Abundant amounts of unripe apples, which were picked out before maturation, were abolished every year fer wastes. Since unripen apples are known to be rich in functional components, the ultimate objective of this research was to utilize them for food resources. The concentrations of polyphenols in hot water extract were the lowest, those in 75% acetone extract the highest. Concentrations of polyphenols in 5/30 sample were 3.5 times higher than those in 6/30 sample regardless of solvents used for extraction. The degree of condensation of flavanolic tannins in the peel was lower than those of the other parts, and the hot water extract was more condensed than the acetone extract. The amount of total flavonoids in the peel and 5/30 samples were 2.7 and 5.0 times higher than those of the flesh and 6/30 samples, respectively.

Mao seed is a by-product of the wine and juice industry, which could be used in animal nutrition. The current study was designed to determine the effect of supplementation of mao (Antidesma thwaitesianum Muell. Arg.) seed meal (MOSM) containing condensed tannins (CT) on rumen fermentation, nitrogen (N) utilization and microbial protein synthesis in goats. Four crossbred (Thai Native${\times}$Anglo Nubian) goats with initial body weight (BW) $20{\pm}2kg$ were randomly assigned to a $4{\times}4$ Latin square design. The four dietary treatments were MOSM supplementation at 0%, 0.8%, 1.6%, and 2.4% of total dry matter (DM) intake, respectively. During the experimental periods, all goats were fed a diet containing roughage to concentrate ratio of 60:40 at 3.0% BW/d and pangola grass hay was used as a roughage source. Results showed that supplementation with MOSM did not affect feed intake, nutrient intakes and apparent nutrient digestibility (p>0.05). In addition, ruminal pH and ammonia nitrogen ($NH_3$-N) were not influenced by MOSM supplementation, whilst blood urea nitrogen was decreased quadraticly (p<0.05) in goats supplemented with MOSM at 2.4% of total DM intake. Propionate was increased linearly with MOSM supplementation, whereas acetate and butyrate were remained the same. Moreover, estimated ruminal methane ($CH_4$) was decreased linearly (p<0.05) when goats were fed with MOSM at 1.6% and 2.4% of total DM intake. Numbers of bacteria and protozoa were similar among treatments (p>0.05). There were linear decreases in urinary N (p<0.01) and total N excretion (p<0.01) by MOSM supplementation. Furthermore, N retention was increased linearly (p<0.05) when goats were fed with MOSM supplementation at 1.6% and 2.4% of total DM intake. Microbial protein synthesis were not significantly different among treatments (p>0.05). From the current study, it can be concluded that supplementation of MOSM at 1.6% to 2.4% of total DM intake can be used to modify ruminal fermentation, especially propionate and N utilization in goats, without affecting the nutrient digestibility, microbial populations and microbial protein synthesis.

The objective of this study was to determine the effect of rain tree pod meal with palm oil supplementation on feed intake, digestibility, microbial protein synthesis and microbial populations in dairy cows. Four, multiparous early-lactation Holstein-Friesian crossbred (75%) lactating dairy cows with an initial body weight (BW) of $405{\pm}40$ kg and $36{\pm}8$ DIM were randomly assigned to receive dietary treatments according to a $4{\times}4$ Latin square design. The four dietary treatments were un-supplementation (control), supplementation with rain tree pod meal (RPM) at 60 g/kg, supplementation with palm oil (PO) at 20 g/kg, and supplementation with RPM at 60 g/kg and PO at 20 g/kg (RPO), of total dry matter intake. The cows were offered concentrates, at a ratio of concentrate to milk production of 1:2, and chopped 30 g/kg of urea treated rice straw was fed ad libitum. The RPM contained condensed tannins and crude saponins at 88 and 141 g/kg of DM, respectively. It was found that supplementation with RPM and/or PO to dairy cows diets did not show negative effects on feed intake and ruminal pH and BUN at any times of sampling (p>0.05). However, RPM supplementation resulted in lower crude protein digestibility, $NH_3$-N concentration and number of proteolytic bacteria. It resulted in greater allantoin absorption and microbial crude protein (p<0.05). In addition, dairy cows showed a higher efficiency of microbial N supply (EMNS) in both RPM and RPO treatments. Moreover, NDF digestibility and cellulolytic bacteria numbers were highest in RPO supplementation (p<0.05) while, supplementation with RPM and/or PO decreased the protozoa population in dairy cows. Based on this study, supplementation with RPM and/or PO in diets could improve fiber digestibility, microbial protein synthesis in terms of quantity and efficiency and microbial populations in dairy cows.
