Effects of Different Concentrate and Roughage Ratios on Ruminal Balance of Long Chain Fatty Acids in Sheep

  • The effects of different feeding ratios of concentrate (C) and roughage (R) on balance of long chain fatty acids and microbial fatty acids in the rumen of sheep were investigated. The diets were divided into 8:2 (concentrate feeding), 4:6 (middle mixture) and 0:10 (roughage feeding) ratios (C:R). Duodenal digesta was collected through 24 hours after feeding. Biohydrogenation rate, total duodenal flow of fatty acids and microbial fatty acids were measured. Total duodenal flow of fatty acids was significantly (p<0.05) increased with increasing concentrate. Total duodenal flow of fatty acid was greater than intake of fatty acid in all diets. In comparison with intake of each fatty acid, duodenal flow of stearic acid ($C_{18:0}$) remarkably increased in all diets. Biohydrogenation rate for total C18 unsaturated fatty acids in the rumen tended to increase (p<0.10) when sheep were fed the middle mixture. In particular, biohydrogenation rate of linoleic acid ($C_{18:2}$) and linolenic acid ($C_{18:3}$) with the middle mixture were highest (p<0.05) compared with other diets. Duodenal flow of protozoal fatty acids was significantly (p<0.05) increased with the increased supply of concentrate. That of bacterial fatty acids was significantly (p<0.05) increased with both concentrate diets compared with the roughage feeding diet. $C_{18:0}$ occupied the greater part of both protozoal and bacterial fatty acids in all treatments. Results indicated that biohydrogenation of free unsaturated fatty acids was actively carried out when the middle mixture diet was supplied, and that microbial uptake and synthesis of fatty acids were accelerated by adding the supply of concentrate.

Physicochemical Characteristics of Jujube Concentrates Prepared by Boiling (가열처리한 대추 농축액의 물리화학적 특성)

  • The aim of this study was to determine the optimal cooking conditions in preparing jujube concentrates using various boiling times (5, 10, 15, 20 hours). The moisture contents of the concentrate samples ranged from 38.86 to 42.36%. Crude protein content was highest in the 15 hr-boiled concentrate, crude fat was highest in the 20 hr-boiled concentrate and both the 15 and 20 hr boiled concentrates had high crude fiber contents. There were no differences in color L- and a-values by boiling time; however, the b-value decreased with increasing boiling time. The pH levels of the concentrates ranged from 5.24 to 5.27, and the brix level increased with increasing boiling time. Glucose was the primary of free sugar in the concentrates and its highest level was 102.3 ${\mu}M$ in the 20 hr-boiled concentrate. The 15 hr-boiled concentrate had the highest electron donating ability to 46.68%. The total polyphenol contents of the concentrates ranged from 21.53 to 24.56%, in which the 15-boiled concentrate had the highest level (24.56%). In the sensory evaluation, the 15-hr-boiled concentrate again performed well, showing the highest overall acceptability scores. From these results, 15 hrs was the optimal boiling time for preparing jujube concentrate in terms of obtaining functional compounds and overall product acceptability.

Effect of Concentrate Level on the Formation of Conjugated Linoleic Acid and Trans-octadecenoic Acid by Ruminal Bacteria when Incubated with Oilseeds In Vitro

