어린이급식관리지원센터의 위생교육 프로그램이 영유아 보육교사의 배식위생 수행도 및 영유아 급식소 배식환경 개선에 미치는 효과 -대전 동구, 중구 지역을 중심으로- (Effects of an Education Program on Sanitation Status at Centers for Children's Food Service Management - Focusing on Jung-gu and Dong-gu regions of Daejeon Metropolitan City -)

  • Objectives: This study aimed to assess the improvement of teachers' sanitation performance and food distribution environment at Centers for children's food service management after a sanitation education program. Methods: The subjects were 119 teachers working at child care centers registered in the Daejeon Center for Children's Foodservice Management in Dongu and Jung-gu, Daejeon. The sanitation education was provided three times from March to August in 2014, and the survey questionnaires were distributed before and after the education. The sanitation status of food service environment of the centers was examined by ATP(adenosine-5'-triphosphate) bioluminescence. Results: After the sanitation education, the teachers showed higher levels of sanitation knowledge. Also, sanitation performance and recognition level of the importance of it significantly improved after the education program. The mean variation scores of importance and performance after the education were 0.14 and 0.23. According to the Importance-Performance Analysis (IPA) results of 26 sanitation attributes about the food service environment, the selection attributes with relatively low performance and importance were mostly distributed in the children's and distributer's personal hygiene management area. However, all attributes except using a personal water bottle and cup were moved to high performance and importance level. Also, the ATP examination results showed that the sanitation status of the food service environment was improved after the education program. Conclusions: The sanitation education program was effective in improving the recognition of the importance of sanitation and its performance with regard to food service management.

서울지역 가정어린이집 원장의 어린이급식관리지원센터 이용 경험 분석 (Administrators' Experience of Using Service Provided by Center for Children's Foodservice Management among Home-based Child Care Centers in Seoul)

  • This study examined the experience of administrators of home-based child care centers about CCFSM (Center for Children's Foodservice Management) service using a qualitative approach. Eight administrators of home-based child care centers in Seoul with more than one year's experience of CCFSM were interviewed regarding their opinions on support activities, standards, and foodservice management. The interviews were semi-structured with open-ended questions and they were transcribed and classified according to the subjects. There were negative opinions regarding the indications after a hygiene inspection leaving photographs or records behind, but most positive opinions were about round visits for foodservice sanitation and nutrition management. The participants thought that it is not enough that the number of nutrition education sessions for children be twice a year, and there was a suggestion to increase the rentals of nutrition educational materials. There was a complaint about the menus in that were difficult to prepare for lunch time or to obtain food ingredients for. The administrators poorly recognized how to use the standardized recipes and chlorine-based disinfectants, so they could not be applied properly. They also pointed out the problems of joint purchasing as low quality and high prices in the food service operation. They felt discriminated against compared to with larger scale child care centers because of their size and expressed concerns regarding the fact that many home-based child care centers were not included due to the lack of publicity and budget. Through the results, the CCFSM should provide a differentiated service and management by creating a dedicated team or staff for home-based child care centers so they will not feel left out. In addition, It is also important to constantly gather opinions to improve the menus and to use standardized recipes practically. In addition, it will be necessary to develop nutrition educational materials corresponding to the infants' age for home-based child care centers and increase the rent to expand nutrition education.

부모의 어린이급식관리지원센터 인지도와 유아의 채소 섭취 관련 식생활 및 보육기관의 식단 메뉴에 관한 만족도 (Parents' Recognition of Center for Children's Food Service Management and Preschoolers' Satisfaction with Menu Provided by Childcare Centers and Food Life Regarding Vegetable Intake)

  • This study was conducted to determine parents' recognition of the Center for children's foodservice management (CCFSM) and to compare preschoolers' satisfaction for meals served by childcare centers and some aspects regarding the vegetable intake according to the parents' recognition of CCFSM. The subjects were 255 parents, whose children were 2~5 year old and attended a childcare center, were grouped according to the recognition of CCFSM (high recognition, HR, 27.5%; medium recognition, MR, 47.4%; low recognition, LR, 25.1%). Information was obtained by a self-administered questionnaire and data were analyzed by SPSS 25.0. Only 58.6% of HR and 10.7% of MR answered the they had participated education/event held by the CCFSM. More parents in the HR group (88.6%) acknowledged the helpfulness of CCFSM on the children's food habits compared to those in the MR group (63.6%) (P<0.001). Compared to the MR and LR groups, more parents in the HR group answered not only that they were 'satisfied'/'very satisfied' with the meals served by childcare centers (P<0.05), but also they tended to think that their children were also satisfied (P=0.061). Up to 31.2% of parents in the LR group answered that there was no need for education to increase the vegetable intake of their child compared to 14.3% and 17.4% in the HR and MR groups, respectively (P<0.05). Moreover, up to 26.6% of parents answered that school cook planned menus compared to 5.7% and 13.2% in the HR and MR group, respectively (P<0.001). In conclusion, the results provided the association between parents' high recognition of CCFSM and preschoolers' satisfaction for meals from childcare centers as well as a better chance for a desirable food life regarding vegetable intake.