Two experiments were carried out to determine the utility of sainfoin hay, a temperate tanniferous forage legume, as a dietary supplement for grass-fed cows. The condensed tannins (CT) of sainfoin might counteract the typical metabolic ammonia load of cows in intensive grazing systems. Furthermore, the physical fibrousness of sainfoin might improve ruminal pH stability. In the preliminary experiment, the eating rate of non-lactating Holstein cows of two tanniferous hays, sainfoin and birdsfoot trefoil, was compared to that of a grass-clover hay after specific periods of time (n = 4). The eating rate of sainfoin was superior to that of the other forages. In the main experiment, designed as a replicated 3${\times}$3 Latin square, six ruminally-cannulated, lactating Red Holstein cows received grass, concentrate and either no supplementation, 3 kg/d of grass hay or 3 kg/d of sainfoin hay (n = 6). Measured intakes of the grass hay and the sainfoin hay were 2.0 and 1.5 kg DM, and two cows entirely refused to eat the sainfoin hay and had to be excluded from data analysis. Grass DMI was similar for cows supplemented with sainfoin hay and cows fed only grass whereas intake of concentrate was higher (p<0.01) for the latter treatment. Continuous measurement of ruminal pH showed that the minimum pH at night tended to be lower (p<0.10) with grass-only feeding compared to sainfoin supplementation, but pH did not decline below the threshold of subacute acidosis for a longer period of time. The slightly higher intake of nitrogen (N) for cows supplemented with sainfoin hay (413 g/d) compared to cows fed only grass (399 g/d) was accompanied by an increased (p<0.05) fecal N excretion and a tendency for an increased (p<0.10) urinary N excretion. Ruminal ammonia concentration, as well as plasma and milk urea, were not affected by sainfoin supplementation. In conclusion, the lack of positive effects typical for CT might be explained either by the limited CT content of this plant species (55 g/kg DM) or the relatively low proportion of sainfoin in the total diet or both. Moreover, due to the unexpected low grass quality, the general ammonia load might have been too low for CT to have an impact.

The objective of this study was to evaluate the nutritive value of selected fruits (pods and seeds) and leaves of acacia tree species namely; Acacia nubica (nubica), Acacia tortilis (tortilis) and Acacia brevispica (brevispica), Acacia reficiens (reficiens) and Acacia senegal (senegal). A wide variability in chemical composition, polyphenolics and gas production was recorded. The crude protein (CP) ranged from 131 to 238 g/kg DM. Neutral detergent fiber (NDF), acid detergent fiber (ADF) and lignin (ADL) were higher in senegal and significantly different (p<0.05) from other species. The nitrogen bound to fiber tended to be higher in leaves than the fruits, ranging from 2.6 to 11.3 g/kg NDF and 1.6 to 3.2 g/kg ADF. The leaves of reficiens and senegal had higher concentrations of total extractable phenolics (TEPH), total extractable tannins (TET) and total condensed tannins (TCT), but lower in NDF, ADF and ADL than the fruits of nubica, tortilis and brevispica. Mineral concentrations varied among species; all were relatively poor in phosphorus, moderate in calcium and magnesium, and rich in microelements. A significant (p<0.05) variation in gas production after 12, 24, 48, 72 and 96 h was recorded between species. Nubica had the highest (p<0.05) rate of gas production (0.0925) while the highest potential gas production was recorded in tortilis. A strong negative correlation between TEPH and TET with gas production after 24, 48, 72 and 96 was established (r=-0.72 to -0.82). Crude protein and TCT correlated negatively but also weakly with gas production characteristics. Organic matter digestibility calculated from gas production after 48 h (OMD48) ranged between 465 g/kg DM in reficiens and 611 g/kg DM in tortilis. The results of this study indicate that acacia species have the potential to be used as feed supplements.
The nutritive values of leaves of Citrus grandis, Citrus aurantium, Citrus oranges, Citrus limon, and Citrus deliciosa were evaluated by chemical composition and in vitro gas production techniques. There were significant (p<0.001) differences among citrus species in terms of chemical composition. Crude protein (CP) contents ranged from 123.0 to 148.3 g/kg DM. Neutral detergent fibre (NDF) and acid detergent fibre (ADF) contents were varied with species in the range 219.4-355.4 and 215.0-278.8 g/kg DM respectively. Condensed tannin (CT) contents were ranged from 5.9 to 10.2 g/kg DM. The PEG addition significantly (p<0.001) increased the gas production and some estimated parameters of citrus tree leaves. However, species showed variable responses to polyethylene glycol (PEG) treatment. There were also significant (p<0.001) differences among species in terms of gas production and estimated parameters. The OMD and ME contents of citrus leaves without PEG supplementation were ranged from 66.5 to 73.3% and 9.8 to 10.9 MJ/kg DM respectively. The improvement in gas production, organic matter digestibility (OMD) and metabolizable energy (ME) with PEG emphasized the negative effect of tannins on digestibility. The increase (%) in the estimated OMD and ME contents ranged from 5.5 to 9.8% and 5.7 to 10.2% respectively. All citrus tree leaves studied in this experiment have potential nutritive values indicated by high crude protein content, OMD, ME and low fiber values.