  • An in vitro study was conducted to examine the effect of addition level of concentrate on fermentation characteristics and long-chain unsaturated fatty acids composition, especially conjugated linoleic acid (CLA) and trans-octadecenoic acid (t-FA) by mixed ruminal bacteria when incubated with linseed or rapeseed. Four levels (0.83, 1.25, 1.67 and 2.08%, w/v) of concentrate and ground oilseeds (linseed or rapeseed; 0.83%, w/v) were added to mixed solution of strained rumen fluid with artificial saliva (1:1, v/v) in the glass jar with a glass lid equipped with stirrer, and was incubated anaerobically for 24 h at $39^{\circ}C$. Addition level of concentrate slightly reflect on pH and ammonia concentration of the culture solution at the various incubation times when incubated with both linseed and rapeseed. Total VFA concentration slightly increased with incubation times and concentrate levels for incubations with oilseeds. While CLA composition had a clearly increasing trend with incubation time when incubated with linseed, percent CLA was relatively stable when incubated with rapeseed. Percent CLA, however, had a clearly decreasing trend with concentrate level throughout incubation times with significances at 3 h incubations when incubated with linseed (p<0.038) and rapeseed (p<0.0009). The differences in compositions of t-FA were relatively small among concentrate levels for both incubations with linseed and rapeseed. The ratios of t-FA to CLA were lower for linseed with increased proportion of CLA than for rapeseed.

Change of Epicuticular Waxes by Formulation of Fungicides in 'Campbell Early' Grapes (살균제 제형에 따른 포도의 과분 변화)

  • This study was conducted to investigate the influence of formulation of fungicides on epicuticular waxes in 'Campbell Early' grapes. Non-bagged and bagged berries were treated with wettable powder, suspension concentrate and emulsifiable concentrate 15 days after full bloom (DAFB) and 48 DAFB (veraison), respectively. Fruit skin was observed by naked eye and scanning electron microscope (SEM) at harvest. Remarkable white blots were observed on the berries treated 48 DAFB in the order of wettable powder, suspension concentrate, and emulsifiable concentrate. The observation by SEM showed all formulations of fungicides damaged the ultra-structure of epicuticular waxes; also, an unknown substance was observed on treatment with wettable powder and suspension concentrate. Moreover epicuticular wax appeared to be melting on the grapes treated with emulsifiable concentrate. Also, non-bagged grapes showed serious contamination of epicuticular wax by some unknown substance, but bagged grapes had only fungicides' traces.

Quality Characteristics of Sansapyun Prepared with Various Amounts of Sansa Concentrate Gelatinized with Chinese Water Chestnut Starch (산사농축액 첨가량에 따른 올방개 전분 산사편의 품질특성)

  • The purpose of this study is to investigate the characteristics of Sansapyun prepared with various amounts of Sansa concentrate(0%, 5%, 10% 20%, 30%) gelatinized with Chinese water chestnut starch. The Moisture contents and pH values decreased with Sansa concentrate increased. The Hunter L value of Sansapyun significantly decreased(p<0.001), but a, b values increased with Sansa concentrate increased. The hardness, springiness, chewiness, gumminess, cohesiveness were the highest in the control sample(0%) and the adhesiveness was the highest in Sansapyun with 30% sansa concentrate. In the sensory evaluation, red color, sour flavor, fruity flavor, Chinese medicine flavor, Sour taste, Chinese medicine taste, brittleness, stickiness increased with Sansa concentrate increased. Sleekness, hardness, springiness, gumminess decreased with Sansa concentrate increased. Sansapyun prepared with 10% Sansa concentrate showed the highest acceptance score(p<0.001). In addition, this study showed the possibility of Chinese water chestnut starch which is less expensive and easily available as a good replacement starch for traditional mung bean starch to prepare Kwapyun.

Functional Properties of Silkworm Larvae Protein Concentrate (번데기 농축단백질의 기능성)

  • The functional properties of defatted silkworm larvae flour and protein concentrate have been compared with those of soybean. The protein contents of soybean and silkworm larvae protein concentrate were 70.3% and 84.1%, respectively. The solubility of silkworm larvae protein concentrate was lower than that of soybean protein at various pH tested. However, silkworm larvae protein concentrate showed better fat absorption, poorer water absorption and overall higher bulk density than soybean protein. The silkworm larvae protein concentrate showed higher emulsifying capacity and stability, but showed lower foaming capacity and stability than soybean protein. Silkworm larvae protein concentrate showed highest viscosity among various protein products at all concentrations and reached the highest viscosity at 5${\sim}$7% protein concentration. Therefore, high emulsification properties of silkworm larvae protein concentrate will be a good protein source when it is added to emulsified food.