보육시설과 지역아동센터 칼과 도마의 미생물학적 안전성 평가 (Evaluation of Microbiological Safety of Knives and Cutting Boards in Child Care Centers)

  • The purpose of this study was to evaluate microbiological contamination of knives and cutting boards in child-care centers. Materials used in this study were swabbed of cutting boards and knives (blade, handle of knife, and joint of handle and blade) in 129 child-care centers. Mean values of total aerobic bacteria of swabs of knives and cutting boards were 1.7±0.7 log cfu/100 ㎠ and 1.7±0.9 log cfu/100 ㎠, respectively. Contamination levels of coliform bacteria from knives and cutting boards were 1.5±0.6 log cfu/100 ㎠ and 1.7±0.8 log cfu/100 ㎠, respectively. Comparing microbiological contamination levels of knives and cutting boards according to type and size of child-care centers, there was no significant difference. Bacillus cereus was detected in knife handles and cutting boards. Diarrhea-type toxin gene (entFM) was detected in B. cereus isolates. Antibiotic resistance tests showed that B. cereus was resistant to β-lactam antibiotics. To reduce microbiological contamination levels of knives and cutting boards in child-care centers and prevent food poisoning from bacteria contamination, continuous education by children's food-service management center is needed for sterilization and disinfection of knives and cutting boards.

서울 소재 어린이급식관리지원센터 수행 사업에 대한 어린이 급식소의 만족도 분석 - 회원 구분에 따른 비교를 중심으로 - (Satisfaction with Children's Foodservice Facilities about Program at Center for Children's Foodservice Management in Seoul: Difference between Associate Members and Regular Members)

  • The purpose of this study was to investigate satisfaction with children's foodservice facilities about program at Center for Children's Foodservice Management (CCFSM) by focusing on differences between associate and regular members. In December 2014, an online survey was conducted at 155 children's foodservice facilities which were enrolled members at CCFSM in Geumcheon-gu, Seoul. The questionnaire included the general characteristics of respondents, satisfaction with CCFSM's services : 'Field consulting', 'Education and training for cook', 'Menu', and 'Newsletter'. The questionnaire was responded by 78 foodservice facilities for children, including 42 regular members (53.8%) and 36 associate members (46.2%). The analysis rate was 50.3% and the majority of respondents were child-care centers (94.9%). As a result, satisfaction with 'Newsletter (4.87 points/5 points)' was the highest while 'Menu (3.95 points)' was the lowest. Satisfaction with 'Education and training for cook' of regular members (4.74 points) was significantly higher than that of associate members (4.41 points). For factors affecting overall satisfaction with CCFSM's service, there was a difference between associate and regular members. Regular members were significantly affected by 'Menu (p<0.001)', and 'Newsletter (p<0.05)'. Associate members were affected by 'Education and training for cook (p<0.05)'. Thus, satisfaction with Menu of CCFSM should be increased. The results of this study show that there was a difference in satisfaction between associate and regular members. Therefore, CCFSM program should be implemented depending on the characteristics of foodservice facilities for children and their needs.

관악구 보육교사의 배식서비스 참여 및 식사지도 실태 : 영아반과 유아반의 비교 (Teachers' Participation and Mealtime Instruction in the Food Service at the Kwanak-gu Child-care Centers: Comparison between Child-care Teachers Caring Different Age Groups, Children Younger than Three Years and Those Three Years or Older)

