커피음식 조화도에 영향을 미치는 맛 선호도에 관한 연구 (A Study on the Effect of Taste Preference on Harmony of Coffee Food)

  • 본 연구에서 커피 음식 조화도에 영향을 미치는 맛선호도를 알아보기 위해 커피음식조화도와 맛선호도와의 상관관계를 살펴보고 맛 커피음식 조화도에 영향을 미치는 맛선호도가 있는지 조사분석하였다. 연구결과 커피음식 조화도에서 외국음식은 제과 제빵류에서 보통수준 또는 그 이상의 조화도가 있는 것으로 인식되었고, 커피믹스보다는 원두커피가 더 조화롭다고 인식하였고, 한국음식은 커피와의 조화도에서 보통수준 또는 그 이하의 조화도가 있다고 인식하였는데 이중 후식류인 떡류와 전통간식류, 한과류에서 상대적으로 조화도의 인식이 높았다. 맛 선호도와 커피 음식조화도와의 상관관계에서 외국음식은 단맛과 짠맛이 낮을수록 커피와 어울리는 것으로 신맛과 쓴맛, 매운맛, 담백한 맛은 선호도가 높을수록 어울리는 것으로 나타났다. 커피음식조화도에 영향을 미치는 맛 선호도로 외국음식은 일부음식을 제외하고 전반적으로 단맛과 단백한 맛이 영향을 미치는 것으로 나타났고 한국음식은 일부를 제외하고 전반적으로 쓴맛과 단백한 맛이 영향을 미치는 것으로 나타났다.

물의 미네랄 함량과 커피 관능 특성에 관한 상관 분석 (Analysis of Correlations between Mineral Contents in Waters and Sensory Characteristics of Coffee)

  • Water is an essential ingredient to brew coffee. Mineral contents in the water can affect both water quality and taste quality of coffee. The effects of minerals in the water on sensory characteristics of coffee were investigated in different water samples (A: Arisu, B: Claris, C: Spring water, D: Samdasoo, E: Evian, Distilled water as control). Based on the results of quantitative descriptive analysis (QDA), there were statistically significant (p<0.01) in flavor, acidity, bitterness, sweetness, body and aftertaste according to different water samples used to brew coffee. The canonical correlation analysis of minerals (Ca, Mg, Na, K) and taste (acidity, bitterness, sweetness) indicated that there were highly correlated in the relationship between bitterness and Mg content. A strong negative relationship was shown between bitterness and acidity, sweetness. A result of preference test using hedonic scale showed an inverse linear relationship between taste quality and total mineral contents.

The Impact of Korean Franchise Coffee Shop Service Quality and Atmosphere on Customer Satisfaction and Loyalty

  • Purpose - The purpose of this study is to analyze franchise coffee shop service quality factors based on pilot research. In the proposed analysis, store atmosphere is added as one of the service quality factors. We aim to examine how franchise coffee shop service quality and store atmosphere influence customer satisfaction and loyalty. Research design, data, and methodology - Data was collected from 482 Korean coffee shop franchises and analyzed using frequency analysis, reliability/validity assessments, correlation analysis, and regression analysis with the software program SPSS 19.0. Results - The results are as follows. First, taste is revealed to be the most influential factor among components that have an impact on service quality. Second, taste also turned out to have the most impact on service quality among components influencing customer loyalty. Last, customer satisfaction affected customer loyalty. Conclusions - This study's findings show that taste was the most influential factor on service quality. The conclusion here is that most of the coffee shop customers are very familiar with coffee taste and this is influencing their loyalty.

