Sequential use of real-time polymerase chain reaction and enzyme-linked immunosorbent assay techniques verifies adulteration of fermented sausages with chicken meat

  • Objective: Detection of adulteration in processed meats is an important issue for some countries due to substitution of beef with a cheaper source of protein like poultry. In this study, the presence of chicken meat was investigated using real-time polymerase chain reaction (real-time PCR) and enzyme-linked immunosorbent assay (ELISA) techniques to verify adulteration of fermented sausage samples. Methods: A total of 60 commercial samples were collected from 20 establishments in three replicates including 10 fermented sausage manufacturers and 10 butchers to investigate the presence of chicken meat with the sequential use of real-time PCR and ELISA techniques. In addition, pH, moisture content, water activity and color values of the samples were determined. Results: Both real-time PCR and ELISA showed agreement on the presence or absence of chicken meat in 55 out of 60 fermented sausage samples and chicken meat was identified with both methods in 16 samples. Five samples produced inconsistent results for the presence of chicken meat in the first run. Nevertheless, the presence of chicken meat was verified with both methods when these samples were analyzed for the second time. In addition, the average physico-chemical values of the fermented sausage samples tested positive for chicken meat were not significantly different from some of those fermented sausage samples tested negative for the chicken meat. Conclusion: The sequential use of real-time PCR and ELISA techniques in fermented sausages could be beneficial for the government testing programs to eliminate false negatives for detection of adulteration with chicken meat. Furthermore, consumers should not rely on some of the quality cues including color to predict the adulteration of fermented sausages with chicken meat since there were no statistical differences among some of the samples tested positive and negative for chicken meat.

Changes in growth performance, carcass characteristics, and meat properties of Hanwoo steers according to supplementation of composite feed additive

  • This study was conducted to evaluate the effects of a composite feed additive (CFA) consisting of vitamin C, vitamin E, selenium, and choline on growth performance, carcass characteristics, and meat properties of Hanwoo steers. Twenty-two late fattening steers were randomly assigned to one of two dietary groups, control (commercial concentrate + rice straw) and treatment (commercial concentrate + rice straw + 50 g of CFA). Average daily gain (ADG) was 4.0% higher in treatment than that in control; however, there was no statistically significant difference. The supplementation of CFA had no effect on overall yield or quality traits of carcass. CFA had no effect on chemical composition, water holding capacity, shear force, cooking loss, or myoglobin values in longissimus muscle; however, the content of ${\alpha}$-tocopherol was increased by supplementation of CFA (p < 0.01). The contents of ${\alpha}$-linolenic acid and n-3 fatty acids were higher in treatment group than in control (p < 0.01). The ratio of n-6/n-3 fatty acids was decreased by supplementation of CFA (p < 0.01). The supplementation of CFA had no effect on pH or thiobarbituric acid reactive substances (TBARS) values in longissimus muscle (raw); however, TBARS (cooked) values were lower in treatment group than in control during refrigerated storage (p < 0.01). Thus, the results indicate that the supplementation of CFA (vitamin C + vitamin E + selenium + choline) had some positive effects on the increase in ${\alpha}$-tocopherol and n-3 fatty in longissimus muscle, without any negative effect on growth performance or carcass characteristics of late fattening Hanwoo steers.

Stage by stage design for primary, conventional activated sludge, SBR and MBBR units for residential wastewater treatment and reusing

  • To date, there is no central wastewater (WW) treatment plant in Erbil city, Kurdistan region, Iraq. Therefore, raw WW disposes to the environment and sometimes it used directly for irrigation in some areas of Erbil city. Disposal of the untreated WW to the natural environment and using for irrigation it causes problems for the people and the environment. The aims of the current work were to study the characteristics, design of primary and different secondary treatment units and reusing of produced WW. Raw WW samples from Ashty city-Erbil city were collected and analyzed for twenty three quality parameters such as Total Suspended Solids (TSS), total dissolved solids, total volatile and non-volatile solids, total acidity, total alkalinity, total hardness, five-day Biochemical Oxygen Demand (BOD5), Chemical Oxygen Demand (COD), biodegradability ratio (BOD5/COD), turbidity, etc. Results revealed that some parameters such as BOD5 and TSS were exceeded the standards for disposal of WW. Design and calculations for primary and secondary treatment (biological treatment) processes were presented. Primary treatment units such as screening, grit chamber, and flow equalization tank were designed and detailed calculation were illustrated. While, Conventional Activated Sludge (CAS), Sequencing Batch Reactor (SBR) and Moving Bed Biofilm Reactors (MBBR) were applied for the biological treatment of WW. Results revealed that MBBR was the best and economic technique for the biological treatment of WW. Treated WW is suitable for reusing and there is no restriction on use for irrigation of green areas inside Ashty city campus.