The Quality Characteristics of Jelly added with Black Garlic Concentrate (흑마늘 농축액을 첨가한 젤리의 품질 특성)

  • The principal objective of this study was to evaluate the quality characteristics of jelly prepared with five different levels(0, 0.5, 1.0, 1.5, and 2.0%) of black garlic concentrate(BG1-BG4). We conducted the pH, sugar content, Hunter's color value, mechanical characteristics, and a sensory evaluation analysis of black garlic jelly. The more black garlic concentrate increased, the more the sugar content of the black garlic jelly increased(p<0.05). In terms of color, lightness(L) and yellowness(b) decreased as the black garlic concentrate increased, while redness(a) increased. With regard to the mechanical properties of the black garlic jelly samples, the higher the score of hardness, gumminess, and chewiness significantly increased(p<0.05). In color, flavor, texture and overall quality, the score of jelly with 1.0% black garlic concentrate(BG2) increased most of the all.

Membrane Concentrate Thickening by Hollow-fiber Microfilter in Drinkin Water Treatment Processes

  • A novel system to thicken the concentrated colloidal solution from membrane water treat-ment processes was developed. A hollow-fiber microfilter(hydrophilic polyethylene nominal pore size 0.1 ${\mu}$m total surface area 0.42 m2) was installed in an acrylic housing that has an aeration port 5 cm below the membrane and a clarifier in the bottom. The concentrate was uniformly supplied from the top of the housing. Bacuum filtration caused downward flow of concentrate and as a result thickening interface. The addition of poly-aluminum chloride (PAC) resulted in rapid increase of trans-membrane pressure (TMP) and in no improvement of the filtered water turbidity and thickening process. Two types of con-centrate and concentrate turbidity had little effect on the increase of TMP and concentrate thickening. It was observed that for the same height of membrane housing membrane surface area to housing volume (A/V) ratio had significant effect on the increase of TMP. When the housing volume was increased ten times the increasing rate of TMP was three times faster as compared to the original housing. A hydraulic model successfully simulated the formation and sedimentation of thickening interface.

  • Mineralogical study of original and crushed zinc ores as well as mill products was made in order to find out the cause of low-grade concentrate and the scheme of raising its grade. Low-grade concentrate is due to 1) the abundance of other independent sulfides (arsenopyrite, pyrrhotite, chalcopyrite, stannite) and silicate (quartz) in the zinc concentrate, 2) the presence of composite grains of sphalerite and other sulfides or silicate, 3) the presence of a lot of very fine-grained particle of stannite and chalcopyrite within the sphalerite grains, and 4) the high content of iron in sphalerite. It is proposed that further crushing and other appropriate processing should be made in order to increase the grade of zinc concentrate.

Quality Characteristics of Gochujang Dressing Containing Various Amounts of Maesil(Prunus mune) Concentrate (매실 농축액 첨가 고추장 소스의 품질 특성)

  • This study aimed to determine the sensory acceptability of Gochujang dressing containing added Maesil (Prunus mune) concentrate. Gochujang dressing was blended with different concentrations of Maesil concentrate (0%, 1%, 2%, 3%, 4%). Moisture contents, L, a, b values, pH level, and sugar contents decreased, whereas acidity and viscosity increased with increasing Maesil contents. Salinity did not change significantly. For attribute difference test, as Maesil concentration increased, color intensity, savory flavor, sour flavor, hot taste, and mouthfeel decreased, whereas glossiness decreased. The acceptance test showed that 2% Maesil concentrate was the most preferable for appearance, taste, texture, and overall quality. In conclusion, the results indicate that addition of 2% Maesil concentrate to Gochujang dressing is optimal and provides good properties as well as reasonably high overall acceptability.