The Factors influencing Customer Satisfaction with and Revisiting Coffee Shops in Korea: The Moderating Roles of Psychological Value

  • This study aims to find what attributes of consumer satisfaction are more important when consumers choose coffee shops. Factors when customers choose coffee shops that are considered to be more crucial, such as taste, price, brand, and atmosphere, were tested and also relations between satisfaction and revisit were studied. As a result, factors as 'taste', 'price', 'brand', and 'atmosphere' were found to significantly affect satisfaction; in addition, the path that satisfaction leads to revisit was found to be significant. However, consumers' coffee shop selection attributes differed depending on their psychological consumption value. The path-coefficients from taste and price to satisfaction were more significant in the function-oriented group, meanwhile the path-coefficient from brand to satisfaction was significant in the emotion-oriented group (+) and the function-oriented group (-). The results of this study suggest attributes of selecting coffee shops and provide meaningful implications of consumer value when they choose the attributes.

생두 가공법에 따른 에스프레소 커피의 관능 특성 (Sensory Characteristics of Espresso Coffee According to Green Coffee Processing)

  • Coffee beans are processed from coffee cherries by either natural, pulped natural, or washing. The aim of the present study was to evaluate the physiochemical and sensory characteristics of espresso coffees processed by different methods. The color of the washed coffee sample presented the highest value of lightness while the natural coffee sample presented the highest value of redness and yellowness. The biggest difference in brewed coffee, whether natural, pulped natural, or washed, was in the TDS content, which was higher in natural coffee and lower in washed coffee. Sensory descriptive analysis and acceptance test for espresso coffee using a 15 cm line scale were carried out by 12 trained panelists. Natural coffee had the highest cherry-like flavor and sweetness taste while washed coffee had the highest citrus flavor and acidity taste. An important attribute of espresso coffee is body, and natural coffee presented strong body while washed coffee presented a low body attribute. In conclusion, significant differences were observed among the three processing methods of green coffee. Pulped natural coffees presented intermediate physiochemical and sensory characteristics compared to washed and natural coffee. Natural coffees are appreciated for their increased body, and washed coffees are appreciated for added citrus flavors and acidity espresso coffee blends.

Determinants of Price in Specialty Coffee by Consumers

  • With the targeted coffee consumers in Kwangju city, South Korea, this paper investigates a few determinants such as taste, aroma, mouth-feel, and satisfaction to influence coffee price, based upon self-evaluations by those who enjoy specialty coffee. Using both simple regression and standard multiple regression analyses, it turned out that tastes, smell, mouth-feel, and satisfaction of specialty coffee had effects on coffee price. This study implies that when coffee consumers decide coffee price, they consider multiple factors to influence their overall satisfaction in multiple aspects than a single facet like taste, aroma, and mouth-feel. Practical and theoretical discussion and implications are suggested for the following studies.

  • 최근 커피분야에 대한 소비자의 높아진 인식과 가격대 품질보다 한단계 나아가 심리적 만족에 비중을 두는 커피문화의 변화로 고품질 스페셜티 커피에 대한 관심이 높아지고 있다. 커피를 즐기는 방식이나 맛과 향 등을 중요하게 생각하는 하나의 문화로서 기호에 맞는 커피를 제공받고자하는 고객이 늘어남에 따라 스페셜티 커피전문점의 수도 증가하고 있으며 제공되는 커피의 품질 또한 높아지고 있다. 이에 본 연구는 스페셜티 커피의 주요 속성을 분석하고, 스페셜티 커피전문점에 필요한 마케팅 시스템을 구축하는 것에 목적을 두었다. 연구 방법으로 온라인 빅 데이터 분석을 통한 텍스트 마이닝을 실시하여 스페셜티 커피의 속성을 형성하는 요소들을 추출하고 영향의 정도를 분석하였다. 연구결과 커피의 맛과 원두, 바리스타와 관련된 단어들이 스페셜티커피의 속성에 중심적인 역할을 하는 것으로 파악되었다.