Qualitative properties- polyphenol compounds(total phenolics, anthocyanin, flavonoids, tannins), color parameters and antioxidant activities- of wild grape wine having different aging periods were studied. The contents of total phenolics and anthocyanin decreased significantly in accordance with aging terms(p<0.05). The total phenolics and anthocyanin of the oldest wine(WG3) represented only 43% and 45% of it's related compound in the wine aged for one year(WG1), respectively. The contents and the degree of polymerization of tannins, including condensed tannins, also decreased but not showed statistically significant. However, The contents of flavonoids of the 2 year old wine(WG2) decreased significantly related to that of WG1, remaining, then, almost constant at that levels during aging. The L* values, b(yellow) values and the hue (hab) values were increased in long aged wines(WG2, WG3), while the intensity of color(CI) and, the a(red) parameter value decreased. The antiradical activity of wild grape wines was shown to be high(87 EDA%) in WG1. The corresponding coefficient of tannin concentrations with antiradical activity($r^2$=0.9189) suggests that the tannin content may be strongly related to the antioxidant properties of wild grape wines.
Aronia (Black chokeberry, Aronia melanocarpa) belonging to the Rosaceae family, is native to eastern North America. Aronia contain high levels of flavonoids, mostly anthocyanins and proanthocyanidins, which are known as condensed tannins. The dominant proanthocyanidins in aronia are (-)-epicatechin and (+)-catechin. The concentration of proanthocyanidins in aronia is higher than in other berries, however due to the astringent taste it is not desirable for consumption. Therefore, the purpose of this study is to evaluate the effect of aronia on the reduction in tannins by yeast isolated from regional Jeotgal. We isolated strains of yeast with high ${\beta}$-glucosidase activity from Jeotgal, with the MTY2 strains exhibiting a reduction in final tannin concentration according to thin layer chromatography (TLC) analysis. MTY2 was confirmed as Kazachstania servazzii using an 18S rDNA sequence and named as K. servazzii MTY2. K. servazzii MTY2 showed most significant growth when K. servazzii MTY2 was cultured in a solution of 10% (w/v) glucose, 3% (w/v) tryptone and 0.1% (w/v) sodium chloride. According to the high performance liquid chromatography (HPLC) analysis, the (+) - catechin peak is present, but (-) - epicatechin peak was reduced at culture condition added with 10% glucose in medium.
Almost half of New Zealand's greenhouse gas emissions arise from agriculture and enteric methane ($CH_4 $) emissions arising from ruminant animals constitute 30% of total $CO_2$-e emissions. Enteric $CH_4$ emissions have increased by 9% since 1990. Extensive research has been undertaken to develop reliable methods for measuring enteric $CH_4$ emissions. New Zealand studies using the SF6 tracer technique suggest that on average this technique yields similar values to the 'gold' standard of calorimetry, but with a larger variance. National inventory estimates based on results obtained using the $SF_6$ technique will therefore overestimate the uncertainty. Mitigating emissions can be achieved by changing feed type but there are practical and cost barriers to the use of alternative feeds. Forages containing condensed tannins do reduce emissions but are agronomically inferior to the forages currently used. Rumen additives have shown some success in-vitro but results from in-vivo trials with both monensin and fumaric acid have been disappointing. The development of methods for directly manipulating rumen microorganisms are at an early stage and work to develop vaccines that can inhibit methanogenesis has yielded mixed results. The successful identification of sheep with contrasting $CH_4$ yields raises the possibility that, in the long term, a breeding approach to $CH_4$ mitigation is feasible.

Four, mature rumen fistulated male swamp buffaloes with an average initial weight of $426{\pm}25kg$ were randomly allocated to receive dietary treatments according to a $4{\times}4$Latin square design. Four dietary treatments with varying proportions of ureatreated rice straw (UTRS) and cassava hay (CH) were offered (100:0, 75:25, 50:50, 0:100). Each feeding period lasted 21 days, the first 14 days for feed adjustment and intake measurement and the final 7 days for rumen fluid and faecal collections. The results demonstrated the potential use of both UTRS and CH as roughage sources. As levels of CH increased in the diets pH values were maintained (6.5-7.0). Ruminal $NH_3-N$ concentrations were significantly (p<0.05) raised as higher levels of CH were incorporated into the diets. Moreover, cellulolytic and proteolytic bacterial populations were enhanced while total protozoal counts were decreased (p<0.05). In addition, DM, OM and CP digestibilities and their digestible intakes as well as estimated energy increased with increasing levels of CH in the diets. The results suggest a favorable effect of CH substituting for UTRS.
