximately 25% in lubricity and by 20 times in oxidation stability and shear stability after the addition of ZnDTP.

파프리카 흰가루병 방제용 난황유의 유화특성과 유황수화제와의 혼용 시 방제효과 (Emulsification Characters of COY (Cooking Oil and Egg Yolk Mixture) and Mixing Application with Sulfur Wettable Powder for Enhancing the Control Efficacies against Paprika Powdery Mildew)

  • 2009년 6월에서 7월까지 경남 농업술원 ATEC 센터의 시설 하우스 내에서 파프리카에 발생한 흰가루병에 대하여 실험한 결과이다. 난황유 제조시 물 첨가량에 따른 유화 및 과일표면을 비교한 결과 50 ml과 100 ml의 물을 첨가하였을 때는 응집력이 강하지 않아 물에 균일하게 잘 분산되었다. 식용유가 완전히 유화되지 못한 것과 유화된 것을 살포하여 1주일 후 파프리차 과일의 표면을 비교한 결과 완전히 유화되지 못한 난황유의 경우 과일표면에 기름성분으로 덮여있는 것이 관찰되었다. 난황유 및 혼합제의 처리는 난황유 단독 처리구와 혼합제 처리구에서 병재발생이 억제되는 것으로 관찰되었으며, 혼합제 1,000배 와 5,000배를 처리한 구에서 난황유를 단독처리한구보다 병 재발생이 더 억제되어 유의차가 인정되었다. 난황유 및 혼합제의 처리에 의한 흰가루병 발병억제 지속효과는 난황유와 혼합제 처리구에서 병 재발생 면적 증가율이 다른 물처리와 유황수화제처리보다 낮은 것으로 나타났으며, 3주가 경과하여도 재발생 억제효과가 지속되었으나 4주차에서는 난황유와 혼합제(1,000, 5,000, 10,000배)가 각의 처리구 모두 재발생 면적이 조금씩 나타났다.

난황유와 공기순환팬의 상추 흰가루병 방제효과 및 생산에 미치는 영향 (Effect of COY (Cooking Oil and Yolk mixture) and ACF (Air-circulation Fan) on Control of Powdery Mildew and Production of Organic Lettuce)

  • Podosphaera fusca에 의한 상추 흰가루병은 최근에 보고된 새로운 병해이나 심하게 발생될 경우에는 수량을 50% 이상 감소시켜 유기농 상추재배에 큰 위협요인 되고 있다. 본 연구에서는 비닐하우스 내부에 소형의 공기순환팬을 6 m 간격으로 설치하여 상추 주변의 기상환경을 개선한 결과 수량 57% 증가와 정식묘 고사율 71.4% 감소 효과를 얻었다. 공기순환팬을 설치한 하우스에서 식용유를 계란노른자로 유화시킨 난황유 0.3% 용액을 처리한 경우에는 농가 관행재배 하우스에 비해 묘 고사율은 $89.3{\sim}92.9%$ 감소되었고 상추 흰가루병 방제효과는 89.6-96.3%로 매우 높게 나타나 살균제(azoxystrobin)와 대등하였다. 난황유 처리구별로 상추 수량은 $23.3{\sim}26.5\;kg$으로 대조 하우스의 11.86 kg과 비교할 때 약 2배 정도 높았고 상추 잎의 경도는 다소 낮고 엽록소 함량은 높아지는 등 상추 품질을 개선하는 효과도 나타났다. 본 연구 결과를 볼 때 채종유를 계란노른자로 유화시켜 만든 난황유는 상추 흰가루병 방제효과가 매우 높고 유기농 상추 생산에 유용하게 활용할 수 있을 것으로 기대되는데 공기순환팬을 설치하여 재배환경을 개선하면 상승효과를 얻을 수 있는 것으로 나타났다.

Properties of High Amylose Maize Varieties for Use in Alkaline-Cooked Foods

  • The use of high amylose maize varieties significantly affected the alkaline-cooking process and characteristics of alkaline-processed food products, such as masa and tortilla chips. High amylose maize varieties had softer endosperm textures with move tightly attached pericarps than normal maize. Masa prepared from high amylose mutant maize was less cohesive than that of normal maize due to insufficient dispersion of amylopectin and excessive retrogradation of starches. Tortilla chips prepared from amylose-extender dull (ae du), amylomaize V, and Ⅶ had slightly increased oil absorption, while tortilla chips from dull (du) and amylose-extender sugary-2 (ae su-2) had oil contents similar to that of control chips. Increased oil absorption of the tortilla chips was due to their increased surface area. Tortilla chips produced from high amylose mutant maize had darker color than control chips, presumably due to the pigmented pericarp tissues, higher levels of reducing sugars, and phenolic compounds present in the kernel.

대두유 첨가 돈육 패티의 제조 조건 최적화 및 품질 특성 (Optimization Processing and Quality Characteristics of Pork Patty Prepared with Soybean Oil)

  • The purpose of this study was to determine the optimal mixing conditions of soybean oil and bread crumbs mixture for pork patty. The experiment was designed according to the central composite design of response surface methodology. There were ten experimental points, including two replicates for soybean oil and bread crumbs. The physicochemical and mechanical analyses of each sample, including pH, cooking loss, thickness increase, moisture content, lightness, hardness, adhesiveness, springiness, chewiness, and gumminess showed significant differences (p<0.05). The results of sensory evaluation showed significant differences in tenderness, juiciness, and overall quality (p<0.05). The optimum formulation calculated by numerical and graphical method was 13.61 g of soybean oil and 6.35 g of bread crumbs. The results obtained in this study will be useful to the meat industry, which tends to decrease the saturated fatty acid content with a concomitant enrichment in the unsaturated fatty acids content.

서브필터 형상에 따른 Oil-mist Filter의 포집효율 향상에 관한 연구 (A Study on the Collecting Efficiency of Oil-mist Filter according to the Sub-filter Shape)

  • Cooking oil in kitchen-fog is the most harmful factor to the health of a cook. The proposed filter is a tool that protects the cooked state, to prevent users from inhaling oil mist in the kitchen. Due to efficiency issues, existing filters are of the mesh type or baffle type. In this paper, CFD analysis is carried out to select a filter with low pressure loss and low efficiency, and to attach the sub-filter to improve efficiency. The results of the analysis on the collection efficiency and pressure loss of three sub-filters, i.e., circle type, droplet type, and cone type, showed that the collection efficiency was 64.09% and the pressure loss was 1.26 mmAq when the circle type sub-filter was applied. The position of the sub-filter showed the best efficiency and pressure loss when it was located at the bottom of the center of the gap of the main filter.