커피 전문점 이용자의 일반적 특성, 선택 속성, 커피 음용 행동 및 긍정적 감정 간 관계 (The Relationships among Characteristics of Customers, Choice Attributes, Positive Emotion Associated with Coffee-Drinking Behavior -Focusing on Specialty Coffee Shop Customers-)

  • This study explored choice attributes in specially coffee shops and examined the relations between choice attributes and positive emotions customers felt in specially coffee shops. The study also attempted to find differences in choice attributes and positive emotions according to general characteristics of customers and coffee-drinking behavior. Measured items were derived from preliminary interviews and a literature review. Questionnaires were distributed to customers in Seoul who had visited a specially coffee shop in the last 3 months. The derived factors of choice attributes were 'taste of coffee and atmosphere', 'brand', 'price benefit', 'pleasant space', and 'coffee itself. Among those, the two factors 'taste of coffee and atmosphere', and 'brand' had a statistically significant influence on positive emotions of customers. This implies that specially coffee shop customers have primarily emotional rather than utilitarian motivations. Therefore, to better satisfy customers' desires, more effort is needed to improve the physical environment in coffee shops. Female and younger customers showed higher perception of price benefits than others did. The perception of price benefits and pleasant space mainly varied by the location of coffee-drinking and frequency of visiting specially coffee shops. Further differences in positive emotion according to general characteristics and behaviors of having coffee also discussed.

둥굴레를 첨가한 커피의 관능적 특성 분석 (Sensory Characteristics of Coffee with the Addition of The Polygonatum sibiricum)

  • The purpose of this study was to synthesize tasty and healthy solomon's seal coffee by combining solomon's seal and a coffee-making process. Therefore, this study was carried out to establish the most suitable conditions for coffee-making by surface response surface methodology. Using the center synthesis method, we synthesized solomon's seal coffee by considering three factors (solomon's seal, coffee, and temperature) and three levels. The sixteen experimental items for solomon's seal coffee based on surface-reaction analysis were scent (crust break-scent when pouring water in solomon's seal coffee, flavorscent when tasting solomon's seal coffee), taste (clean-cup-pure taste without loose scent, sweetness, and acidity), mouth-feel, aftertaste, overall quality, and other taste degrees. Scores were from 1 to 7, with 7 indicating the highest preference. The optimum mixing rates which meet sensory items were coffee 19.51g, solomon's seal 2.07g, and temperature $93.39^{\circ}C$. Based on the above results, solomon's seal seems to be well suited for coffee. It was also found that solomon's seal has great potential to be well suited with other foods.

커피설기의 재료배합비에 따른 품질 특성 및 상품화 방안 (Quality Characteristics of Coffee-sulgi(rice cake) with Different Ratios of Ingredients and Commercial Scheme)

  • The purpose of this study was to investigate the instrumental and sensory characteristics of coffee-sulgi(rice cake) with different ratios of the ingredients; coffee(30$m\ell$, 40$m\ell$ and 50$m\ell$ of espresso and instant coffee) and sugar (50g and 75g). A commercial scheme for coffee-sulgi was also investigated. The optimal mixing ratios of coffee-sulgi with added espresso were rice flour 500g, salt 5g, espresso 40$m\ell$ and sugar 75g. Those of coffee-sulgi with added instant coffee were the same. As the sensory intensities of coffee aroma, coffee taste, sweetness, moistness, elasticity, color acceptance for coffee-sulgi and overall acceptance for quality were enhanced, the overall preference for coffee-sulgi was increased. In addition, overall preference was positively correlated with adhesiveness and a-value of instrumental characteristics, but negatively correlated with cohesiveness and L-value. In coffee-sulgi with added espresso, intensities of coffee aroma, browniness, coffee taste, color acceptance for coffee-sulgi, overall acceptance for quality and overall preference were higher than those of coffee-sulgi with added instant coffee. In this point, gourmet coffee-sulgi with added espresso and universal coffee-sulgi with added instant coffee could be differentiated in the coffee-sulgi markets. In conclusion, this study of coffee-sulgi and the differential scheme for the market will be useful to expand rice processing, enhance the intake of rice cakes and provide a reference for the commercialization of rice cakes.