  • This study was conducted to investigate how child-care teachers participate, practice mealtime instruction, and perceive difficulties in food service, focusing on comparison between the teachers caring two different age groups: children younger than three years (Younger Group) and those three years or older (Older Group). Questionnaires were distributed to 151 child-care centers in Kwanak-gu, Seoul, Korea during December, 2011. Only the data from 25 child-care centers, where two respective teachers in charge of Younger Group and Older Group completed the questionnaires, were analyzed. The results showed that there was no difference in terms of child-care teachers' participation in food service practice between the two groups, except for serving method; 'Pre-plated' serving was used significantly more often in Younger Group, whereas 'Line-up' serving was used in Older Group. Approximately, three quarters of the child-care centers had policies or guidelines on mealtime instruction. During mealtime, child-care teachers tended to use frequently verbal instructions such as "sit up straight when you eat" about eating manner, "don't be picky with your food" about eating habit, and "wash your hands before eating" about eating procedure in both the groups. There was no statistically significant difference regarding child-care teachers' perceived difficulties in food service between the two groups. These results indicated that child-care teachers' participation and mealtime instruction in food service did not differ between the two age groups, although children's development of digestion and eating skill differed by age. Therefore, training should be provided to child-care teachers about food service practices and mealtime instruction appropriate to children's age.

대구지역 어린이급식관리지원센터 등록 어린이급식소의 염도 측정 빈도에 따른 국의 염도 및 나트륨 함량 비교 (Comparison of Salinity and Sodium Content by the Salinity Measurement Frequency of Soups of Childcare Centers Enrolled in the Center for Children's Food Service Management in Daegu)

  • Objectives: This study examined the salinity of soups provided at childcare centers by measuring the salinity for three years and providing basic data for sodium reduction. Methods: The soup salinity was measured using a Bluetooth salinity meter from January 2015 to December 2017 at 80 childcare foodservice establishments enrolled in the Suseong Center for Children's Foodservice Management in Daegu. Results: An analysis of the soup salinity each year showed that the salinity decreased significantly from 0.48% in 2015 to 0.41% in 2017, particularly in clear soups and soybean soups compared to other soups (P < 0.05). The salinity and sodium content in seafood soups (0.45% and 179.1 mg/100 g, respectively) were highest, followed by soybean soups (0.44%, 175.2 mg/100 g), with perilla seed soups containing the lowest (0.42%, 167.2 mg/100 g) (P < 0.05). The salinity was significantly higher in institutional foodservice establishments than small foodservice establishments (P < 0.001). The salinity and sodium content were the highest in foodservice establishments with a small number of measurements, and the salinity was the lowest in foodservice establishments with salinity measurements performed an average of 151 times each year (three times a week) or more (P < 0.05). The soup salinity was low in the order of winter, spring, summer, and autumn, and the salinity decreased significantly year by year in all seasons. (P < 0.05). Conclusions: The soup salinity was significantly lower in foodservice establishments where the salinity was measured more than three times a week, indicating that continuous salinity management is effective.

온라인 위생교육프로그램의 지속적 제공이 어린이급식소 위생관리 수행도에 미치는 영향 (The Effect of Continuous Provision of On-line Hygiene Education Program on Hygiene Management Performance of Children's Cafeterias)

  • The purpose of this study was to investigate the effect of developing and continuously providing on-line hygiene education programs on the improvement of hygiene conditions in children's cafeterias. As a result of the 2020 sanitation and safety checklist analysis, 6 items (personal hygiene, separate use, clean ventilation, temperature control of refrigerators, country of origin, food distribution) were derived and on-line hygiene education programs for each of 6 items were produced. ① Customized educational materials and self-inspection checklists were provided to 208 children's cafeterias. After that, educational videos were provided through Kakao Talk twice a week for 6 months, and they were made available for viewing at any time through YouTube upload, ③ Kakao Talk Through this, a quiz related to the educational video was conducted to give feedback for interaction with the cook. As a result of analyzing the total hygiene and safety checklist score of all registered facility catering centers by visit order, in 2020 it was 82.8 points/100 points, but in 2021, it was 84.2 points (1st round), 89.3 points (2nd round), 91.4 points (3 points) The score improved significantly (p<0.001) as the on-line hygiene education program continued. As a result, significant (p<0.001) changes were observed in the items of 'Knife, chopping board' and 'Sanitation clothes, sanitary hat, sanitary shoes, apron, and sanitary gloves', confirming a clear improvement effect. Therefore, it is considered that the on-line hygiene education program will play a positive role in showing a lasting effect on improving hygiene management in children's cafeterias.