  • Pleurotus species are commercially essential mushrooms and widely cultivated throughout the world. The production of Pleurotus mushrooms alone accounts for around 25% of that total cultivated mushrooms globally. In America and Europe, Pleurotus species are considered specialty mushrooms, whereas, in Korea, their cultivation is economically profitable, and it is one of the highly consumed species. Pleurotus species are predominantly found in tropical forests and often grow on fallen branches, dead and decaying tree stumps, and wet logs. Biographical studies have shown that the Pleurotus genus is among the more conspicuous fungi that induce wood decay in terrestrial ecosystems worldwide due to its formidable lignin-modifying enzymes, including laccase and versatile peroxidases. Pleurotus species can be grown easily due to their fast colonization nature on diversified agro-substrates and their biological efficiency 100%. Pleurotus mushrooms are rich in proteins, dietary fiber, essential amino acids, carbohydrates, water-soluble vitamins, and minerals. These mushrooms are abundant in functional bioactive molecules, though to influence health. Pleurotus mushrooms are finding unique applications as flavoring, aroma, and excellent preservation quality. Apart from its unique applications, Pleurotus mushrooms have a unique status delicacy with high nutritional and medicinal values. The present review provides an insight into the cultivation of Pleurotus spp. using different agro-waste as growth substances paying attention to their effects on the growth and chemical composition.

A Review on Processing Opportunities for the Development of Camel Dairy Products

  • Camel milk has a significant and pivotal role in the diet of people residing in semi-arid and arid regions. Ever since ancient times, marketing of camel milk has remained insignificant due to nonexistence of processing amenities in the camel nurturing areas, hence the utilization of unprocessed camel milk has continuously remained limited at family level by the nomads. Due to the superior medicinal values and health promoting effects, incredible growth in the demand of camel milk and dairy products have been noticed all over the world during last two decades. Such emergence has led dairy industry to provide diversified camel dairy products to the consumers with superior nutritional and functional qualities. In contrast to bovine, very few food products derived from camel milk are available in the present market. With the advancements in food processing interventions, a wide range of dairy and non-dairy products could be obtained from camel milk, including milk powder, cheese, yogurt, ice cream, and even chocolate. In some regions, camel milk is used for traditional dishes such as fermented milk, camel milk tea, or as a base for soups and stews. Current review highlights the processing opportunities regarding the transformation of camel milk into various dairy products via decreasing the inherent functionality that could be achieved by optimization of processing conditions and alteration of chemical composition by using fortification method. Additionally, future research directions could be devised to improve the product quality.

살포식 패류 양식어장 건강도 평가기준 설정 (Establishment of Integrated Health Evaluation Criteria for Coastal Aquaculture System)

  • We investigated the physio-chemical and geochemical parameters in the spraying shellfish aquacultures (Yeoja and Gangjin Bay) to establish the systematic strategy for effective environmental management. Spatial variation of each parameter showed partially significant difference (P<0.05) between Yeoja and Ganjin Bay, inferring the discriminative progress (i.e., accumulation and degradation) of the autochthonous organic matter within the aquaculture environments. We additionally integrated various properties (e.g., water/sediment quality, natural hazard, and biological health) which may affect the biological growth within the aquaculture habitats based on the biogeochemical cycles related to environmental components and aquaculture species. We used a screening approach (i.e., one out-all out; OOAO) which can permit the assessment of the health levels of aquaculture species, the scoring for other parameters (seawater, sediment, and natural hazard) as three levels (excellent, moderate and poor) depending on the complex interactive properties occurring in the aquaculture environments. Actual, discriminative scores obtained via our case studies may confirm that these stepwise processes are effectively evaluated for optimal health conditions within the aquaculture habitats. Thus, this approach may provide valuable insights for effective environmental management and sustainable growth of aquaculture operation.

Effects of sodium diacetate and microbial inoculants on fermentation of forage rye

  • Rye (Secale cereale L.) is a valuable annual forage crop in Korea but there is limited information about the impact of chemical and biological additives on fermentation characteristics of the crop. This experiment was conducted to investigate fermentation dynamics of wilted forage rye treated with the following six additives; control (no additive), sodium diacetate applied at 3 g/kg wilted forage weight (SDA3), 6 g/kg wilted forage weight (SDA6), inoculations (106 CFU/g wilted forage) of Lactobacillus plantarum (LP), L. buchneri (LB), or LP+LB. The ensiled rye sampled at 1, 2, 3, 5, 10, 20, 30, and 45 days indicated that the acidification occurred fast within five days of storage than the rest of the storage period. The microbial inoculants decline the pH of ensiled forage, more rapidly than the control or SDA treated, which accompanied by the decrease of water-soluble carbohydrates and increase of lactic acid. Compared with the control silage, all treatments suppressed ammonia-nitrogen formation below to 35 g/kg DM throughout the sampling period. Suppression of total microbial counting occurred in SDA6, LP, and LP + LB. The lactic acid production rates were generally higher in microbial inoculation treatments. Acetic acid concentration was lowest in the LP-treated silage and highest in the SDA- and LB-treated silages. The in vitro dry matter (DM) digestibility and total digestible nutrients were the highest in the silage treated with SDA (6 g/kg) at day 45 of ensiling. Based on lower ammonia-nitrogen concentrations and higher feed value, ensiling forage rye treated with SDA at 6 g/kg is promising through enhanced silage quality.