어린이급식관리지원센터 등록 시설 국물음식의 염도 모니터링 (Salinity Monitoring of Soups of The Institutions Enrolled at Center for Children's Foodservice Management)

  • 본 연구는 지속적인 염도 관리의 교육효과를 살펴보기 위하여 강동구 어린이급식관리지원센터에 등록된 21인 이상의 어린이집에서 제공되는 국물음식의 염도를 모니터링 하였으며, 그 결과는 아래와 같다. 1. 모니터링을 실시한 시설은 1차 102개소, 2차 76개소, 3차 78개소이며, 맑은 장국, 된장국, 곰국, 찌개, 기타로 구분한 국물음식의 평균 염도는 1차(0.45%), 2차(0.41%), 3차(0.39%)로 진행됨에 따라 유의적으로 감소하였다(p<0.01). 2. 어린이집 유형에 따른 염도는 국공립어린이집의 경우, 1차 0.43%, 2차 0.35%, 3차 0.38%로 유의적인 감소를 나타내지는 않았으나, 민간어린이집은 1차 0.46%, 2차 0.43%, 3차 0.39%로 모니터링을 진행할수록 유의적으로 감소하였다 (p<0.01). 3. 집단급식소 등록 여부에 따라 급식 인원 50인 이상의 대규모 급식소와 50인 미만의 소규모 급식소의 염도를 비교한 결과, 대규모 급식소의 국물음식의 평균 염도가 낮았으나 유의적인 차이를 보이지 않았으며, 모두 1차에 비해 3차의 평균 염도가 감소하는 경향을 나타냈다. 4. 3차에 걸친 모니터링 시 어린이집에서 제공한 국물음식의 횟수는 총 256회였으며, 이 중 맑은 장국이 139회로 가장 많이 제공되었고, 된장국이 76회, 기타(들깻국, 수제비 등) 24회, 찌개 9회, 곰국 8회 순서로 나타났다. 5. 국물음식의 종류별 염도는 곰국을 제외하고는 맑은 장국, 된장국, 찌개 모두 1차에서 3차로 진행될수록 염도가 감소하였으나, 국의 종류 및 모니터링 차수에 따른 염도의 유의적인 차이는 없었다. 그러나 동일한 국물음식 간에도 염도의 차이가 매우 커서 개별 국물음식의 최소치와 최대치의 차이는 1차의 경우 달걀국이 0.62%, 2차는 감잣국이 0.54%, 3차는 양송이국이 0.64%를 나타냈다. 본 연구 결과, 지속적인 염도 모니터링 진행을 통해 어린이집 국물음식의 염도가 낮아지는 것으로 나타나, 센터에서 진행하는 교육의 효과를 확인할 수 있었다. 영유아 급식시설에서의 국물음식의 염도 기준은 명확하게 제시되어 있지 않으나, 식품의약품안전처에서는 성인의 경우 0.6% 이하, 영유아 급식시설에서는 이보다 더 낮은 0.5% 이하로 관리하도록 권고하고 있다. 그러나 적정 염도는 음식의 종류에 따라 다르므로 영유아를 위한 주요 나트륨 급원 메뉴의 적정 염도범위를 설정할 필요가 있다. 또한 본 연구에서 3차에 걸쳐 조사된 국물음식의 전체 염도 평균치는 모두 0.5% 미만으로 적절한 범위에서 관리하고 있었으나, 개별 국물음식의 염도는 매우 큰 차이를 나타내었다. 영유아는 미각이 형성되는 시기이며, 염도는 음식에 대한 기호에 영향을 줄 수 있으므로 국물음식의 염도는 일정한 범위 내에서 관리되는 것이 바람직하며, 추후 최고 염도뿐만 아니라, 음식의 맛과 건강을 함께 고려하는 최저 염도에 대한 논의도 함께 이루어져야 할 필요가 있을 것으로 사료된다.

서울시 소재 육아종합지원센터에서 제공하는 어린이집 간식 식단의 유형 및 영양소 평가 (Evaluation of Menu Pattern and Nutritional Contents of Snack Menus Provided by Child Care Information Centers in Seoul)

  • This study was conducted to evaluate menu pattern and nutritional contents of snack menus provided by child care information centers in Seoul. Snack menus during March 2013 (morning snack : 125 cases, afternoon snack : 100 cases), including information on portion size, were collected from five child care information centers, after which the number of menu items, menu patterns, and nutritional contents were analyzed. About two-thirds of total snack menus included two menu items. There were significant differences in service time (morning & afternoon snacks). 'Beverage+Food' pattern (66.7%) was the most commonly used; 'Beverage' pattern was significantly higher in morning snacks (10.4%) than in afternoon snacks (1.0%). Morning and afternoon snacks provided 124.5 and 170.6 kcal of energy and 116.4 and 90.9 mg of calcium, respectively, which are 8.9% and 12.2% as well as 19.4%, and 15.2% of children's daily energy and calcium requirements. To improve the quality of food and nutrition offered to children through snacks at child carre centers, a more detailed snack menu plan as well as nutritional guidelines for institutions should be developed.