  • 급속 포장 콘크리트는 타설 직후 공기 중에 노출되어 물리적, 화학적 영향을 많이 받아 유해물질들의 콘크리트 구조물 내부로 침투하여 사용연한이 감소하게 된다. 이와 같이 콘크리트 투과 특성은 내구성능을 결정하는데 중요한 요소이다. 또한 조강시멘트와 조강제의 성능으로 인하여 급격한 수화반응으로 인한 수화열로 열과 수분의 이동이 증가하여 구조물에 인장응력을 발생시켜 미소균열을 발생시킨다. 본 연구에서는 대단면 포장체의 급속 시공용으로 도출된 배합을 바탕으로 물투수시험, 동결융해반복시험, 마모저항성시험, 표면박리시험 및 소성수축, 건조수축, 자기수축 등의 시험을 실시하였다. 시험결과 조강제 및 섬유를 혼입한 배합이 가장 우수한 결과를 보여주었다.

  • This investigation delves into the adverse repercussions stemming from the impact of arsenic on steel pipes concealed within soil designated for rice cultivation. Simultaneously, the study aims to ascertain effective techniques for detecting arsenic in the soil and to provide strategies for mitigating the corrosion of steel pipes. The realm of nanotechnology presents promising avenues for addressing the intricate intersection of renewable energy, oil, and environmental pollution from a novel perspective. Nanostructured materials, characterized by distinct chemical and physical attributes, unveil novel pathways for pioneering materials that exert a substantial impact across diverse realms of food production, storage, packaging, and quality control. Within the scope of the food industry, the scope of nanotechnology encompasses processes, storage methodologies, packaging paradigms, and safeguards to ensure the safety of consumables. Of particular note, silver nanoparticles, in addition to their commendable antibacterial efficacy, boast anti-fungal and anti-inflammatory prowess, environmental compatibility, minimal irritability and allergenicity, resilience to microbial antagonism, thermal stability, and robustness. Confronting the pressing issue of arsenic contamination within both environmental settings and the food supply is of paramount importance to preserve public health and ecological equilibrium. In response, this study introduces detection kits predicated upon silver nanoparticles, providing an expeditious and economically feasible avenue for identifying arsenic concentrations ranging from 0.5 to 3 ppm within rice. Subsequent quantification employs Hydride Atomic Absorption Spectroscopy (HG-AAS), which features a detection threshold of 0.05 ㎍/l. A salient advantage inherent in the HG-AAS methodology lies in its capacity to segregate analytes from the sample matrix, thereby significantly reducing instances of spectral interference. Importantly, the presence of arsenic in the soil beneath rice cultivation establishes a causative link to steel pipe corrosion, with potential consequences extending to food contamination-an intricate facet embedded within the broader tapestry of renewable energy, oil, and environmental pollution.

리튬이차전지 양극 분말 소재 위 탄소나노튜브의 직접 성장 거동 고찰 (Investigation of direct growth behavior of carbon nanotubes on cathode powder materials in lithium-ion batteries)

  • This study reports a direct growth of carbon nanotubes (CNTs) on the surface of LiCoO2 (LCO) powders to apply as highly efficient cathode materials in lithium-ion batteries (LIB). The CNT synthesis was performed using a thermal chemical vapor deposition apparatus with temperatures from 575 to 625 ℃. Ferritin molecules as growth catalyst of CNTs were mixed in deionized (DI) water with various concentrations from 0.05 to 1.0 mg/mL. Then, the LCO powders was dissolved in the ferritin solution at a ratio of 1g/mL. To obtain catalytic iron nanoparticles on the LCO surface, the LCO-ferritin suspension was dropped in silicon dioxide substrates and calcined under air at 550℃. Subsequently, the direct growth of CNTs on LCO powders was performed using a mixture of acetylene (10 sccm) and hydrogen (100 sccm) for 10 min. The growth behavior was characterized by scanning and transmission electron microscopy, Raman scattering spectroscopy, X-ray diffraction, and thermogravimetric analysis. The optimized condition yielding high structural quality and amount of CNTs was 600 ℃ and 0.5 mg/mL. The obtained materials will be developed as cathode materials in LIB.
